Abstract

Thalassemia is a genetic disease that are passed from parents to children through DNA which causes blood cells to lack globin chains. Children with thalassemia experienced an increase in energy expenditure, a lack of vitamin and minerals so that it has an impact on the state of malnutrition which will have a direct effect on the growth of patients with thalassemia. This study’s purpose was to analiyzing relationship between protein intake, iron, vitamin C, vitamin E, and nutrition status with hemoglobin levels in thalassemia patients in the Tangerang Regency Hospital. The subjects of this study are 29 thalassemia patients. The method of the research is cross-sectional. Sampling method of this study was quota sampling and technique of data analysis with Pearson Moment Product. Average protein intake was 96%, average iron intake was 72,5%, average vitamin C intake was 79,5%, average vitamin E intake was 51,1%, average z-score was -1,59 SD and hemogloblin level 8,1 g/dl. The results showed that protein intake and vitamin E intake related to hemoglobin levels. Whereas iron intake, vitamin C, and nutritional status not related to hemoglobin level. Abstract

ABSTRACT Dyslipidemia is a major factor in cardiovascular disease which can cause atherosclerosis, ischemic stroke and peripheral arteries. Dyslipidemia can be predicted by anthropometric measurements. The purpose of this study was to determine the anthropometric measurements that have the highest validity in detecting lipid profiles compared to biochemical assessments in poly cardiac patients at Budhi Asih Regional Hospital, East Jakarta. Research conducted in cross sectional method with quota sampling. This study was conducted on 75 cardiac poly patients. Data was collected by anthropometric measurements of body weight, height, waist circumference and hip circumference. Data on lipid levels were obtained from hospital medical record data. The results showed the lipid profile of normal HDL patients (73.30%), Normal LDL (58.70%), Triglycerides normal (65.30%), Total cholesterol was not normal (52%). Anthropometric value of BMI Obesity (44%), high RLPP (85.3%) and high waist circumference (74.7%). The conclusion of the analysis showed that BMI had poor sensitivity and specificity values ​​for all lipid profiles (Se <60%). RLPP has a very good sensitivity value on all lipid profiles (se> 90%) but has an unfavorable specificity value (Sp <60%). Waist circumference has a relatively good sensitivity (Se> 70%) in LDL, Triglycerides and Total Cholesterol, whereas in HDL it is quite good (Se> 60%). But it has poor specificity (Sp <60%). The results of the three anthropometric measurements RLPP is the best measurement in detecting lipid profiles in cardiac poly patients compared with BMI and Waist Circumference. Abstract

There is a growing interest on using alternative substitution of food ingredients which aims to delay postprandial blood glucose, such as protein and fiber, to reduce the risk of metabolic syndrome that leads to non-communicable diseases (NCDs). This research aims to evaluate the nutrient content of chia seed flour (TC) and sesame seed flour (TW) as alternative flour rich in fiber and protein which potential to reduce the risk of NCDs. Proximate analysis (protein, fat, carbohydrate, water, ash), fiber, and calcium analysis were done for two types of flour. The results showed that TW is rich in fat (58,90 ± 0,07 g/100g) while TC rich in protein (26,23 ± 0,06 g/100g), fiber (30,24 ± 0,08 g/100g), and calcium (617,05 ± 24,74 mg/100g). In conclusion, TW and TC are potential to use as substitution of wheat flour for bakery products, as consideration to increase nutritional value of the product. Abstract

Maternal Mortality Rate (MMR) is one indicator of community welfare in a country. One of the direct causes of maternal death is hypertension by 27.1%, with risk factors, including the imbalance of calcium. Calcium and phosphorus have a synergistic relationship. One of the food ingredients that contain calcium and phosphorus is sesame seeds, and the product was milky pie. The purpose of this study was to formulate sesame seeds and sesame seed flour to produce milky pie, a source of calcium and high phosphorus that is favored by panelists. Milky pie can be said to be a source of calcium and high phosphorus if it reaches an ALG of 195 mg of calcium and 210 mg of phosphorus. This study uses a completely randomized design (CRD). The treatment in this study was substituting wheat flour with the addition of 3 levels of sesame seeds flour (10%, 15%, and 20%), and substitution of sesame seeds by 1 level (20%). Data obtained from organoleptic tests will be analyzed statistically with ANOVA and followed by Duncan's Multiple Test with a significance level of 95%. The results showed that the addition of sesame seeds and sesame seed flour influenced the quality and level of overall panelist preference, but not at the preferred level of the taste of milky pie. The selected product is formula 3 with the substitution of wheat flour : sesame seed flour : sesame seeds equal to 60% : 20% : 20%. The serving of milky pie is and 90 g and has an energy content of 170 kcal, calcium 99 mg, and phosphorus 90 mg.

Abstract

Diabetes mellitus (DM) is one of the most critical illnesses experienced worldwide. Pillars for the management of type 2 DM are education, medical nutrition therapy, physical exercise, and pharmacological interventions. This study aimed to analyze Diabetes Self-Management Research (DSME) on the level of knowledge and activities of type II DM patients in Fatmawati General Hospital, South Jakarta. This research method used pre-experimentation with one group pretest-posttest. Analysis of the data used in univariate and bivariate analysis with a paired t-test. Sampling method was using a consecutive sampling technique obtained by 23 subjects. The results of the study showed differences between the previous and conducted DSME on the level of knowledge (p<0.001) and the level of physical activity (p=0.001). Based on the results of this study, there needs to be an improvement in the curriculum with support materials related to stress and the healthcare system.

Abstract

Pre-menstrual syndrome (PMS) is a set of psychic and physical symptoms experienced by women of childbearing age between 7-10 days before menstruation. This study used cross-sectional design with quantitative approach. Sampling was done by simple random sampling method. This study used primary data of semi-quantitative food frequency interview, Shortened Premenstrual Assessment Form (SPAF) and perceived stress scale questionnaire. The result of this study, it can be concluded that most of UHAMKA Nutrition Students have a pre-menstrual syndrome, high stress levels, and adequate calcium intake. Statistical test results showed that there was a relationship between stress with the premenstrual syndrome, while calcium intake and nutrional status showed no relationship.

Abstract

In this era, food products had a high interest in the community because it is easy to consume but not followed by behavior to read the food label. The objective of this study was to analyze the relationship between food label knowledge and information exposure with food label reading behavior on college students in FIKES UHAMKA. This study was quantitative research with a cross-sectional design. This study conducted in July–August 2019 with 239 subjects. Data analyzed used Chi-Square statistical test. The result showed 52,7% of subjects always reading food labels. Food label knowledge did not have a relationship with food label reading behavior. Information exposure variable has a relationship with food label reading behavior.

Abstract

The status of cardiorespiratory fitness is an indicator of importance in measuring a person’s fitness. The status of fitness cardiorespiratory is the ability of a person in supplying the heart and lungs, spreading and using oxygen is influenced by several factors such as gender, intake of nutrients, and nutritional status. This research aimed to determine the factors related to the status of cardiorespiratory fitness of students at Muhammadiyah 3 Senior High School, Jakarta. Variables were sex, nutritional status (IMT/U), energy and macronutrient intake (carbohydrates, protein, fat), and micronutrients (zinc, iron, calcium, vitamin C) intake. This is a cross-sectional study, with 85 subjects. Data were analyzed using the Spearman Correlation test and Chi-Square test. Retrieval of cardiorespiratory fitness status data was measured by means of 20-meter shuttle run in a bleep test. The study showed that the majority of subjects were male. Most of subjects had less energy, carbohydrates, protein, fat, calcium, vitamin C, zinc, and iron. The statistical test showed that there were relationship between sex and nutritional status of IMT/U with the status of cardiorespiratory fitness (VO2max). There was no correlation between energy, carbohydrates, protein, fat, vitamin C, zinc, calcium, and iron intake with the status of cardiorespiratory fitness.

Abstract

Feeding infants and toddlers (PMBA) is one of the government programs to reduce child mortality. PMBA include early breastfeeding initiation (IMD), exclusive breastfeeding, complementary food and breastfeeding up to 2 years old. The survey results in Pegagan Lor village, the case of malnutrition in Kapetakan sub-district was higher than national, which was 23%. The purpose of this study was to determine the effectiveness of providing nutrition education on maternal knowledge and feeding patterns of infants and toddlers. This research type was quasi-experimental with a control group pre-test and post-test design. The sample of this research is 70 mothers of toddlers who have children aged 6 to 24 months. The inclusion criteria in this study were mothers of toddlers who could read and write, and were willing to be respondent. The sample was divided into two groups of intervention and control group. In the intervention group was given nutrition education and booklets, while in the control group was only booklet. Data processing on knowledge variable used the paired sample t-test, and the feeding infants and toddlers pattern used the Wilcoxon sign test. Based on the results of the research that has been carried out, it can be concluded that the provision of nutrition education and booklet was more effective in changing knowledge and patterns of giving feeding infants and toddlers compared to only providing booklet. Providing nutrition education and booklets can provide changes in the direction of better maternal knowledge and feeding infants and toddlers pattern.

Abstract

Food waste is the volume or percentage of food that is not consumed and discarded as waste and is an impotant indicator to evaluate the effectiveness of food management and food service, as well as food patients food intake. Many factors cause food waste in patients in hospitals, incluiding psychological condition, age, type of disease, appearance of food, taste of food, etc. This study aims to determine the relationship betweenfood quality and stress levels with soft food waste in hospitalized patients in Karya Medika hospitals. This study was analytical with a cross sectional design. Sampling using purposive sampling technique consisting of 32 patient who received soft food. Data taken includes patient characteristic, food quality data, patient stress level data and patient soft food waste data. Processing data in this study using software with Chi Square. The results showed that the average residual food of respondents was as much as 12,7%. Statistical test results showed that there was no relationship (p = 0,152) between the appearance of food with leftovers from soft food. There was a relationship between food taste (p = 0,047) and stress level (p = 0,023) with soft food waste at Karya Medika Tambun Hospital .
