Abstract

ENSULADE is a blenderized enteral formula made from locally available high BCAA ingredients, including pumpkin, skim milk, and soybeans This study aimed to evaluate its nutritional composition, viscosity, osmolality, flowability, sedimentation, organoleptic properties, and cost estimation compared to commercial formulas. Nutrient content analysis was performed using Nutrisurvey 2007 viscosity test using a viscometer, osmolality test using an osmometer, flowability test and sediment test observed empirically, organoleptic test with hedonic method and price estimates obtained from market survey The energy density of ENSULADE was found to be 1 kcal/ml. Viscosity measurements were 82.13 cP for ENSULADE 1 and 242 cP for ENSULADE 2, whereas the commercial formula was undetectable. Osmolality values were 436 mOsm/kg for ENSULADE 1, 620 mOsm/kg for ENSULADE 2, and 415 mOsm/kg for the commercial formula. Flowability testing revealed slower flow in ENSULADE compared to the commercial product, while sediment testing showed no sediment formation in ENSULADE 1 and 2, unlike the commercial formula which did produce sediment. Organoleptic testing using the hedonic scale indicated overall positive acceptability. The estimated cost of ENSULADE is lower than that of the commercial formula. In conclusion, ENSULADE 1 demonstrated superior results in terms of quality parameters and hedonic acceptance compared to ENSULADE 2.

Abstract

Indonesia currently faces a triple burden of nutritional problems including stunting, wasting and obesity, and deficiency in micronutrients such as anemia. Nutritional problems still commonly found among adolescents and adults include undernutrition, overnutrition, and anemia. These nutritional problems are influenced from several factors including food intake, physical activity, socio-cultural, economic, and nutritional knowledge. The aims of this research was to examine the correlation between carbohydrate, fat, protein intake and physical activity with the nutritional status of nutrition science students at Muhammadiyah University of Surakarta. A cross-sectional method was used in this research involving 85 nutrition student respondents consisting of 20 thin respondents (23.5%), 62 normal respondents (72.9%), and 3 overweight respondents (3.5%). The study was conducted by providing a 24-hour recall form for 3 days, a PAL form for 7 days, and direct anthropometric measurements. The results showed no correlation between carbohydrate intake and nutritional status (p 0.217) indicating that H0 is accepted. The next results on this study found correlation between consumption of fat and nutritional status (p 0.049) which means that excessive fat intake can trigger obesity. Another result found no correlation between protein intake and nutritional status (p 0.470) nor between physical activity and nutritional status (p 0.228). Based on this research, it can be concluded that fat consumption is significantly associated with nutritional status. However, there is no significant associations were found for carbohydrate intake, protein intake, or physical activity with nutritional status of students.

Abstract

Adolescence is a critical stage of development, where nutrition and health influence the quality of individuals in adulthood.. Adolescent nutritional status is influenced by various factors such as body image and fast food consumption. The aim of this study was to determine the relationship between body image and the frequency of fast food consumption with nutritional status. This research employed a cross-sectional design involving 61 respondents selected through proportional random sampling. Body image was measured using the MBSRQ-AS questionnaire consisting of 33 items covering four aspects: appearance evaluation, body part satisfaction, fat anxiety, and body categorization. The frequency of fast food consumption was assessed using a FFQ, and nutritional status data were obtained through weight and height measurements using the BMI-for-age index. Data analysis was conducted using the Spearman Rank test to examine the relationship between body image and the frequency of fast food consumption with nutritional status. The results showed that the majority of female adolescents had a positive body image (55.7%) and rarely consumed fast food (60.7%), with most having a good nutritional status (78.7%). The Spearman Rank test indicated a significant relationship between body image and nutritional status (p < 0.001), while there was no significant relationship between the frequency of fast food consumption and nutritional status (p = 0.301). The conclusion of this study is that body image affects the nutritional status of female adolescents, whereas fast food consumption does not necessarily have a significant influence on nutritional status.

Abstract

Menstruation is a natural process of endometrial shedding when fertilization does not occur, but many women experience it accompanied by menstrual pain, also known as dysmenorrhea. Dysmenorrhea is menstrual pain during menstruation. Anemia and nutritional status are among the risk factors for dysmenorrhea. The purpose of this study was to determine the relationship between anemia and nutritional status with the incidence of dysmenorrhea in female students at the Faculty of Health Sciences, Universitas Muhammadiyah Surakarta. The research method used an analytical observational design with a cross-sectional approach. The population consisted of all female students from the 2023 cohort. The sampling technique used was simple random sampling with a sample size of 88 female students. Anemia data were obtained from measuring hemoglobin levels using the cyanmethemoglobin method, nutritional status from calculating Body Mass Index (BMI), and dysmenorrhea was measured using the WaLIDD questionnaire. The results showed that the respondents were mostly 20 years old (42%), had menarche at the age of ≥ 12 years (68%), had no family history of dysmenorrhea (61%), and had a menstrual duration of 4-7 days (80%). Most respondents experienced anemia (51%) and had a normal nutritional status (43%). The statistical test results showed no significant relationship between anemia (p = 0.258) and nutritional status (p = 0.315) with the incidence of dysmenorrhea in female students at the Faculty of Health Sciences, Universitas Muhammadiyah Surakarta. The suggestion for female students is to maintain a balanced and nutritious diet to reduce menstrual pain or dysmenorrhea.
