Abstract

PT.

Abstract

Sempe Arumanis, a small and medium enterprise (SME), operating in Yogyakarta and producing Sempe Arumanis, faces supply chain risks such as inaccurate orders, late supplies, and damaged raw materials. Therefore, risk management is needed to identify and mitigate the risks present in the SME. Therefore, risk identification is necessary to minimize these risks. The House of Risk (HOR) method is used to identify risks and take preventive measures. The results of the analysis revealed three high-frequency risks faced by Sempe Arumanis small and medium enterprises: a lack of historical data or accurate information, dependence on a single supplier, and restrictions on raw material purchases that disrupt operations and customer satisfaction. Risk management measures include seeking more than one supplier, routinely checking stock, labeling shelves, negotiating contracts and inventory, conducting quality checks before shipment, training in quality control, communicating between sales and warehouse teams, and implementing an integrated system.

Abstract

Modern production systems increasingly rely on automation, digitalization, and advanced technologies to improve productivity, yet these developments may generate physical, cognitive, and psychosocial challenges for employees. This study aims to analyze human-centered industrial engineering approaches in improving productivity and employee wellbeing within modern production systems. A qualitative library research approach was employed by examining relevant books, peer-reviewed journal articles, scientific publications, research reports, and previous studies. Data were collected through systematic literature review and analyzed using content analysis to identify patterns, relationships, and key findings related to human-centered engineering, productivity, and employee wellbeing. The findings indicate that human-centered approaches can support productivity through improved work-system design, ergonomics, human–technology interaction, employee participation, and reduced physical and cognitive workload. At the same time, these approaches contribute to employee wellbeing by addressing physical, cognitive, and psychosocial factors. The study concludes that integrating human-centered principles into industrial engineering provides a sustainable pathway for jointly optimizing productivity and employee wellbeing in modern production systems.

Abstract

The food and beverage subsector is one of the largest contributors to the growth of Micro, Small, and Medium Enterprises (MSMEs) in Indonesia, yet most business owners have not implemented a structured performance measurement system, making it difficult to evaluate business sustainability. This study aims to map and synthesize performance measurement methods applied in food and beverage MSMEs through a Systematic Literature Review (SLR) approach. The article selection process followed the PRISMA flow (identification, screening, eligibility, and inclusion) on national publications from 2016–2026 obtained from Google Scholar, Garuda, and online journal repositories, using the keywords “performance measurement”, “MSMEs”, “food and beverage”, and “balanced scorecard”. A total of 28 relevant sources were analyzed thematically. The results show that the Balanced Scorecard (BSC) is the most dominant method used due to its ability to integrate financial and non-financial perspectives, followed by the Performance Prism, Objective Matrix (OMAX), Integrated Performance Measurement System (IPMS), and financial-statement-based approaches such as SAK EMKM. This review also identifies a research gap, namely the limited number of studies integrating sustainability and digitalization indicators into the performance measurement framework of culinary MSMEs. These findings are expected to serve as a reference for practitioners and researchers in designing applicable performance measurement models for food and beverage MSMEs
