Jurnal Mutu Pangan : Indonesian Journal of Food Quality

JMP is published twice a year, i.e. in April and October. In accordance to the objectives of the Jurnal Mutu Pangan, the scope of the manuscript as the result of research and brief communication related to the needs of practitioners in the food industry, both texts on the development of methods and products, food processing technology, policy studies or food regulation, risk analysis, quality system design and food security, business design or feasibility studies, as well as quality, nutrition and health. In each presented text, practical application that contains briefly the benefits of research results and their potential to be applied in the food industry. On volume 1 (1) April 2014 as the first edition, the manuscript of the results of research on Food, Nutrition and Health Policies, Food Quality, and Process Technology was presented.

Abstract

Nutmeg as Indonesia main exported commodity frequently contaminated by aflatoxin and often rejected by European Union. To improve safety of nutmeg, Ministry of Agricultural (MA) issued a regu- lation number 53 in 2012 regarding good practices on nutmeg. The objectives of this research were to (1) evaluate implementation of the MA regulation at nutmeg supply chain in Siau Barat District (2) identify critical points for mold growth and/or aflatoxin formation along the nutmeg supply chain. This research conducted through (1) surveys to 60 farmers, 10 middlemen, 2 exporters and 3 government officials as respondents; (2) identification of critical steps using HACCP decision trees. The evaluation of MA regu- lation showed that at farmer level was poor for postharvest handling (54.4%) caused by lack of facilities and infrastructure (57.2%), although for harvest was moderate (70.4%). At the middleman level, handling practices at postharvest was moderate (62.5%), although not supported with facilities and infrastructure (36.7%). Handling practices at exporter level was generally good, however supervision at government official level was poor (56.3%). Critical control points determined at farmer level were harvesting and drying, at middlemen level were receiving, drying and storage, while at exporter level were receiving and shipment.

Abstract

Hospital formula enteral food is a special food targeted specifically for a group of people with health risk. Therefore its safety needs to be controlled more stringently for example through the application Good Manufacturing Practices (GMP). Presently, the guidelines for good processing practices for enteral food is not available yet. This research aims to develop a Good Enteral Food Manufacturing Practices (GEFM) consisting of a guideline as well as a sysstematic audit system that can be applied easily in the hospital. The system was developed based on the Ministry of Health of Republic of Indonesia Regulation Number:1096/MenKes/PER/VI/2011 on hygiene and sanitation for food service industries and other relevant references. Based on the literature review and trials, thirteen aspects were defined for the require- ments; including four main aspects pertaining production room, production equipment, process control and workers' hygiene. Other aspects include building and its facilities, sanitation facility, raw materials storage, monitoring, pest control, distribution, training, patient feeding, and documentation. An audit trial at a hospital Y suggested that its enteral food production unit was categorized as good; but needed improve- ment in several aspects such as: production equipment storage, hygiene and sanitation maintenance, food distribution and food handle training.

Abstract

Consumption of processed meat is associated to cancer risk increasing. This study used secondary data from RISKESDAS 2013 with a case-control study design, is aimed to analyze the cancer prevelance in Indonesia based on food consumption patterns and lifestyles. The case population is 90 people suffering from cancer and 90 people with no cancer randomly selected as control. Respondent profiles were analyzed by univariate analysis. The relationship of cancer risk factors were analyzed by bivariate analysis and determination of risk factors using multivariate analysis. Sensitivity and specificity analyses showed the cancer vulnerable age is ≥46 years. Processed meat consumption is associated significantly (p=0.000; OR=1.25) in the cancer prevelance. Respondents frequently eat processed meat risk is predicted 1.25 times compared to those not taking. Vegetable consumption (p=0.046; OR=0.509) and fruit consumption (p=0.022; OR=0.365) related significantly to cancer. Vegetables consumption reduce the risk by 0509 times, and fruit consumption reduce the risk by 0365 times. Lifestyle risk factors (physical activity and smoking) significant (p=0.000) to cancer. Multivariate analysis results showed the age, gen- der and processed meat consumption is associated significantly (p=0.000) to cancer.

Abstract

One of the methods that can be used to determine Under Five Years Old Children’s (UFYOC) diet is 24 hours dietary recall, which furtherly processed using Nutrisurvei program to obtain the values of energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D. Nutrition value will be compared with 2013 recommended dietary allowance and be used to determine nutritional status for each age group. Nutritional status was measured by referring to weight for age (BB/U) and upper arm circumference (LILA/U). 70 UFYOC respondents from two Posyandus in North Jakarta were involved. Selected Posyandu represented two social demography conditions. Data analysis were obtained using Chi-square correlation. The confidence level used was 95%. Regression analysis used was logistic regression. Weight for Age (BB/U) was a dependent variable, while independent variable consisted of maternal nutritional knowledge, food expenses, nutrition (energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D), maternal education level and occupation. Finally, there was a significant relationship among nutritional status of UFYOC with maternal nutritional knowledge, food expenses, iron intake, and vitamin D intake and maternal education level. Therefore, the equation model obtained was R2 19.5%.

Abstract

Type 2 diabetes is a metabolic disease associated with lifestyle, including consumption behaviors. This study was conducted to examine the relationship between behaviors of consumption and lifestyle on prevalence of type 2 diabetes in Indonesia. The risk factor determined by univariate analysis. Relation between diabetes prevalence risk factors analyzed using bivariate methods. To determine main risk factors of diabetes used multivariate analysis. Scoring models developing to predict type 2 diabetes risk based on sensitivity and specificity test from major risk factors, to obtain cut off point score for respondents who predicted have diabetes risk. Analysis showed that factor of sweet beverages consumption has OR value (odds ratio) 1.25. This value means that respondents who frequently consume sweetened foods and drinks will be at diabetes risk 1.25 times, compared from not consume. Risk value of consumption food made from flour is 1.22. Diabetes risk for respondents who have moderate physical activity is 1.15 times and strenuous physical activity is 1.26 times. Diabetes risk for not consume fruits and vegetables is 1.12 times and 1.2 times from respondents who consumed. Calculations models predicted risk of type 2 diabetes determined based on the value of the score (cut-off point) ≥20.

Abstract

Food taboos are practiced in some Indonesian culture. For example there is a tendency that postpartum mother is not recommended to consume protein sources in Samarinda, East Kalimantan. The objective of this study was to evaluate food intake of pospartum mothers, including variety of food taboos which it can affect to mothers. The research involved 40 postpartum respondents, age 19-40 years. Respondents were interviewed using a questionnaire and food recall form. Analysis of data is Univariate and Bivariate analysis, bivariate analysis using chi-square stastical test with 90% level of significance (α=0.10). The result showed 65% of respondents had taboos to certain foods. The most that 80% avoided food was seafood. Factors that affect food taboos from the neigborhood and education level of respondents.

Abstract

This moment, it has not been known the role of nutrition and health claims as purchasing decision determination. Objective of the research is to study the role of nutrition and health claims on the labels of growing up milk as purchasing decision and to analyze corellation of respondent's characteristics which have influence. Study was conducted by survey, data were analyzed descriptively and statistically. Label of growing up milk for children 1-3 years old read by 70% respondent and 30% occasionally, and 23% of respondents do not read nutrition and health claims. Nutritional and health claims have a role as a determinant of purchasing decisions for consumers of 24%. As for the 76% purchase decision is influenced by other factors such as suitable with a child, nutrient content, good taste or price. The role of nutritional and health claims as a determinant of purchase decisions are influenced by factors of education, family expenses per month and expenditure for milk per month. As for the other factors that include age, occupation, number of children, place of purchase, and frequency of purchases did not affect the role of nutrition and health claims as a determinant of purchase.

Abstract

Yoghurt is a common vehicle to deliver probiotic bacteria. Compatibility between probiotics species is important for their survival during fermentation of yoghurt with multi probiotic bacteria. The aim of the research was to assess combination of Lactobacillus rhamnosus R23 and Pediococcus pentosa- ceus A38 in developing yoghurt. L. rhamnosus R23 and P. pentosaceus A38 isolated from breast milk were used as a single culture or in combination. Fermentation was carried out for 48 hrs at 37oC. Effect of inulin on the growth of those lactic acid bacteria was also evaluated. Sugar was added in formulation of yoghurt to improve its taste. L. rhamnosus R23 grew well on skim milk while P. pentosaceus A38 did not suf ciently acidi ed the milk. L. rhamnosus was detrimental to Pediococcus when they were used as combined starter cultures. Reasonable number of Pediococcus in yoghurt containing Lactobacillus and Pediococcus was reached by mixing yoghurt after fermentation by each bacteria separately. Addition of 15% sucrose gave the most preferred yoghurt. During 32 days of refrigerated storage, all yoghurt still maintained high num- ber of viable LAB (>8 log CFU/ml) with Pediococcus count of >6 log CFU/ml. During storage, pH value also declined but it was still above 4. Yoghurt containing L. rhamnosus and P. pentosaceus with different functional properties could be developed by fermenting the milk separately prior to mixing. Refrigerated storage of mixed yoghurt could retain the number of lactic acid bacteria for 32 days.

Abstract

Food safety requirement must be fulfilled by food producers in all food chain in order to ensure the product safety when arrives to consumers. The government is responsible for protecting public by setting rules and oversight in whole food supply chain. Enforcement of food safety regulations and intensive oversight by government in the production and distribution of food needs to be applied in an integrated manner without any discrimination, either food types or business scale of food producers. Continuous efforts should be made to raise public awareness of the importance of food safety as well as strengthen the national food safety management system.

Abstract

Soybean is a strategic commodity in Indonesia and it is the main raw material for food processing such as tempe, tofu,and soy sauce. Tempe is a traditional food that has been known in Indonesia, which is made by fermentation process using Rhizopus sp. The main weakness of fresh tempe is the short shelf- life at room temperature, only last two days. Processing tempe into tempe our is one of efforts to extend the shelf life. This research aimes to evaluate protein nutritional quality of tempe our and soybean our, compared to casein as a standard by using rats as animal model. Weight gain of each group of rats was increased during 28 days of experiment. The protein nutritional quality of tempe our was signi cantly higher (p<0.05) than that of boiled soy our in the value of feed convertion efficiency and true protein digestibility; highly significantly higher (p<0.01) in the value of protein efficiency ratio and net protein ratio; and not significantly different (p>0.05) in the value of biological value and net protein utulization. From the results of protein nutritional quality evaluation, it could be concluded that tempe our had better nutritional quality than boliled soy our, and even better than casein.
