Abstract

The aim of the experiment is to determine the optimal level of addition of maize sprout extract to improve the nutritional and the sensory characteristics of soyghurt intended for dietetic food of ones with coronary heart diseases. The experiment is carried out in a completely randomized design.  Six levels of maize sprout extract i.e. 0 %, 10 %, 20 %, 30 %, 40 % and 50 % respectively, were added to soymilk.  Parameters observed include fat, protein, N-amino content, protein quality (Protein Score and % Net Dietary Protein Efficiency), and the sensory characteristic, viscosity, taste, aroma and color of the soyghurt produced. The result showed  that an addition of maize sprout extract at a level of 30 % to soymilk is found to be an optimum one to produce good quality soyghurt.  It will reduce the fat content from 1.43 % to 0.82 %, but increase the level of unsaturated fatty acid of the soyghurt.  It also result in the reduction of the protein of the formula from 5.67 % to 4.44 % and increase of  N-amino from 1120 ppm to 1290 ppm.  The improved formula soyghurt contains 0.82 % fat, 4.44 % protein, 1290 ppm N-amino, 51.98 Protein Score and Net Dietary Protein Efficiency of 7.25 %, and it is still considered to be acceptable in terms of viscosity, taste, aroma and color.   Keywords: soyghurt, maize sprout, dietetic food

Abstract

This research was focused on development of strategic formation for tennage manufacture in Yogyakarta. Based on Primary and secondary data, factors of strength, weakness, opportunity, and threat were determined. From these factors, strategy matrices was arranged which gave four alternative strategy. They are SO strategy (strength-opportunity), WO strategy (weakness-opportunity), ST strategy (strength-threat), and WT strategy (weakness-threat). To obtain strategy priority, assessment using AHP method (Analytical Hierarchy Process) was carried out. From assessment using AHP method showed that Production and Technology Development strategy was the first priority. The second and third priority was Increasing Quality and Quantity of Raw Material, and Human Resources Development. Market Development and Supporting industry Development were the fourth and fifth priority in tennage industries development.  Each group of strategy consists of several development alternative strategies.   Keyword: development strategic, tennage manufacture, SWOT analysis, and AHP method

Abstract

Globalization impact and economics crisis in Indonesia has been  changed Indonesiaeconomics structure. Many manufacture industries have been shut down, especially which issupported by imported raw material. This is certainly a very clear proof that our industrialfoundation is not rigid. Goverment has changed industrial development strategy into  industrialcluster approach to survive this crisis. There are 3 model to analyze industrial cluster, i.e. CollectiveEfficiency,  Flexible Specialization, and Porter Diamond Model.  This research was focused on studying industrial cluster, with case study on tennagemanufacture in Yogyakarta, based on Porter Diamond Model. Porter Diamond Model consist of four determinant, i.e. (1) factor conditions, (2) demand condition, (3) firm strategy, structure, andrivalry, and (4) related and supporting industry.

Abstract

Research was aimed to develop the cane-scale queuing system at PG Pandjie, Situbondo, and to find good solution to fix the waiting line problem.  Based on this research the queuing model that used in cane scale is (M/M/1):( FIFO/∞/∞) with arrival rate (λ) 84 truck/hour, service rate (µ) 39 truck/hour, and average waiting time in the system is 7 hours and 3 minutes. To improve this system performance, there are 3 alternative, first alternative is to decrease the service time.  Therefore, the service rate will increase to 45 trucks per hour. This alternative will decrease average waiting time in the system to 5 hours 45 minutes. Second alternative is to add a service facility. This alternative will decrease average waiting time to 47 minutes. Third alternative is combining the first alternative and second alternative. Average waiting time in the system decreases until 11 minutes if this alternative is implemented. Based on utility factor and probability, costumer must wait.  The best alternative to solve the waiting line problem in cane scale station is third alternative.  This is due to this alternative has utility factor that equal than 1 and the probability for costumer to wait is smaller than the other alternative. Keywords: cane-scale station queuing system, modelling, utility factor
