Abstract

Based on the BPOM RI report in 2019, there were 373 cases of food poisoning in Bali, with 43 cases of processed food poisoning. One of the processed snacks that are often found in tourism areas is spring rolls. Lumpia is served together with the seasoning which is made from peanuts with high protein and water content so that if it is not processed properly it can facilitate the growth of bacteria, one of which isEscherichia coli. The purpose of this study was to determine the food safety of spring roll seasoning sold by traders in the Pantai area of Sanur Kaja Village, South Denpasar. Observational analytic research type with designcross sectional and sampling techniquesPurposive Sampling with 16 samples of spring roll traders. Assessment of food safety scores, TPC, MPN and TPC testing was carried out Escherichia Coli so as to get the results, namely, 11 samples (68.7%) with the vulnerable category, but safe for consumption. The total microbial contamination was above the maximum limit, namely 3 samples (18.8%), bacterial contaminationcoliform above the maximum of 11 samples (68.8%) and there was 1 sample (6.2%) positive for bacteria Escherichia Coli. Based on the results of the Kruskal Wallis test, it was concluded that there was a difference between total microbial contamination and contamination Escherichia Coli bacteria with a value-based food safety scoreAsymp. sig 0.05. So it can be concluded that the food safety of spring roll seasoning sold in the Pantai Desa Sanur Kaja area is categorized as vulnerable, but safe for consumption.Keywords: Spring Roll Seasoning, Food Safety Score, Total Microbial Contamination, Coliform Bacteria Contamination, Escherichia Coli.

Abstract

Food consumption is one of the factors that directly affect a person’s nutritional status. Fish is a food that provides relatively high animal protein and provides essential unsaturated fatty acids that the human body needs. This study aims to determine the pattern of fish consumption in toddlers which includes the intensity of fish consumption, reasons for consuming fish, age at which fish were started, frequency of eating fish, types of processed fish consumend, and types of fish consumed. The method used is descriptive method. Sampling with random sampling technique using the slovin formula to get 70 respondents. The result of the study show that the intensity in consuming fish does not mean that toddlers always consume fish, there are 70,8% giving toddlers to eat fish because fish has a high nutritional content, toddlers generally consume fish at the age of 1 year as much as 72,2%, and the portion of fish spent at the time of eating the most is  1/2  fish which is 68,9%, as many as 81,1 % of toddlers do not consume processed fish, the type of sea water fish consumed the most is dencis fish namely 54,1%, , the type of fresh water fish consumed the most is nila  fish namely 47,3%.Keywords: Comsumption Pattern, Fish, Toddler

Abstract

Nutrition is one of the important factors that determine the level of health and harmony between physical development and mental development. The level of normal nutritional status is achieved when optimal nutritional needs are met. According to the NTT Health Office in 2015, several areas in NTT that experienced more than 200 cases of malnutrition were in Kupang City, Kupang District, TTS, Alor, Southwest Sumba and East Sumba. Then in Nagakeo, Ngada and Central Sumba the incidence of malnutrition was 50 cases. The purpose of this study was to determine the relationship between intake of macronutrients, fat soluble vitamins, birth weight, and the nutritional status of toddlers in Kanatang District, East Sumba Regency. This study used an observational method with a cross-sectional design with a total sample of 88. The sampling technique used was simple random sampling. Data collection included weighing, measuring height, 24-hour recall, and history of birth weight. The results show that there are still 11.4% of children under five who are undernourished as assessed using the calculation of the z-score index BB/TB. The data analysis used was the Pearson Correlation test with α = 0.05. Based on the results of statistical analysis tests, it was found that there was a significant relationship between carbohydrate, protein and fat intake and the nutritional status of toddlers. In addition, there is a significant relationship between vitamin A intake and the nutritional status of children under five, and there is no significant relationship between vitamin D, vitamin E, vitamin K and birth weight and nutritional status of children under five in Kanatang District, East Sumba Regency.

Abstract

Diabetes Mellitus is one of the main non-communicable diseases (PTM) in society. The prevalence of DM continues to increase which causes various impacts such as high health costs and a decrease in people's quality of life. This study aims to determine the relationship between carbohydrate intake and nutritional status with blood glucose levels in Type II Diabetes Mellitus Patients at Penebel II Health Center, Tabanan Regency. The type of research used is descriptive research, namely research conducted on a set of objects that aims to see a picture of phenomena (including health) that occur in a certain population. The number of samples studied was 44 samples. Carbohydrate intake in the more category, namely 86.4%, carbohydrate intake in the normal category was 9%, and for carbohydrate intake in the less category, 4.6%. Significant value of 0.697 (value of r = 0) so that there is no significant relationship between carbohydrate intake and blood glucose levels. Significant value of 0.124 (value of r = 0) so that there is no significant relationship between nutritional status and blood glucose levels.

Abstract

Breakfast is very important for elementary school students especially to maintain the concentration of learning and support achievement in school. Many elementary school students who ignore breakfast before going to school due to lack of knowledge about breakfast. Therefore an education is needed to increase the knowledge and attitudes of elementary school students about breakfast. The targets of this study is to determine the effectiveness of counseling with the simulation method on knowledge and attitudes about breakfast in elementary school students. This type of research is experimental quazi with a one group pretest-posttest design study design. The sampling technique uses proportional random sampling. The total population is 88 people with a total sample of 73 people. This research was conducted in January-May 2019. Instruments for collecting data using questionnaires about breakfast. The results showed that there was a change in knowledge and attitude about breakfast. Hypothesis testing using paired T-Test samples obtained p value sig. 2-tailed) knowledge of 0,000 and p value of sig. 2-tailed) breakfast attitude at 0.024. It was concluded that counseling using an effective simulation method on increasing knowledge and attitudes about breakfast for students at SDN 3 Delod Peken Tabanan. It is expected that extension officers in the school can improve and develop the provision of material on breakfast to elementary school students by using methods and media that are more interesting and in accordance with children's development such as simulation methods with the breakfast monopoly media.Keywords             : simulation, knowledge, attitude, breakfast

Abstract

Anemia is a condition in which there is a total shortage of red blood cells or hemoglobin levels less than normal or decreased levels of red blood cells/hemoglobin in the blood so that the body's physiological needs are not fulfilled (Nabilla dkk., 2022). This study aims to determine the consumption of iron inhibitors and enhancers in relation to anemia status in female students of SMAN 6 Denpasar Selatan. The type of research used was observational with a cross sectional design. The research sample was 62 class XI students at SMAN 6 South Denpasar. Data collection was carried out by taking hemoglobin levels in female female students and interviews using the SQ FFQ questionnaire on the consumption of iron inhibitors and enhancers. The data collected included data on anemia status, consumption of inhibitors and consumption of iron enhancers in female adolescents. To determine the relationship between anemia status and consumption of iron inhibitors and enhancers. Pearson's correlation analysis was carried out. Anemia categories are divided into 2, namely not anemia (≥12 g/dL) and anemia (12 g/dL). Based on the research, out of 62 samples, there were 48 female students who were not anemic and 14 female students who were anemic.  The lowest hemoglobin level was 9.1 g/dL, the highest was 17.8 g/dL, the average was 15 g/dL. Consumption of tea (96.7%) and spinach (100.0%), and consumption of oranges (100.0%) and chicken meat (100.0%) in the last 1 month. The results showed that there was a relationship between consumption of iron inhibitors and anemia status in young women (p-value = 0.034). For the analysis test results of consumption of iron enhancers with anemia status in young women showed a relationship (p-value = 0.000).

Abstract

Stunting is a nutritional status based showed by length for age where in the anthropometric standard assesses nutritional status of children, the measurement results are in the range (z-score) -2 SD up to -3 SD (stunted) and -3 SD (severely stunted). This study aims to determine the correlation between exclusive breastmilk practice and consumption of micronutrient with stunting incident in toddler. This research in an observational study with cross sectional design conducted on 45 toddler, with aged arrange 6 – 24 months. Data on consumption were collected using 24 hours recall as many as two times on different days. Exclusive breastmilk practice data, subject and respondent identity were acquired using questionnaire. Degrees of stunting are expressed by length for age z-score. Data analysis was performed using univariate, bivariate analysis using Spearman and Pearson Correlation test. Based on analysis using Spearman and Pearson Correlation shows that there is no relationship between exclusive breastmilk with the incidence of stunting, there is no correlation between the level of iron consumption with incidence of stunting, and there is no correlation between zinc with incidence of stunting. With regard, it is recommended to provide nutritional education effectively to mothers of toddler to increase knowledge about exclusive breastmilk and micronutrients for prevention of stunting.Keywords: Stunting, Exclusive Breastmilk, Micronutrient

Abstract

Diabetes melitus adalah suatu penyakit menahun yang ditandai dengan hiperglikemia sebagai akibat dari terjadinya resistensi insulin. Penyandang DM merupakan salah satu kelompok yang berisiko mengalami penurunan IMT. Semakin lama menderita DM akan mempengaruhi status gizi karena tidak optimalnya kontrol glukosa darah yang mengakibatkan lemak dan protein tubuh yang akan dimetabolisme menjadi energi sebagai pengganti glukosa. Selain itu, konsumsi energi juga merupakan penyebab langsung yang mempengaruhi status gizi. Tujuan penelitian yakni untuk mengetahui hubungan lama menderita DM dan konsumsi energi dengan status gizi pasien diabetes melitus tipe 2 di UPTD Puskesmas II Denpasar Barat. Jenis penelitian Observasional dengan desain Cross Sectional dan menggunakan teknik Purposive Sampling yang berjumlah 50 orang. Data dikumpulkan dengan metode wawancara dan pengukuran. Data disajikan dengan tabel frekuensi dan tabel silang kemudian data variabel di uji normalitasnya menggunakan uji Shapiro Wilk. Hasil uji analisis korelasi Rank Spearman menunjukkan ada hubungan yang bermakna antara lama menderita DM dengan status gizi pasien DM (p = 0,003, r = - 0,415). Sedangkan konsumsi energi dengan status gizi pasien DM, berdasarkan hasil uji korelasi Pearson Product Moment menunjukkan ada hubungan yang signifikan (p = 0,001, r = 0,714).
