Abstract

Processing of yellow seasoned pindang fish known as pindang rumbuk only able to maintain the quality and shelf life for 24 hours at room temperature. The purpose of this study was to determine the quality and the shelf life of yellow pindang fish treated with sterilization time. The design used in this study was Completely Randomized Design (CRD) with a single factor of sterilization time with 6 treatments ie.sterilization for 0, 5, 10, 15, 20 and 25 minutes. Parameters observed at days 0, 14, 28 and 42 days at room temperature consisted of: pH, microbial quality (total microbe and total fungi), organoleptic quality in hedonic supported by score test (appearance, aroma, taste and texture) and shelf life observation visually. Data of pH and organoleptic values were analyzed using Anova using Co-Stat software and different treatment were tested further by using real difference with 5% real level. While microbial data and shelf life were analyzed by using descriptive method.The results showed that the duration of sterilization had significantly different effect on the pH value of the yellow seasoned pindang fish during storage 0, 14 and 42 days, but had no effect on 28 day storage. The treatment of 15 to 25 minutes sterilization was able to produce produce total microbe and total mold in accordance to SNI 2717.1: 2009. It was also able to maintain the organoleptic quality of the parameters of appearance, aroma, taste and texture during 42 days storage at room temperature and maintain the quality of yellow seasoned pindang fish from the growth of mushrooms visually, prevent bottle fromswelling, gas bubble formation and color changes. The duration of sterilization of 15 minutes is recommended as the minimum sterilization time used to improve the quality and shelf life of yellow seasoned pindang fish up to 42 days at room temperature.Keywords: fish seasoning pindang yellow, quality, shelf life, sterilization.ABSTRAKPengolahan ikan pindang bumbu kuning yang dikenal dengan pindang rumbuk hanya mampu mempertahankan mutu dan daya simpan selama 24 jam pada suhu ruang. Tujuan dari penelitian ini adalah untuk mengetahui mutu dan daya simpan Ikan Pindang Kuning yang diberi perlakuan lama sterilisasi. Rancangan yang digunakan pada penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan faktor tunggal lama sterilisasi dengan 6 perlakuan yaitu sterilisasi 0 menit, 5 menit, 10 menit, 15 menit, 20 menit dan 25 menit. Parameter yang diamati pada hari ke 0, 14, 28 dan 42 hari pada suhu ruang terdiri dari: pH, mutu mikrobiologi (total mikroba dan total kapang), mutu organoleptik secara hedonik dan skoring (kenampakan, aroma, rasa dan tekstur) serta pengamatan daya simpan secara visual. Data hasil pengamatan nilai pH dan organoleptik dianalisis menggunakan Anova menggunakan software Co-Stat dan perlakuan yang berbeda nyata diuji lanjut dengan menggunakan Beda nyata Jujur (BNJ) dengan taraf nyata 5%. Sedangkan data hasil pengamatan mikrobiologis dan daya simpan dianalisis dengan menggunakan metode deskriptif. Hasil penelitian menunjukkan bahwa lama sterilisasi memberikan pengaruh yang berbeda nyata terhadap nilai pH ikan pindang bumbu kuning selama penyimpanan 0, 14 dan 42 hari, namun tidak berpengaruh pada penyimpanan 28 hari. Perlakuan sterilisasi 15 sampai dengan 25 menit dapat menghasilkan total mikroba dan total kapang yang sesuai dengan standar SNI 2717.1:2009, mampu mempertahankan mutu organoleptik dari parameter kenampakan, aroma, rasa dan tekstur selama penyimpanan 42 hari pada suhu ruang dan mempertahankan mutu daya simpan ikan pindang bumbu kuning dari pertumbuhan kapang secara visual, mencegah penggembungan tutup botol, pembentukan gelembung gas dan perubahan warna ikan pindang bumbu kuning. Lama sterilisasi 15 menit direkomendasikan sebagai lama sterilisasi minimal yang digunakan untuk meningkatkan mutu ikan pindang bumbu kuning dilihat dari nilai pH, total mikroba, total kapang, mutu organoleptik dan daya simpan ikan pindang bumbu kuning.Kata Kunci: daya simpan, ikan pindang bumbu kuning, mutu, sterilisasi

Abstract

Bumbung palm sugar is gaining popularity as a natural sweetener; however, its quality remains inconsistent and often falls short of national standards. This inconsistency is likely due to varying processing practices across production sites. However, comparative studies among different villages are still limited. This study aimed to evaluate the physical, chemical, and microbiological quality of bumbung palm sugar produced in five hamlets of Kekait Village. A descriptive-comparative approach was used with direct sampling from producers, followed by laboratory analysis. Data were analyzed using analysis of variance (ANOVA) at a 5% significance level and followed by an Honestly Significant Difference (HSD) test. Results showed that production location significantly affected texture, moisture content, and sucrose level (p < 0.05), but not color or pH. Kekait Puncang had the highest yeast count (2.65 × 107 CFU/g), while mold (<1.0 × 102 CFU/g) and total microbial counts (<1.0 × 104 CFU/g) showed no significant differences. Palm sugar from Batu Butir best met the Indonesian National Standard (SNI) for color (reddish), moisture (9.3%), and sucrose (79.05%), followed by products from Kekait II and Thaebah. In conclusion, Batu Butir produced the highest-quality product. This study provides a basis for quality improvement and local agroindustry development of palm sugar.

Abstract

Complementary feeding (MP-ASI) plays an important role in providing the nutritional intake of infants past the age of 6 months in the form of instant baby porridge. Some instant porridge on the market still use rice and fruit as the main ingredients but the utilization of pumpkin and catfish as the main ingredients is still limited. This study aims to increase the nutritional content of the product using pumpkin and catfish. The rehydration ratio is thought to affect the physical characteristics of the porridge and may affect its nutritional value. The method used in this study was the Complete Randomized Design (CRD) experimental method. This study used 4 different rehydration ratio comparisons between porridge and water. The best rehydration ratio will be further tested on porridge particle size parameters. The results showed that the best rehydration ratio was in treatment R2 with a porridge-to-water ratio of 1:1.5. The physical analysis of instant pumpkin and catfish porridge included a density of 0.65 g/mL, solubility of 6.5%, and water absorption capacity of 5.2 g/g, which met the standards for commercial instant porridge for complementary feeding. Proper rehydration treatment in the fortification of yellow squash flour and catfish flour as the main ingredients for instant porridge production can maximize the nutritional content of the instant porridge that will be consumed.

Abstract

Salted parrotfish (Bajo) from East Lombok is a traditional product vulnerable to microbial contamination. This study aimed to identify microbiological hazards in Bajo salted fish marketed at Tanjung Luar Market. Ten samples were analyzed using Total Plate Count (TPC), yeast and mold enumeration, the Most Probable Number (MPN) method for coliforms and Escherichia coli, and selective isolation for Salmonella sp., Vibrio sp., and Staphylococcus aureus. TPC values ranged from 8.2 × 10⁴ to 1.5 × 10⁵ CFU/g, with several samples exceeding the SNI 2721:2009 limit (1 × 10⁵ CFU/g). Yeast and mold counts (1.2 × 10² – 6.8 × 10⁴ CFU/g) remained below the BPOM threshold. All samples contained coliforms (15–46 MPN/g), and most were positive for E. coli (up to 15 MPN/g), surpassing the SNI limit (<3 MPN/g). Salmonella sp. was not detected, whereas Vibrio sp. was found in three producers. Staphylococcus aureus was present in all samples (1.3 × 10² – 2.5 × 10² CFU/g), though still below the permitted limit (1 × 10³ CFU/g). These results indicate that Bajo salted fish remains contaminated with hygiene indicator bacteria and pathogenic microorganisms, particularly E. coli and Vibrio sp., posing potential health risks. Strengthened hygiene and sanitation practices in processing, storage, and distribution are essential to ensure product safety.

Abstract

Tujuan penelitian ini adalah untuk mengkaji efektivitas kombinasi antibakteri alami yaitu minyak sereh dan ekstrak bawang putih dengan NaCl, dalam menghambat pertumbuhan bakteri Escherichia coli dan Staphylococcus aureus. Penelitian ini menggunakan rancangan rancangan eksperimental laboratorium dengan perlakuan kombinasi 0%,1%, 2% dan 3% antara minyak sereh dan NaCl serta bawang putih dengan NaCl. Data dianalisis secara deskriptif dengan membandingkan nilai setiap perlakuan, kemudian ditafsirkan secara kualitatif untuk melihat tren efektivitas antibakteri terhadap masing-masing bakteri. Hasil analisis pH menunjukkan penurunan seiring peningkatan konsentrasi ekstrak. Nilai pH terendah dihasilkan pada konsentrasi 3% yaitu 4,8 untuk bawang putih–NaCl dan 5,7 untuk kombinasi minyak serehNaCl. Daya hambat tertinggi terhadap E. coli (1,60 mm) dan S. aureus (2,00 mm) diperoleh dari kombinasi bawang putihNaCl pada konsentrasi 3%, sedangkan kombinasi minyak sereh–NaCl menghasilkan zona hambat lebih kecil pada konsentrasi yang sama (E. coli 0,70 mm; S. aureus 0,92 mm). Secara keseluruhan, efektivitas antibakteri dari kedua kombinasi masih tergolong sangat lemah, namun menunjukkan potensi lebih besar terhadap S. aureus dibanding E. coli, yang diduga terkait dengan perbedaan struktur dinding sel bakteri.
