Abstract

Abstrak Limbah kulit pisang ambon (Musa paradisiaca L. cv Ambon) yang selama ini kurang dimanfaatkan ternyata mengandung senyawa bioaktif, seperti fenolik yang berpotensi sebagai antioksidan alami. Metode Foam Mat Drying (FMD) dipilih sebagai teknik pengeringan yang efektif untuk mempertahankan kandungan senyawa aktif. Penelitian ini bertujuan mengevaluasi karakteristik fisik, aktivitas antioksidan dengan metode ABTS, dan kadar fenolik total dari serbuk FMD kulit pisang ambon. Proses pengeringan kulit pisang ambon dilakukan dengan metode FMD menggunakan penambahan maltodekstrin dan Tween 80. Karakterisasi fisik serbuk meliputi uji organoleptik, kecepatan alir, sudut diam, dan kadar air. Analisis total fenolik dilakukan menggunakan metode Folin-Ciocalteu dengan asam galat sebagai senyawa standar, sedangkan aktivitas antioksidan diuji menggunakan metode ABTS dengan trolox sebagai pembanding. Pengukuran absorbansi dilakukan melalui spektrofotometer UV-Vis dan nilai IC50 diperoleh dari analisis regresi linier. Hasil penelitian menunjukkan serbuk FMD kulit pisang ambon memiliki karakteristik fisik yang baik dengan menunjukkan warna kuning cerah, berbau khas pisang dan berbentuk serbuk. Nilai waktu alir 4,5533 gr/detik, nilai sudut diam 34,3333° dan nilai kadar air 1,7%. Penetapan kadar fenolik diperoleh sebesar 117,5859 ± 0.4677 mg GAE/gram. Aktivitas antioksidan serbuk FMD kulit pisang ambon diperoleh IC50  sebesar 100,2642 ± 0,622058 ppm  yang termasuk dalam kategori sedang. Kata kunci: Antioksidan; fenolik; kulit pisang ambon; serbuk foam-mat drying.   Abstract The underutilised banana peel waste (Musa paradisiaca L. cv Ambon) contains bioactive compounds, particularly phenolics, which have potential as natural antioxidants. The Foam Mat Drying (FMD) method was selected as an effective drying technique to preserve active compounds. This study aimed to evaluate the physical characteristics, antioxidant activity using the ABTS method, and total phenolic content of FMD banana peel powder. The drying process was conducted using the FMD method with the addition of maltodextrin and Tween 80. Physical characterisation included organoleptic evaluation, flow speed, angle of repose, and moisture content. Total phenolic content was determined using the Folin–Ciocalteu method with gallic acid as the standard, while antioxidant activity was measured using the ABTS method with Trolox as the reference. Absorbance was measured using a UV–Vis spectrophotometer, and IC₅₀ values were calculated by linear regression. The FMD powder showed good physical characteristics, including a bright yellow colour, distinctive banana aroma, and powder form. The flow rate was 4.5533 g/s, the angle of repose was 34.3333°, and moisture content was 1.7%. Total phenolic content was 117.5859 ± 0.4677 mg GAE/g, while antioxidant activity showed an IC₅₀ value of 100.2642 ± 0.6221 ppm, categorised as moderate. Abstract

Ambon banana peel (ABP) is rich in phenolic compounds yet unstable to light and heat. Foam-mat drying (FMD) protects bioactive components and facilitates the development of nutraceutical products. This study aimed to formulate and evaluate FMD granules containing ABP for their antioxidant and antihypertensive activities. Granules were prepared with ABP at 1% (F1), 2.5% (F2), and 5% (F3) w/w, combined with 6% Tween-80 and 15% maltodextrin, dried at 40 °C for 60 min, and blended with excipients. Physical characteristics, pH, flowability, and antioxidant activity (ABTS assay) were assessed. Antihypertensive effects were tested in Wistar rats induced with 2% NaCl and treated orally for 14 days; captopril (5 mg/kg BW) served as a positive control. Data were analyzed by one-way ANOVA. All formulations produced free-flowing granules with a moisture content <2% and a dissolution time <5 min. Antioxidant inhibition increased with ABP content, with F3 showing the highest activity (71.3 ± 1.4%). F3 also achieved the greatest reductions in systolic (≈31%) and diastolic (≈39%) blood pressure, approaching the effect of captopril. Moreover, F3 exhibits strong antioxidant activity and significant antihypertensive effects, indicating potential as a sustainable nutraceutical for the management of hypertension. Further studies on product stability and clinical efficacy are warranted.
