Abstract

Abstrak Pada banyak negara berkembang, defisiensi vitamin A menjadi masalah kesehatan masyarakat yang serius. Pemanfaatan bahan pangan nabati yang dapat menjadi sumber utama vitamin A merupakan salah satu solusi untuk mengatasi masalah tersebut. Daun singkong adalah salah satu bahan pangan nabati yang kaya β-karoten, dapat memberikan kontribusi terhadap kebutuhan vitamin A, dan mudah didapatkan oleh masyarakat Indonesia. Penelitian ini bertujuan untuk mengetahui adanya pengaruh variasi pengolahan daun singkong terhadap kadar β-karoten. Penelitian ini menggunakan metode eksperimental rancangan acak lengkap (RAL) dengan unit eksperimental 100 gram daun singkong yang mirip dengan variasi Adira 4, segar, berwarna hijau cerah, tidak ada cacat atau noda pada permukaan kulit, dan bagian pucuk tanaman (3-5 susun daun). Daun singkong dibagi menjadi 4 kelompok perlakuan pengolahan (segar, perebusan dengan air garam, perebusan dengan air garam dilanjutkan perebusan dengan santan, dan perebusan dengan air garam dilanjutkan dengan penumisan dengan minyak goreng) dengan 5 kali replikasi. Kadar β-karoten olahan daun singkong diukur dengan metode spektrofotometri. Hasil menunjukkan kadar β-karoten berbeda secara signifikan pada semua kelompok perlakuan pengolahan (p=0,001). Perlakuan yang satu dengan perlakuan yang lain pada semua pasangan perlakuan juga memiliki perbedaan yang signifikan. Kadar β-karoten olahan daun singkong dari yang tertinggi berturut-turut didapatkan dari pengolahan perebusan dengan air garam (79,534 ± 5,784 µg/g), perebusan dengan air garam dilanjutkan penumisan dengan minyak goreng (65,926 ± 6,244 µg/g), daun singkong segar (43,530 ± 11,062 µg/g), dan perebusan dengan air garam dilanjutkan perebusan dengan santan (19,022 ± 3,509 µg/g). Variasi cara pengolahan mempengaruhi kadar β-karoten dalam daun singkong akibat faktor-faktor pengolahan, seperti suhu, pH, waktu, matriks pangan, dan pemakaian minyak kelapa sawit. Daun singkong sebaiknya direbus dengan air garam untuk memperoleh manfaat β-karoten secara optimal. Vegetables become the main source of vitamin A to solve the problem. Cassava leaves are rich of β-carotene and easily obtained by Indonesians. This study aimed to determine the effect of processing practices of cassava leaves on the β-carotene content. This study used an experimental method completely randomized design (CRD) with an experimental unit of 100 grams of cassava leaves, which are similar to the variation Adira 4, fresh, bright green, no defects or stains on the leaf surface, and the shoots of plants (3-5 stacks). Cassava leaves were divided into 4 treatment groups of processing (fresh, boiling with salt water, boiling with salt water followed by boiling coconut milk, and boiling with salt water followed by sauteing with cooking oil) with 5 replications. β-carotene content of processed cassava leaves was measured by spectrophotometry method. The results are differed significantly in all groups (p = 0.001). One with another treatment from all couples treatments also had significant differences. β-carotene content of processed cassava leaves from the highest was obtained from the processing of boiling with salt water (79.534 ± 5.784 µg/g), boiling with salt water followed by sauteing with cooking oil (65.926 ± 6.244 µg/g), fresh cassava leaves (43.530 ± 11.062 µg/g), and boiling with salt water followed by boiling with coconut milk (19.022 ± 3.509 µg/g). Variation of processing practices affected β-carotene in cassava leaves due to the processing factors, such as temperature, pH, time, food matrix, and the use of palm oil. Abstract

Cardiovascular disease is the number one cause of death in the world. In Indonesia, heart and blood vessel disease continues to increase and will provide a burden of morbidity, disability and socio-economic burden to the families of sufferers, the community, and the country (MOH, 2013). Efforts to obtain healing from an illness, including cardiovascular disease, require proper treatment. Besides treatment, food is one of the supporting factors to accelerate the healing of diseases. The purpose of this study was to determine the level of consumption of energy, carbohydrates, proteins, fats in the porridge soft heart diet and the steamed soft heart diet with the length of stay of congestive heart failure patients in Rumah Sakit Tk. II Dr. Soepraoen, Malang. This research was conducted in June-July 2019. The results showed that the level of energy consumption, carbohydrates, protein, fat in the porridge soft heart diet and the steamed soft heart diet for the length of stay of congestive heart failure patients have similarities. On the porridge soft heart diet and the steamed soft heart diet both had long hospital stay which is 2 respondents, each of which had 5 days of hospital stay and short hospital stay which is 1 respondent, which had 4 days of hospital stay. Further research needs to be done regarding the level of consumption of energy, carbohydrates, proteins, fats on the porridge soft heart diet and the steamed soft heart diet with the length of stay of congestive heart failure patients with a larger sample size and different research methods.

Abstract

Abstrak: Kegiatan Pengabdian Kepada Masyarakat (PKM) di desa Balongdowo dan desa Balonggabus Kecamatan Candi Kabupaten Sidoarjo, dilakukan pada kader posyandu dengan membentuk ruang ibu sayang anak (RAISA) sebagai wadah dalam melakukan kegiatan yang dapat meningkatkan pengetahuan dan ketrampilan kader posyandu sehingga menjadi kader posyandu yang ready, response, dan smart. Saat pembentukan RAISA, sekaligus dilakukan FGD (focus group discussion) di masing-masing desa untuk menggali pengalaman dan hambatan terkait perilaku menyusui eksklusif. Kegiatan FGD terdiri dari beberapa tahapan yaitu memberikan 14 pertanyaan seputar ASI eksklusif pada tiap kader posyandu, selanjutnya tiap kader posyandu menjawab semua pertanyaan secara bergantian, dan pemberian materi dari narasumber yaitu bidan Polindes yang ada di tiap desa. Dari hasil FGD diperoleh informasi bahwa hambatan perilaku menyusui terbesar adalah ibu bekerja sehingga bayi diberikan susu formula dengan alasan agar bayi tidak rewel dan mudah ditinggal bekerja, serta masih adanya budaya pemberian pisang yang dicampur nasi untuk bayi usia 2 minggu ke atas. Usulan pelatihan dari kader posyandu antara lain teknik memerah ASI, perawatan puting susu hamil, perawatan payudara nifas, cara memandikan bayi, cara menyendawakan bayi, berbagai macam posisi menyusui, pijat bayi untuk tumbuh kembang, senam nifas, dan senam hamil. Dari hasil FGD ini selanjutnya akan disusun modul sebagai panduan dalam memberikan pelatihan pada kader posyandu. Abstract:  Community Service Activities (PKM) in Balongdowo and Balonggabus Villages, Candi Subdistrict, Sidoarjo Regency, were carried out on posyandu cadres by forming mother-to-child room (RAISA) as forum for activities that can increase the knowledge and skills of Posyandu cadres so that they become ready, response, and smart posyandu cadres. During the formation of RAISA, a focus group discussion (FGD) was held in each village to explore experiences and obstacles related to exclusive breastfeeding. The FGD activity consisted of several stages, namely giving 14 questions about exclusive breastfeeding to each posyandu cadre, then each posyandu cadre answered all the questions in turn, and providing material from the resource person, namely the Polindes midwife in each village. From the results of the FGD, information was obtained that the biggest obstacle to breastfeeding behavior was that the mother worked so the baby was given formula milk on the grounds that the baby was not fussy and easy to leave to work, and there was still a culture of giving bananas mixed with rice to babies aged 2 weeks and over. The training proposals from posyandu cadres include milking techniques, care for pregnant nipples, postpartum breast care, how to bathe babies, how to burp a baby, various breastfeeding positions, massage for growth and development, postpartum exercise, and pregnancy exercises. From the results of this FGD, a module will be compiled as a guide in providing training to posyandu cadres.

Abstract

Latar belakang : Prevalensi DM di Rumah Sakit Tk. II dr. Soepraoen Malang sebesar 3,1%. Penurunan glukosa darah dapat dicapai dengan beban glikemik yang rendah. Dipelajari bagaimana konsumsi energi, protein, dan serat berhubungan terhadap kadar glukosa darah. Tujuan : Mengetahui hubungan antara beban glikemik Diet DM, tingkat konsumsi energi, protein, dan serat dengan kadar glukosa darah pasien DM Tipe 2. Metode : Studi ini menggunakan jenis penelitian observasional analitik dan rancangan survey cross sectional. Sampel yang digunakan yaitu 15 orang pasien rawat inap dengan diagnosa ataupun riwayat DM Tipe 2 pada 24 Mei-12 Juni 2023. Teknik pengambilan sampel menggunakan accidental sampling. Analisis data menggunakan korelasi rank spearman. Hasil : Sebagian besar pasien berusia 55-64 tahun, berjenis kelamin perempuan, tidak bekerja, memiliki status gizi normal, memiliki komplikasi pada sistem kardiovaskular, dan diberikan jenis pengobatan insulin oleh dokter, beban glikemik Diet DM pasien rendah, tingkat konsumsi energi pasien kurang, tingkat konsumsi protein seimbang antara kurang dan baik, dan tingkat konsumsi serat pasien baik. Simpulan : Tidak ada hubungan antara beban glikemik diet DM, tingkat konsumsi energi, dan serat dengan kadar glukosa darah pasien DM Tipe 2 di Rumah Sakit Tk. II dr. Soepraoen Malang. Ada hubungan antara tingkat konsumsi protein dengan kadar glukosa darah pasien DM Tipe 2 di Rumah Sakit Tk. II dr. Soepraoen Malang. Kata Kunci : Beban Glikemik, Diet DM, Tingkat Konsumsi, Zat Gizi

Abstract

Latar Belakang: Gagal ginjal kronis menjadi masalah kesehatan masyarakat global dengan prevalensi dan insidensi gagal ginjal yang meningkat, prognosis yang buruk dan biaya yang tinggi. Pasien ginjal kronis memerlukan terapi hemodialisis untuk menggantikan fungsi ginjal dalam membersihkan darah dan mengeluarkan cairan berlebih yang tidak bisa dikeluarkan melalui urine. Selain hemodialisis sebagai terapi medis, pasien gagal ginjal kronis juga sangat memperlukan perhatian khusus terkait dengan pengaturan dietnya. Tujuan: Penelitian ini bertujuan mengetahui kepatuhan diet dan hubungannya dengan tingkat konsumsi (protein, natrium, kalium dan cairan) pasien gagal ginjal kronis yang menjalani hemodialisis di RSUD Kabupaten Kediri. Metode: Desain penelitian yang digunakan bersifat deskriptif menggunakan pendekatan cross sectional dengan jumlah responden sebanyak 20 rang pasien yang menjalani hemodialisis rawat jalan. Pengumpulan data kepatuhan diet menggunakan recall 24 jam, kuesioner dan data tingkat konsumsi menggunakan food record selama enam hari. Hasil: Hasil penelitian dengan uji spearman-rho didapatkan hasil nilai ?-value 0,043 maka nilai p (0,043) < ? (0.05) yang artinya terdapat hubungan antara kepatuhan diet dengan tingkat konsumsi pasien yang menjalani hemodialisis di RSUD Kabupaten Kediri. Simpulan: Pasien yang patuh menjalankan diet sesuai anjuran memiliki tingkat konsumsi yang mendekati kebutuhan dibandingkan dengan pasien yang tidak patuh dalam menjalankan diet. Abstract

Hypertension is a non-communicable disease that is a health problem in the world, based on Riskesdas data, the prevalence of hypertension sufferers in the population aged 18 years in Indonesia has increased from 25.8% in 2013 to 34.1% in 2018. (Ministry of Health, 2019). Celery has a weakness in taste, it is necessary to add other food ingredients, namely strawberries and give the name APIGA Drink from the Latin name, celery (Apium graveolens L) and strawberry (Fragaria sp). The purpose of this study was to determine the potential of celery (Apium graveolens L) and strawberries (Fragaria sp) as APIGA functional drinks (Apium and Fragaria) on systolic and diastolic blood pressure in outpatient hypertension patients at Yosomulyo Public Health Center Banyuwangi. This type of research is pre-experimental, with a one-group pretest-pottest design, with 30 patients as respondents. Giving drink once a day for 3 consecutive days as much as 250 ml/g. Normality test using Shapiro Wilk. Statistical analysis used the Wilcoxon signed test and paired t-test. The average systolic blood pressure before being given the APIGA functional drink intervention was 162.23 mmHg in the stage II hypertension category and the average diastolic blood pressure was 94.67 mmHg included in the stage I hypertension category. The average systolic blood pressure after being given the APIGA functional drink intervention was 145.57 mmHg in the category I hypertension and the average diastolic blood pressure was 84.20 mmHg included in the prehypertension category. It can be concluded that there is a significant effect between systolic and diastolic blood pressure in patients with hypertension after being given the APIGA functional drink intervention on the blood pressure of outpatients with hypertension at Yosomulyo Public Health Center Banyuwangi with p value = 0.000. Abstract

The nutritional problem that young women are currently susceptible to is anemia. Anemia is caused by low hemoglobin levels, menstruation in adolescent girls, nutritional status, lack of food intake containing protein and iron, infections, low nutritional knowledge, and others. This study aims to analyze the relationship between nutritional knowledge, protein and iron intake, and nutritional status with hemoglobin levels in young women at SMAI Kepanjen. The research method uses a Spearman correlation analytical survey with a cross sectional approach. The population in this study was all class XI female students at SMAI Kepanjen totaling 106 people with a sample of 56 people. The sampling technique uses simple stratified random sampling. The results of the Spearman correlation statistical test analysis show that there is a relationship between nutritional knowledge and hemoglobin levels (p= 0.003), there is a relationship between protein intake and hemoglobin levels (p = 0.000) and iron intake and hemoglobin levels (p = 0.039) while there is a relationship between status. nutrition on hemoglobin levels (p = 0.000). It is hoped that young women can increase their knowledge and gain insight into nutrition by providing education in collaboration with nutritionists at the Kepanjen Community Health Center and SMAI Kepanjen and consuming blood supplement tablets simultaneously with SMAI Kepanjen students once a week and supervised by UKS teacher.

Abstract

Diabetes Mellitus (DM) and Hypertension are global health emergencies as declared by the World Health Organization. Hypoalbuminemia, often associated with severe illnesses, disrupts physiological processes and hinders recovery. This study developed and evaluated a modified enteral formula for diabetic patients with complications using local ingredients, specifically kiwifruit juice and egg white extract, known to reduce blood pressure and enhance albumin levels. The study employed a true-experimental design with a Completely Randomized Design (CRD). Three formulations were created by varying the proportions of diabetic milk, kiwifruit juice, and egg white extract: P1 (60:16:24), P2 (60:12:28), and P3 (60:8:32). The formulas underwent nutritional value analysis, viscosity testing, and organoleptic evaluations covering color, aroma, texture, and taste. Trained panelists assessed acceptability, and results were presented descriptively and in tabular form. Results showed that all formulas had similar energy content: P1 and P2 at 1.13 kcal/ml, and P3 at 1.12 kcal/ml. Viscosity tests confirmed P2 and P3 met optimal standards for enteral formulas. Organoleptic tests revealed P2 had the most preferred sensory attributes, including a fragrant aroma, smooth texture, and balanced taste. Acceptance tests also favored P2 for its superior sensory properties. In conclusion, P2 (60:12:28) was the most favorable formula, offering optimal nutritional value, viscosity, and sensory appeal. This formula demonstrates potential as a dietary intervention for diabetic patients with hypoalbuminemia, integrating local functional ingredients to support health and recovery.

Abstract

This study was to examine eating habits, energy and nutrient intake, physical activity and blood glucose levels of overweight adolescents in Blitar city. Descriptive qualitative research method with case study design. The research subjects were 30 high school students in the overweight nutritional status category. Eating habits, energy intake and nutrients were measured using the FFQ method and 2 x 24 hour recall, physical activity using the PAL method and blood glucose levels using a glucometer. A total of 30 overweight adolescents, 25 female and 7 male, had a BMI between 25-29. Overweight adolescents have unbalanced eating habits and do not usually eat breakfast or dinner, the type of food consumed has a low glycemic index with a portion less than the RDA. Energy and nutrient intakes include a severe deficit (<70% of the RDA), physical activity including light and blood glucose levels when the lowest is 81 mg/dl and the highest is 144 mg/dl. It was concluded that overweight adolescents consumed unbalanced food, did not get adequate energy and nutrient intake, and had low activity. Blood glucose levels tend to be high and can be a major risk factor for type 2 diabetes.

Abstract

Anemia pada remaja putri masih menjadi masalah kesehatan masyarakat di Indonesia, dengan prevalensi sebesar 32% secara nasional, 42% di Provinsi Jawa Timur, 20,28% di Kabupaten Malang, dan mencapai 47,12% di Kecamatan Wajak pada tahun 2023. Salah satu upaya untuk menekan prevalensi anemia adalah melalui edukasi gizi menggunakan media permainan. Penelitian ini bertujuan untuk menguji efektivitas edukasi gizi berbasis permainan terhadap peningkatan pengetahuan gizi, konsumsi protein, kepatuhan konsumsi tablet tambah darah (TTD), dan kadar hemoglobin (Hb) pada remaja putri. Penelitian ini menggunakan rancangan quasi experiment dengan desain one group pre-test and post-test. Sampel terdiri dari 40 siswi kelas 7 di SMPN 01 Wajak yang memiliki kadar Hb sedang (10,9–11,9 gr/dl). Intervensi berupa permainan dadu edukatif dilakukan setiap minggu selama tiga minggu. Hasil penelitian menunjukkan peningkatan signifikan pada pengetahuan gizi dari rerata 42,8 (kategori kurang) menjadi 75,8 (kategori baik), konsumsi protein dari 44,3 gr/hari menjadi 50,5 gr/hari, dan kepatuhan minum TTD meningkat sebesar 80%. Kadar Hb juga mengalami peningkatan dari 10,8 gr/dl menjadi 13,06 gr/dl. Kesimpulannya, edukasi gizi berbasis permainan terbukti efektif dalam meningkatkan pengetahuan gizi, konsumsi protein, kepatuhan konsumsi TTD, dan kadar Hb pada remaja putri. Disarankan agar metode ini diterapkan secara berkelanjutan dengan melibatkan UKS, guru, dan puskesmas untuk cakupan yang lebih luas
