Abstract

Culled ducks, namely laying ducks whose productivity has declined around 2–2.5 years of age, are continuously available in the Purwokerto region and its surroundings, which is one of the duck farming centers in Central Java. So far, culled ducks have not been utilized optimally because their meat is tough, has a fishy off-flavor, and contains relatively high fat, resulting in low economic value. This review aims to examine the availability, quality characteristics, challenges, and strategies to increase the added value of culled duck meat in the Purwokerto region, based on a literature review of the 2010–2020 period. The review shows that the weaknesses of culled duck meat can be overcome through marination with plant proteolytic enzymes such as bromelain (pineapple), papain (papaya), and zingibain (ginger), which improve tenderness, and through the use of spices such as turmeric and ginger to reduce off-flavor. Product diversification, such as nuggets, meatballs, shredded meat (abon), and jerky (dendeng), has been shown to improve tenderness while increasing economic value. With the availability of inexpensive raw materials, the support of a duck-based culinary market in Purwokerto, and the application of simple processing technologies, culled ducks have the potential to become an alternative meat source that is nutritious, economical, and supportive of food security and the local livestock economy.

Abstract

Improving the nutritional efficiency of broiler chickens can be achieved through the addition of natural feed additives. Turmeric (Curcuma domestica) contains curcumin and essential oils that improve digestion and have antibacterial and antioxidant properties, so it has the potential to improve broiler performance. This study aimed to examine the effect of adding turmeric meal to the ration on the performance and carcass percentage of broiler chickens. The study used 100 day-old broilers reared to five weeks of age in a completely randomized design with four treatments and five replicates. Treatments were the addition of turmeric meal to a basal ration at 0% (P0), 0.5% (P1), 1.0% (P2), and 1.5% (P3). Observed variables were feed intake, body weight gain, feed conversion ratio, slaughter weight, carcass percentage, and abdominal fat percentage. Data were analyzed by analysis of variance followed by Duncan's multiple range test. The results showed that adding turmeric meal up to 1.0% (P2) significantly increased body weight gain, slaughter weight, and carcass percentage and reduced feed conversion ratio and abdominal fat percentage (P0.05). It is concluded that turmeric meal can be used as a feed additive to improve broiler performance and carcass percentage, with an optimal inclusion level of about 1.0% in the ration.
