Abstract

Nutritional problems among school-aged children, including students in Islamic boarding schools (pesantren), remain a significant issue due to their impact on growth, cognitive development, and quality of life. The pesantren environment, characterized by a tight schedule, limited dietary variety, and low nutritional knowledge, poses a risk of unbalanced dietary patterns and long-term health problems. This study aimed to assess the effectiveness of nutrition education using wayang (traditional puppet) media on the nutritional knowledge of students at Pondok Pesantren Safinatul Huda, Banyuwangi. The methods employed included balanced nutrition socialization, education on the six food groups, demonstration of menu preparation using local ingredients (purple sweet potato), and delivery of materials through wayang characters as an engaging and memorable cultural medium. The study sample consisted of 40 junior high school students (santri). Data were analyzed using the Paired Sample T-Test to evaluate differences in nutritional knowledge before and after the intervention. The results showed a significant increase in the mean nutritional knowledge score from 72.15 to 77.90 (p < 0.001). Wayang media proved effective in enhancing understanding, motivating the adoption of healthy eating patterns, and providing a culturally relevant and contextual educational approach.

Abstract

Members of the basketball club lacked an understanding of body composition and its relationship to sports performance. They had never undergone an objective body composition assessment. Their knowledge of sports nutrition, particularly the role of carbohydrates and the concept of carbohydrate loading, remained limited. The purpose of this activity was to conduct body composition assessments using Bioelectrical Impedance Analysis (BIA), accompanied by counseling and a simple introduction to the concept of carbohydrate loading. The activity was implemented through sports nutrition counseling and body composition measurements using Bioelectrical Impedance Analysis (BIA). Evaluation was conducted using pre- and post-tests. The target group was 19 students participating in the basketball club. The community service program resulted in 73.7% of participants with good nutritional status, 26.5% body fat percentage, and an average BMR of 1252 kcal. Participants' test scores increased from 66.4 to 75.7 at the post-test. Therefore, the implementation of carbohydrate loading, supported by anthropometric and body composition data, can assist athletes in developing more effective nutritional strategies tailored to individual needs, to optimally support training and competition.

Abstract

Based on the 2023 Indonesian Health Survey, the prevalence of overweight among adults reached 23.4% nationally and 24.5% in East Java Province. This condition highlights the need for food innovation, particularly high-fiber snacks suitable for overweight adults. This study aimed to develop cereal based on okara (soy pulp) flour and mung bean flour as an alternative high-fiber food product. Organoleptic testing was conducted on 30 semi-trained panelists evaluating color, aroma, texture, and taste using hedonic and hedonic quality tests. Data were analyzed using the Kruskal–Wallis test followed by the Mann–Whitney test, while nutrient content analysis was analyzed using One Way ANOVA followed by Duncan’s post hoc test. The results showed that in the hedonic test, color, texture, and taste parameters were significantly different (p<0.05), while aroma was not significantly different (p>0.05). In the hedonic quality test, color and taste showed significant differences (p<0.05), whereas aroma and texture did not (p>0.05). Overall, formulation 922 was the most preferred by panelists. The nutritional content of the cereal ranged from 407–410 kcal for energy, 76.44–77.53% carbohydrates, 8.91–9.66% protein, 6.80–7.30% fat, 5.20–5.51% moisture, 1.26–1.41% ash, and 9.72–10.90% total dietary fiber. The developed cereal is classified as a high-fiber food and has potential as a healthy snack for overweight adults.
