Abstract

Probiotik merupakan mikroorganisme hidup yang dapat berguna untuk meningkatkan produktivitas ternak baik kecernaan pakan maupun kesehatan. Saluran pencernaan merupakan salah satu sumber probiotik. Bakteri asam laktat (BAL) merupakan mikroorganisme yang banyak dimafaatkan sebagai probiotik untuk ternak unggas dan mempunyai keunggulan mampu menghasilkan enzim ekstraseluler. Penelitian ini dilakukan dengan mengisolasi bakteri dari saluran pencernaan Entok (Cairina moschata) untuk mendapatkan bakteri asam laktat dari genus Pediococcus spp. dan Lactobacillus spp. sebagai kandidat probiotik unggas. Isolasi dilakukan dengan mengambil isi dalam pada saluran pencernaan kemudian diencerkan dengan pengenceran bertingkat dan dibiakkan dengan metode pour plate pada media MRS. Kemudian dipilih koloni bakteri yang berbeda untuk isolasi lebih lanjut. Isolat bakteri diambil dari 3 sumber yakni proventrikulus, duodenum, dan ileum. Identifikasi dilakukan secara morfologi dan fisiologi. Identifikasi morfologi meliputi identifikasi koloni bakteri dan sel bakteri. Identifikasi secara fisiologi dilakukan dengan uji katalase, pembentukan gas H2S, produksi indol, motilitas, dan kemampuan memfermentasi karbohidrat. Kakteristik bakteri Pediococcus spp. dan Lactobacillus spp. sebagai kandidat probiotik unggas dilihat kemampuan menghasilkan enzim fitase dan protease, serta aktivitas antimikroba patogen Escherichia coli ATCC 25922 dan Staphylococcus aureus. Berdasarkan hasil identifikasi secara morfologi, fisiologi, kemampuan dalam menghasilkan enzim fitase dan protease, serta aktivitas antimikroba 5 isolat untuk identifikasi berdasarkan gen sekuen 16S rRNA. Hasil sekuensing menunjukkan isolat D3 merupakan Pediococcus pentosaceus strain AM26, isolat P2 merupakan Pediococcus pentosaceus strain L1, dan isolat M1S dan M8S merupakan Lactobacillus salivarius strain RBL73, serta M3S merupakan Lactobacillus salivarius strain 2968.

Abstract

This study aims to determine the antioxidant, protein, and fat content of chicken nuggets through the addition of goat skin and bone gelatin which was previously pretreated with Lactobacillus plantarum 1UHCC and acetic acid. Data were processed using a completely randomized design (CRD) and tested further using Duncan's test with treatments including chicken nuggets with the addition of skin gelatin through Lactobacillus plantarum pretreatment (CGSP), chicken nuggets with the addition of skin gelatin through acetic acid pretreatment (CGSA), chicken nuggets with the addition of bone gelatin through Lactobacillus Plantarum pretreatment (CGBP), chicken nuggets with the addition of bone gelatin through acetic acid pretreatment (CGBA) and control (without adding gelatin), the treatment was repeated 4 times. The results of this study were the highest antioxidant in chicken nuggets, namely with the addition of L. plantarum pretreatment gelatin, which was 20.82%, while the protein content was 57.58%, while the highest fat content was in chicken nuggets with the administration of acetic acid pre-treated goat bone gelatin (CGBA) 3.41%. This study concluded that chicken nuggets with the addition of L. plantarum gelatin pretreatment contained higher antioxidants than the control.

Abstract

The high needs of community for poultry products, especially duck eggs must be balanced with the availability of quality feed. Good feed will be positively correlated with increased productivity and product quality. This study aims to evaluate the effect of earthworm supplementation to duck feed on increasing production and quality of duck eggs. The research material used was ducks aged 6 months as many as 60 heads which were divided into 2 treatments and 5 replications, each replication containing 6 female local ducks. Feed treatment was divided into 2, basal feed (rice bran 70% + corn 30%) and treatment feed (basal feed + 20% fresh earthworms). The results of this study showed a significant difference in egg production (12 ± 1.58 eggs and 20 ± 3.87 eggs) (P> 0.05) but not significantly different in egg weight (61.9 ± 6.58 and 60.4 ± 6.06), egg length and egg width (60.06 ± 2.05 and 53.81 ± 9.64). The results of experiments on egg resistance against several pathogenic bacteria showed that there was an increase in inhibitory power against Salmonella typhy, Escherichia coli, Bacillus cereus and Staphylococcus aureus on egg white (albumen) of duck eggs which added 20% of worms in the feed.
