Abstract

New alternatives are needed to change flavorings from chemicals to organic so that they do not have a bad impact on health. The study's results proved that giving MSG at a dose of 9 g / day to red blood cells caused the appearance of a micronucleus so that it indicated a mutagenic MSG. The potential of bromelin enzyme contained in pineapple fruit is able to break down proteins from tempe so that it can give rise to a savory taste that is generally found from other flavorings. The purpose of this study was to determine the potential of bromelin extract pineapple, which is a tempe protein breaker as an organic flavoring sourced from various literatures. The research was conducted using a literature review method of reference sources such as google scholar and research gate. A total of 40 articles were found and then selected based on predetermined parameters resulting in 25 selected articles. From the results of the literature search obtained a percentage of 80% for the sampling method on the extraction method, 16% centrifuged and the method using extraction and centrifugation 4%. Meanwhile, judging from the variables studied, 52% were obtained regarding the activity of hydrolyzing proteins, 12% for the characterization of the enzyme bromelin, 8% for the mechanism of action of bromelin as an anti-bacterial and 4% in the stacking of meat, catalyzing peptide bonds, mobilization of bromelin enzymes, meat quality, decreased glucose levels, healing of lukan and physical quality of cheese curd. And when viewed from the part of the pineapple plant that is utilized 44% of the flesh of the pineapple fruit, 12% of the pineapple weevil, 8% each of the flesh of the fruit and the fruit weevil of the fruit, the skin of the pineapple fruit and the flesh of the young pineapple fruit and 4% each of the ripe pineapple weevil, the flesh of the ripe fruit, the stem and the final leaf of the pineapple plant. And when viewed from the use of the benefits of bromelin, a score of 36% was obtained to increase protein levels in the product, 20% to speed up the hydrolysis process, 12% to stack meat, 8% to inhibit streptococcus bacteria, and 4% each was used to hydrolyze collagen. Helps the fermentation process, anti-browning agents fund therapeutic genes.

Abstract

Organik MSG needs to be developed because now many foods found in supermarkets, restaurants, and school cafeterias use MSG additives which can have negative consequences for public health. The purpose of this article is to determine the public's acceptance of liquid organic MSG based on tempe and pineapple. The method used is the product acceptance test by the 50 panelists through experiencing the product directly with 3 kinds of formulations. The results of the product acceptance test are complemented by the results of the sensory test and hedonic test from the BPSMB laboratory. The data obtained were processed using the Krusskal Wallys test and the Mann-Whitney follow-up test. The results of all tests showed that the level of preference for the color, aroma, taste, and texture of liquid organic MSG (BAHARAT) with the substitution of hydrolyzate tempe and pineapple extract was not significantly different (P> 0,05) in F1 and F2. However, there was a significant difference (P<0,05) in F1 with F3 and F2 with F3 in the level of preference for color, aroma, taste, and texture of liquid organic MSG with the substitution of tempe hydrolyzate and pineapple extract. The best liquid organic MSG (BAHARAT) product formula is at F2 or with product code 758 or the composition of tempe hydrolyzate with pineapple extract is 1:2 based on differentiation and hedonic tests.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh konsumsi MSG organik dan MSG sintetis terhadap nafsu makan tikus putih (Rattus norvegicus) strain wistar bunting. Penelitian ini didasari oleh tingginya prevalensi stunting di Indonesia, yang dikaitkan dengan pola makan yang tidak sehat. Penelitian ini menggunakan desain eksperimen true eksperimental dengan Rancangan Acak Lengkap (RAL) dan postest only control design. Tikus dibagi menjadi lima kelompok: kelompok kontrol (pakan normal), kelompok MSG organik 60 mg/kgBB, kelompok MSG organik 120 mg/kgBB, kelompok MSG sintetis 60 mg/kgBB, dan kelompok MSG sintetis 120 mg/kgBB. Data nafsu makan dianalisis menggunakan One Way Analysis of Variance (ANOVA) dan uji DMRT. Hasil penelitian menunjukkan bahwa kelompok perlakuan MSG organik dan MSG sintetis memiliki rata-rata nafsu makan yang berbeda secara signifikan. Kelompok MSG sintetis dengan dosis 60 mg/kgBB memiliki nafsu makan tertinggi, diikuti oleh kelompok MSG organic 120 mg/kgBB, kelompok kontrol, kelompok MSG sintetis 60 mg/kgBB, dan kelompok MSG sintetis 120 mg/kgBB. Penelit ian ini menunjukkan bahwa konsumsi MSG organic dapat meningkatkan nafsu makan pada tikus putih strain wistar bunting. Penelitian lebih lanjut diperlukan untuk mengkaji efek jangka panjang konsumsi MSG organik dan MSG sintetis terhadap kesehatan tikus, serta untuk mengkaji potensi MSG organik sebagai alternatif penyedap makanan yang lebih aman.

Abstract

Perkembangan globalisasi memberikan dampak pada pola konsumsi masyarakat Indonesia, Monosodium Glutamat (MSG) atau sering disebut vetsin merupakan bahan tambahan pada masakan yang sudah tidak asing lagi. Penggunaan MSG yang melebihi takaran dan dalam waktu panjang memiliki dampak bagi kesehatan salah satunya yaitu organ ginjal, yang fungsi utama ginjal yaitu menyaring darah dan mengeluarkan sisa metabolisme dari dalam tubuh. MSG berbahan dasar organik dapat menjadi alternatif penggunaan MSG sintetis. Penelitian ini termasuk penelitian deskriptif kuantitatif, menggunakan Rancangan Acak Lengkap (RAL), yang bertujuan untuk mengetahui gambaran histologi ginjal tikus putih (Rattus norvegicus) Strain Wistar bunting yang mengkonsumsi MSG organik dan MSG sintetis. Hasil yang didapatkan terdapat perbedaan kerusakan nekrosis sel yang bermakna antara pemberian MSG organik dan MSG sintetis yaitu dengan nilai probabilitas (sig.) adalah 0.002 < 0.05 pada kelompok kontrol dan kelompok perlakuan. Namun, pada kerusakan berupa hemoragi, diameter glomerulus, dan lebar ruang bowman tidak terdapat perbedaan kerusakan yang bermakna antara pemberian MSG organik dan MSG sintetis pada kelompok kontrol dan kelompok perlakuan.

Abstract

This study aims to determine the number of erythrocytes in pregnant Wistar strain white rats (Rattus norvegicus) consuming organic and synthetic MSG. This study used a Completely Randomized Design (CRD) with 21 samples, 7 treatments, and 3 replications; control treatment (normal feed), P1 (60 mg/kgBW organic MSG), P2 (120 mg/kgBW organic MSG), P3 (240 mg/kgBW organic MSG), P4 (60 mg/kgBW synthetic MSG), P5 (120 mg/kgBW synthetic MSG), and P6 (240 mg/kgBW synthetic MSG). The analysis includes the number of erythrocytes in white rats (Rattus norvegicus), One Way ANOVA test using SPSS version 29, followed by Duncan's Multiple Range Test (DMRT) to determine the mean differences between treatments. The research results show that the number of erythrocytes in the control group (normal) was 6.97 x 106 / µL, P1 (5.17 x 106 / µL), P2 (5.37 x 106 / µL), P3 (5.89 x 106 / µL), P4 (7.61 x 106 / µL), P5 (7.90 x 106 / µL), and P6 (8.29 x 106 / µL). Thus, the administration of organic and synthetic MSG affects the number of erythrocytes in pregnant white rats (Rattus norvegicus) of the Wistar strain, marked by an increase in the number of erythrocytes. The lowest number of erythrocytes was in P1 (60 mg/kgBB), and the highest number of erythrocytes was in P6 (240 mg/kgBB).

Abstract

This study aims to explores blood urea nitrogen (BUN) levels in Wistar rats exposed to synthetic and organic MSG to identify potential renoprotective effects. The study design involved a control group (K) that was fed a normal diet only, and six treatment groups (P1–P6) that received doses of organic or synthetic MSG at 60, 120, or 240 mg/kg BW for 19 days. Each group consisted of six rats. MSG was administered orally and BUN levels were measured using the colorimetric method. The results showed no significant difference in BUN levels between the control group and the treatment groups (p > 0.05). The highest BUN levels were found in the control group, while the lowest levels were found in the group that received the highest dose of synthetic MSG (240 mg/kg BW). Additionally, BUN levels were lower with organic MSG at 120 and 240 mg/kg BW than with the 60 mg/kg BW dose, suggesting that bioactive compounds in tempeh and pineapple bromelain may have renoprotective effects. While the lowest BUN levels were observed in the group receiving the highest dose of synthetic MSG (240 mg/kg BW), this may be due to reduced protein intake or other metabolic adaptations rather than safety factors. Synthetic MSG at a dose of 240 mg/kg BW produced the lowest BUN levels, which may indicate reduced protein intake or other metabolic adaptations, rather than safety factors.

Abstract

As times have changed, so have lifestyles that have adverse health effects, including obesity. Obesity is known to potentially affect the number of red blood cells in the body. Obesity can cause iron deficiency in children and adolescents, which can develop into anemia. The aim of this study was to determine the effect of obesity on the number of red blood cells and to investigate the effect of a combination of glucomannan and moringa leaf extract on the number of red blood cells in obese white Wistar strain rats. The research method used was a true experimental design in the form of a post-test only control group with three treatment groups: the control group, treatment group P1 and treatment group P2. The results of the calculations showed differences in the number of red blood cells in each treatment. In the control treatment, there were 7.16/L. In the P1 treatment, the RBCs were 3.24 million/L. In contrast, the P2 treatment yielded a result of 5.02 million red blood cells per liter. It can be concluded that the combination of Porang Tuber Glucomannan with Moringa Leaf Extract can reduce body weight and normalize the number of red blood cells.

Abstract

Allergy is a response from the body's defense to reject when exposed to certain antigens. When the antigen (allergen) enters the body's tissue, there are two responses produced by the body, namely the allergen that is successful in destroying it or the allergen that damages the body's tissue. Proteins are polypeptide macromolecules composed of a number of L-amino acids linked by peptide bonds. MSG (Monosodium Glutamate) is a gram of sodium derived from glutamic acid. The aim of this research is to determine consumer acceptance of vegetable protein .This research uses quantitative research methods by distributing questionnaires to the public. As well as helping to provide replacement products to people who are allergic to animal protein. The results of the questionnaire that was given to the public, of the 53 respondents who were given the questionnaire, found that 32 respondents chose to use plant-based products and the remainder chose not to use plant-based products. These plants are allergic to animal protein and the rest do not experience allergies.
