Abstract

This research was carried out with the aim of knowing the effect of socialization on increasing public understanding of the importance of storing food ingredients properly to keep them nutritious and durable. The method used is descriptive qualitative with data collection techniques through questionnaires filled out by 19 respondents who are residents of Cigugurgirang, Parongpong, Indonesia. The stages of data collection carried out are as follows; (1) pre-test, (2) socialization through learning media in the form of PowerPoint, and (3) post-test addressed to respondents. The results of the questionnaire data analysis, it can be seen that the provision of material through PowerPoint media given to respondents tends to have a positive impact. This can be seen through the answers in the post-test which have increased in a positive direction compared to the answers at the pretest. This research through the socialization of food storage techniques so they are durable and nutritional content is maintained is expected to educate the community in the Cigugurgirang area in paying attention to food safety in food processing and storage so the nutritional content is maintained.

Abstract

Heavy metals in water are due to pollution and are nowadays threat. The standard methods were utilized (including the atomic absorption spectroscopy) to determine the levels of Fe, Ni, Mn, Cr, Pb, and Cd in water collected from Almajiri schools in sokoto East, Nigeria. The levels of iron, nickel, and manganese in well water in Almajiri schools in Sokoto East, Nigeria. The ranges of the metals determined for iron, nickel, and manganese are respectively as follows: 3.110± 0.001- 3.100± 0.001 mg/dm3, 0.051± 0.001-0.662± 0.001 mg/dm3, and 0.001± 0.0001-0.021±0.001 mg/dm3 respectively. The highest element found was the iron, then nickel, and lastly manganese. The lead, chromium, and cadmium ranges are as follows: 0.005± 0.0002-0.06± 0.005 mg/dm3, 0.101± 0.001-0.231± 0.003 mg/dm3, and 0.0072± 0.0001-0.0213±0.001 mg/dm3 respectively; therein, the higher element evaluated was chromium, then cadmium, and lastly lead. Evaluated Pb, Cr, and Cd were higher than the WHO limits. It was found that, the levels of metals (Fe, Mn, Ni, Cr, Pb, and Cd) were elevated and could pose great risk to the children consumers by causing detrimental effects to health (including the nervous system defects) and poor academic performances.

Abstract

Introduction: Indonesia is one of the countries with the fastest HIV development in Asia. The cumulative number of cases from 2003 to 2013 was 108,600 cases. The national accumulation is estimated at 186,000 people living with HIV in 2010. Papua is an area with an expanding HIV prevalence of 2.4%. HIV (Human Immunodeficiency Virus) is a virus that attacks the body's immune system. Tuberculosis (TB) is a bacterial infection that is spread through droplets inhaled from the coughs or sneezes of an infected person. Nutritional status is an important factor of disease immunity and plays a role in the frequency and severity of infection by inhibiting immune function for HIV patients with pulmonary TB. Vulnerability in HIV patients with a nutritional status below normal is more easily infected with Mycobacterium tuberculosis. Based on cases of TB HIV coinfection during 2010-2017, there was an increase from 2,393 to 7,796. This study aimed to determine the enhancement of nutritional needs of patients during hospitalization.Method: This research method uses a descriptive case study. This research was conducted in July 2021 at the Rumah Sakit Umum Tangerang with a saturated sample.Result: The outcome of observations and interviews with nutritional care for five days, there was an improvement in appetite disorders with an initial fulfillment of 70% to achieve a nutritional intake of 100%, the feeding route with the NGT gradually became oral, as well as the texture of enteral food, then the texture of the combination of soft and enteral, thus regular enteral meals. The finding is that monitoring the compliance of nutrients gradually increase the need for daily intake, eating routes, and evolved eating texture.

Abstract

Fulfillment of nutritional needs in the morning can be obtained from breakfast, there was by fulfilling 15-30% of daily nutrient intake. Currently, there are still many Indonesian children who still need to consume breakfast under balanced nutrition recommendations. Children who rarely had breakfast are at risk of nutrient deficiencies, affecting their nutritional status. The study aimed to determine the correlation of breakfast habits to the nutritional status of students in State Madrasah Ibtidaiyah (MIN) 1 Kuantan Singingi. This research was conducted in MIN 1 Kuantan Singingi on February 2023. This research method used a cross-sectional design and a total sampling technique. Variabels in this research included breakfast obtained by breakfast recall questionnaire interviews and nutritional status determined based on measurements of the z-socre of BMI/Age. The results showed that 47,5% respondents were normal category and about 57.5% respondents had good breakfast habits. Based on the Chi-Square test results obtained a value of p=0.7460.05, it can be concluded that there was no significant correlation between breakfast to the nutritional status of students in MIN 1 Kuantan Singingi.

Abstract

Introduction: Nutritional status serves as a gauge to depict an individual's dietary well-being, stemming from the equilibrium between nutritional requirements and the intake of essential nutrients necessary for sustained bodily metabolism. The aim of this research is to analyze the characteristics of families with incidents of malnutrition, stunted, and waste in children aged less than two years in Sukamandiri Village, Sumedang Regency.Method: The research used a cross-sectional design with 117 toddlers selected using a purposive technique. The instruments were questionnaires, weight scales, and microtoise. The assessment was categorized by weight/age, height/age, and weight/length. The relationship between variables was analyzed using the chi-square test.Result: The results of the study stated that there were no characteristic variables that were related to malnthe utrition of toddlers. The factor related to the incidence of stunted toddlers is the mother's occupation as evidenced by the p-value = 0.000 (p 0.05). Father's educational background was associated with wasted toddlers (p-value = 0.045; p0.05). It is needed for local government to increase the socio-economic status of families in controlling nutritional problems in the future.

Abstract

Study this aim for knowing the influence of carbohydrate consumption to adequate nutrition of students grade 6 Tunas Karya Elementary School students Desa Karyawangi. Research conducted to 12 students, consisting of 7 boys and 5 girls with a range ages 10-12 years. As for the stages of research carried out, is (i) deployment pre-test questionnaire, (ii) giving education about the importance of carbohydrates for the body via powerpoint, and (iii) deployment post-test questionnaire. Analysis results show the mean pretest score was 66.7 and the post-test mean was 84.6. Comparison results from results between pre-test and post-test showed existence enhancement knowledge for students after holding education. Result of N-Gain calculation is known to have an average N-Gain value of 0.53 which states education about importance carbohydrate for body this not enough effective for student school base. Remember activity education is conducted only at meetings only, implications obtained are not effective and still many students who haven't once got education or eye lessons like this. from what we hope with existence study this education about importance carbohydrate or nutrition balanced more echoed return especially in children student school the basis for them understands importance consume carbohydrate for sufficient needs nutrition.

Abstract

Background : Overweight is a widespread issue among children and adolescents aged 5-19 in multiple countries. Adolescents are influenced by physical activity and social media, affecting body image perception and health, potentially leading to low self-esteem, depression, disrupted physical activity, and eating patterns. This study aims to determine the effectiveness of nutrition education using Instagram on body image perception and eating patterns of adolescents with overweight incidents at SMP Negeri 4 Samarinda.Research Methods : Quantitative quasi-experimental research with the One-Group Pretest-Posttest research design. The research subjects were 16 students who were taken using a purposive sampling technique with the Lemeshow formula in February-March 2023 at SMPN 4 Samarinda. Body image perception uses the BSQ-34 questionnaire. Dietary patterns were obtained using the SQ-FFQ. Data were analyzed using the Wilcoxon test.Research Result : The results of this study indicate that there is effectiveness of nutrition education using Instagram on body image perception and the pattern of adolescents with overweight incidents at SMPN 4 Samarinda is indicated by a p-value (0.05). However, there is no effectiveness of nutrition education using Instagram on eating patterns (fat intake) indicated by a p-value ( 0.05).Conclusion : There is a significant relationship between nutrition education using Instagram on body image perception and eating patterns of adolescents and the incidence of overweight at SMPN 4 Samarinda. There is no significant relationship between diet (fat intake) and the incidence of adolescent overweight at SMPN 4 Samarinda

Abstract

Background: Stunting is a condition where a child's growth and development is disrupted caused by a short or very short body based on the Body Length by Age (PB/U) or Height by Age (TB/U) index. One of the causes of stunting in Indonesia is insufficient intake of animal protein. Animal protein acts as a macronutrient that has more complete essential amino acids to activate growth hormone. Fish is a source of animal protein that is easy to obtain and cheap. Sepat fish is a species that is often found in West Bandung Regency. The aim of this research is to analyze the acceptability of toddlers to shredded Sepat in West Bandung Regency.Research Methods: This research uses an experimental method with two formulations. Formula (F1) uses 100% Sepat fish as the basic ingredient and Formula (F2) uses a mixture of Sepat fish and grated coconut in a 1:1 ratio. The hedonic test was carried out on 20 panelists who tasted both formulas. The analysis was carried out descriptively.Research Result: The results of the analysis of F1 show average values for color (3), flavor (3.25), taste (3), and texture (3.65). Average F2 values for color (3.3), flavor (3.3), taste (2.85), and texture (3.55). In terms of preference for the acceptability of Sepat fish floss, panelists preferred F2 with an average value of 3.2 compared to F1 with an average value of 2.95.Conclusion: Sepat fish floss is an innovative processed product that is easy to make and is not yet sold commercially in Indonesia. Sepat fish floss can be used as an alternative to fulfill animal protein because it is affordable, easy to access, and has good acceptability.

Abstract

Background: Biscuits are a snack made from wheat flour. Modification of processed biscuits is by replacing wheat flour with Belitung taro flour with the addition of patin flour which aims to increase the protein content. The objective of this research describe the level of preference and nutritional content of Belitung taro flour biscuits (Xanthosoma sagittifolium L. Schott) with the addition of patin flour (Pangasius sp.).Research Methods: Experimental Study using 3 formulations of Belitung taro flour: patin flour, F1 = 80%: 20%, F2 = 70%: 30%, and F3 = 60%: 40%. The preference level test was carried out on 25 moderately trained panelists. Analysis of the preference level test used descriptive tests. Analysis of nutritional content in the form of protein using micro-kjehdal, fat using the Soxhlet method, carbohydrates using the method by difference, and water content using gravimetric.Research Result: The biscuit formulation with the highest level of preference was F2 with descriptive analysis results of 71.45% using a comparison of 70% Belitung taro flour and 30% patin flour. The nutritional content of biscuits per 100 grams is 450.6 kcal energy, 8.93 grams protein, 14.5 grams fat, 70.9 grams carbohydrates and 2.1% water content.Conclusion: The best biscuit formulation is F2 with a composition of 70 grams of Belitung taro flour and 30 grams of patin flour. The energy content of biscuits can meet 16.68% of the daily energy needs of children aged 1-3 years.

Abstract

Background: Based on the 2019 Health Profile, gastritis is one of the 10 most common diseases in hospitalized patients in Indonesia with 4.9% of cases. The results of the Health Profile of the Tangerang Health Service were 30%. Indonesian coffee consumption throughout the 2016-2021 period is predicted to grow by an average of 8.22%/year. In 2021, coffee supply is predicted to reach 795 thousand tons with consumption of 370 thousand tons, resulting in a surplus of 425 thousand tons. The aim of the research was to determine the relationship between coffee consumption and the occurrence of gastritis in Siere Cendekia Vocational Schooladolescents.Research Methods: This research uses a cross sectional method. The research sample was 140 respondents using the Proportionate Stratify Randpm Sampling technique..Research Result: Analysis of the relationship between high coffee consumption showed that there were 74 respondents (52.9%) who had problems with gastritis. Meanwhile, there were 66 students (47.1%) who had low coffee consumption.Conclusion: There is a relationship between coffee consumption and the incidence of gastritis in Siere Cendekia Vocational Schooladolescents.
