Abstract

Fruit and vegetable consumption in Indonesia still does not meet the recommended levels. Low intake of vegetables and fruits poses a risk of cardiovascular disease and mortality. Adolescence is a critical period for instilling healthy behaviors before transitioning into adulthood. The aim of this study is to analyze the factors influencing vegetable and fruit consumption among adolescents in rural and urban areas of Jakarta. The study used a cross-sectional design conducted in urban and semi-rural areas of Jakarta with a two-stage cluster sampling technique. Data related to knowledge, attitudes, preferences, self-efficacy, social, economic, and environmental factors, as well as family and peer behavior, were collected using questionnaires. Data on vegetable and fruit intake were collected using the SQ-FFQ. The data were analyzed using chi-square and logistic regression analysis with α < 5%. The determinants of vegetable and fruit consumption among adolescents in rural areas were parental influence and peer influence, while in urban areas, the determinants were parental influence and vegetable preferences. A tailored approach based on environmental and social characteristics is needed to promote healthy eating behaviors among adolescents.

Abstract

Adolescents are vulnerable to nutritional problems such as calcium deficiency, which may impair bone growth and height. This study aimed to evaluate the characteristics of fish cake odeng made from catfish (Clarias batrachus) surimi with the addition of rice anchovy (Stolephorus commersonnii) flour in terms of nutritional content and organoleptic properties. A Completely Randomized Design (CRD) with one control (F0: 0%) and two treatments (F1: 9% and F2: 18%) was applied. Analyses included organoleptic tests, proximate composition, and calcium content. The results showed that F1 was the most preferred formulation according to panelists. The best formulation (F1) contained 20.2% moisture, 1.2% ash, 12.2 g protein, 8.7 g fat, 20.4 g carbohydrates, and 23.4 mg/100 g calcium, equivalent to 1.9% of the Recommended Dietary Allowance (RDA) for adolescents. Although the calcium content was low, the protein level met the criteria as a protein source, and the product provided 10% of daily energy needs (215 kcal) in 3–4 pieces. In conclusion, the fish cake odeng developed in this study met the criteria for a protein-source snack and contributed to energy intake, but did not qualify as a calcium source. Further studies are recommended to improve processing methods and formulations to enhance its calcium content.

Abstract

Adolescents in Indonesia face three nutritional burdens: undernutrition, overnutrition, and micronutrient deficiencies. The 2023 Indonesian Health Survey found that Aceh Province ranked 14th in terms of prevalence of nutritional status among adolescents aged 13-15 years. Factors such as body image, diet quality, and physical activity play an important role in determining the nutritional status of adolescent girls. This study aims to analyze the relationship between body image, diet quality, and physical activity with nutritional status in adolescent girls at SMPN 3 Meulaboh. This study used a quantitative approach with a cross-sectional design using chi-square analysis. The study sample consisted of 162 adolescent girls selected using proportionate stratified random sampling techniques. The results of the study showed that there was no significant relationship between body image and nutritional status (p-value = 0.814), there was a significant relationship between diet quality based on nutritional adequacy figures and nutritional status (energy p-value = 0.006), (protein p-value = 0.003), (fat p-value = 0.006), (carbohydrate p-value 0.027), there was a significant relationship between physical activity and nutritional status (p-value = 0.013). In this study, it can be concluded that diet quality and physical activity have a significant relationship with the nutritional status of adolescent girls. Body image does not have a significant relationship with the nutritional status of adolescent girls.

Abstract

Nutritional status plays an important role in children's growth and development, including cognitive function. However, intellectual intelligence in school-age children is influenced by various biological and environmental factors. This study aims to examine the relationship between nutritional status and intellectual intelligence in school-age children at Madrasah Ibtidaiyah Negeri (MIN) 11 Aceh Barat. This study uses an analytical design with a cross-sectional approach. The study population consisted of all sixth-grade students at MIN 11 Aceh Barat, with a total of 104 respondents selected using total sampling technique. Nutritional status was assessed using the Body Mass Index for Age (BMI/A) indicator, while intellectual intelligence was measured using the Culture Fair Intelligence Test (CFIT) Scale 2A. The results showed that most respondents had normal nutritional status (65.4%) and moderate (60.6%) and high intellectual intelligence ((27.9%). The results of Chi Square Test showed that there was no significant relationship between nutritional status and intellectual intelligence in school-age children (p = 0.715). Therefore, efforts to improve children's intellectual intelligence need to be carried out comprehensively through a multidimensional approach integrating aspects of nutrition, education, and the environment.

Abstract

Diabetes mellitus is a non-communicable disease with a continuously increasing global prevalence and is characterized by elevated glycated hemoglobin (HbA1c), which reflects poor glycemic control and increases the risk of chronic complications. Nutritional management, particularly the intake of water-soluble dietary fiber such as β-glucan, has been proposed as an adjunct therapy for glycemic control. This study aimed to analyze the effect of β-glucan on reducing HbA1c levels in patients with diabetes mellitus through a meta analysis. Literature was retrieved from PubMed and ScienceDirect, and article selection followed the PRISMA flowchart, resulting in four eligible studies. Statistical analysis was performed by calculating the mean difference and 95% confidence interval using both common and random effects models, while heterogeneity was assessed using the I² statistic. The results showed that β-glucan intervention significantly reduced HbA1c levels, with greater reductions observed at doses ≥5 g/day and intervention durations ≥12 weeks. The common effect model demonstrated a mean difference of −0.57 (95% CI: −0.80 to −0.34; p < 0.0001), while the random effect model showed a mean difference of −0.50 (95% CI: −0.88 to −0.12; p = 0.0094). In conclusion, β-glucan effectively reduces HbA1c levels in patients with diabetes mellitus, with effectiveness influenced by dosage, duration, type of β-glucan, and participant characteristics, indicating its potential role in nutritional strategies for glycemic management.

Abstract

Obesity among elementary school children is a multifactorial nutritional problem that is increasing both globally and in Indonesia. This condition results from an imbalance between energy intake and energy expenditure, influenced by various factors such as dietary patterns, physical activity, and family and socioeconomic factors. This literature review aims to identify factors associated with the prevalence of obesity among elementary school children. The method used in this study was a literature review. Articles were searched through Google Scholar and PubMed using keywords related to childhood obesity and risk factors. The articles were selected based on inclusion criteria, including publication year (2016-2026), relevance to study variables, and availability of full texts. The analysis involved comparing findings from previous studies regarding dietary patterns, physical activity, family factors, and other determinants associated with obesity among elementary school children. The review findings indicate that unhealthy dietary patterns, such as high consumption of calorie-dense foods, fats, sugars, and fast food, are associated with an increased risk of childhood obesity. Additionally, low levels of physical activity are a significant factor contributing to childhood obesity. Family and socioeconomic factors, including household income, parental education, and knowledge, as well as genetic factors, also contribute to the incidence of childhood obesity. It is concluded that obesity among elementary school children is influenced by unhealthy dietary habits, low levels of physical activity, as well as family and environmental factors. Therefore, preventive efforts are needed through improving dietary habits, increasing physical activity, and strengthening nutrition education involving both families and schools.

Abstract

Sumbang Village in Sumbang Subdistrict is designated as one of the villages prone to stunting in Banyumas Regency with a prevalence of 14.4%. Factors contributing to stunting in toddlers include protein adequacy and exclusive breastfeeding. The study was designed to investigate the relationship between protein adequacy, exclusive breastfeeding history, and stunting in toddlers aged 24-59 months in the village. The study used a case-control design with a sample of 37 stunted infants and 37 non-stunted infants in Sumbang Village. Respondents were selected using cluster sampling with matching based on age (±2 months) and posyandu (integrated health service post) area. Data collection used the SQ-FFQ questionnaire and the SKI exclusive breastfeeding history questionnaire. Bivariate analysis was conducted using a 2x2 Chi-square test with IBM SPSS version 25. The results of bivariate analysis of protein adequacy was significantly associated with stunting in children aged 24–59 months (p=0.000; OR=6.781; 95%CI=2.1–20.1),  whereas a history of exclusive breastfeeding showed no significant association with stunting in children aged 24–59 months (p=0.163). There is a significant association between protein sufficiency levels and stunting in children aged 24–59 months. Children with insufficient protein sufficiency levels are 6.781 times more likely to experience stunting than children with adequate protein sufficiency levels.

Abstract

Central obesity, measured by waist circumference, is a key anthropometric indicator and a major risk factor for Type 2 Diabetes Mellitus (T2DM). The prevalence of central obesity and metabolic disorders continues to increase globally and locally, including in Serang City. Certain occupational groups, such as terminal personnel, may be at higher risk due to sedentary work patterns and occupational stress. This study aimed to examine differences in Random Blood Glucose (RBG) levels based on central obesity status among personnel at Pakupatan Terminal, Serang City. A cross-sectional design was employed, involving 23 management and operational personnel selected through convenience sampling in November 2025. Data were collected through waist circumference measurements and RBG testing, and analyzed using descriptive statistics and the Independent Samples t-test. The results showed a p-value greater than 0.05, indicating no significant difference in RBG levels between central obesity and normal groups. This finding may be influenced by the small sample size or early metabolic changes not yet reflected in glucose levels. Despite the non-significant results, central obesity remains an important indicator of long-term metabolic risk. Therefore, preventive interventions such as workplace health screening, nutrition education, and regular physical activity are recommended to reduce the risk of metabolic syndrome and other non-communicable diseases among high-risk occupational groups.
