Abstract

Diare merupakan penyakit yang sering dialami oleh mayarakat daerah pesisir. Hal ini terutama berhubungan dengan ketersediaan air besih, air minum, jamban, dan pengolahan sampah. Diare dapat diobati dengan pengobatan tradisional menggunakan bahan-bahan alam, salah satunya adalah kunyit dan jahe merah. Bahan alam dapat dibuat menjadi sediaan serbuk instan sehingga tahan dalam penyimpanan dan praktis penggunaannya. Kegiatan ini bertujuan untuk memberikan pelatihan kepada masyarakat dalam pembuatan serbuk instan kunyit dan jahe merah. Kegiatan pengabdian kepada masyarakat oleh dosen dan mahasiswa Jurusan Farmasi Politeknik Kesehatan Kemenkes Manado meliputi pelatihan pengolahan kunyit dan jahe merah menjadi sediaan serbuk instan dan penyuluhan tentang pemanfaatan obat tradisional, serta evaluasi kegiatan dengan mengisi kuisioner. Kegiatan dilaksanakan di balai desa Desa Lansa Kecamatan Wori Kabupaten Minahasa Utara. Hasil kegiatan menunjukkan adanya peningkatan pengetahuan tentang pemanfaatan dan pengolahan obat tradisional dari data kuisioner yang sebelumnya sebesar 50 % menjadi 90 % setelah mengikuti penyuluhan dan pelatihan. Dapat disimpulkan bahwa kegiatan pelatihan dan penyuluhan yang dilakukan telah meningkatkan pengetahuan dan keterampilan masyarakat mengenai pembuatan serbuk instan kunyit dan jahe merah serta pemanfaatan obat tradisional.

Abstract

People in Silian I Village have a relatively high level of meat consumption, which can trigger various degenerative diseases. To treat their illnesses, people use more modern medicines than traditional medicines. Garlic helps treat various diseases and has been used as a traditional medicine. Fermented Garlic (Black Garlic) has been developed in several countries. The secondary metabolite content in Fermented Garlic is higher than in regular Garlic, so the resulting properties are also more potent. This activity aims to provide training to the public regarding the processing and use of Fermented Garlic (Black Garlic) to treat degenerative diseases. Activities include training on processing Garlic into Fermented Garlic (Black Garlic) and its use in making processed food preparations and counseling regarding licensing procedures for producing processed food. Evaluation of the activity showed increased community knowledge about the processing and use of Black Garlic for treating degenerative diseases after the activity. The community enthusiastically participated in the activity and was interested in making and using it to help treat the degenerative diseases they suffered.

Abstract

Coconut flour is obtained from the processing of coconut waste and can be used as a substitute for wheat flour or as additional flour in making bread and cakes. Coconut flour has the advantages of a fairly high protein content, being gluten-free, low digestible carbohydrate content, and higher fiber (cellulose) content compared to other types of flour. Hence, it is very suitable for people who are hypersensitive to gluten or for those who are on a diet. This activity aimed to train the community on processing coconut pulp into coconut flour and its use in making cookies. Utaurano Village in Sangihe Islands Regency is known as one of the centers for making coconut oil. Coconut waste has so far only been thrown away or used as a mixture of animal feed. Community service activities by lecturers and students of the Pharmacy Department of the Manado Ministry of Health Polytechnic include training in processing coconut pulp into coconut flour and its use for making cookies. The implementation of the activity was carried out in several stages, namely preparation, implementation, and evaluation. The results showed that in Utaurano village in Sangihe Islands Regency, coconut waste was produced from the VCO manufacturing process by local UMKM. The waste can be processed into coconut flour and used as a substitute for wheat flour for making cookies. The evaluation results show that counseling and training activities can increase knowledge and skills to utilize coconut waste into products with economic value.

Abstract

Infections caused by Staphylococcus aureus bacteria can lead to various health problems, including skin infections that result in redness, swelling, blisters, and pus-filled lumps. The use of herbal plants is an alternative treatment for infections. Plants known to have antibacterial potential include patchouli leaves (Pogostemon cablin Benth.) and basil leaves (Ocimum basilicum L.). This study aims to determine the antibacterial activity of a combination of patchouli leaf extract (Pogostemon cablin Benth.) and basil leaves (Ocimum basilicum L.) against the growth of Staphylococcus aureus bacteria. The type of research used is a laboratory experiment. Extraction of patchouli leaves and basil leaves was performed using the maceration method with 96% ethanol. The test solution was prepared in three concentrations: 10%, 15%, and 20%. The combination was made by mixing each concentration in 1:1 ratio. The antibacterial activity test was conducted using the disc diffusion method, with a positive control consisting of erythromycin discs and a negative control of a 1% Tween 80 solution. Observations were made for 24 hours, then the inhibition zone around the paper disc was measured using a caliper. The combination of patchouli and basil leaf extracts can inhibit the growth of Staphylococcus aureus bacteria.

Abstract

The utilization of natural materials as traditional medicine is considered to have less side effects than drugs derived from chemicals. Plants that can be utilized as traditional medicine are red ginger and dragon fruit skin. Red ginger is widely known as a cooking spice and is used in medicine because it contains compounds with broad biological activities and dragon fruit has properties as an antioxidant, but its skin has not been utilized and is only discarded as garbage or waste. Dragon fruit skin contains high antioxidant compounds that are beneficial for health and can be used as a natural coloring material. Jelly candy is one of the processed food products that is easy to make by utilizing the active substances of red ginger juice and dragon fruit skin juice with additional ingredients such as agar. The purpose of this activity is to train the community in processing jelly candy from red ginger juice and dragon fruit peel juice. The method of implementation is in the form of training on how to process red ginger juice and dragon fruit peel juice into jelly candy. After the training, it was found that the Community Service Activity through this training can increase the knowledge and skills of the community of Kalasey II Village, Mandolang District, Minahasa Regency about processing red ginger juice and dragon fruit peel juice into jelly candy which is beneficial for health.
