Abstract

Ten strains of Ende high land brown rice were assessed to underpin their physico-chemical properties related to their potential uses.  Are Ndota has bigger grain size and smoother gel consistency than others (63.50 mm gel length). It potentially can be used as food thickeners and baby foods.  Are Kea showed the highest water imbibition ability (90.99%), the fastest wettability (12.11 sec), and the highest dispersibility value (2,50 %) due to its high amylose content (33.21 %). Potentially, Are kea can be used for noodles. The variety also had small repose angle (27.46°), therefore it can be easily transported.

Abstract

Susenas data shows that almost 100 % of the Indonesian people consume cooking oil regularly with an average per capita consumption of more than 20 gram/day. Palm oil is a dominant cooking oil in Indonesian market.Approximately 70 % of palm oil is sold bulk in the market, which is commonly called as ‘minyak curah’. Previous studies recommended that cooking oil, particularly the bulk palm oil, should be used as the vehicle in vitamin A fortification. The objective of the study was to evaluate the retention of vitamin A in foods that were fried using the fortified bulk palm oil. The selected food products were the most frequently consumed food by school children in Barranglompo Island, Makassar City, i.e of roti lasuna, roti kambu, jalangkote, and ikan kembung como goreng. The study showed that the retention of vitamin A significantly decreased with increasing number of frying repetition, but in general, the loss of vitamin A was less than 50% after the third frying. The retention of vitamin A after the first, second and third frying wasin range of 81-94%, 64-77%, and 51-63% respectively.

Abstract

The aim of this study was to determine the content of total monomeric anthocyanins and to identify the anthocyanin composition of jambolan fruit (Syzygium cumini) growing in Indonesia. Anthocyanins were extracted with methanol containing 0.1% HCl, removed from non-polar impurities by partition with chloroform and purified in a C18 solid phase cartridge. Anthocyanins were identified by high-performance liquid chromatography with diode array detection (HPLC-DAD), UV-visible spectral analysis, and physico-chemical reactions. Using pH-differential method, it was known that the content of total monomeric anthocyanin in the ripe fruit was 161 mg/100 g fresh fruit (731 mg/100 g skin on wet basis or 3430 mg/100 g skin on dry basis), based on cyanidin-3-glucoside. Furthermore, five anthocyanins without acylating groups were identified as 3,5-diglucoside derivatives of delphinidin (41.29%), petunidin (27.79%), malvidin (25.60%), cyanidin (4.19%), and peonidin (1.13%). These results demonstrate that the skin of jambolan fruit especially the ripe one is rich in anthocyanin, with wide range in anthocyanidin backbone (five aglycons).

Abstract

The synthetic food-colouring agent is stiil commonly used in soft drink to enhance the colour of the food and to make foods more attractive, particularly for the drink containing natural colour. Addition of colour is legally permitted by  the govermment, however, the product sometime contain the substance more than the permissible maximum dosage, and it  may possibly cause iillhealth to the consumer. Preparation of soft drink containing the aqueous extract of Hibiscus sabdariffa fruits gave less intense colour due to the colour. The quantity of the synthetic food colour in soft drink must be determined quantitatively for food safety and the presence of natural colour in the products may affect the results. Determination of three synthetic colouring agents, carmoisine, ponceau 4R and allura red added into soft drink containing the aqueous extract of hisbicus sabdariffa was carried out. Result showed that the determination of such colouring agents can only be achivied after adjusting the pH up to 4.5 and the recovery of carmoisine, ponceau 4R and allura red were 99.8: 100.2 and 100.0%, with the accuracy of 0.1;0.3 and 0.1% and the precission of 0.1; 0.3 and 0.1% respectively.

Diversification of fishery products is possible to be implemented, both vertically and horizontally. Understanding of their processing technology is very important for fish processors in order to produce healthy products and highly accepted by consumers. In accordance to the government policy about National Food Safety Programs, one of which is to improve the production of processed food, the diversification of fishery processing should be pointed to very focus condition. The consumption of fish is still low in Indonesia (± 21.69 kg per capita per year), while the fishery resources are abundance. Therefore, efforts in increasing consumption of fish by the consumer to reach the target of the national program i.e. 26.5 kg/capita/year are needed.  Production of “Value-added” by diversification method is aimed not only to improve consumption but also to create appetizing products for the consumers. Some examples of “Value Added” product that are becoming popular nowadays include: fish ball, milk fish pressed-cooked, fish nuggets, fish sausage, ekado fish, aji furai, etc. Some products had been sold by home industries but is still possible to produce in industrial scale. The raw material used can be from marine or cultured fish and also frozen surimi, that are potential to be implemented in Indonesia.

Abstract

    Antioxidant activity of various ginger extracts are different.  The aims of this work are to determine the antioxidant activity of ginger extracts on linoleic acid. The antioxidant activities were tested on  linoleic acid supplemented with water and dichloromethane extract of ginger.   The antioxidant  activity was tested by measuring malonaldehide absorbance.  Total phenol and iron content  of the extracts were analyzed by spectrometry.  This research showed that antioxidant activity of water and dichloromethane extract of ginger was stronger than a-tocopherol, and antioxidant activity of dichloromethane extract is stronger than water extract of ginger.  Antioxidant activity of ginger extracts, seems to be correlated with  the  total phenol and iron contents.

Abstract

Chitinolytic bacteria were isolated from several exotic area in Manado Province. The most potential isolate, namely 13.26, was isolated from Tompaso. The isolate was cultured in the thermus medium containing colloidal chitin as a carbon source for 5 days at 55°C to produce chitinase. It was observed that chitinase was most active at 65°C and the optimum pH was 8 in boric acid-borax buffer. Ammonium sulfate (50% saturation) precipitation of the protein increased the specific activity of the enzyme from 0.20 unit/mg protein (in culture supernatant) to 0.28 unit/mg protein. The molecular weight as estimated by zymogram analysis was180 kDa.

Abstract

Acetic acid concentration is one of vinegar’s quality parameter. Acetic acid concentration  in vinegar is influenced by the activity of acetic acid bacteria. This research studied the kinetics of anaerobic fermentation of liquid waste of cacao pulp by Saccharomyces cerevisiae R60 to produce ethanol and the kinetics of acetic acid fermentation from ethanol by Acetobacter aceti B127. The kinetics of acetic acid fermentation from ethanol by Acetobacter aceti B127 can be used as a basic of bioprocess design for aerobic fermentation in general and acetic acid fermentation from ethanol by Acetobacter aceti B127 in particular. Fermentation medium used was liquid waste of cocoa pulp with sugar content of 12.85%, and the addition of sucrosa and urea. The parameter observed was growth of Saccharomyces cerevisiae R60  and Acetobacter aceti B127, and chemical analysis including concentration of ethanol, total sugar  and acetic acid, content. The research result showed that the m value was 0.048 hour-1, Y P was 0.676, Qp value was 0.033 hour-, and KLa value was 0.344, QO2.Cx value was 0.125 (mgO2L-1jam-1), Y X    was  sO20.378 (x 108selmL-1g-1­­O2),  and dCT was 0.150 mgL-1hour-1. Concentration of acetic acid in the product was  4.24% or 42.4 gL-1  dt.

Abstract

Previous studies indicated that soy protein had hypoglycemic and hypocholesterolemic activity in induced diabetic rats. However when combined with different sources of carbohydrate,  the effects were not known yet. The purpose of this research was to evaluate the hypogylcemic  and hypocholesterolemic properties of soy protein combined with cornstarch or wheat flour, on four groups of impaired glucose tolerance (IGT) alloxan induced male Wistar rats models. During the first two weeks, rats were given high fat and cholesterol diet to induce hypercholesterolemic. On the third week, rats were injected with alloxan 60 mg/kg body weight to induce hyperglycemia, and in the following three weeks each group was given one of the following, casein+cornstach (CC), soy protein+cornstarch (SC), casein+wheat flour (CW), or soy protein +wheat flour (SW). The glucose and lipid concentrations of blood of individual rat were measured before and, 1st , 7th, 14th, and 21th day after the injection of alloxan.The results showed that the soy protein diets have hypoglycemic and hypocholestrolemic activity as compared to casein diets. The different source of carbohydrate diet affected hypocholesterolemic property of soy protein, but did not affect hypoglycemic property. It seems that the SC diet decreases glucose concentration more than the SW diet (17,45% and 7,04% from baseline, respectively). The SC diet had more ability to decrease total and LDL cholesterol (9,52% and 21, 89% from baseline, respectively), while the SW diet had more ability to decrease triglycerides (24,64% from baseline).

Abstract

Incorporaton  of omega-3 polyunsaturated fatty acids (n-3 PUFA) into red palm oil was investigated by using acidolysis process. Rice bran and Carica papaya latex (CPL) were used as biocatalyst. Acidolysis between red palm  oil and n-3 PUFA concentrate in free  fatty acid form was conducted without solvent, with weight ratio of n-3 PUFA concentrate to palm oil being 1:1. The n-3 PUFA concentrate was prepared from tuna oil by crystallization method. The study has demonstrated  that rice bran lipase showed higher activity to incorporate n-3 PUFA into red palm oil than CPL. The extent of EPA (eicosapentaenoic acid, C20:5) and DHA (docosahexaeboic acid, C22:6) incorporation were 3.4% and 12.7% with the rice bran lipase, and 1.7% and 3.2%  with the CPL. Furthermore, rice bran from several varities of paddy (Mamberamo, IR-64, Merah Munte , and Cirata) produced equal  incorporation of EPA and DHA into red palm oil. Rice bran from germinated seed of paddy  did not increase the n-3 PUFA incorporation into red palm oil. It means that rice bran in its natural form could be used and act as immobilized lipase. It is easier to remove the rice bran from reaction mixture and reuse the bran for 14 times without decreasing its enzyme activity.
