Abstract

Halal food is increasingly important for both Muslims and non-Muslims due to its cleanliness and health benefits. Halal certification, regulated by Law No. 33 of 2014 on Halal Product Assurance, is essential for building consumer trust, expanding markets, and boosting company sales. It is particularly crucial for MSMEs, such as food stalls, as it impacts both trust and revenue. This community service project helped the Sweet Hony canteen obtain halal certification through socialization, interviews, and document preparation, supported by students, Field Supervising Lecturers (FSL), and the Halal Research Center at Mulawarman University. The effort led to the issuance of a Business Identification Number (BIN) and an ongoing halal certification process.

Abstract

Penelitian ini dilakukan untuk mengevaluasi dampak durasi pengukusan dan penekanan pada kinerja alat pengepres buah kelapa sawit (kapasitas 5 kg) dalam produksi minyak kelapa sawit mentah (CPO). Pengujian melibatkan kombinasi durasi pengukusan buah kelapa sawit (15, 30, dan 45 menit) dan durasi pengepresan (10 dan 15 menit). Berdasarkan hasil uji menggunakan umpan buah kelapa sawit sebanyak 3 kg, diperoleh rata-rata hasil rendemen padatan sekitar 79,44%. Rata-rata volume CPO yang dihasilkan adalah sekitar 9,42%, dengan hasil minyak tertinggi pada kombinasi 45 menit pengukusan dan 15 menit pengepresan, menghasilkan sekitar 410 ml. Persentase CPO dari proses penyaringan adalah 74,93%, sementara viskositas rata-rata CPO sekitar 30,72 Mp.S, dengan kadar air sebesar 5,80%. Intensitas warna tertinggi dicapai pada kombinasi 30 menit pengukusan dan 15 menit pengepresan, dengan nilai sekitar 0,26 pada panjang gelombang pengujian 600 nm. Nilai analisis warna rata-rata untuk L* (kecerahan), a* (merah), dan b* (kuning) adalah sekitar 19,70, 7680,00, dan 6287,06. Untuk penelitian masa depan, hasil ini dapat dimanfaatkan dalam produksi Minyak Sawit Merah.

Abstract

Background: Stunting is one of the growth and development disorders of children as a consequence of a chronic nutrition deficiency and repeated infection, reflected by the height below the standard. Objectives: This research aims to recognize the differences in food coping strategies between rural and urban households toward stunting incidents. Methods: Cross-sectional design with 300 children in Paser Regency (rural) and Balikpapan City (urban). Assessment of daily nutrition intake of the children using multiple-passed 1 x 24-hour recall to the mother. The household dietary diversity was assessed using the Household Dietary Diversity Score (HDDS). In each household, Anthropometry was measured on the children (weight and height) and mother (weight, height, the middle of the upper arm, waist, and hips). Results: The survey showed that the wife was more dominant in determining the food menu, cost of food, and the processing of nutritious food. Food coping strategies in rural households are to consume less favorable food cheaper, collect wild plants, hunt or harvest early, and ask for food or help from colleagues or siblings; meanwhile, food coping strategies in urban households are to consume less favorable food and cheaper. Food security in urban households was 75.3%, and in rural households was 59.3%. The average infant's body length in rural and urban households was 49.22 cm, and the proportion of short infants was 7.33% in urban households and 14.67% in rural households. Conclusions: The food coping strategy performed in rural households was deeper than in urban households.
