Abstract

Tuberculosis (TB), particularly in children, often leads to undernutrition owing to increased metabolic demands and reduced food intake. This study aimed to evaluate the organoleptic characteristics, acceptability, and nutritional quality of cambete biscuits made from a mixture of eel and tempe flours at different concentrations. This study used a completely randomized design (CRD) with three treatment factors and three replications (2,5%, 3,7%, and 5% substitutions of eel and tempe flour), which took place in Jakarta Health Polytechnic II from April to June 2024. The biscuits were assessed using sensory (organoleptic) and hedonic tests by moderately trained panelists. Proximate analysis was performed to determine nutrient content. Data were analyzed using the Friedman test. The results showed no significant differences in color (P =0,101), aroma (P =0,410), taste (P =0,306), or texture (P =0,598) among the different flour formulations. One serving (46 g, 2 biscuits) of Cambete biscuits provides 212,14 kcal of energy, 3,88 g of protein, and is favored by 63,4% of panelists. In conclusion, this product has potential as a complementary food for children with TB owing to its high energy content and the use of locally available ingredients.

Abstract

Stunting is a condition of growth failure characterized by height below the expected standard for their age. The prevalence of stunting in West Sumatra has fluctuated above 20% between 2021 and 2023, highlighting its status as a public health issue. Unaddressed stunting in early childhood can adversely affect learning capacity and elevate the risk of non-communicable diseases later in life. This ecological study analyzes factors associated with stunting prevalence in West Sumatra using secondary data from 2021 sourced from the Health Office, Social Office, Central Bureau of Statistics, and the National Population and Family Planning Board across 19 districts/cities. The dependent variable was stunting prevalence, while the independent variables included acute respiratory infections (ARI), vitamin A supplementation, antenatal care (ANC), family planning, poverty, families at risk of stunting, and Conditional Cash Transfer (CCT) beneficiaries. Statistical analyses using Pearson and Spearman tests identified significant positive associations between stunting prevalence and ARI percentage (p=0,020), poverty level (p=0,023), and CCT beneficiaries (p=0,028). Conversely, ANC coverage showed a significant negative association with the prevalence of stunting (p=0,021). In conclusion, the prevalence of stunting in West Sumatra in 2021 is influenced by various factors, including ARI, poverty levels, PKH beneficiaries, and ANC coverage.

Abstract

Mothers play an important role in reducing the risk factors for parenting related to the increased incidence of childhood tuberculosis (TB). This risk factors are very complex and need to be simplified in a model. The purpose of the study to determine the model of risk factors for parenting related to childhood TB. This cross-sectional study was conducted in 2014 in the Tambak Sari, Simokerto, and Kenjeran Districts, Surabaya city, Indonesia. A total of 39 mothers (total sample) whose family members had TB were interviewed about care related to the incidence of sick children. Their children's nutritional status was assessed. Furthermore, a simultaneous path analysis was conducted to determine the model. Result, the model of risk factors for caring for children with TB was appropriate (x2=6,02, df=10, p=0,8), as was the model of risk factors for caring for children with TB and other infections (x2=7,68, df=10, p=0,66). TB in children was influenced by their nutritional status (β=0,42). Children's nutritional status can be improved by improving mothers’ ability to care for sick children (in both models, β=0,16). In conclusion, the ability to care for sick children forms a model for determining the incidence of TB in children through their nutritional status.

Abstract

The number of children with autism in Indonesia continues to increase annually. Children with autism often eat sweet and sticky foods, have irregular brushing habits, and rarely receive parental guidance for maintaining oral health. This is certainly a trigger for stunting in children. Preventive efforts include providing psychoeducation to parents or caregivers. This study aimed to improve the knowledge, attitudes, and behavior of parents or caregivers of children with autism. The research design was a quasi-experiment with pre-test and post-test non-equivalent group designs. This study was conducted at the School for Students with Special Needs (SLB) and SLB in Pembina Aceh Province, involving 25 parents/caregivers of children with autism (intervention group) and 17 parents/caregivers in the control group. Data were collected through interviews, using questionnaires. Data were analyzed using the Mann-Whitney and Wilcoxon tests, The results showed that nutritional management psychoeducation had an effect on knowledge, attitudes, and behavior (p<0,05), whereas the control group showed no difference in behavior (p>0,05). Furthermore, nutritional management psychoeducation was effective in improving parents' knowledge, attitude, and behavior (p=0,001) compared to the control group. In conclusion, nutritional management psychoeducation significantly improved parents' knowledge, attitudes, and behaviors. This intervention proved to be more effective than that in the control group.

Abstract

Stunting remains a major malnutrition problem in Indonesia, and is caused by chronic malnutrition and recurrent infections. In 2022, the SSGI reported that Aceh ranked fifth with a high prevalence of stunting (>30%). Malnutrition during the golden period (toddlers) can be corrected. This study analyzed the factors that influence stunting and the most dominant factors in children aged 6-24 months in the Samadua District, South Aceh Regency. This study was conducted using a cross-sectional design. Participants were 120 children under five years of age conducted in Samadua District by simple random sampling from November 2023 to January 2024. Data were collected through interviews, using questionnaires, anthropometric measurements, and recall. Statistical applications were used for data processing. Bivariate data analysis was performed using binary logistic regression test with p<0,25 criteria and multivariate analysis was continued using logistic regression test on influential variables in bivariate analysis and 95% confidence interval (CI). Conclusion: Risk factors affecting stunting in children aged 6-24 months in Samadua District, South Aceh Regency, were birth length (OR=13,000), birth weight (OR=15,400), maternal anemia history (OR=18, 000), ANC history (OR=20,429), ARI frequency (OR=7,500), protein adequacy (OR=5,910), fat  (OR = 7,083), calcium (OR = 6,081), iron (OR = 4,375), and zinc (OR = 5,500) intakes.

Abstract

Potassium intake can lower systolic and diastolic blood pressure, whereas low sodium consumption can increase blood pressure. Although the use of fruits and probiotics as alternative drinks to reduce blood pressure has been widely practiced, research on the combination of fruit juice and probiotics from melon juice is still very rare. This study aimed to measure the effect of administering fruit juice with a combination of probiotics and melon juice on blood pressure in prehypertensive patients. An experimental research design with a randomized group design was conducted at the Jembatan Kecil Health Center, Bengkulu City, in 2024. A total of 28 respondents were selected using purposive sampling, The instruments used were digital blood pressure and 24-hour recall form, with statistical analysis using ANOVA and Duncan’s test. Results, showed that the average systolic and diastolic blood pressure before the intervention was 138/87 mmHg, and after the intervention dropped to 122/79 mmHg. There were differences in systolic (p=0,000) and diastolic (p=0,006) blood pressure between the treatment groups, with the third treatment showing the greatest effect. In conclusion, fruit juice with a combination of probiotic melon juice has a significant effect in reducing blood pressure in prehypertensive patients and has a harmless effect, which can be used as a non-medical treatment for prehypertensive patients.

Abstract

Stunting remains a significant public health concern in Indonesia, underscoring the potential for utilizing local food resources as a key strategy for effective nutritional improvement and prevention measures. This review examined the impact of innovative applications of local foods on enhancing children's nutrition, emphasizing diverse food varieties, methodological approaches, and their efficacy in reducing stunting rates across the country. The research employed a scoping review methodology following the PRISMA-ScR guidelines and PEO framework. Relevant literature from PubMed, ScienceDirect, Crossref, and Google Scholar published between 2013 and 2023 was selected based on inclusion criteria that emphasized the utilization of local foods for stunting prevention, open access, and availability in English or Indonesian. Non-empirical articles were excluded from the review, and the screening procedure involved evaluating abstracts and conducting a full-text analysis using Covidence. The validity of the studies was assessed through qualitative, quantitative, and mixed-methods data analysis utilizing tools developed by the Joanna Briggs Institute (JBI). This review revealed that innovative local food products, such as floss made from snakehead fish and chips created from locally sourced carbohydrates, have a significant positive impact on children's nutritional health. These foods are rich in essential proteins and micronutrients that contribute to improvements in children's weight and height and enhance overall nutrient consumption, thereby aiding in the prevention of stunting. In conclusion, the incorporation of snakehead fish floss and fish flour proved to be effective in enhancing the nutritional status of children with stunting, as demonstrated by mean weight gain of 0,5 kg and a height increase of 2 cm over 30 days.

Abstract

Nephrotic syndrome (NS) is the most frequently occurring kidney disease among children and increases the morbidity and mortality of cardiovascular disorders caused by hyperlipidemia, increased thrombogenesis, and endothelial dysfunction that occur in atherosclerosis. Carotid intima-media thickness (CIMT) is an accessible, noninvasive, and sensitive method for detecting subclinical atherosclerosis. This study aimed to determine the risk factors for CIMT in children with idiopathic nephrotic syndrome at RSUD dr. Zainoel Abidin Banda Aceh. This was an observational analytic study with a cross-sectional design, conducted from March 2024 until May 2024. This study included 35 patients with NS who were 2-18 years, receiving treatment for a minimum of 6 months, with a glomerular filtration rate exceeding 90 ml/minute/1,73 m2, and no recent acute infections in the past 3 months. Bivariate analysis was performed using the Pearson correlation test, and independent T tests and multivariate analyses were performed using multiple linear regressions. We found a statistically significant correlation between CIMT and total cholesterol (p=0,004, r=0,471), steroid-resistant nephrotic syndrome (p=0,001) and systolic blood pressure (p=0,011, r=0,427) with a mean CIMT of 1,5 ± 0,4 mm. In conclusion, the total cholesterol level, steroid-resistant nephrotic syndrome, and systolic blood pressure are risk factors for CIMT in children with NS.

Abstract

Mussels (Donax sp.) are marine shellfish that tend to be contaminated with heavy metals as they are filter feeders. Heavy metal levels can be reduced by immersion in sequestrants. This study aimed to measure the effectiveness of the optimal sequestrant to reduce heavy metal levels in mussels. This experimental study was conducted at the Food Technology Laboratory of Padjadjaran University in January-April 2024 using samples of mussels (Donax sp.) from Cirebon, Indonesia. The data processing method used was a Randomized Group Design with five treatments consisting of soaking mussels in distilled water, 25% citric acid, 25% tamarind, 25% tomato, and 25% Pidada; each repeated 3x. The results showed that the most optimal organic sequestrant in reducing heavy metals was Pidada fruit with the effectiveness of reducing cadmium metal 21,195%, lead metal 6,543%, total citric acid 0.552%, water content 76.953%, and antioxidant activity based on IC50 value of 19,537 ppm with a very strong category. In conclusion, the Pidada fruit is the most optimal organic sequestrant for reducing heavy metal levels in mussels (Donax sp.) and has very strong antioxidant activity, making it effective for reducing heavy metal contamination.

Abstract

The COVID-19 pandemic limits individual activities which causes changes in people's lifestyles, including intake, eating behavior and unstable emotional changes. This condition will have an impact on health, one of which is the individual's nutritional status. This study aims to analyze the correlation among stress, emotional eating, snack consumption, energy and fat intake, and body mass index of students during COVID-19 pandemic. The   design   of   this   study   was cross sectional design. This research was conducted on August-September 2022  with a total sample of 66 people at Universitas Esa Unggul, West Jakarta with proportional stratified random sampling. Retrieval of stress data using the PSS questionnaire, emotional eating using the EEQ questionnaire, snack consumption frequency using FFQ, energy and fat intake using Recall 2x24 hour. The association were analyzed by Spearman Rank correlation test. The results stated that there wasa relationship between energy intake (p = 0,026), fat (p= 0,004) with BMI of students, There was no correlation between stress (p= 0,696), emotional eating (p= 0,242), and frequency of snack consumption (p= 0,278) with student BMI. There is no relationship between stress, emotional eating, and frequency of snack consumption with student BMI during the COVID-19 pandemic. Conclusion: there was an association between energy and fat intake with BMI of students. There was no association between stress, emotional eating (p=0,242), and frequency of snack consumption with student BMI during the COVID-19 pandemic.
