Abstract

The food supply chain has a complex structure because it is a perishable product and involves many stakeholders. Because of this complexity, the food supply chain will confront a few sorts of risks. This study means to create a risk assessment model in the food supply chain. Pareto analysis was used to identify risks based on the responses of 5 experts from companies and academics in the food sector. Then, the Decision-Making Trial and Evaluation Laboratory (DEMATEL) method based on grey system theory was utilized to evaluate the causal relationship between identified risks in the food supply chain. Furthermore, the grey-DEMATEL method was developed by combining it with the Interpretive Structural Modeling (ISM) method which can construct and visualize the relationship between risks into a graphic diagram. By integrating the three methods, three critical risks are found is lack of skilled labor, legal and regulatory, and communication failures. The results of this study can help companies to formulate risk mitigation strategies that have been identified in the food supply chain. This research can be expanded by verifying the data statistically using the system dynamics modeling (SDM) method or other statistical methods. Keywords: Decision-Making Trial and Evaluation Laboratory (DEMATEL), Food Risk, Grey system theory, Interpretive Structural Modeling (ISM), Supply Chain Risk

Abstract

The use of Food Additives (BTP) has become increasingly common in food products, especially school snacks. This is a big challenge, where school students need to be educated about Food Additives in the food or drinks they consume, including the types that are allowed and prohibited. Students of SMKN 4 Balikpapan have often consumed snacks containing Food Additives without realizing it. Through this community service program, it is hoped that students' knowledge about Food Additives through socialization and mentoring can increase. This activity includes socialization, interactive discussions, and pre-test and post-test evaluations to measure the effectiveness of the program. It is hoped that after receiving this socialization, students' awareness will increase and can create healthy consumption habit among students.

Abstract

The distribution route is a common issue faced by companies. Companies need to distribute goods to optimize delivery and operational shipping costs. Company XYZ distributes goods to 9 retailers. The problem encountered is that delivery relies only on the intuition of the delivery operators, which is considered suboptimal. Therefore, finding the shortest distribution distance is necessary, one of which can be done using an evolutionary algorithm. An evolutionary algorithm is a population-based stochastic search used to find optimal solutions to a problem. Additionally, distributing goods using the nearest neighbor method determines the route based on the shortest distance between retailers. Thus, the purpose of this study is to find the shortest distribution distance for goods delivered to 9 retailers using an evolutionary algorithm and the nearest neighbor method. The results show that using the evolutionary algorithm, the minimum total distance is 54.5 kilometers, with the route being warehouse-2-1-5-9-4-6-7-3-8-warehouse, while using the nearest neighbor method yields a distance of 55 kilometers, resulting in a difference of 0.5 kilometers.

Abstract

Distribusi produk air minum dalam kemasan merupakan salah satu tantangan dalam manajemen logistik yang memerlukan pendekatan optimal untuk memaksimalkan keuntungan dengan sumber daya yang terbatas. Knapsack Problem adalah salah satu pendekatan yang digunakan untuk mengatasi masalah optimasi distribusi dengan mempertimbangkan kapasitas kendaraan sebagai kendala utama. Dalam penelitian ini, distribusi produk air minum dalam kemasan dengan variasi kemasan 220 ml, 330 ml, 600 ml, dan 1500 ml dianalisis menggunakan metode Integer Programming (IP). Kendala yang dihadapi meliputi batas volume truk pengangkut sebesar 10.003.875 cm³ dan dimensi karton yang bervariasi untuk setiap ukuran produk. Penelitian ini bertujuan untuk mengoptimalkan distribusi produk air minum dalam kemasan guna memaksimalkan keuntungan dengan memanfaatkan kapasitas truk secara efisien. Hasil penelitian menunjukkan bahwa solusi optimal dicapai dengan mengangkut 1 kotak air minum kemasan 220 ml dan 378 kotak air minum kemasan 330 ml, menghasilkan keuntungan sebesar Rp4.735.000 serta memanfaatkan 99,993% kapasitas truk. Penelitian ini membuktikan bahwa metode Integer Programming efektif dalam menyelesaikan Knapsack Problem dalam konteks distribusi produk air minum dalam kemasan dan dapat menjadi referensi dalam pengambilan keputusan distribusi di sektor industri.Keywords: Knapsack Problem; Integer Programming; Distribui Produk; Optimalisasi Logistik; Kapasitas Kendaraan.

Abstract

The cracker industry is a growing food sector in Indonesia. UMKM Kerupuk Adie Mandiri in North Balikpapan produces onion crackers made from garlic. This study aims to analyze the risks in its production process using the House of Risk (HOR) method. This method helps identify, classify, and prioritize risks based on impact and probability. Business process identification was carried out using the SCOR approach and 19 risk events and 28 risk causes were found. With HOR 1 and the help of the Pareto diagram, 3 dominant risk causes were selected. A total of 13 mitigation strategies were formulated, and through HOR 2, strategies that were easy and dif icult to implement were determined. These results are expected to help UMKM in risk management and increasing operational ef iciency, and can be a reference for similar industries.
