Abstract

The low coverage of exclusive breastfeeding is due to the lack of public understanding of the benefits and importance of exclusive breastfeeding for infant aged 0–6 months, so it is necessary to empower posyandu cadre as breastfeeding counsellor who provide counselling for mothers to Nania health center as counsellor breastfeeding. The purpose of this study is to improving the knowledge and skills of cadres through counseling training of breastfeeding at Nania Health Center Ambon. The community service partner is Nania Health center. The method used is training, assistance, monitoring and evaluation. The number of cadres trained was 40 people. The training took place at Nania health care, on 23–27 October 2019. There was an increase in the knowledge level of cadres about breastfeeding after being given breastfeeding counseling training, where most of the knowledge levels were good (67.5%). Cadres are skilled in providing breastfeeding counselling to mothers who have babies aged 0-6 months or pregnant women.

Abstract

Background: Nomadic life of Nuaulu Tribe results in rearing pattern, eating pattern, and food consumption which affect their nutritional status.Objective: To identify the relationship between rearing pattern, eating pattern, nutrient intake, and nutritional status of under-fives of Nuaulu tribal community at Subdistrict of Amahai, District of Maluku Tengah, Province of Maluku.Method: This was an observational analytical study with cross sectional design. Subjects of the study were 68 under-fives of age 12 to 60 months from Nuaulu Tribal community at Sub district of Amahai. Data of rearing pattern were obtained from interviewing using questionnaire, data of eating pattern from food frequency questionnaire, data of nutrient intake from recall 24 hours, and data of nutritional status from anthropometric measurement. Data analysis used bivariable with chi-square, multivariate with double logistic regression.Results: Most samples had low category of rearing pattern (77.9%) and eating pattern (66.2%); whereas samples intake of energy and protein belonged to adequate category, that were 73.6% and 72.0%, respectively. Nutritional status based on index of weight/age of 20.6% samples belonged to undernourished category and 51.5% samples belonged to stunted category based on index of length/age. There were no significant relationship between rearing pattern and nutritional status based on index of weight/length and weight/age (p > 0.05), but there was relationship between them based on index of length/age (p < 0.05). Eating pattern and nutritional status based on index of weight/length and weight/age had no relationship (p > 0.05), but between eating pattern and nutritional status based on index of length/age had relationship (p < 0,05). There was significant relationship between energy intake and nutritional status based on index of weight/age and length/age (p < 0.05), but there was not based on weight/length index (p > 0.05). There was significant relationship between protein intake and nutritional status based on index of weight/age and length/age (p < 0.05); however the relationship was insignificant based on index of weight/length.Conclusion: There was significant relationship between rearing pattern and nutritional status based on index of length/age and so was between eating pattern and nutritional status based index of length/age. Energy, protein intake and nutritional status based on index of weight/age and length/age also had significant relationship.

Abstract

The purpose of this community service activity is to increase the knowledge and skills of mothers in making Tongka Langit banana and skipjack flours and processing them into biscuits. The method used in this community service activity consists of the preparation of participants, locations, tools and materials, implementation of activities with the delivery of materials and practices. The results of the activity were 30 mothers attended, there was an increase in participants' knowledge about the nutritional value and benefits of tongka langit bananas, skipjack fish, how to make flour and biscuits enriched with tongka langit bananas and skipjack flours. All participants were able/skilled in making biscuits enriched with banana flour tongka Langit and skipjack tuna.

Abstract

Local food diversification is needed to reduce dependence on imported food. Corn is a source of nutrients and bioactive compounds and red beans are a source of vegetable protein, complex carbohydrates, fiber, B vitamins, folasin, thiamine, calcium, phosphorus and iron. The aim of this study was to analyze the organoleptic quality and nutritional quality of biscuits with substitution of corn flour and red bean flour. This type of research is experimental with a completely randomized design (CRD). The organoleptic quality of color, taste, aroma and texture had a significant effect on biscuit products with corn flour and red bean flour substitutions. Treatment 2 was the most preferred by the panelists. The lower the proportion of corn flour, the lower the value of energy, carbohydrates and fat in the biscuits. The higher the proportion of red bean flour, the higher the protein value of the biscuits. Substitution of corn flour and red bean flour has a significant effect on the organoleptic quality and nutritional quality of biscuits. Further studies are needed to see the content of vitamin, minerals and the self life of biscuits with substitution of corn flour and red bean flour.

Abstract

Potong pele stunting is the slogan used by the Maluku government in handling stunting in Maluku. Central Maluku Regency is the district with the highest prevalence of stunting, which was 15,9% in 2020, and has been a locus of stunting since 2019. This community service aims to train posyandu cadres in providing counseling on local food-based infant and young child feeding (IYCF) and monitoring growth. The methods used are training, practice, monitoring, and evaluation. The number of cadres trained was 18 people. The results of the service showed an increase in the knowledge of cadres as indicated by the level of knowledge of the majority of participants before being given training in the less category as much as 70%. After being given training, most of them had sufficient (55%) and good (40%) levels of knowledge. Cadres are skilled in counseling mothers of toddlers about local food-based feeding infants and young children and monitoring growth.

Abstract

Adolescence is the most important period in life after infancy, it occurs growth and biological changes, including sexual maturation, weight gain, and height increase (TB) reaching 20% and 50% body weight. Indonesia adolescents show a prevalence of being underweight at the age of 16-18 years by 8.1%, (1.4% very thin and 6.7% thin) and obese by 13.5% (9.5% obese and 4.0% obese). Meanwhile, in Maluku Province it is very thin at 1.27%, obesity at 2.61%. For West Seram Regency, the nutritional status data of the BMI/U index is very thin by 3.59% and by 3.45%. From this problem, this study aims to analyze the level of knowledge about diet with the nutritional status of adolescent girls at SMA Negeri 15 Seram Barat, West Seram Regency. The research method uses an analytical observational research design with a Cross Sectional approach. Sample selection was carried out by Axial sampling totaling 46 people. The results of the study with bivariate analysis showed that the level of knowledge about the diet with nutritional status (BMI/U) of adolescent girls at SMA Negeri 15, Latu Village, Amalatu District, West Seram Regency showed a value of > 0.05, which is for the level of knowledge with nutritional status statistically (0.000 > 0.192). So it can be concluded that nutritional knowledge and nutritional status are not related, meaning that a young woman with less knowledge does not necessarily have a poor nutritional status, because knowledge is only one of the factors.

Abstract

Nutrition is one of the most critical components influencing the immune system. Good nutrition prevents and accelerates recovery from infectious diseases, including tuberculosis. This community service project improves mothers’ knowledge of balanced nutrition to strengthen their immunity. The activities included training 30 homemakers in Dusun Bandari through lectures, discussions, and the distribution of informative booklets. Before the training, the participants completed a pretest questionnaire and material presentation, discussion, and post-test evaluation. The results indicated that most participants had limited knowledge before the training; however, after the training, most displayed a good understanding and could identify balanced, nutritious foods that enhance immunity to help prevent tuberculosis. In conclusion, conducting training or education on balanced and healthy foods is essential to encourage communities to apply such knowledge daily. This community service activity is expected to support government efforts in tuberculosis prevention by improving immunity through balanced nutrition.

Abstract

Introduction: Taro, moringa leaf, and mung bean are local food ingredients known for their high nutritional content and dietary fiber as alternative substitutes for wheat flour in cookie production. This study evaluated the nutrient quality and consumers acceptability of cookies enriched with taro flour, moringa leaf flour and mung bean flour. Methods : The study was an experimental design using a Completely Randomized Design (CRD), consisting of three treatments with three repetitions. The cookies formulations varied the proportions of wheat flour, taro flour, moringa leaf flour, and mung bean flour as follows: P1 (60%:10%:1%:29%), P2 (50%:20%:2%:28%), and P3 (40%:30%:3%:27%). Data for protein, fat, carbohydrate content, dietary fiber were analyzed using one-way ANOVA, while consumer acceptability was assessed using the Friedman test. Results : Statistical analysis revealed significant differences (P < 0.05) in the protein, carbohydrate and dietary fiber contents among the formulations. Cookies formula F2 had the highest nutrient content. Consumer acceptability ratings ranged from moderate to extreme liking for all cookies variants. Conclusion: Substituting wheat flour with taro flour, moringa leaf flour and mung bean flour resulted in nutrient-dense cookies and well-accepted by consumers.
