Abstract

Peningkatan hasil panen ikan yang ada harus sebanding dengan proses pengolahan dan pengawetan ikan. Saat ini pengawetan ikan yang sudah banyak dilakukan menggunakan metode pengendalian suhu serta bahan kimia seperti nitrit, paraben, asam benzoat, asam sorbat, asam propionat dan lain-lain. Penggunaan zat-zat tersebut menyebabkan gangguan kesehatan jika melebihi dosis atau jumlah yang telah ditetapkan pemerintah. Penelitian ini berupa penelitian deskriptif dengan pendekatan analisis kualitatif, Lokasi penelitian di BRIDA dan di UPT. Labkesda Kota Bima, sedangkan lokasi pengambilan sampel di tempat pembongkaran ikan Kelurahan Kolo Kota Bima. Penelitian dilakukan pada Bulan September s/d Oktober 2023. Sampel berupa ikan tongkol (Euthynnus affinis) sebanyak 30 kg. Peralatan dalam penelitian : beaker glass, gelas erlenmeyer, pinset, pisau, baskom, sarung tangan, neraca analitik, batang pengaduk, Box perlakuan ikan, saringan, corong, kertas label, dan alat dokumentasi.­­­­ Bahan penelitian : Ikan tongkol, Garam, MSG, ice gel, soda, vanili, regaen formalin, reagen Borak serta bahan pengujian mikrobiologi pangan. Prosedur penelitian : (1)  Pengumpulan Data, (2) Pemeriksaan Kualitas Fisik, kimia dan biologi sampel, (3) Penentuan Formula Pengawetan Ikan. Analisis data dilakukan secara deskriptif. Berdasarkan hasil penelitian, Pemberian formula terbaik yaitu pemberian es batu dan garam namun dengan kemungkinan penggunaan kurang dari 3 hari (1-2 hari) sebagai pengawet ikan tongkol yang ditunjukkan melalui parameter sifat fisik dan biologi (pemeriksaan angka kuman) pada sampel namun tidak ditemukan penggunaan bahan tambahan pangan berbahaya (formalin dan borak).

Abstract

Sea Snot is phenomenon that occurs in waters characterized by the collection of mucus or sludge on the surface of the sea which is an accumulation of various types of microorganisms such as phytoplankton and bacteria. The first occurrence in Indonesia was reported in Bima Bay on April 25, 2022. This study aims to assess the water quality of Bima Bay using Sea Surface Temperature (SST), Dissolved Oxygen (DO), and Salinity parameters derived from Landsat satellite imagery and validated through field surveys. Based on the results of determining the quality status of Bima Bay waters, shows that there is a change in quality status at each point from 2022 to 2023. From a total of 50 sample points, it shows that there are 44% of points that still have lightly polluted status and from good to lightly polluted status there are 18%. This shows that there is still lightly pollution of 62% in the waters of Bima Bay after one year of the sea snot phenomenon. The condition of Bima Bay's waters does not have the status of being moderately or heavily polluted. These findings highlight the need for increased environmental awareness among local communities to prevent further degradation of Bima Bay’s waters.
