Abstract

Abstract

Food poisoning is a global health problem that still occurs frequently, especially in hospital settings. This study aims to describe the personal hygiene practices of food handlers in the Nutrition Installation of Madani Hospital, Palu City. The study used a descriptive method with an observational and interview approach involving all 17 food handlers. The observed variables included handwashing habits, the use of gloves, masks, head coverings, aprons, the cleanliness of clothing and nails, as well as the habit of not smoking during food processing. The results showed that all respondents had practiced regular handwashing, used head coverings and aprons, maintained clean clothing and nails, and did not smoke while working. However, only one respondent (6%) met the requirements for using plastic gloves, and two respondents (12%) had not used masks according to standards. The high level of compliance in several aspects was supported by the availability of facilities, continuous education, supervision, and a positive work culture. The conclusion of this study indicates that the implementation of personal hygiene in the Nutrition Installation of Madani Hospital is fairly good in several aspects, but deficiencies remain in the use of gloves and masks. Continuous improvements are needed through supervision, refresher training, and the provision of adequate facilities to support optimal personal hygiene practices, thereby improving the quality of food processing and food safety in the hospital.

Abstract

This community service activity was carried out to enhance the understanding and preparedness of the residents of Bale Village in implementing the five pillars of Community-Based Total Sanitation. The activity took place on 3-4 March 2026, targeting 35 residents of Bale Village. The methods employed included coordination with the village government, mapping sanitation issues, delivering material, facilitating discussion, demonstrating practical skills, developing residents' commitments, and evaluating through pre- and post-tests. The evaluation results showed an increase in the average overall score from 49.20 in the pre-test to 83.90 in the post-test, an increase of 34.70 points. The highest improvements were observed in household waste management by 43.20 points and household liquid waste management by 41.20 points. Understanding of stopping open defecation, handwashing with soap, and managing household drinking water and food also improved. This activity provided residents with the opportunity to recognise sanitation risks in their environment and to develop steps for improvement that can be implemented at the household level. Similar activities should be continued with family assistance and ongoing monitoring of residents' commitments to ensure that knowledge changes develop into sanitary habits.

Abstract

Growth problems among children under five are influenced by the quality of complementary feeding, exposure to environmentally related diseases, and the accuracy of growth monitoring. This community service activity aimed to strengthen the capacity of health cadres and mothers of children under five through education on complementary feeding, Community-Based Total Sanitation (CBTS), and anthropometric measurement training. The activity was conducted in Ganti Urban Village, Donggala Regency, on 13–14 July 2026, involving 20 participants consisting of 10 health cadres and 10 mothers of children under five. The methods included interactive lectures, case discussions, menu demonstrations, mapping of contamination pathways, sanitation commitment triggering, measurement simulations, guided practice, as well as pre-tests and post-tests. The complementary feeding knowledge score among health cadres increased from 62.5 to 92.0, while among mothers of children under five it increased from 45.0 to 85.5. Sanitation knowledge scores increased from 70.0 to 95.0 among health cadres and from 52.5 to 87.5 among mothers of children under five. The anthropometric measurement skills of health cadres increased from 65.0 to 96.5. The greatest improvement was observed in complementary feeding knowledge among mothers of children under five, with an increase of 40.5 points. The integration of contextual education, sanitation reflection, and hands-on practice effectively strengthened participants’ knowledge and skills in the short term. Regular follow-up through integrated health service posts, supervision of anthropometric measurements, and monitoring of sanitation practices are needed to ensure that these learning outcomes are translated into sustainable improvements in household practices.
