Abstract

ABSTRAK Daun kelor ditetapkan sebagai super food dan fungsional food, kandungan gizi yang sangat tinggi, lengkap serta berkasiat sebagai penunjang kesehatan tubuh. Daun  kelor yang dipreparasi sebagai bentuk tepung memenuhi syarat sebagai komponen pembuatan MP-ASI. Tujuan Pengabdian Masyarakat ini adalah untuk memberdayakan Kelompok Wanita Tani dalam memanfaatkan Daun kelor  sebagai bahan dasar MP-ASI melalui pelatihan di Kelurahan Rawa Makmur. Solusi permasalahan yang dilakukan  untuk meningkatkan pengetahuan anggota Kelompok Wanita Tani dengan pelatihan selama 2 hari. Metode pelaksanaan diawali tahap persiapan media pelatihan dan instrument, menyusun buku resep  MP-ASI dengan bahan dasar daun kelor. Tahap pelaksanaan dengan pelatihan Kelompok Wanita Tani selama 2 hari dan advokasi ke perangkat Kelurahan Rawa Makmur serta lomba kreasi menu MP-ASI berbahan dasar daun  kelor. Data yang diperoleh kemudian dianalisis dengan membandingkan hasil pre test dan post test. Hasil pengabdian kepada masyarakat menunjukkan bahwa terdapat peningkatan pengetahuan Kelompok Wanita Tani dalam memanfaatkan daun kelor sebagai bahan dasar MP-ASI. Kesimpulan KWT  dapat memanfaatkan daun kelor sebagai bahan dasar MP-ASI melalui pelatihan di Kelurahan Rawa Makmur dengan membuat kreasi menu MP-ASI berbasis daun kelor. Diharapkan dukungan tokoh masyarakat dalam membudidayakan bibit daun kelor sehingga dapat dimanfaatkan masyarakat. Kata Kunci: Pemberdayaan, Pelatihan, Daun Kelor, Bahan Dasar MP-ASI  ABSTRACT Moringa leaves are designated as super food and functional food, with very high nutritional content, complete and efficacious as supporting body health. Moringa leaves prepared as flour meet the requirements as a component for making complementary feeding (MP-ASI). The purpose of this community service is to empower farmer women's groups to utilize Moringa leaves as a basic ingredient for complementary feeding ( MP-ASI)  through training in the Rawa Makmur Village. Problem Solutions are carried out to increase the knowledge of Farmer group members with training for 2 days. The implementation method begins with the preparation stage of training media and instruments. Compiled a MP-ASI recipe book with the basic ingredients of Moringa leaves. The implementation phase included the Women Farmer Group Training for 2 days and advocacy to the Rawa Makmur sub-district apparatus and a competition to create complementary feding ( MP-ASI) menus made from Moringa leaves. The data obtained were analyzed by comparing the results of the pre test and post test. The results of community service show that there is an increase in the knowledge of women farmer groups in utilizing Moringa leaves as a basic ingredient for complementary feeding (MP-ASI). Conclusion KWT can utilize Moringa leaves as a basic ingredient for MP-ASI through training in the Rawa Makmur Village by making MP-ASI menu creations based on Moringa Leaves. It is hoped that the support of community leaders will cultivate Moringa leaf seeds so that they can be utilized by the community. Keywords: Empowerment, Training, Moringa Leaves, Complementary Feeding Materials

Abstract

Anemia occurs when the blood hemoglobin concentration is lower than normal due to a deficiency of one or more nutrients. The impact of anemia on young women is decreased work productivity, stunted growth, more susceptible to infection, reduced body fitness, decreased enthusiasm for learning and decreased achievement The aim of this study was to determine the effect of a combination of intake of protein, vitamin C and blood supplement tablets on hemoglobin levels of young women in Bengkulu. This type of experimental research. The research design is pre-experimental. The statistical test used is the paired t-test. The average protein intake is 64.03 grams, the standard deviation is 1.13. The average intake of vitamin C is 100.5 mg, the standard deviation is 1.91. The mean intake of iron is 66.9 mg, the standard deviation is 1.65. While the average Hb level before treatment was 11.01 g/L, a standard deviation of 1.06 g/L, while the average Hb level after treatment was 13.60 g/L, a standard deviation of 2.63 g/L. P value = 0.0005 which means significant. There was a significant effect of the treatment of giving a combination of protein intake, vitamin C and blood boost tablets consumed by female students for 14 days of treatment on the increase in hemoglobin levels. It is hoped that further research can modify the research design, namely a quasi-experimental design.

Abstract

Malnourished toddlers are directly linked to a lack of energy and protein and infectious disorders like worms. Handling toddlers malnutrition and worm infection might be accomplished by providing supplementary food formulas with consideration for nutrition, health benefits, resource, durability, and the pre-eminence of local food, for example, in the form of biscuits modified with moringa leaves and snakehead fish. The objective of this research is to assess the effect of providing malnourished toddlers with biscuits modified with moringa leaves and snakehead fish on their nutritional condition. This research was classified as an experimental research with Pre and Post Randomized Controlled Group Design. The subjects were toddlers between the ages of 24 to 59 months with malnutrition and worm infection. Each group (malnourished and worm-infected group, malnourished group, and control) consisted of 14 toddlers and was determined by purposive sampling. The research was conducted for two months with the intervention of providing modified biscuits. The modified biscuits were given as much as 60 gr twice daily for two months. The intervention was monitored and evaluated every two weeks. The data were analyzed using the Wilcoxon test, Kruskal Wallis, and Binary Logistic Regression. The provision of biscuits modified with moringa leaves and snakehead fish resulted in a significant increase in nutritional status (p = 0.008), and a distinct increase in nutritional status among malnourished toddlers (p = 0000). The biscuits modified with Moringa leaves and snakehead fish can be used as an alternative snacks to improve the nutritional status of underweight toddlers.

Abstract

Anemia is a condition in which an abnormal number of red blood cells in the body is indicated by a low level of hemoglobin in the blood. Knowledge is the result of knowing after feeling a certain object. Protein is an important nutrient for the human body because it is a source of energy, material and regulator. Intake of vitamin C is an aid in the production of hemoglobin and the growth of red blood cells. Fe is needed for the manufacture of blood plasma which produces red blood cells. Anemia Free Youth Card is a visual-based media in the form of a rectangle containing pictures, question text which serves to explain the pictures shown. This research is a Quasy Experiment research with a treatment group, through media card games, healthy adolescents free of anemia. A sample of 36 young women was taken by purposive sampling. Knowledge of young women before and after being given education through the games method with a p-value of 0.000, then p-value (<0.05), and intake of young women before and after going through a 24 hour recall with a p-value of 0.000, then p-value (<0.05). This shows that there is an influence of the Anemia-Free Healthy Teenage Card Games as a media for educating young girls about anemia in junior high schools 19 in Bengkulu City and can be used as an alternative learning media for schools to support female students in improving learning outcomes and providing adequate nutrition during growth during adolescence.

Abstract

Puberty is a period of change from childhood to adulthood, during which rapid growth occurs, including reproductive function, which influences developmental changes both physically, mentally, and in social roles, characterized by biological and psychological growth and development. This study aims to determine the relationship between knowledge of anemia, compliance with consuming iron supplement (IS), protein, and tannin intake with the incidence of anemia in adolescent girls at SMP Negeri 19 Bengkulu City in 2023. This research is a quantitative study. The research design is cross-sectional with a person correlation test analysis. This sample is 44 female teenagers in class 8 of SMP Negeri 19 Bengkulu City. Data collection techniques used observation sheets, knowledge was measured using a questionnaire, compliance with Iron supplement (IS) consumption was measured using a control card for taking blood tablets that had been previously validated, protein and tannin intake was calculated using a 24-hour recall form for 3x recall, and the incidence of anemia was measured using easy touch. This research was conducted on 21 February-20 March 2023. Data analysis uses the person correlation test. The results of this study show that there is no relationship between knowledge of anemia and the incidence of anemia (0.137), there is no relationship between adherence to consuming blood tablets and the incidence of anemia (0.210), between protein intake and the incidence of anemia (0.407), and  between tannin and the incidence of anemia (0.297) in adolescent girls at SMP Negeri 19 Bengkulu City.

Abstract

Supplementary feeding is nutritional supplementation in the form of layer biscuits made with a special formulation and fortified with vitamins and minerals for pregnant women, prioritizing the category of pregnant women with chronic energy deficiency to meet their nutritional needs. Chronic energy deficiency is a state of malnutrition that lasts a long time and is chronic, which can be caused by insufficient protein and energy intake in pregnant women. This study aimed to determine the effect of supplementary feeding on weight gain in chronic energy deficient pregnant women. The method used in this study was a systematic literature review, which was explained through a narrative. Articles taken from Google Scholar, PubMed, and ScienceDirect. The articles taken were articles published from 2010 to 2022, available in full text format, with a quasi-experimental design. The keywords used for the search were “supplementary feeding for pregnant women” AND “weight gain” AND “chronic energy deficiency”. Articles were collected using PRISMA diagrams and summarized into narratives. The results of the study showed that there were 9 identified articles. The results of the analysis stated that there was an effect of supplementary feeding on the weight gain of pregnant women with chronic energy deficiency, with the weight gain of pregnant women with chronic energy deficiency after supplementary feeding, as a whole in the articles obtained, namely 0.1 to 7 kg, with samples of pregnant women with chronic energy deficiency in the first, second and third trimesters. It was concluded that supplementary feeding was effective in increasing the body weight of pregnant women with chronic energy deficiency.Keywords: supplementary feeding; weight gain; pregnant mother; chronic energy deficiency ABSTRAK Pemberian makanan tambahan merupakan suplementasi gizi yang berupa biskuit lapis yang dibuat dengan formulasi khusus dan difortifikasi dengan vitamin dan mineral untuk ibu hamil, dengan memprioritaskan kategori ibu hamil dengan kekurangna energi kronik untuk mencukupi kebutuhan gizi. Kekurangan energi kronik merupakan keadaan malnutrisi yang berlangsung lama dan menahun, yang dapat disebabkan asupan protein dan energi yang kurang pada ibu hamil. Studi ini bertujuan untuk mengetahui pengaruh pemberian makanan tambahan terhadap penambahan berat badan ibu hamil kekurangan energi kronik. Metode yang yang digunakan dalam studi ini yaitu systematic literature review, yang dijelaskan melalui naratif. Artikel diambil dari Google Scholar, PubMed, dan ScienceDirect. Artikel yang diambil adalah artikel yang diterbitkan pada tahun 2010 sampai 2022, tersedia dalam format fulltext, dengan desain eksperimental kuasi. Kata kunci yang dipakai untuk pencarian adalah “pemberian makanan tambahan ibu hamil” AND “penambahan berat badan” AND “kekurangan energi kronik”. Artikel dikumpulkan dengan diagram PRISMA dan dirangkum menjadi narasi. Hasil studi menunjukkan bahwa terdapat 9 artikel yang teridentifikasi. Hasil analisis menyatakan bahwa ada pengaruh pemberian makanan tambahan terhadap penambahan berat badan ibu hamil dengan kekurangan energi kronik, dengan kenaikan berat badan ibu hamil dengan kekurangan energi kronik setelah pemberian makanan tambahan, secara keseluruhan pada artikel yang didapat yaitu 0,1 sampai 7 kg, dengan sampel ibu hamil dengan kekurangan energi kronik trimester I, II dan III. Disimpulkan bahwa pemberian makanan tambahan efektif untuk meningkatkan berat badan ibu hamil dengan kekurangan energi kronik.Kata kunci: pemberian makanan tambahan; penambahan berat badan; ibu hamil; kekurangan energi kronik

Abstract

Stunting is a chronic nutritional problem influenced by multiple factors, including dietary intake and maternal conditions. Low calcium and zinc intakes can hinder bone growth and metabolic processes, thereby increasing the risk of stunting. In addition, short maternal height, as a reflection of past nutritional status, played a role in fetal growth. This study aimed to analyze the association between calcium and zinc intake, maternal height, and the incidence of stunting among children in Bengkulu City. This quantitative study employed a cross-sectional design and was conducted at the Sawah Lebar Primary Health Center, Bengkulu City, from April to May 2024. A total of 77 children aged 6–59 months were selected using simple random sampling. Dietary intake data were obtained through interviews using a semi-FFQ, while nutritional status was assessed using the height-for-age index. Data were analyzed using Pearson’s correlation test. The results showed a significant association between calcium intake (r = 0.636), zinc intake (r = 0.280), and maternal height (r = 0.290) and stunting. In conclusion, the importance of adequate Ca and Zn intake and maternal nutritional status in supporting child growth. Therefore, nutritional interventions should be implemented early, not only for children but also for adolescent girls as future mothers.

Abstract

Pediatric patients with infectious diseases and neurological disorders are at high risk of malnutrition due to increased metabolic needs, infection processes, and limited nutritional intake. Problem: the risk increases in patients with a history of prematurity and neuromuscular disorders such as Cerebral Palsy which can cause difficulty eating and low nutritional intake. The purpose of this study is to describe the nutritional care process for An. MFA, a 5-year-old male 8 months old with a diagnosis of measles, bronchopneumonia, Cerebral Palsy and malnutrition who was treated in the Mina Inpatient Room of Harapan dan Doa Hospital, Bengkulu City. Research method: a case study with a five-step approach of the Standardized Nutrition Care Process (PAGT), including assessment, diagnosis, intervention, monitoring, and nutritional evaluation. Anthropometric results showed poor nutritional status with a BMI/U of -3.64 SD and MUAC 64%. Dietary history showed inadequate intake because the patient since birth only consumed formula milk without additional food. Biochemical examination showed a hemoglobin level of 11.0 g/dL which is still normal. Clinical examination revealed a body temperature of 37.1°C, pulse rate of 121 beats/minute, respiratory rate of 31 breaths/minute, and SpO₂ of 99% with a general condition of moderate illness. Intervention in the form of a High Energy High Protein (TETP) liquid diet was given in stages according to the patient's clinical condition and tolerance. Monitoring over three days showed an increase in energy and nutrient intake and improvements in several clinical parameters, although anthropometric changes were not yet significant. It was concluded that planned and monitored nutritional care plays an important role in meeting nutritional needs, preventing deterioration of nutritional status, and supporting patient recovery

Abstract

Purpose: This study aims to examine the effect of red bean slurry addition on the organoleptic acceptance and protein content of yogurt. Methodology: The research employed a Completely Randomized Design (CRD) with one factor, namely variations in red bean slurry concentration. Organoleptic analysis was conducted using the Kruskal-Wallis test on attributes such as color, aroma, taste, consistency, and overall quality, involving 30 panelists. The most preferred product underwent protein content analysis using the micro Kjeldahl method. Results: Yogurt with 20% red bean slurry addition (F2) showed the highest organoleptic acceptance. The protein content of F2 yogurt increased from 0.56% to 1.30% after 24 hours of fermentation. Findings: The addition of 20% red bean slurry significantly enhanced the organoleptic acceptance and protein content of yogurt. Novelty: This study reveals the potential of red bean slurry as an additive to improve yogurt's organoleptic quality and protein content. Originality: This research contributes to the development of yogurt products enriched with red bean-based ingredients. Conclusions: Yogurt with 20% red bean slurry (F2) is the most preferred product, showing a significant increase in protein content after 24 hours of fermentation. Abstract

ABSTRACT A common problem in elementary school cafeterias is that snacks do not meet balanced nutritional and food safety standards, such as high sugar, salt, and fat content, the use of artificial colors and preservatives, coupled with poor sanitation and hygiene, as well as a lack of knowledge and supervision from teachers, school health unit (UKS) managers, and vendors. The objective of this community service project is to enhance the capacity of these three parties to provide food that is safe, nutritious, and meets health standards. The methods used included interactive lectures, Focus Group Discussions (FGDs), practical workshops on developing healthy menus, serving simulations, and on-site mentoring. The community service partners were teachers, school health unit (UKS) managers, and snack vendors at SDN 71 in Bengkulu City, totaling 17 participants. Evaluation was conducted using pre- and post-tests. The results of the community service program showed an increase in knowledge following the intervention, which consisted of training, discussions, and hands-on practice. The average knowledge score increased from 92.94 to 97.94 Keywords: Healthy Canteen, Balanced Nutrition, Food Safety, Teachers, Elementary School.  ABSTRAK Masalah umum di kantin sekolah dasar adalah jajanan yang tidak sesuai standar gizi seimbang dan keamanan pangan, seperti kadar gula, garam, dan lemak tinggi, penggunaan pewarna serta pengawet buatan, ditambah higiene sanitasi buruk serta minimnya pengetahuan dan pengawasan dari guru, pengelola UKS, maupun pedagang. Tujuan pengabdian ini adalah meningkatkan kapasitas ketiga pihak tersebut dalam menyediakan makanan aman, bergizi, dan memenuhi standar kesehatan. Metode yang digunakan meliputi ceramah interaktif, Focus Group Discussion (FGD), workshop praktik penyusunan menu sehat, simulasi penyajian, dan pendampingan lapangan. Mitra pengabdian adalah guru, pengelola UKS, dan pedagang jajanan di SDN 71 Kota Bengkulu sebanyak 17 peserta. Evaluasi menggunakan pretest dan posttest. Hasil pengabdian menunjukkan peningkatan pengetahuan setelah intervensi berupa pelatihan, diskusi, dan praktik langsung.
