Abstract

Usaha coffee shop adalah salah satu usaha berskala mikro dan kecil yang tumbuh dan berkembang diberbagai kota di Indonesia termasuk Kota Padang. Dalam menjalankan usahanya, media digital menjadi salah satu saluran untuk berpromosi dan menjual produk. Media digital yang umumnya digunakan adalah media social, hal ini disebabkan media social umum dimiliki oleh anak muda sebagai target market coffee shop. Dalam penggunaan media social masih ditemukan ketidakmaksimalan penggunaan diantaranya: keberlanjutan mengirim konten, lama dalam merespon follower, konten tidak menarik. Untuk memaksimalkan penggunaan media social tersebut maka diberikan pelatihan dan pendampingan pada pengusaha/pengelola coffee shop. Materi pelatihan yang diberikan dimulai dari pemahaman bahwa perilaku konsumen di era marketing 5.0 berubah, pentingnya digitalisasi dalam usaha menjawab perubahan perilaku konsumen tersebut dan bagaimana membangun keterikatan dengan konsumen melalui media social. Pada kegiatan pendampingan dilakukan dampingan dalam membuat konten dan keberlanjutan menggunakan media social sebagai alat pemasaran.

Abstract

This research aims to find out current and future research trends regarding supply chain performance measurement methods. Supply chain management is a vital component in the modern retail industry. In the face of fierce competition, retail companies are required to manage their supply chains efficiently in order to meet consumer demand quickly, maintain stock balance, and optimize distribution costs. SCOR is one of the methods commonly used to measure and evaluate supply chain performance. Bibliometric is an analytical approach that uses bibliographic data as an indicator to measure productivity, impact, and relationships between research entities. The two approaches used in this study are Bibliographic coupling and Co-Word Analysis. During June 2025, a search was carried out on the Scopus database and 202 documents were found according to predetermined criteria. Document processing uses the Vosviewer application which shows the visualization of a mesh diagram dividing the document into 4 clusters (red, yellow, green and blue) for analysis with the Bibliographic Coupling method which shows that the research trend on SCOR in the last two decades has focused on the use of SCOR for performance measurement and evaluation, integration of SCOR with other methods for strategy determination.  As for the Co-Word Analysis method, VosViewer groups documents into 3 clusters (red, green, blue) which shows the results that in the future SCOR research can be combined with technology and digitalization to map supply chain processes in order to achieve sustainability goals.

Abstract

Purpose - The aim of this study is to examine the effect of price, product quality, and servicescape on customer satisfaction in the modern coffee shop, Workas Coffee and Eatery, in Padang, Indonesia Methods - A quantitative methodology was employed utilizing survey data from 100 student consumers chosen via non-probability sampling. The measurement and structural models were evaluated using Structural Equation Modeling–Partial Least Squares (SEM-PLS) in SmartPLS 4. Findings - The findings demonstrate that servicescape does not exert a significant influence on customer satisfaction (β = 0.081, p = 0.148), whereas price (β = 0.472, p < 0.001) and product quality (β = 0.344, p < 0.001) exhibit positive and significant effects. The model accounts for 60.3% of the variance in customer satisfaction (R²adj = 0.603). Research Implications - The findings indicate that student patrons in contemporary coffee shops exhibit greater sensitivity to price and product quality than to the physical ambiance, implying that management should emphasize value-for-money propositions and uniform product standards. Originality -This study integrates price, product quality, and servicescape in a single model focused on a student segment in a modern Indonesian coffee shop.
