Abstract

       Purple sweet potato (Ipomoea batatas L. Poir) is potential for functional food, especially as antioxidant source due to its purple color and other nutrient content. The objective of this research was  to produce plain bread containing antioxidant by partial substitution of wheat flour with purple sweet potato flour. The result showed that the best plain bread was produced by a maximum substitution of 20% purple sweet potato flour to wheat flour. The hedonic characteristics of the resulting bread including aroma, taste, and texture were not significantly different from bread without substitution. Nevertheless, the crust was harder and darker. Addition of 1.0% GMS emulsifier and reduction of purple potato flour to 15% increased the score of softness, hedonic  texture, acceptance level, as well as the volume of the bread. The substituted bread had  antioxidant activity of 55833.78 ppm DPPH as shown by the IC50 value and contained  4.30% of dietary fiber.

Abstract

This study was aimed to evaluate the mixing process effectiveness of fish meat using a mixing index (Ip). Samples used were Tilapia, Oreochromis niloticus, Walleye pollack surimi, and a mixture of both.  The ability of fish meat paste myofibril-protein to form gel was evaluated with a rigidity test and MHC distribution with SDS-PAGE.  The results indicated that the mixing process effectiveness with salt was 3 minutes with an Ip close to 0. This was reflected by a rigidity value >MHC. Hence, this study concluded that mixing index could be used to evaluate the ability of fish meat gel formation.

Abstract

Maintenance of quality traits is important during storage of fresh-cut produce.  Changes  in firmness, in tomato for instance, are ethylene-mediated.  The objective of this study was to determine the suitability of the ethylene antagonist 1-MCP in maintaining the quality of tomato slices.  Fruits of tomato cv. ‘Revolution’ were harvested at the ‘pink’ stage of maturity, treated with 1 mL.L-1 1-MCP for 12 hours at 20 ºC, and sliced.  Slices were stored as vertical stacks in closed plastic containers at 5 °C for up to 10 days.  Exposure of intact tomatoes to 1-MCP reduced ethylene production and respiration rate in slices, and produced firmer slices than when intact tomatoes were treated without 1-MCP.    When intact tomatoes, at the ‘pink’ maturity stage were treated with several concentrations at 1-MCP (0.1, 1.0 or 10.0 mL.L-1) at 20 °C for 12 h, 1-MCP reduced both ethylene production and the respiration rate, delayed softening of the pericarp and inhibited loss in acidity when compared with slices from fruit not treated with 1-MCP.   The most effective concentration of 1-MCP for inhibiting the ethylene-induced softening of tomato slices was 1 mL.L-1.

Abstract

Mangosteen husk is traditionally has been used by palm sugar farmers for preserving palm sap.  This research was aimed to determine the  antibacterial activity of mangosteen husk extract against Leuconostoc mesenteroides and Lactobacillus plantarum (which  are the most common palm sap-spoiling bacteria), and to analyze the active compounds of the extract. Methanol extract of mangosteen husk showed antibacterial activity against both L. mesenteroides and L. plantarum with inhibition zone diameter of 12.70 and 11.02 mm respectively.  Observation on the fractions of the extract showed that chloroform and ethyl acetate fractions exhibited antibacterial activity  on the above bacteria . Identification of the active compounds performed by GC-MS showed that the dominant compound  in the chloroform extract was 9, 10-anthracenedione, while that in  the ethyl acetate extract was  7H-furo 3’,2’:4,5 furo 2,3-c xanthen-7-one.  Those compounds belonged to the derivate of anthraquinone and xanthone respectively.

Abstract

The research was conducted to determine the effect of soy germ protein extract supplementation on the IL-1beta level of type-2 diabetic women. Research subjects were 32 type-2 diabetic women, outpatients of Diabetic Clinics of Margono Soekarjo General Hospital-Purwokerto. These women had blood glucose level above  normal, BMI > 23 kg/m2, over 40 years old, lived in Purwokerto, and signed the informed consent. Group A (n=8) was given milk containing soy germ protein extract plus Zinc, Group B (n=8) was given milk containing soy germ protein extract without Zinc, Group C (n=8) was given placebo, and Group D (n=8) was given glibenclamide for 8 weeks. Blood samples ware taken 3 times: 0, 4 and 8 weeks after intervention. The plasma IL-1beta level was analyzed using Elisa. After 8 weeks, the IL-1beta level decreased from 6.01 pg/mL to 2.63 pg/mL (p=0.022) in group A.  However, the IL-1beta level in Group A was not different from the Group B (p=0.51). Soy germ protein extract  decreased cytokine inflammatory production of type-2 dibetic. Soy germ protein extract with or without Zn had similar effects to glibenclamide in reducing the IL-1beta level (p=0.76).

Abstract

       Sufu is a traditional Chinese fermented soybean curd (tofu) resembling a soft creamy cheese-type product. It is made by fungal solid-state fermentation of tofu (called pizi) followed by aging in saturated brine solution. The aims of this study were to obtain the best indigenous mold strain for sufu fermentation and produce a low salt sufu by applying Lactobacillus plantarum kik. Four indigenous mold strains were used i.e Rhizopus oligosporus, R. oryzae, Mucor hiemalis and Actinomucor elegans during pizi fermentation. The salt concentrations used in brine fermentation varied in the range of 6% - 12%. The results showed that the fermentation time of pizi depended on the mold species. Based on the density of the mycelium  and the spores colour, pizi fermented by R. oligosporus and R. oryzae were produced after 24 hours of fermentation, while those with M. hiemalis and A. elegans were formed after 36 hours at room temperature and 55-68% relative humidity (RH). Sensory evaluation of the pizi flavor indicated that the pizi fermented by A. elegans and R. oligosporus were ranked as first and second, respectively. Sensory evaluation (Balance Incomplete Block Rating Design) on the hedonic rating of sufu revealed that fermentation in 9% brine by Lactobacillus plantarum kik produced the most preferred sufu according to the panelists. Combination of L. plantarum kik and pasteurization of sufu could maintain the quality for three weeks.

Abstract

The uses of white corn in Indonesia’s food industries are still limited. To explore the potential uses, evaluation of functional properties of white corn flour is needed. The objective of this study was to evaluate the gelatinization properties of white corn flour, and its changes as affected by spontaneous fermentation of white corn grits and particle size of its flour.  White corn flour was prepared by soaking of white corn grits followed by drying and grinding.  Soaking was done in a closed pan at a controlled temperature, to promote spontaneous fermentation.  The fermented  flour was fractionated by particle size using multiple sieves of 100 mesh (150 µm), 150 mesh (106 µm) and 200 mesh (75µm) and analyzed for its chemicals, physicals and gelatinization characteristics. The result showed that the smaller particle size resulted in increased breakdown viscosity and the tendency to retrogradate. Overall, the  result showed that control of length of fermentation of corn grits and particle size could be used as a mean to control breakdown viscosity and tendency to the retrogradation of the corn flour.

Abstract

       Moisture sorption isotherm of food powder products is pertinent in processing and stability of food.  Food model consisted of tapioca starch, casein, palm oil and sucrose.  The moisture sorption isotherm curves of the food model, tapioca starch and casein were sigmoid indicating the typical shape of amorphous product, while the water sorption isotherm of sucrose was a broken-line curve showing typical shape of crystalline material.  The Guggenheim – Anderson-de Boer (GAB) model was the best model to predict sigmoid sorption isotherm curve (tapioca starch, casein and food model) at the whole range of experimental aw (0.07 – 0.97) while  the Braunauer Emnet Teller (BET) model only fitted for aw up to 0.6.  The Water binding capacity of tapioca at monolayer (Mm) was higher than casein and food model but the coefficient of adsorption energy (C) was lower than that of casein.  Addition of oil at the food model decreased the water binding capacity at monolayer.  The Grover model was more suitable than Ross model  to predict the water sorption isotherm curve of food model from its composition.

Abstract

The hypoglycemic response to Lablab nonprotein fraction (NPK) was evaluated in alloxan-induced diabetic rats. The objectives of this research were to evaluate the effect of Lablab nonprotein fraction diet on the blood  glucose concentration and the lipid  peroxide  level of alloxan-induced diabetic rats.  Two months old male Sprague Dawley rats were divided into 4 groups, each group contained of 5 rats. Three groups were diabetic rats  induced by alloxan injection (110 mg/kg of body weight by intra-pheritonial injection) while one group was a control,normal rat. The experiment groups were (1) normal (group I), (2) diabetic (group II), (3) diabetic+cholesteol 0.5% (control group, group III), and (4) diabetic+cholesterol 0.5% + lablab NPK (group IV). The concentration of rat’s blood glucose were periodically measured during diet intervenion (day 0,14,27, and 42). The Lipid peroxide was evaluated as the concentration of malonaldehyde (MDA) both in serum and liver of the rats by Thiobarbituric Acid Reactivity Test methode. The result demonstrated that after 42 days of intervention, the Lablab nonprotein diet decreased the blood  glucose  concentrations from 444.00 + 143.00 mg/dl to 310.50 +111.40 mg/dl (30%), while control group has  decreased the blood glucose concentration from 458.00 +164.99 mg/dl to 455.33 + 81.95 mg/dl (0.6%). Lablab nonprotein diet significantly (P<0.05) reduced the concentration of blood  glucose as compared to the control group. However, Lablab nonprotein fraction diet did not give a significant diferrence on the level of serum MDA and liver MDA as compared to the control group.

Abstract

The objective of this research was to develop instant noodle products made from foxtail millet flour and to predict their shelf life using acceleration method.  The instant noodle was produced using 30, 35, 40% water, and steaming process for 10, 15, 20 minutes. The best noodle product was achieved with 30% water addition and 10 minutes steaming. The noodle contained 2.33% moisture, 1.86% ash,  9.83% protein, 14.66% fat, and 71.33% carbohydrate. The product had 70.47Hue value, 68.64 whiteness (L), 1641.33 gramforce hardness, 473.43 gramforce stickiness, 160.02% water absorption, 19.38% cooking loss, and 6.5 minutes  rehydration time.  Prediction of the product shelf life using the acceleration method showed that the noodle product had a shelf life of 99.86 days based on its rancidity.
