Abstract

The modern food industry and a variety of food products require tolerant starch as raw material for processing in a broad range of techniques, from preparation to storage and distribution. Dual modification of arrowroot starch using hydroxypropylation and cross-linking was carried out to overcome the lack of native arrowroot starch in food processing application. The modifications applied were: combined propylene oxide (8%, 10%, and 12%); sodium tri meta phosphate/STMP (1%, 2%, and 3%); and sodium tri poly phosphate/STPP (4%, 5%, and 6%). These modifications significantly affected the composition of the amylose and amylopectin and the amount of phosphorus in the granules. Higher amounts of phosphate salt gave a higher phosphorus content, which increased the degree of substitution (DS) and the degree of cross-link. Arrowroot starch that was modified using a concentration of 8-10% propylene oxide and 1-2% STMP : 3-5% STPP produced a starch with < 0.4% phosphorus content. A higher concentration of propylene oxide provided a higher degree of hydroxypropyl. The changed physical properties of the modified granular arrowroot starch were examined through SEM testing, and its changed crystalline patterns through X-ray diffraction measurements. Especially, provision of a high concentration of propylene oxide (12%) combined with 3% STMP : 6% STPP affected the granular morphology and the crystallinity.

Abstract

Tepung jagung merupakan salah satu bahan baku yang potensial untuk membuat mi jagung. Hasil pembuatan mi jagung terdahulu menghasilkan mi dengan kehilangan padatan selama pemasakan dan kelengketan yang tinggi, serta elastisitas yang rendah. Salah satu metode yang diketahui dapat memperbaiki kualitas tersebut adalah dengan melakukukan modifikasi pati secara Heat Moisture Treated (HMT). Tujuan dari penelitian ini adalah melihat pengaruh HMT terhadap profil gelatinisasi tepung jagung. Hasil penelitian menunjukkan bahwa terjadi perubahan profil gelatinisasi tepung jagung dari tipe B menjadi tipe C.

Abstract

Berbagai program diversifikasi pangan telah diterapkan, namun demikian belum mampu merubah pola ketergantungan masyarakat akan produk berbentuk beras. Salah satu peluang untuk mengatasi hal tersebut melalui pengembangan beras artifisial. Pembentukan butiran beras artifisial instan memiliki tingkat kesulitan tersendiri karena diharapkan dapat membentuk butiran beras yang kokoh, tekstur yang lembut serta waktu tanak yang lebih singkat daripada beras yang bersumber dari tanaman padi. Penelitian ini bertujuan untuk mempelajari parameter penting yang mempengaruhi pembentukan butiran granula beras artifisial instan untuk diversifikasi pangan pokok bersumber karbohidrat non beras melalui pengembangan produk beras artifisial. Analisa pembentukan butiran beras artifisial instan dilakukan dengan mengamati bentuk fisiknya serta dijabarkan secara diskriptif. Kadar air 60 persen, putaran screw 168 rpm, temperatur 95°C, konsentrasi GMS 2 persen dan waktu steaming 5 menit menghasilkan karakteristik butiran beras artifisial instan optimal. Hasil penelitian ini diharapkan dapat memberikan kontribusi terhadap penggunaan optimasi parameter proses optimal yang dapat digunakan untuk teknologi pembentukan butiran granula beras artifisial yang bersumber dari bahan baku karbohidrat non padi.Several food diversification programs have been implemented, but they have not been able to change the pattern of people’s dependence on rice products. One of the opportunities to overcome this problem is through the development of artificial rice. Formation of instant artificial rice grain has its own difficulty as it is expected to form strong rice grain with soft texture and shorter cooking time compared to rice derived from paddy. This research aims to study the important parameters affecting the formation of instant artificial rice granule for diversification of staple foods derived from non-rice carbohydrate through artificial rice product development. The analysis was done by observing and describing its physical form. The best parameter was 60 percent moisture content of raw material, 168 rpm screw speed extruder, 95°C extruder temperature, 2 percent GMS concentration and 5 minutes steaming time. The result of this research is expected to contribute to the optimization of parameter process that can be used in the technology of artificial rice granule from non-paddy carbohydrate.

Abstract

Beras coklat diketahui memiliki komponen bioaktif yang bermanfaat bagi kesehatan. Namun, konsumsi beras coklat di masyarakat saat ini memang masih rendah dibandingkan dengan beras putih. Hal ini disebabkan beras coklat memerlukan waktu pemasakan yang cukup lama, memiliki tekstur agak keras, dan berbau yang kurang disukai. Beras coklat berkecambah atau dikenal dengan germinated brown rice (GBR) merupakan beras coklat yang telah mengalami perendaman dan perkecambahan pada kondisi tertentu. Perkecambahan mampu meningkatkan kandungan senyawa bioaktif beras coklat. Salah satu senyawa bioaktif yang dapat meningkat selama perkecambahan adalah senyawa gamma-aminobutyric acid (GABA). GABA berfungsi sebagai penghambat neurotransmitter di otak yang secara langsung mempengaruhi kepribadian dan manajemen stres. Peningkatan kandungan GABA pada beras coklat berkecambah dapat dilakukan dengan mengoptimalkan kondisi proses perendaman dan perkecambahan seperti suhu, waktu, pH, maupun penambahan senyawa lainnya seperti asam glutamat. Selama proses perkecambahan terjadi perubahan-perubahan biokimia yang diakibatkan oleh aktivitas enzim endogenus yang mengubah komponen makromolekul menjadi komponen yang lebih sederhana. Selain itu, perkecambahan pada kondisi tertentu juga dapat mengakibatkan perubahan fisikokimia GBR. Dengan demikian, perkecambahan juga dapat memperbaiki karakteristik sensori nasi yang dihasilkan, terutama atribut flavor dan tekstur.

Abstract

ABSTRACTThe objective of this research was to produce rice analogue as functional food with low glycemic index. The rice was made from white corn and sorghum with additional soybean flour. The physicochemical properties of rice analogue being analysed were resistant starch content, total phenolic content, dietary fiber, color (L*, +a, +b values) and whiteness (oHue). Rice analogue was potentially used as functional food indicated by high level of resistant starch 2.59%-3.31%, total phenolic content 0.18-0.25 mg GAE/g sample and dietary fiber 5.35%-6.14%. Rice analogue from white corn with and without soybean flour was further tested for glycemic index. Rice analogue from white corn has 69 GI value, while rice analogue from white corn with 10% soybean flour addition has 50 GI value.Keywords: functional food, glycemic index, rice analogueABSTRAKTujuan penelitian ini adalah untuk mendapatkan beras analog yang berpotensi sebagai pangan fungsional dan bernilai indeks glikemik rendah. Beras analog dibuat dari bahan baku jagung putih dan sorgum dengan penambahan tepung kedelai. Sifat fisiko kimia beras analog yang dianalisis adalah pati resisten, total fenol, serat pangan, warna (nilai L*, +a, +b) dan derajat putih (oHue). Beras analog berpotensi sebagai pangan fungsional, yang ditunjukkan dengan tingginya kadar pati resisten yaitu sebanyak 2,59%-3,31%, total fenol sekitar 0,18-0,25 mg GAE/g sampel dan serat pangan antara 5,35%-6,14%. Beras analog berbahan baku jagung putih dengan dan tanpa penambahan kedelai dipilih untuk uji indeks glikemik. Beras analog dari jagung putih memiliki nilai IG 69 sedangkan beras analog dari jagung putih dengan penambahan tepung kedelai 10% memiliki nilai IG 50.Kata kunci: beras analog, indeks glikemik, pangan fungsional

Abstract

Iron-fortified rice potentially increases iron consumption in order to overcome anemia in Indonesia. Premix kernel can be applied as a fortificant vehicle being formulated into rice. The premix kernel is processed by mixing rice flour and iron source and extruded to yield rice-like extrudate. This research aimed to develop iron premix kernel using a double screw extruder and evaluate the fortificant homogeneity during mixing and stability due to washing as well as overall sensory acceptability of fortified rice. The premix kernel was made by mixing rice flour (1000 g), pyrophosphate ferries (containing 5,000 mg Fe), and GMS (10 g) for 5, 10, 15, 20, 25, and 30 minutes, added with water (450 mL) and passed into an extruder at 80°C. The dry-mixed for 20 minutes yielded a homogenous premix kernel (6,030±135 mg/kg with RSD of 2.25%). The mixing of premix kernel and Pandanwangi rice (1:100) for 25 minutes using a blade mixer yielded fortified rice with iron content of 39 mg/kg and RSD of 13.56%. The washing process of fortified rice decreased iron content, and the percentage of iron loss was affected by the washing frequency. Abstract

he objective of this research was to study the effects of pre-gelatinization and freezing processes on physico-chemical characteristics of young corn kernel instant. The results showed that pre-gelatinization and slow freezing processes significantly affected bulk density, rehidration capacity, hardness and cooking time of young corn kernel instant. The study of water sorption isothermic showed that the product had a sigmoid curve. Based on this curve, shelf life of the product had been calculated. The YCKI waxy, YCKI Flint, and YCKI Sweet products packed in alufo had shelf life of 7.2, 12.1 and 13.8 months respectively.Key words: young corn kernel instant, pre-gelatinization,slow freezing, drying, water sorption isothermic, shelf life

Abstract

The effect of pH (4-9), NaCl concentration (1-5%), temperature and heating time (80, 100 and 1210C for 10, 20 and 30 minute) on the antibacterial effectivity of ethyl acetate and ethanol kecombrang extract were analysed. Both ethyl acetate and ethanol extracts showed antibacterial activity at pH 4-8, but its activity gradually decreased at higher pH. At pH 9, only ethanol extract still showed antibacterial activity. Addition of 1-4% NaCl on ethyl acetate and ethanol extract still showed antibacterial activity. Heating the extracts at 80-100 0C for 10-30 minutes and 1210C for 10 minutes did not haves significantly affect on the antibacterial activity of both ethyl acetate and ethanol extracts. Application of ethyl acetate extract at the concentration of 1 and 3 MIC on minced meat were still effective to reduce the viable bacteria until 7 days and 5 MIC was still effective until 9 days. Abstract

In this study, kecombrang flowers was extracted with non polar (hexane), semipolar (ethil acetate) and polar (ethanol) solvent. The result revealed that ethil acetat and ethanol extracts inhibited 7 bacteria, i.e : spore forming bacteria (Bacillus cereus), Gram positive bacteria (Staphylococcus aureus) and (Listeria monocytogenes), Gram negative bacteria (Salmonella typhimurium, Aeromonas hydrophila and Escherichia coli), spoilage bacteria (Pseudomonas aeruginosa) but did not inhibit Lactobacillus plantarum. The hexane extract did not show antimicrobial activity. On well diffusion test, ethil acetate developed clear zones of 12.3 – 27.3 mm (diameters) and this was higher than ethanol extract 11.0-15.4 mm (diameters). The MIC (minimum inhibitory concentration) of ethil acetate and ethanol extract against the seven bacteria were 3-13 mg/ml. Key words : Kecombrang (Nicolia speciosa), antibacteria, extract

Abstract

The objective of this research was to determine the shelf-life of commercial soft and hard dough biscuits packed in metallized plastics by using a critical moisture content approach. The critical moisture contents, which were reached when the biscuits started to loss their crispiness and firmness, were 0,064 g H2O/g dried solid for soft dough biscuit and 0.069 g H2O/g dried solid for hard dough biscuit. The soft dough biscuits stored at 30oC and relative humidity of 75% had shelf life of 17.4 months, while that of hard dough biscuit at the same storage condition had shelf life of 16.5 months.
