Abstract

Abstrak Inggris. Stunting is a chronic condition that describes growth retardation due to long-term malnutrition, characterized by a z-score of height by age (TB/U) of less than -2SD. The prevalence of stunting in toddlers in East Java is still high at 19.2%, and in Surabaya it is 4.8%. This activity aims to increase the knowledge of mothers under five about providing the right food to prevent stunting. The research method is observational with a pre-test and post-test design which was carried out at the Balongsari Health Center, Surabaya, from October 22 to 24, 2024. The research sample consisted of 64 mothers under five who participated in socialization. The results of the analysis showed a significant increase in knowledge, with the average score of participants increasing from 65 to 80 after counseling. With this educational approach, it is hoped that mothers' knowledge about nutrition can increase significantly, so that it can contribute to efforts to prevent stunting and increase. Stunting adalah kondisi kronis yang menggambarkan penghambatan pertumbuhan akibat malnutrisi jangka panjang, ditandai dengan z-score tinggi badan menurut umur (TB/U) kurang dari -2SD. Prevalensi stunting pada balita di Jawa Timur masih tinggi mencapai 19,2%, dan di Surabaya sebesar 4,8%. Kegiatan ini bertujuan untuk meningkatkan pengetahuan ibu balita mengenai pemberian makanan yang tepat untuk mencegah stunting. Metode penelitian bersifat observasional dengan desain pre-test dan post-test yang dilaksanakan di Puskesmas Balongsari, Surabaya, dari tanggal 22 hingga 24 Oktober 2024. Sampel penelitian terdiri dari 64 ibu balita yang berpartisipasi dalam sosialisasi. Hasil analisis menunjukkan peningkatan pengetahuan yang signifikan, dengan rata-rata skor peserta meningkat dari 65 menjadi 80 setelah penyuluhan. Dengan pendekatan edukatif ini, diharapkan pengetahuan ibu mengenai gizi dapat meningkat secara signifikan, sehingga dapat berkontribusi dalam upaya pencegahan stunting dan peningkatan status gizi balita secara keseluruhan. Abstract

Nutritional problems among school-aged children, including students in Islamic boarding schools (pesantren), remain a significant issue due to their impact on growth, cognitive development, and quality of life. The pesantren environment, characterized by a tight schedule, limited dietary variety, and low nutritional knowledge, poses a risk of unbalanced dietary patterns and long-term health problems. This study aimed to assess the effectiveness of nutrition education using wayang (traditional puppet) media on the nutritional knowledge of students at Pondok Pesantren Safinatul Huda, Banyuwangi. The methods employed included balanced nutrition socialization, education on the six food groups, demonstration of menu preparation using local ingredients (purple sweet potato), and delivery of materials through wayang characters as an engaging and memorable cultural medium. The study sample consisted of 40 junior high school students (santri). Data were analyzed using the Paired Sample T-Test to evaluate differences in nutritional knowledge before and after the intervention. The results showed a significant increase in the mean nutritional knowledge score from 72.15 to 77.90 (p < 0.001). Wayang media proved effective in enhancing understanding, motivating the adoption of healthy eating patterns, and providing a culturally relevant and contextual educational approach.

Abstract

Based on the 2023 Indonesian Health Survey, the prevalence of overweight among adults reached 23.4% nationally and 24.5% in East Java Province. This condition highlights the need for food innovation, particularly high-fiber snacks suitable for overweight adults. This study aimed to develop cereal based on okara (soy pulp) flour and mung bean flour as an alternative high-fiber food product. Organoleptic testing was conducted on 30 semi-trained panelists evaluating color, aroma, texture, and taste using hedonic and hedonic quality tests. Data were analyzed using the Kruskal–Wallis test followed by the Mann–Whitney test, while nutrient content analysis was analyzed using One Way ANOVA followed by Duncan’s post hoc test. The results showed that in the hedonic test, color, texture, and taste parameters were significantly different (p<0.05), while aroma was not significantly different (p>0.05). In the hedonic quality test, color and taste showed significant differences (p<0.05), whereas aroma and texture did not (p>0.05). Overall, formulation 922 was the most preferred by panelists. The nutritional content of the cereal ranged from 407–410 kcal for energy, 76.44–77.53% carbohydrates, 8.91–9.66% protein, 6.80–7.30% fat, 5.20–5.51% moisture, 1.26–1.41% ash, and 9.72–10.90% total dietary fiber. The developed cereal is classified as a high-fiber food and has potential as a healthy snack for overweight adults.

Abstract

Health issues among the elderly are often related to declining bodily functions, digestive disorders, and specific nutritional needs for easily digestible foods. The 60-and-older age group is at high risk for gastrointestinal disorders due to low fiber intake. Therefore, alternative foods are needed that are soft in texture, neutral in taste, safe, and nutritious. One potential solution is the development of food products based on tempeh gembus with the addition of banana hearts, which are rich in fiber, soft in texture, and readily available. This study employed an experimental method using a Completely Randomized Design (CRD) to test three formulation variations (F1, F2, F3). The nutritional content of formulation F1 includes energy 111.575 kcal, carbohydrates 20.185 g, protein 6.91 g, fat 0.355 g, and fiber 6.67 g. Formula F2 contains 88.225 kcal of energy, 14.095 g of carbohydrates, 7.72 g of protein, 0.205 g of fat, 7.3 g of fiber, and 0.0015% flavonoids. Formula F3 has 107.015 kcal of energy, 7.995 g of protein, 0.295 g of fat, 6.88 g of fiber, and 0.0021% flavonoids. In conclusion, the best tempeh with added banana hearts is Formula F2, with its nutritional content, fiber, flavonoids, and BAL >10⁸ CFU/g, which has the potential to serve as a functional food and probiotic source to help improve digestive health in the elderly. Further testing is recommended directly on elderly groups, along with product shelf-life testing.

Abstract

Increased caffeine intake is commonly used by students to cope with academic demands, especially during examinations and the completion of final projects. Excessive caffeine consumption may affected sleep quality and potentially influence nutritional status. This study aimed to determine the correlation between caffeine intake, sleep disturbances, and nutritional status among final – year unsergarduated students at Dr. Soekardjo University. This study used quantitative approach with an observational analytic and cross-sectinal design. A total of 108 students participated in the study. Data were collected using questionnaires and analyzed using the Spearman Rank correlations test. The findings indicated that the most of respondents with low caffeine intake experienced mild sleep disturbances, totaling 56 respondents (80%). Meanwhile, respondents with moderate and high caffeine intake mostly experienced moderated sleep disturbances, with 13 respondents (61.9%) and 9 respondents (52.9%), respectively. The results showed a significant correlation between caffeine intake and sleep disturbances (p-value=0.000). In all categories of caffeine intake, most respondents had normal nutritional status. However, no significant relationship was found between caffeine intake and nutritional status (p-value=0.351). In conclusion, caffeine intake was associated with sleep disturbances but not with nutritional status among final-year undergraduate students.
