Abstract

Nutritional status is one of the factors that determine human resources and quality of life. For this reason, there is a nutrition improvement program in order to improve the nutritional quality of food consumption, so that there is an improvement in the nutritional status of the community. This study aims to analyze the relationship between energy and protein adequacy levels with the nutritional status of elementary school-age children. This study uses a descriptive correlation with a cross-sectional approach. The variables in this study consisted of independent variables in the form of Energy Adequacy Level (TKE) and Protein Adequacy Level (TKP), while the dependent variable was the nutritional status of the respondents. The results showed that there was a significant relationship between nutritional status and energy adequacy level (X², p = 0.000.), as well as a significant relationship between nutritional status and protein adequacy level (X², p = 0.002). This shows that the nutritional status of elementary school-age children is influenced by household food consumption so if household food consumption is good (varied, nutritious, and balanced), the child's nutritional status will also be good.

Abstract

Galoba (Hornstedtia alliacea) is a forest plant containing macro and micronutrients needed by humans, as well as functional food so it needs to be developed so that these products can be available both in solid and semi-solid form, one of which is jelly drink. Jelly drink Galoba added with carboxymethyl cellulose (CMC) stabilizer is expected to produce jelly characteristics that can be accepted by the public both in terms of color, taste, flavour, texture, suction power, and overall appearance (overall). This study aims to characterize the galoba fruit jelly drink added with CMC concentration sensory both hedonic tests and hedonic quality which were carried out descriptively. The results showed that the galoba jelly drink with added CMC concentration, according to the hedonic test, had a color ranging from 3.1 to 3.8 (liked to very like), taste 3.6 to 4.0 (very like), flavour 3.5 to 4.0 (very like), texture 2.6 to 3.0 (like), suction power 2.6 to 3.0 (like), and overall 3.8 to 4.0 (very like), while the hedonic quality test has a color ranging from 2.9 to 3.3 (turbid white), taste 4.0 to 4.5 (tastes galoba), flavour 4.0 to 4.5 (scents galoba), texture 2.9 to 3 .6 (soft to very soft) and suction power 2.9 to 3.6 (easy to suck up).

Abstract

This study aims to determine the best concentration of tapioca against the chemical and organoleptic characteristics of mustard crackers. The study design used a one-factor complete randomized design with four levels of treatment for adding tapioca flour concentrations. The levels of this treatment are tapioca concentrations 60, 80, 100, and 120%. The parameters analyzed are water content test, ash content test, fat content test, fiber content test, and organoleptic test of taste, color, aroma, crunchy, and overall). The results showed that mustard crackers had a water content of 5.14 to 6.79%, ash content of 1.48 to 1.76%, fat content of 11.90 to 15.10%, and fiber content of 7.55% to 9.50%. Panelists, on average, liked mustard crackers treated with 100% tapioca concentration for taste, color, aroma, and crispness. The hedonic quality of mustard crackers showed the value of mustard taste, green color, mustard aroma, and crunchiness. Overall, the panelists liked the mustard crackers with 100% tapioca concentration.

Abstract

Cookies are a form of instant food preparation made from a mixture of the main ingredients of wheat with the addition of sugar, butter, and others. There is a need for local food ingredients that can replace some wheat flour to add the nutritional content of cookies, especially vitamin A, and reduce the use of wheat flour by substituting pumpkin flour in making cookies. This study aims to determine the best agent of pumpkin flour substitution on cookies' chemical and organoleptic characteristics. This study used a completely randomized design with a single factor: pumpkin flour substitution with 4 treatment levels 0%, 20%, 40%, and 60%. The results showed that cookies with 20% pumpkin flour substitution treatment were the best treatment based on chemical characteristics, including moisture content 6.34%, ash content 2.22%, fat content 22.52%, protein content 9.57%, carbohydrate content 59.32% and 0.79% crude fiber content, as well as organoleptic characteristics both hedonic and hedonic quality include color 3.0 (like) and 3.12 (yellow), taste 3.00 (like) and 2, 33 (slightly pumpkin flavoured), texture 3.00 (like) and 2.33 (a bit crunchy), and overall 3.00 (like).

Abstract

This study aimed to determine the performance of broilers kept on the upper and lower floors of double-deck postal cages with a semi-close house system. This research was conducted for 42 days consisting of 10 days of cage preparation and 32 days of data collection. The material for this study was broilers with the final Cobb strain CP-707 stock, with a population of 16,000 birds (8,000 birds/floor). Survey and observation methods are used to collect data related to broiler performance. The variables observed in this study were depletion, feed intake, body weight gain, feed conversion ratio (FCR), and performance index (IP). The data obtained were analyzed descriptively. The results show that based on the performance index, the performance of broilers kept in double-deck postal cages on the top floor is very good, and the bottom floor is good. Broilers on the upper floor have a higher performance index value than the lower floor due to lower depletion values, lower feed consumption with lower feed conversion values, and higher body weight.

Abstract

Reproductive potential should be routinely evaluated because it significantly impacts the farmer's economy and the cattle population in ruminant development areas. This study aims to assess the reproductive potential of cows in the Amahai sub-district, which is one of the development points for the industrial livestock area in Maluku Province. Purposive and random sampling methods selected 98 cows owned by 30 breeders from 3 villages. Cows were evaluated for their reproductive performance, whereas breeders' evaluation was focused on general characteristics and rearing systems, and the results were analyzed descriptively. The results showed that the potential reproductive value of cows in Amahai was generally considered promising because of the high percentage of calves born alive (97.98%), low rate of stillborn (1.13%), and abortion (1.1.7%), there was no history of dystocia. The population was dominated by cows with mediocre body condition scores (93.88%). Conversely, cows in this area have too young a first mating age (11.3 months), service per conception > 1 (2.65), and long days open (4.71 months). This reproductive potential will be maximized if breeders understand the mating season, recognize estrus signs, implement a short weaning period (≤ 2 months after parturition), and make reproductive records.

Abstract

This study aims to determine the impact of Covid-19 on farmers' income. The analysis used is the Wilcoxon test and the results are farmer income of IDR 5,841,317 before Covid-19 and IDR. 2,700,207 during Covid-19. The results of the different tests showed that there were significant differences in the income levels of rice farmers before and during the Covid-19 period. The results of the different tests showed that there were differences that were relevant to the income level of paddy rice farmers before and during the corona virus.

Abstract

Penelitian ini bertujuan untuk mengetahui dampak kelangkaan pupuk bersubsidi terhadap produksi dan pendapatan petani padi sawah di Desa Waimital, Kecamatan Kairatu, Kabupaten Seram Bagian Barat. Dengan menggunakan metode deskriptif dan kuantitatif dan menggunakan analisis uji paired sample test. Hasil penelitian menunjukan adanya kelangkaan pupuk bersubsidi yang berdampak pada produksi dan pendapatan petani padi sawah di tempat penelitian. Penyebab kelangkaan pupuk bersubsidi yang terjadi karena adanya ketidaksesuaian antara permintaan/usulan terhadap pupuk bersubsidi dengan realisasi dari pemerintah, akibat kelangkaan pupuk bersubsidi petani rela membeli pupuk nonsubsidi yang harganya sangat mahal guna memenuhi kebutuhan pupuk mereka. Hal ini menyebabkan produksi menurun dari rata-rata 1.567 kg/musim tanam sebelum kelangkaan pupuk bersubsidi menjadi rata-rata 1.527 kg/musim tanam selama kelangkaan pupuk bersubsidi.

Abstract

Karay Village and Angar Village are one of sub-districts which are registered in East Seram Regency as villages with children registered as stunting toddlers. The type of research used was Spearman's correlation with a total of 60 samples of toddlers in Karay Village and Angar Village. Research methods using surveys and interviews using a questionnaire. The results of this study used sperman rho palm fiber using univariate and bivariate analysis. This research is that there is a relationship between maternal education, consumption of various foods, toilet facilities, drinking water facilities, and livable homes with the incidence of stunting in toddlers aged 0-5 years in Karay and Angar District. Based on the results of the study, it showed that there was a relationship between Mother's Education (P < 0.05), Consumption of Various Foods (P < 0.05), Latrine Facilities (P < 0.05), Drinking Water Facilities (P < 0.05), and Livable Houses (P < 0.05), on the other hand, there was no relationship between the age of marriage (P > 0.05), the number of children (P > 0.05) and the mother's source of income (P > 0.05) with the incidence of stunting in children under five in Karay Village and Angar Village.

Abstract

Steamed sponge cake is one of the foods made from wheat flour, which until now has been imported. The use of wheatflour in steamed sponge cakes can be reduced by using local foods such as pumpkin and moringa leaves, which also add nutrition al value to steamed sponge cakes. The purpose of this study was to determine the concentration of Moringa leaf extract that is right for producing pumpkin steamed sponge cake with the best characteristics. This study used CRD, which consisted of one factor, namely the concentration of Moringa leaf extract, with 5 levels of treatment as follows: K0 = 0%, K1 = 25%, K2 = 50%, K3 = 75%, and K4 = 100%. The results showed that K2 treatment (50% moringa leaf extract) can produce the best pumpkin steamed sponge cake. Based on its physicochemical characteristics, the addition of 50% moringa leaf extract resulted in a steamed sponge cake with a moisture content of 43.76%, an ash content of 0.30%, a protein content of 7.42%, a fat content of 2.70%, a carbohydrate content of 45.80%, and a specific volume of 2.31 mL/g. Based on its sensory characteristics, steamed pumpkin sponge cake with 50% moringa leaf extract was liked (3.6) forits slight green color (3.1), liked (3.8) forits slight moringa taste (3.2), liked (4.0) forits soft texture (3.9), liked (3.5) forits slight moringa aroma (2.9), and liked (3.7) on its overall characteristics.
