Abstract

Cascara is a herbal beverage product derived from processed coffee skin waste. However, the acidic odor of cascara is not favored by consumers. To improve the quality of cascara, is to combine them with red ginger (Zingiber officinale var. Rubrum). Red ginger contains volatile components such as zingiberene and zingiberol, which provide a distinctive fresh aroma that can mask the sour odor of cascara. The purpose of this study was to determine the effect of different ratios of cascara and red ginger on the physical, chemical, organoleptic, and microbiological quality of tea bags containing cascara with added red ginger, in order to obtain the best formulation. This research was conducted using a randomized complete block design (RCBD) with four treatment ratios: T0 (100% cascara: 0% red ginger), T1 (90% cascara: 10% red ginger), T2 (80% cascara: 20% red ginger), T3 (70% cascara: 30% red ginger), and T4 (60% cascara: 40% red ginger). The different ratios of cascara and red ginger significantly influenced the physical, chemical, organoleptic, and microbiological properties of the tea bags containing cascara with added red ginger. The best formulation was obtained from treatment T3 (70% cascara: 30% red ginger), which had a color preference rating of 4.15, an aroma preference rating of 4.34, a taste preference rating of 4.17, an L* value of 32.377, a pH value of 5.05, a moisture content of 13.461%, a total phenol content of 21.105 mg GAE/g, an antioxidant activity of 68.115%, and a total microbe count of 3.36 × 103 CFU/ml.

Abstract

Pengembangan produk baru membutuhkan suatu studi kelayakan usaha. Studi kelayakan usaha adalah penelitian terhadap rencana usaha untuk menganalisis kelayakan usaha dilakukan dan melihat proyeksi keuntungan maksimal untuk waktu yang tidak ditentukan. Penelitian ini ditujukan untuk mengetahui kelayakan pengembangan usaha ditinjau dari aspek finansialnya dan memprediksi keuntungan yang akan didapatkan pada pengembangan produk teh celup cascara-jahe merah. Analisis kelayakan finansial yang digunakan yaitu Net Present Value (NPV), Benefit Cost Ratio (B/C Rasio), Internal Rate of Return (IRR), Break Event Point (BEP) dan Payback Period (PBP). Hasil penelitian menunjukkan bahwa pengembangan produk cascara jahe merah celup layak dijalankan berdasarkan analisis finansial dengan nilai NPV sebesar Rp 388.277.344, IRR 48%, B/C rasio 1,13, BEP 97.990.767 unit, dan PBP 1,7 tahun.

Abstract

Dodol buah Jambu Biji Merah (JBM) merupakan salah satu produk dari perusahaan CV. Bagus Agriseta Mandiri yang berlokasi di Kota Batu, Provinsi Jawa Timur. Pengetahuan terkait kelayakan usaha suatu perusahaan merupakan suatu hal yang penting untuk diketahui baik oleh perusahaan maupun investor. Analisa kelayakan usaha merupakan suatu analisa yang dilakukan terhadap beberapa aspek. Adapun tujuan dari penelitian ini adalah untuk mengetahui apakah produksi dodol JBM oleh perusahaan ini sudah layak untuk dijalankan. Metode yang digunakan pada penelitian ini adalah metode  wawancara, observasi, dokumentasi dan analisis finansial berdasarkan data yang diperoleh baik dari catatan, website, media sosial dan dokumen. Berdasarkan hasil analisa diketahui bahwa legalitas usaha ini sudah lengkap mulai dari adanya PIRT, Halal, SNI dan sertifikat ISO 9001:2008. Dari aspek organisasi dan manajemen, perusahaan ini sudah baik dalam mengalokasikan pekerja dengan tugas dan tanggung jawab masing-masing. Dari segi teknis dan produksi usaha ini sudah memiliki lokasi produksi yang strategis dilihat dari jarak bahan baku, pekerja dan pemasaran, serta keberlangsungan produksi yang terjamin. Dari aspek finansial usaha ini memiliki BEP sebesar 105 unit dari 192 unit per produksi serta BEP rupiah sebesar Rp. 540.445 dari 988.416, nilai B/C Rasio sebesar 1,2 dan Payback Period sebesar 0,3 tahun dari 1 tahun masa investasi. Sehingga dapat disimpulkan bahwa usaha ini sudah layak untuk dijalankan baik dari aspek hukum, organisasi dan manajemen, teknis dan produksi, finansial serta pasar dan pemasaran.

Abstract

Susu kambing merupakan produk pangan yang memiliki banyak manfaat bagi proses metabolisme tubuh karena mengandung berbagai nutrisi yang baik untuk kesehatan. Tujuan dari penelitian ini yaitu untuk mengetahui pengaruh lama penyimpanan dan metode pasteurisasi terhadap karateristik fisikokimia susu kambing peranakan etawa (PE) di desa Mujur. Metode yang digunakan dalam penelitian ini adalah deskriptif dan eksperimental dengan Rancangan Acak Lengkap dengan pola faktorial yang terdiri dari 2 faktor yaitu pasteurisasi dan lama penyimpanan. Data di analisa menggunakan SPSS dengan uji lanjut Duncan multiple range test (DMRT). Hasil penelitian menunjukkan bahwa faktor penyimpanan menghasilkan pengaruh yang signifikan terhadap parameter pH dan warna susu. Faktor pasteurisasi menghasilkan pengaruh yang signifikan pada parameter viskositas, warna dan TPT. Sedangkan interaksi antara faktor penyimapan dan pasteurisasi memberikan pengaruh yang nyata pada parameter warna dan TPT. Perlakuan terbaik pada penelitian ini adalah perlakuan pasteurisasi HTST dengan penyimpanan 0 hari, karena beberapa karakteristiknya sesuai dengan SNI seperti viskositas (1,57 mPa.s) dan keadaan sampel berdasarkan warna (putih susu), aroma (aroma khas susu kuat), dan kenampakan (homogen). Selain itu memiliki nilai L* sebesar 83,49, nilai a* sebesar -3,58, nilai b* sebesar 3,82 dan nilai hue sebesar -46,95.

Abstract

The development of a new product entails a business feasibility study. Study of business feasibility is a research on a business plan to analyze the feasibility of business and to estimate the maximum profit for an indefinite time. The aim of this study was to determine the feasibility of business development from financial aspect and predict the profit that will be obtained in the development of red ginger tea dip product. The financial feasibility were analyzed using Net Present Value (NPV), Benefit Cost Ratio (B/C Ratio), Internal Rate of Return (IRR), Break Event Point (BEP) and Payback Period (PBP). The results showed that the development of red ginger tea dip product was feasible based on marketing analysis with the NPV IDR 388.277.344; IRR 48%l; B/C ratio 1.13; BEP 97.990.767 units; and PBP 1.7 years.

Abstract

This study aims to determine the effect of adding watermelon rind waste on the physical quality of durian ice cream. The design used was a one-factor Randomized Block Design (RBD) with four treatments and three repetitions. The treatments involved different ratios of watermelon rind pulp: 0%, 10%, 20%, and 30%. The observation data were analyzed using a 5% level Analysis of Variance (ANOVA) with Co-Stat software. If there were significant differences, further tests were conducted using the Honest Significant Difference (HSD) test. The research results indicate that watermelon rind pulp in durian ice cream yielded significantly different results regarding overrun percentage, resistance, and sensory parameters including aroma, taste, and texture. The best results for ice cream with added watermelon rind were obtained from the 30% treatment, with a physical characteristic of 73.42% overrun and 20.14 minutes resistance. Durian ice cream with 30% added watermelon rind has sensory characteristics of a slightly watermelon albedo aroma, a somewhat soft texture, and a slightly astringent taste. Therefore, it can be concluded that the addition of watermelon rind waste affects the physical and sensory characteristics of ice cream.

Abstract

Lactobacillus plantarum (L. plantarum) is a type of Lactic Acid Bacteria (LAB) that can convert glucose into lactic acid. L. plantarum can mostly be found in milk, meat, fermented vegetables, and the human digestive tract. The L. plantarum bacteria has several strains, each of which has a good function in food fermentation and health. To understand the historical development of an organism's evolution, it is necessary to use phylogeny as the basis for systematic science in biological evolution. The aim of this research was to determine the genetic structure and level of relationship between L. plantarum bacteria isolated from food products. The data used in this research is secondary data taken from GenBank in the form of nucleotide sequences from the bacterium L. plantarum which were then analyzed using clustal W in the Bioedit application, then genetic and phylogenetic structure analysis was carried out using the MEGA 7 application. The results showed that the probability of substitution was the highest. detected in base G, followed by bases A, T/U, and C. The L. plantarum strain that has the highest level of relationship is the strain with GenBank codes AY424355.1 and AJ640082.1 with a bootsrep value of 99. The resulting phylogenetic tree topology is monophyletic, which means that all members in the group come from a common ancestor who passed on genetic, morphological and biochemical characteristics to his descendants.

Abstract

Cascara is a beverage derived from dried coffee cherry pulp, known to have good functional value but with a short shelf life. Fermentation is a technique that can enhance cascara beverages' shelf life and quality and their functional value due to the presence of probiotics and increased antioxidant compounds. The study aimed to optimize the fermentation conditions of cascara tea with water kefir seeds to improve the microbiota content of Lactobacillus sp, Bifidobacterium sp, and Saccharomyces cerevisiae and the antioxidant activity of the beverage. The method in this study used Response Surface Methodology (RSM) with a design selection of Central Composite Design (CCD), using two independent variables, namely fermentation time (X1) and Grain Concentration (X2), with a response of antioxidant activity (%). The findings indicated that a fermentation period of 48 hours and a grain concentration of 8.58% resulted in a probiotic drink exhibiting the maximum antioxidant activity of 65.53%. This optimum treatment resulted in a drink with IC50 antioxidant activity of 173.66 ppm, total phenol 477.24 mg GAE/mL, brightness value (L*) 30.69, redness (a*) 14.06, yellowness (b*) 29.57, pH 3.57, TPT 8.80 (ᵒBrix), viscosity 1.62 mPa.s, total LAB 8.54 log CFU/ml, and total yeast & mold 10.93  log CFU/ml.

Abstract

Penanganan limbah hasil perikanan di Pulau Lombok saat ini masih kurang optimal. Dengan semakin meningkatnya produksi dan ekspor hasil perikanan seperti ikan tuna dan udang, maka limbah yang dihasilkan juga semakin banyak. Jika tidak ditangani dengan baik akan menyebabkan pencemaran lingkungan. Namun, hal ini dapat diatasi dengan mengolah limbah tersebut menjadi produk pangan baru yang bernilai ekonomis tinggi. Maka dari itu, kegiatan ini dilakukan bertujuan untuk meningkatkan pengetahuan masyarakat pengenai potensi pemanfaatan limbah hasil perikanan sebagai bahan baku pembuatan bahan tambahan pangan. Kegiatan ini dilaksanakan pada tanggal 26 Oktober 2024 di SMKN 1 Narmada yang diikuti oleh 22 peserta yang berasal siswa kelas XII. Hasil yang diperoleh menunjukkan adanya peningkatan pengetahuan siswa mengenai pemanfaatan limbah hasil perikanan menjadi bahan baku pembuatan bahan tambahan pangan yang memiiki nilai ekonomi tinggi. Hal ini dilihat dari peningkatan hasil pre-test dan post-test yaitu terdapat peningkatan sebanyak 70% pada tingkat pemahaman siswa setelah mengikuti kegiatan edukasi ini.  Sehingga dapat disimpulkan bahwa kegiatan ini dapat menambah wawasan para siswa dan diharapkan mahasiswa akan lebih kreatif dan inovatif dalam membuat produk dari limbah hasil perikanan.

Abstract

High coffee production is followed by a significant amount of coffee husk waste. However, the processing of coffee husk waste has not been fully optimized due to the lack of information regarding the unique characteristics of cascara from West Nusa Tenggara (NTB), Indonesia. The volatile components present in cascara can be measured and used as sensory threshold indicators. Therefore, this study aimed to identify the volatile and sensory components and determine the distinctive aroma and taste characteristics of cascara from arabica and robusta coffee. The research used a completely randomized design with GC-MS analysis and rate all that apply (RATA) sensory evaluation. The results showed that arabica var. Rinjani cascara contains the most dominant compounds, including caffeine (22.37% retention area) and 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one (13.32% retention area). Robusta var. Rinjani cascara is dominated by caffeine (14.71% retention area) and quinic acid (13.92% retention area). Arabica var. Tambora cascara contains caffeine (40.82% retention area) and quinic acid (11.67% retention area), while robusta var. Tambora cascara has quinic acid (29.74% retention area) and mome inostol (22.98% retention area) as the most dominant compounds. Based on sensory profiles, arabica var. Rinjani cascara has a fruity, earthly, and green aroma with sour, sweet, and bitter flavors. Arabica var. Tambora cascara has a similar aroma with a sour, sweet, and bitter taste. Robusta var. Rinjani cascara features a floral, fruity, earthly, and green aroma with a similar taste. Meanwhile, robusta var. Tambora cascara has an earthly and green aroma with a bitter, sour taste. The RATA taste intensity test showed that robusta var. Rinjani cascara was sweeter than robusta var. Tambora. The sweet taste of cascara enhances its hedonic value, making it more preferred by panelists. This study provides the valuable sensory profile insights of cascara from NTB and references for developing value-added food products.Keywords: cascara, GC-MS, hedonic, RATA
