Abstract

The investigation of Iodized bakso and favorable value was carried out. The lodized bakso used iodine salts as follow KI, KIO,, and NaI each was added 200 ppm, and each treatment with three replicate. Sampling was difference as knead, raw bakso and cooked bakso. The result shows that are processing step very influential to decrease of iodine contain in bakso. The stability of KIO, during processing better than KI or Nal. Generally iodized bakso does not appear side effect to consumer, although in the texture of bakso. The consumer prefers iodized bakso. The iodized bakso with Nal most favorable than iodized bakso with KIOZ.

Abstract

Four alkaloids, brucine, brucin N-oxide, colobrine N-oxide, and strychine N-oxide were isolated from the bark of Strychnos ligustrida Bl. (Loganiaceae). Their structures were determined by spectroscopic data analysis, in particular by the Nuclear Magnet Resonance ('H and 13C NMR) and 2D NMR ('H-'HCOSY, 13C-'H COSY) and mass spectroscopy (MS).

Abstract

This study deals with the determination of the nutritional content of oyster mushroom (Pleurotus ostreatus). An attempt is made to attain better physical properties of the powder after drying. The first procedure consists of drying of ground fresh oyster mushroom at 50°C and 60° C during 24, 48 and 72 hours, while according to the second procedure slices of fresh oyster mushroom are first dried at 40°C (during 24 and 48 hours), than powdered. Laboratory analysis shows that the content (% w/w) of fresh mushroom is as follows: fiber 3.44, fat 0.10, protein 3.15, carbohydrate 0.63 and glutamic acid 0.94. The result of the first procedure is a sticky and brownish powder, while that of the second attempt (dried at 40°C during 24 hours) is a white and fine powder, which can be directly capsuled.

Abstract

Xylan is one of the most important components of hemicelluloses, which could be enzimatically hydrolized by xylanolytic enzymes. One of the xylanase producing fungi is Trichoderma harzianum, which growth in a medium requires sufficient nutrient, such as Carbon, Nitrogen, microelements and vitamins. Xylan as a polysaccharide could be used as Carbon source in a growth medium of T. harzianum. The purpose of this experiment is to assess the growth ability of T. harzianum in a medium with xylan as a sole Carbon source. Three media are tested in this experiment, i.e. Medium I, Medium II, and Medium III. The result shows that the best growth of T. harzianum is obtained in Medium III, followed by Medium II and then Medium I. The best medium pH is neutral (+7) to mild acidic (6.2).

Abstract

Carrageenan, a substance of seaweeds made from carrageenophyte, consists of kappa, iota and lamda form. Semi-refined carrageenan can be used as stabilizer, emulsifier, and the thickening agent in industries such as pharmaceutical and cosmetic industries. Tooth paste as a cosmetic product requires a thickening agent in the preparation. In this experiment, semi-refined carrageenan: iota (I) and kappa (K) were used in several concentrations; 0.2, 0.4, 0.6 and 0.8 % and in combination: A(I: K=90: 10), B(I:K=70:30), C(I:K=50:50), D(I:K=30:70), E(I:K=10:90). The determination was based upon organoleptic, physical and chemical analysis. The obtained results showed that 0.8% of combination D gave the best results with some results fulfilling the SNI requirements.

Abstract

Oyster mushroom (Pleurotus ostreatus) is one of the commonly consumed mushrooms due to its nutritious as well as its pharmaceutical value. It has been known that this mushroom contains several substances such as interferon inducer to help prevent several diseases i.e. hepatitis and many others. There are three cultivars of oyster mushroom based on the color of their fruit body, namely white oyster mushroom (Pleurotus floridae), grey oyster mushroom (Pleurotus sajur-caju) and brown oyster mushroom (Pleurotus cystidious). A possibility to increase its phamaceutical value is mutation using Gamma ray. The doses of mutation used are 0.25 KGy, 0.5 KGy, 0.75 KGy, and 1.0 KGy respectively. Since most of the pharmaceutical substances are secondary metabolite products of this mushroom, the mutation is intended to increase these metabolites. In this preliminary experiment, the mutation process is observed using isozyme analysis of the mutated mycelia as the indicator.

Abstract

Drying process of Mengkudu (Morinda citrifolia L.) juice by spray drying method had been carried out. Two kinds of fillers were used in this process, i.e. 5%, 15%, 20%, and 25% of lactose monohydrate or 15% and 20% of maltodextrin, both in w/w %. The result obtained showed, that the dried powder containing 15 % of maltodextrin was better (dry fine and brown) than those with other concentration of fillers.

Abstract

The leaves of tea benalu (Scurrula oortiana (Korth) Danser) were extracted with nhexane, ethyl acetate, methanol, and water respectively. The antioxidant activities were measured using 1,1-diphenyl-2-picrylhidrazyl (DPPH) methods. The result showed that the isolated compound has scavenging effect with IC50 92.22 ppm. Identification by interpretation of ultraviolet, infrared, and nuclear magnetic resonance spectra showed that the isolated compound was cathecin.

Abstract

The use of Leucaena leucochepala as an antidiabetic has already been known in society, but the support experiment was very rare. The purpose of this experiment is to know whether the extract of L. leucochepala semen have an effect to the blood lipid profile of a NIDDM rat which is streptozotocin (stz) induced. It is made in 6 groups, each group consist of 5 rats. Group 1: Normal control, group 2: Negative control (stz), group 3: Positive control (clorpropamid), group 4: Extract of Leucaena semen low dose (0.25 g/kg BW), group 5: Extract of Leucaena semen medium dose (0.5 g/kg BW) and group 6: Extract Leucaena semen high dose (1 g/kg BW). Rats are made hiperglycemia with iv induction of stz 50 mg/kg BW. Chlorpropamid and Leucaena semen extract are given orally. The experiment results of blood sugar level, total cholesterol, triglyceride, HDL and LDL are analyzed by ANOVA and continued with BNT test (p < 0.05). The result from the experiment is the high reduction of blood sugar level from the Leucaena semen extract high dose in amount of 65.30%. Results from the total cholesterol level of group 1:61.60 mg/dl, group 2: 91.60 mg/dl, group 3: 62.20 mg/dl, group 4: 76.00 mg/dl, group 5: 65.40 mg/dl and group 6: 55.80 mg/dl. Results from the triglyceride level of group 1: 83.40 mg/dl, group 2: 201.40 mg/dl, group 3: 133.40 mg/dl, group 4: 114.80 mg/dl, group 5: 93.20 mg/dl and group 6: 80.40 mg/dl. Results from the HDL level of group 1: 47.60 mg/dl, group 2: 26.40 mg/dl, group 3: 35.20 mg/dl, group 4: 43.40 mg/dl, group 5:58.40 mg/dl and group 6: 90.40 mg/dl. Results from the LDL level of group 1: -2.68 mg/dl, group 2:26.72 mg/dl, group 3: 0.32 mg/dl, group 4: 9.64 mg/dl, group 5:-11.64 mg/dl and group 6: -50.16 mg/dl.
