Journal of SAGO Gizi dan Kesehatan (Nutrition and Health) is a peer-reviewed journal of a scientific nature contained in the Polytechnic of Health Ministry of Health of Aceh, who publish high quality of nutrition and health-related individuals, populations, groups and communities who are vulnerable to malnutrition and health and risk issues. The scope of the journal study associated issues of nutrition, food technology, nutrition and maternal and child health, environmental health, hygiene and sanitation, oral health, treatment of individuals/families and communities, and safety of medical drugs. The journal also seeks to raise awareness of the interrelationship between nutrition, exercise, physical activity, and lifestyle for improving health across the lifespan and to demonstrate how healthcare outcomes and policies can be improved with the adoption of a more nutrition-oriented approach. In this way, it aspires to provide an invaluable resource to nutrition and healthcare practitioners, as well as researchers and academics of nutrition studies. Abstract

Background: Fiber consumption among adolescents in Indonesia is still low. Efforts can be made to meet fiber consumption by innovating food products that teenagers like. One is adding mocaf flour and rice bran to Bangkit cake, which teenagers like.Objectives: The study aimed to produce the best Bangkit cake formula that is high in fiber and to calculate the contribution of nutrients from Bangkit cake to the nutritional and fiber adequacy of adolescents.Methods: Experimental study using a completely randomized design (CRD) with three treatments and one control. The subjects were 56 untrained panelists in the adolescent age group. Bangkit cake making was carried out in the Food Technology laboratory, and organoleptic tests were carried out in the sensory laboratory of the Palembang Polytechnic Nutrition Department. Nutrient analysis was conducted at Saraswanti Indo Genetech laboratory in Bogor. The research was conducted from July - September 2022. Organoleptic test data were processed by tabulating tested with the Kruskal Wallis test followed by the Mann-Whitney U test with a 95% confidence level.Results: Formula F3 is the best formula with the addition of 45% mocaf flour and 25% rice bran. With 473,07 Kcal/100 g energy, 6,15% protein, 19,71% fat, 67,77% carbohydrate, 2,12% ash, 4,25% water and 15,07% fiber. Each serving of Bangkit cake of as much as 50 grams (7 pieces) contributes 10% energy, 4,86% protein, 13,7% fat, 9,96% carbohydrate, and 23,83% fiber from the Recommended Dietary Allowances (RDA). There was a significant difference between the acceptability of Bangkit cake substituted with mocaf flour and rice bran on taste, texture, aftertaste, and overall (p≤0,05), and there was no difference between the acceptability of Bangkit cake modification on aroma and color (p>0,05).Conclusion: Bangkit cake contributes quite well in fulfilling nutrients, especially fiber. The acceptability of Bangkit cake substituting mocaf flour and rice bran is highly preferred in the taste, texture, aftertaste, and overall. However, the aroma and color are not so preferred.

Abstract

Background: Xerosis, or dehydrated skin, significantly impacts comfort. Severely dry skin can cause severe itching, irritation, and physical discomfort. It can disrupt sleep, concentration, and daily performance of individuals. Although several studies have evaluated the impact of acupuncture on skin health, strong scientific evidence regarding its effectiveness in treating xerosis is still limited.Objectives: This study aimed to evaluate the influence of acupuncture on reducing skin dryness and redness in patients with xerosis.Methods: This research collected data from 30 patients with xerosis who underwent acupuncture sessions. Skin dryness and redness scores were measured before and after the acupuncture session. The collected data were then analyzed using descriptive statistics and paired samples t-tests.Results: The results of the study showed that acupuncture significantly influenced reducing skin dryness scores by 7,36% and skin redness scores by 15,2% in patients with xerosis after the acupuncture session. This indicates that acupuncture effectively addresses the symptoms of xerosis by reducing skin dryness and redness. This research provides evidence supporting the use of acupuncture as an effective alternative therapy in managing xerosis and improving the quality of life for patients.Conclusion: In this study, acupuncture has been proven to reduce skin dryness and redness in patients with xerosis significantly. These findings suggest that acupuncture can be an effective therapeutic option in addressing the symptoms of xerosis, such as skin dryness and redness. The use of acupuncture as a non-invasive and safe alternative therapy can enhance the quality of life for patients experiencing xerosis.

Abstract

Background: One of the most common types of fly species is the house fly (Musca domestica). An increase in the fly population is associated with increased diarrhea, dysentery, and cholera. Control of flies by chemical means is no longer recommended because it can cause pollution or damage to the environment or is not environmentally friendly. An alternative to controlling house flies can be done by using anti-fly plants, which have a sharp odor. Papaya leaves contain alkaloids, karpain, papain enzymes, vitamins C and E, saponins, flavonoids, and tannins.Objective: This study aimed to determine the effect of papaya leaf extract (Carica papaya L.) on the control of the housefly (Musca domestica).Method: This type of quasi-experimental research with Completely Randomized Design (CRD). The research location was carried out at the Laboratory of the Department of Environmental Health Poltekkes Aceh Ministry of Health in August 2022. The doses used were 15%, 25%, and 35%. The research object was papaya extract. Samples for each treatment were 15, repeated three times for each test. The serial concentrations used in this study were 15%, 25%, and 35%. Analysis of Variance analyzed data. (ANOVA) one way with 95% CI.Results: The average number of flies that died from the 35% dose was 6,75, and the 15% dose was only 2,9 flies. There was a significant effect on the average number of dead flies with varying doses of papaya leaf extract (p= 0,000). It is necessary to examine the phytochemicals for the content contained in papaya leaf extract, and it can be made in field trials.Conclusion: Papaya (Carica papaya L.) leaf extract at a dose of 35% can be used in controlling houseflies (Musca domestica) by spraying.

Abstract

Background: Jamblang is one of the plants that have the potential to be an antibacterial agent. Jamblang plants can grow in the geothermal area of Ie Seum Aceh Besar. This area has higher soil temperature and pH compared to areas outside of geothermal zones. Environmental conditions influence the chemical composition and pharmacological activities of a plant. Jamblang leaves contain several chemical compounds, including polyphenols, flavonoids, triterpenoids, saponins, and tannins, which function as antibacterials.Objectives: This research aims to determine the Minimum Inhibitory Concentration (MIC) and Minimum Bactericidal Concentration (MBC) of jamblang leaf extract obtained from the geothermal area of Ie Seum Aceh Besar against Staphylococcus aureus.Methods: The MIC and MBC testing will be conducted using the dilution method with extract concentrations of 1,56%, 3,12%, 6,25%, 12,5%, 25%, 50%, and 100%. The negative control will use distilled water, while the positive control will use amoxicillin. The medium used in this research is Mueller Hinton Agar (MHA).Results: The results indicate that the Minimum Inhibitory Concentration (MIC) of the Jamblang leaf extract grown in the Ie Seum Aceh Besar geothermal area is 50%. In comparison, the Minimum Bactericidal Concentration (MBC) is 100%.Conclusion: The ethanolic extract of jamblang leaves from the geothermal area of Ie Seum Aceh Besar, at a concentration of 50%, inhibited the growth of Staphylococcus aureus. In comparison, at a concentration of 100%, it killed the Staphylococcus aureus.

Abstract

Background: Immunization coverage in Pidie Aceh Still has not met the targets. Based on data from the Pidie Health District Office, it is known that the coverage of complete basic immunization for toddlers has only reached 84,84%. The Regional Government and related agencies are still working on various programs to achieve this. Several factors affect the coverage of basic immunization in an area, such as the low role of cadres and the lack of family support for immunization. An assessment must be conducted to determine good policies for future health programs.Objective: The research aims to determine the factors that cover the basic immunization program for toddlers in Kembang Tanjong, Pidie-Aceh.  Method: This research is descriptive-analytic with a cross-sectional study design. Sampling using probability sampling was carried out on 100 respondents. This research was carried out from 03 to 11 December 2020 in the Kembang Tanjong, Pidie, Aceh. Data were collected through interviews using a questionnaire. Analysis used the Chi-Square test at 95% CI.Research result: This study has found a relationship between the role of cadres (p= 0,015), family support (p= 0,025), and the role of health workers (p= 0,040), as well as the role of religious leaders (p= 0,033) with the coverage of the basic immunization program for toddlers.Conclusion: Family support, the role of officers, and the role of religious leaders greatly influence whether immunization results are achieved in Pidie Aceh. Therefore, these three factors need to be considered.

Abstract

Background: The incidence of stunting in toddlers can have a negative impact on the growth and development of toddlers in the future. The direct cause of stunting is inadequate food intake. There is a need for food formulations with high protein and calcium content in an effort to overcome stunting.Objectives: This research aims to analyze the effect of the substitution of local food ingredients, namely red beans and catfish, on the acceptability, nutritional content, and economic value of semprong as an alternative food supplement for toddlers.Methods: The type of research in formula development is true experimental with a completely randomized design. There are 3 (three) types of treatment (F0, F1, F2). The research sample was taken randomly or with random sampling. The analyzers used were 25 untrained panelists. Data collection uses a preference test questionnaire (hedonic). Data analysis used the Friedman and Wilcoxon test. Protein and calcium content were obtained from calculations and laboratory tests. The research was conducted at Posyandu Mawar, from February to May 2023.Results: The results of the research showed that there were significant differences in color (p= 0,007), aroma (p= 0,030), and texture (p= 0,04). However, there was no significant difference in taste characteristics (p = 0,050). From the results of the ranking of acceptability, nutritional content and economic value, the best formula was obtained F2 (7,79% substitution of red bean flour and 7,79% catfish flour). The nutritional content per 100 g of F2 formula meets protein and calcium requirements of at least 10% per day for toddlers. The economic value of the best formula is IDR 10,366 per 50 g.Conclusion: Semprong cake substitution of red bean flour and catfish flour can be recommended as an alternative food supplement for toddlers

Abstract

Background: Rolade is a processed product made from a mixture of finely ground meat with flour or strach. Generally, rolade used beef as the main ingredient. This study used african catfish as the main ingridient and the addition of soybean flour to increase the nutritional contents of rolade as specially protein content.Objectives: This study amied was to analyzes the effect soybean flour subsitution on the nutritional contents (moisture, ash, fat, protein, carbohydrate, and iron) and to assess changed in the organolpetic propoerties if rolade after vacuum packaging.Methods: This design in this study was used a experimental dsign with a completely randomized design. There are 3 treatment levels (tapioca flour : soybean flour), namely 100:0 (0%), 80:20 (20%), 70:30 (30%). Rolade organoleptic testing was carried out in a Food Processing Labory at Karawang Singaperbangsa University and nutritional analysis was carried out in a Food Technology Labory at Pasundan University. Statistical analysis was used the Kruskal Wallis Test and the Mann Whitney follow-up test.Results: The addition of soybean flour in general didn’t have a significant to the hedonic yield and hedonic quality on all rolade assessment attributes (p>0,05). Vacuum packaging and cold temperature storage didn’t have a significant difference to all rolade assessment atributes (p>0,05). The addition of soybean flour increase the protein content of the rolade.Conclusion: The addition of soybean flour has an effect on the organoleptic of catfish rolade. Vacuum packaging and cold storage can maintained rolade for 14 days. Rolade protein content added to soybean flour has increased.

Abstract

Background: The prevalence of fruit and vegetable consumption among school-aged children In Indonesia is approximately 96%. A lack of fruit and vegetable consumption can lead to a decreased immune system, increase the risk of constipation, cancer, and obesity, and reduce human resource productivity. Therefore, elementary school students' knowledge of nutrition, especially fruits and vegetables, needs to be improved by providing nutrition education on the importance of fruit and vegetable consumption.Objectives: To determine the effect of counseling using flip sheet media on increasing elementary school student’s knowledge of the importance of fruit and vegetable consumption in elementary school children.Methods: The research model used two stages. The first stage uses a media development design (R&D), and the second uses a quasi-experimental approach. The sample comprised of 44 participants. This research was conducted at SDN 62 in Banda Aceh, Lueng Bata District, Banda Aceh City. This study was conducted between April and May 2023. Data collection included primary and secondary data processed through editing, coding, processing, and cleaning. Data analysis was performed using a Dependent T-test at a 95% confidence interval (CI).Results: Counseling increased the children's knowledge of the importance of fruit and vegetable consumption (p= 0,006). The average knowledge of students before being given counseling using the flip sheet media was 64,55 + 8,19. Then, after being given counseling, the average value of knowledge increased to 96,02 + 4,39.Conclusion: Counseling using flip-sheet media affected children's knowledge of the importance of fruit and vegetable consumption.

Abstract

Background: Individuals at the age of 40 years face a 6-fold higher risk of developing Type II diabetes. Modification of enteral nutrition is necessary to address nutritional needs in patients with eating difficulties. Nutritional therapy for Type II diabetes patients should focus on controlling blood glucose levels by selecting foods with low glycemic index and high fiber content. Red beans, rich in protein, carbohydrates, and fiber, offer potential benefits in blood glucose control and as a dairy substitute for individuals with cow's milk allergies, making them a viable candidate for hospital-based enteral nutrition.Objectives: This study aims to determine the macronutrient content, flow test, food cost, and organoleptic test of non-dairy liquid food based on local ingredients. The study uses a completely randomized design.Methods: A complete randomized design was employed for this research. Product development activities were conducted in June 2022 at the Nutritional Kitchen of Jantung dan Pembuluh Darah Harapan Kita Hospital. Preparation of non-dairy liquid food using red beans as a base, proximate analysis of nutritional content, flow test through an NGT tube, food cost calculation, and organoleptic assessment involving ten respondents were carried out.Results: Proximate analysis of the formula yielded the following composition: water content 85,88%, ash 0,25%, protein 1,95%, fat 2,343%, carbohydrates 9,60%, and fiber 1,38%. The flow test for the red bean formula through the Fr 16 NGT tube demonstrated a rate of 50cc/31,90 seconds. The calculated food cost for one recipe of red bean formula was Rp. 8,734.00. Organoleptic evaluation results indicated that the majority of respondents favored the aroma (80%), taste (60%), color (100%), and texture (90%).Conclusion: The red bean formula meets the protein and carbohydrate requirements of the diabetes mellitus diet standards, while the fat and fiber content do not yet meet the diabetes mellitus diet standards.

Abstract

Background: Diabetes prevention can be pursued by utilizing abundant local food. Cilembu sweet potato is a staple food in demand by the community because it has a distinctive sweet taste. The higher starch content than other sweet potatoes makes Cilembu sweet potato a potential starch source, namely into liquid sugar with enzyme hydrolysis. Liquid sugar has advantages over crystal sugar; it dissolves easily during processing and is more practical. Cilembu sweet potato liquid sugar can be used as an alternative to prevent the occurrence of Diabetes Mellitus. Objectives: This study aims to determine glucose levels and acceptability of Cilembu sweet potato liquid sugar (Ipomoea batatas L.) by adding α-amylase and glucoamylase 1, 2, and 3 mL enzymes.Methods: This study used a quasi-experimental design using a Completely Randomized Design (CRD). This study consisted of 3 treatments and 3 replications, adding 1 ml, 2 ml and 3 ml of α-amylase and glucoamylase enzymes. The research on glucose levels was located at the Food Analysis Laboratory of the Jember State Polytechnic, and the acceptance test was carried out at the Faculty of Public Health, University of Jember, on 30 people aged 18-25 years. Glucose levels were tested using the Luff school method. Analysis of glucose level data used the One-Way ANOVA test, while the acceptance test used the Kruskal Wallis test.Results: The results of this study indicate that the lowest average test value for glucose levels in liquid sugar made from Cilembu sweet potato is with the proportion of adding 1 ml amylase enzyme, namely 31,55% with statistical test results p=0,000 with α=0,05. In the acceptability test, which included scent, texture, and taste, the highest score was found in liquid sugar with the addition of 1 ml of the enzyme with statistical test results p=0,012; p=0,014; p=0,000, while the color acceptability had the highest value in liquid sugar with the addition of 2 ml of the enzyme (p=0,004).Conclusion: The best formulation based on the glucose content and acceptability test is liquid sugar with adding 1 ml of enzyme.
