Abstract

Superoxide Dismutase (SOD) is an antioxidant enzyme that not only plays a fundamental role, but the first detoxification enzyme that plays an important role in regulating Reactive Oxygen Species (ROS) levels in the body. High SOD values ​​are associated with better health because of SOD's ability to fight oxidative stress. Corn silk is often considered as waste, it turns out to have a lipid-lowering mechanism that provides or increases the capacity of oxidative stress as well as bay leaves including very strong group antioxidant activity. The purpose of the study was to determine the activity of the superoxide dismutase enzyme in hypercholesterolemic rats given saraja tea. This study was a purely experimental study with a randomized pre-post test design with a control group design. Research on experimental animals using mice that have been made hypercholesterolemic and hypertensive, divided into 4 groups, namely the negative control group without extract administration (K-); Saraja tea intervention group (corn hair bay leaves) with extract administration of a dose of 300 mg/kg (X1); dose of 500 mg/kg (X2); and the positive group with furosemide 3.6 mg/kg (K+). The results of the study showed that the average SOD levels in group X2 with a dose of 500 mg/kg showed the highest average of 85.5 U/mL with the largest difference in SOD increase of 50.10 U/mL. The conclusion is that there is a significant difference in SOD levels between the negative control group, the positive control group, and the treatment group (X1) with a dose of 300 mg/kg, and the treatment group (X2) with a dose of 500 mg/kg.

Abstract

The prevalence of diabetes mellitus, a long-term disease characterized by elevated blood sugar levels, is increasing every year. When the pancreas stops producing enough insulin, it causes diabetes mellitus. Our aim at Bakti Timah Hospital Pangkalpinang was to find out how diabetics react to Glipo pudding in terms of fluctuations in their blood glucose levels. Research with an experimental design is what is meant by this. A paired t-test (dependent t-test) was used in the analysis of this data. The findings of the dependent t-test, which measures statistical differences, showed a mean difference of -21.5 mg/dL with a p-value of 0.05 (<0.05) between the treatment and comparison groups for the mean change in blood glucose levels. This indicates that the administration of flour pudding has an effect on blood glucose levels in patients with type 2 diabetes mellitus caused by soybean and purple sweet potato. Conclusion: Soybean flour and purple sweet potato pudding is high in energy and carbohydrates and changes blood glucose levels in diabetes mellitus patients at Bakti Tin Pangkalpinang Hospital.

Abstract

In South Sumatra, the obesity rate in children reached 13.71% and tends to increase. It is suspected that this increase is related to consumption patterns, especially high intake of simple carbohydrates and adequate fat. This study aims to determine the relationship between simple carbohydrate intake and adequate fat with nutritional status. A cross-sectional study was conducted on 66 elementary school students, selected using the simple random sampling method. Student nutritional status data was measured using the BMI/U (Z-Score) indicator, simple carbohydrate intake and adequate fat data were measured using the SQ-FFQ method. The relationship test used the Spearman Rank test because all variable data were not normally distributed. The results showed an average simple carbohydrate intake of 75.05 ± 29.52 grams/day. Most (69.7%) children had a relatively high simple carbohydrate intake (>50 grams/day). The average fat adequacy was 131.50 ± 25.20% RDA, Most children (83.3%) were in excessive fat adequacy (>110% RDA). The average z score of BMI/A of children was 0.362 ± 1.639 kg/m², 59.1% of children were malnourished with 7.6% of them being underweight and 51.5% being overweight/obese. There was a relationship between simple carbohydrate intake and nutritional status (p = 0.000, r = 0.587). There was a relationship between fat adequacy and nutritional status (p = 0.000, r = 0.808). Abstract

Anemia in pregnant women can cause complications for both the mother and fetus. One non-pharmacological way to increase hemoglobin levels is by consuming iron-rich and vitamin C-rich foods, such as beetroot and red guava. This study combines beetroot juice with red guava because the vitamin C in red guava enhances iron absorption from beetroot, thereby increasing hemoglobin levels. This study aims to determine the effect of beetroot juice with red guava on hemoglobin levels in anemic pregnant women in the working area of Piyeung Public Health Center, Montasik District, Aceh Besar Regency. This research used a quasi-experimental design with a two-group pretest-posttest approach. The sample consisted of 20 respondents, with 10 in the treatment group receiving beetroot juice with red guava and 10 in the control group receiving only water. The intervention lasted for 7 days. The findings showed that in the treatment group, hemoglobin levels increased from 9.320 g/dl to 9.990 g/dl, with a difference of 0.67 g/dl. In the control group, hemoglobin levels increased from 9.810 g/dl to 10.130 g/dl, with a difference of 0.32 g/dl, so it can be concluded that giving beetroot juice with red guava proven effective in increasing hemoglobin levels in pregnant women with anemia, with a p-value of 0,025 (p<0,05). Abstract

Diabetes mellitus (DM) is a global health problem with increasing prevalence in Indonesia. Dietary regulation based on glycemic index (GI) is an important strategy. Mocaf flour and yellow sweet potato which have medium GI and high fiber have the potential as functional food ingredients. This study aims to develop low-glycemic flakes as an alternative healthy breakfast for people with DM. The study was conducted experimentally with a Completely Randomized Design (CRD), 3 treatments and 3 replications. Data were analyzed using ANOVA and Duncan's further test. The results showed that the treatment had a significant effect on color and taste, but not on aroma and texture. The best formulation was 70% mocaf: 30% yellow sweet potato. The results of the proximate test showed that the protein and carbohydrate levels met SNI standards. It was concluded that the addition of flour had a significant effect on color, taste, and nutritional content (P <0.05). Abstract

Hypercholesterolemia is a lipid metabolism disorder characterized by an increase in total blood cholesterol levels, which is defined as total cholesterol above 200 mg/dL, low-density lipoprotein (LDL) above 160 mg/dL, and high-density lipoprotein (HDL) below 40 mg/dL. One of the necessary treatments to maintain stable cholesterol levels in individuals with hypercholesterolemia is the intake of fiber from legumes such as almonds, rolled oats, and red beans, which are processed into Almora Snack Bars and are known to help reduce cholesterol levels. Research Objective: reduction of cholesterol levels among employees at the Sido Mulyo Community Health Center in Banyuasin Regency. Research Method: The study used a quasi-experimental design with a two-group pretest-posttest approach and employed random sampling involving 60 respondents, all employees of the Sido Mulyo Health Center. Employees with high cholesterol levels were given Almora Snack Bars as a morning snack and tested using appropriate statistical methods. Research Results: The results of the paired t-test analysis showed a p-value of less than 0.05 for total cholesterol, LDL, HDL, and triglyceride levels in the treatment group, indicating significant differences before and after the intervention. The independent t-test also showed significant reductions in total cholesterol, LDL, HDL, and triglyceride levels (p-value < 0.05). Conclusion: The administration of 50 grams of Almora Snack Bar daily for 14 days had a significant effect on Change in cholesterol levels levels among the employees of the Sido Mulyo Community Health Center in Banyuasin Regency..

Abstract

Obesity is overweight caused by the accumulation of excess fat in the body. This study aims to determine the relationship between stress levels, appetite, and eating patterns with the incidence of obesity in adolescents at SMA Negeri 107 Jakarta. This study is an observational quantitative study with a cross-sectional study. The population in this study were all female students in grades X and XI who attend SMAN 107 Jakarta with a sample size of 90 respondents obtained using a simple random sampling technique. The results of the study obtained from univariate analysis showed that 69 (76.7%) respondents were not obese and 21 (23.3%) respondents were obese. The results of the study using the Fisher's exact test showed a significant relationship between stress levels, appetite, eating patterns, and staple food consumption patterns with the incidence of obesity in adolescents at SMA Negeri 107 Jakarta (p-value <0.05). Abstract

Seafood-based micro, small, and medium enterprises (MSMEs) play a vital role in the local economy of Kenjeran, Surabaya, yet many still lack sufficient knowledge of food safety systems. This study aimed to assess the understanding of MSME actors regarding the seven principles of the Hazard Analysis and Critical Control Points (HACCP) system and its implications for the nutritional quality of processed seafood products. A quantitative descriptive method was used, involving 24 closed-ended questionnaire items distributed to seafood-processing MSMEs in Kenjeran through purposive sampling. The research was conducted from January to March 2025. The instrument was validated through expert review and tested using Pearson correlation and Cronbach’s Alpha for reliability (α = 0.93). Data analysis employed descriptive statistics to identify patterns of understanding across HACCP principles. Results showed that overall comprehension was moderate, with the highest mean score on Principle 6 (Verification: 3.36), followed by Principles 2, 3, 4, and 7. However, Principle 1 (Hazard Analysis: 2.97) and Principle 5 (Corrective Actions: 2.98) had the lowest average scores, indicating critical gaps in recognizing food hazards and responding to deviations. These weaknesses may negatively impact the nutritional quality of seafood products, including protein degradation and vitamin loss due to poor control measures. It is recommended that targeted technical training, expert mentoring, improved documentation systems, and government support be implemented to enhance HACCP adoption. Strengthening food safety practices in MSMEs not only ensures product quality but also increases competitiveness in both local and global markets.

Abstract

There is insufficient information on the nutritional status of kindergarteners, especially in Surabaya. This study's primary goal is to present information on the nutritional status of kindergarten children enrolled at Labschool Lidah Wetan and Ketintang, Surabaya. Cross-sectional descriptive study of students aged 4-7 years (n = 56), with anthropometric measurements for weight and height of the students using a digital weight and height scale. After obtaining the students' weight and height data, Z-score measurements were conducted according to the WHO curve for height-for-age (H/A), weight-for-age (W/A), and body mass index-for-age (BMI/A). The findings showed that three students (5.4%) were classified as short, fifty-two students (92.9%) as normal, and one student (1.8%) as tall for H/A measurement. According to the W/A measurement results, one student (1.8%) was classified as severely thinness, two (3.6%) as thinness, forty-eight (85.7%) as normal, and five (8.5%) as overweight. Nine students (16.1%) were classified as thin, forty students (71.4%) as normal, three students (5.4%) as overweight, and four students (7.1%) as obese based on the BMI/age measurement. Overall, kindergarten students at Labschool Lidah Wetan and Ketintang Surabaya had generally good nutritional status.

Abstract

The prevalence of obesity in students aged 5-12 years is quite high which is thought to be related to their knowledge and attitudes about balanced nutrition, which can be improved through education using various media. The study aims to assess the effectiveness of animated videos and book covers to increase elementary school students' knowledge and attitudes about balanced nutrition. True experimental research was conducted on two groups of 27 students each, which were determined randomly. One group was given education with an animated video and one group with a book cover. Knowledge and attitudes were measured by questionnaires using questionnaires, before and after treatment. The difference before and after was tested with paired t-test samples and the difference in effectiveness of the two media was tested with independent ttest..The results showed a difference in pre and post knowledge scores in animated videos (32.83±12.93%) and book covers (22.22±14.20%). The difference in pre and post attitude scores in animated videos (7.77±6.90%) and book covers (4.53±6.82%). All of these differences are significant with p=0.001 and p=0.001 in animated videos and p=0.001 and 0.002 on book covers. The difference in knowledge and attitude improvement between animated videos and book covers was 10.61 (p=0.006) and 3.24 (p=0.089). Both media are effective in increasing knowledge and attitudes about balanced nutrition. Animated videos are more effective at increasing knowledge than book covers, but they are equally effective at improving attitudes.
