Abstract

The meat quality of Jawa Super Male Chicken is attributed to the diet treatment offered since the rearing period. This study aimed to evaluate the meat quality of Jawa Super Male Chickens fed on diets made of soybean meal (SBM) fermented with Bacillus subtilis or Aspergillus niger. The experimental groups were control group without steam conditioning or fermentation (P0), SBM fermented with Bacillus subtilis or SBM BS (P1), and SBM fermented with Aspergillus niger or SBM ASP (P2). Ninety chickens aged 21 days (210 ± 3.69 grams) were assigned to three groups, and replicated six times with five birds. Basal diets were made of corn-soybean with 16% crude protein (CP) and 2,950 Kcal metabolic energy (ME). The results showed significant differences (P<0.05) in the physical attributes (cooking loss, water holding capacity) and chemical properties (fat content) but the collagen and protein content did not differ significantly (P>0.05). The meat pH was within the normal range of 5.90 – 5.93. Conclusively, SBM fermented with Bacillus subtilisor Aspergillus niger increased meat quality.

Abstract

Penelitian bertujuan untuk mengkaji pengaruh perlakuan kombinasi bakteri L. Plantarum dan lama penyimpanan terhadap total mikroba dan bakteri asam laktat sosis ayam fermentasi. Materi penelitian yang digunakan adalah kultur L. Plantarum dan daging dari ayam pedaging 2,5 kg bagian dada Metode penelitian adalah eksperimental menggunakan Rancangan Acak Lengkap (RAL) Pola factorial 3x3 dan dilakukan pengulangan 3 kali ulangan. Perlakuan yang digunakan yaitu konsentrasi L. Plantarum TW 14 (5%,10%,15%) dan lama penyimpanan (0 jam, 12 jam,24 jam) dilakukan dengan 3 kali ulangan. Hasil penelitian menunjukkan bahwa perlakuan interaksi dan konsentrasi berpengaruh tidak nyata terhadap total mikroba Perlakuan konsentrasi total bakteri asam laktat berpengaruh nyata (P<0,05) menggunakan konsentrasi L. Plantarum terhadap total bakteri asam laktat. Interaksi dihasilkan dari respon linear pada garis Y= 7,05267-0,366586. penyimpanan tidak berpengaruh nyata terhadap total bakteri asam laktat. Total mikroba yang diperoleh rataan berkisar 15,453±0,19 10 log CFU/cm2 sampai 17,457 ±0.17 log CFU/cm2 sedangkan total bakteri asam laktat diperoleh hasil 15,565 log CFU/cm2 sampa 18,709 log CFU/cm2. Kesimpulan dari penelitian ini adalah pemberian L. Plantarum terhadap total mikroba tidak berpengaruh nyata, sedangkan pemberian L. Plantarum terhadap total bakteri asam laktat dengan pemberian konsentrasi 5%,10%,15%) berpengaruh nyata terhadap sosis ayam fermentasi, sedangkan lama penyimpanan (0 jam, 12 jam, 24 jam) tidak memberikan pengaruh nyata terhadap sosis. Lama penyimpanan yang mengandung bakteri asam laktat paling banyak di 24 jam.

Abstract

Sago pulp (Arenga pinnata) is an abundant agricultural waste in Indonesia and has potential as an alternative feed ingredient for beef cattle due to its high crude fiber content, making it an economical and sustainable option. This study aimed to explore the effect of sago pulp supplementation in rations on the performance of Simmental, Limousin, and Brangus cattle. The study was conducted from May 10, 2023 to June 1, 2023 at a commercial cattle farm in Gunung Kidul Regency, Yogyakarta Special Region, Indonesia. A total of 15 beef cattles, consisting of 5 cattles each of Limousin, Brangus, and Simmental breeds, were used in this study. This exploratory study was conducted with a uniform inclusion level of 29.2% sago pulp for all cattle. Data were analyzed using ANOVA test, with Honesty Significant Difference (HSD) for further test to separate the means if significant effects were found. The results showed that sago pulp supplementation had no significant effect on Average Daily Gain (ADG), Feed Conversion Ratio (FCR), and Feed Cost per Gain (FCG) (P > 0.05). On the other hand, a significant effect was observed on the increase of final body weight in all three cattle breeds, especially Simmental (P < 0.05). In conclusion, genetic factors play an important role in the response of cattle to sago pulp supplementation. This study is expected to provide a scientific basis for the use of sago pulp as an alternative feed for beef cattle of various breeds

Abstract

Tumpi jagung, bahan pakan lokal dari limbah jagung, berpotensi sebagai pakan alternatif untuk meningkatkan produktivitas sapi potong dalam rangka memenuhi konsumsi daging di Indonesia. Penelitian ini bertujuan mengevaluasi efek suplementasi tumpi jagung terhadap produktivitas sapi Limousin dan Simmental. Penelitian dilakukan pada 2-31 Juli 2024 di peternakan sapi komersial, menggunakan 5 sapi Simmental dan 5 sapi Limousin berusia 1,5 tahun. Penelitian ini bersifat eksploratif. Total pakan sapi per ekor yaitu 3,2% dari bobot badan dengan pemberian tumpi jagung 30% dalam ransum yang terdiri atas konsentrat (65%) dan hijauan (35%). Sapi dipelihara secara individual dalam kandang individu. Variabel yang diamati adalah bobot badan akhir (final body weight), pertambahan bobot badan harian (PBBH), feed conversion ratio (FCR), dan feed cost per gain (FCG). Data dianalisis dengan Independent sample t test menggunakan SPSS versi 25.0 dengan tingkat signifikansi P < 0,05. Hasil penelitian menunjukkan bahwa tidak ada perbedaan signifikan antara kelompok Simmental dan Limousin untuk semua parameter uji (PBBH, bobot akhir, FCR, dan FCG). Secara deskriptif, sapi Simmental unggul dalam PBBH dan bobot akhir, sedangkan sapi Limousin unggul dalam FCR dan FCG. Kesimpulannya, kedua jenis sapi memiliki performa yang tidak jauh berbeda sehingga berpotensi untuk mendukung pemenuhan konsumsi daging masyarakat. Penelitian lanjutan diperlukan untuk mengkaji efek suplementasi tumpi jagung pada berbagai jenis ruminansia lainnya guna meningkatkan efisiensi pakan dan performa pertumbuhan.
