Abstract

Selada air memiliki potensi sumber bahan pangan yang sangat baik bagi tubuh, namun pemanfaatan selada air masih sangat rendah, maka dilakukan inovasi penganekaragaman olahan sayuran dengan mengolah menjadi vegetable leather. Cita rasa selada air yang khas, pahit sedikit manis, membutuhkan penambahan gula. Hal ini menyebabkan peningkatan kadar energi produk. Pemanis rendah energi stevia digunakan sebagai solusi alternatif pengganti gula. Tujuan penelitian ini adalah mengetahui pengaruh penambahan pemanis alami stevia terhadap serat pangan dan total energi vegetable leather selada air. Penelitian ini merupakan penelitian eksperimental dengan desain Rancangan Acak Lengkap dengan kelompok sampel penambahan atevia, yaitu S1 (0%), S2 (0,1%), S3 (0,5%) dan S4 (1%) dengan 2 kali ulangan sampel dan 3 kali ulangan analisis. Sampel kemudian dianalisis kadar serat pangan dan total energi. Analisis statistik yang digunakan untuk data kadar serat pangan dan total energi adalah ANOVA dengan derajat kemaknaan 95%, dilanjutkan dengan tukey untuk mengetahui perbandingan antar rata-rata. Hasil penelitian menunjukkan bahwa terdapat perbedaan yang signifikan (p=0,000) pada penambahan pemanis alami stevia terhadap kadar serat pangan vegetable leather selada air. Terdapat perbedaan yang signifikan (p=0,000) pada penambahan pemanis alami stevia terhadap kadar total energi vegetable leather selada air.AbstractWatercress has a potential source of food that is good for the body, but the utilization of watercress is still very low, then processed vegetables innovation done by processing into vegetable leather. Flavor of watercress, bitter sweet, requires the addition of a little sugar. This causes increased levels of energy products. Low energy sweetener stevia are used as a sugar substitute alternative solutions. The purpose of this research is to know the influence of addition of natural sweetener stevia against total energy food fiber vegetable leather watercress. This research is experimental research with Random Draft design complete with a sample group addition of atevia, namely S1 (0%), S2 (0.1%), S3 (0.5%) and S4 (1%) with sample repeats 2 times 3 times and repeat the analysis. The samples are then analyzed the levels of food fibre and total energy. Statistical analysis of data that are used for food and fiber levels total energy is ANOVA with the degree of significance of 95%, followed by the tukey to know comparison between the average. The results showed that there was a significant difference (p = 0.000) in addition to the natural sweetener stevia against levels of food fiber vegetable leather watercress. There is a significant difference (p = 0.000) in addition to the natural sweetener stevia against total energy levels of vegetable leather watercress.

Abstract

Latar Belakang : Balai Besar Rehabilitasi Sosial Bina Grahita “Kartini” (BBRSBG “Kartini”) merupakan institusi khusus milik pemerintah yang memiliki fokus untuk mendidik penyandang tunagrahita. BBRSBG “Kartini” menerapkan system asrama di dalamnya. Tujuan : Tujuan penelitian ini adalah mengetahui daya terima siswa terhadap makanan yang disediakan, status gizi siswa dan menganalisis hubungan antara daya terima makanan dengan status gizi siswa. Metode : Penelitian ini berjenis Observasi Analitik dengan desain cross sectional study. Penelitian dilaksanakan di asrama BBRSBG “Kartini”. Pengambilan data dilakukan selama 2 minggu, dari tanggal 29 Oktober 2017 – 12 November 2017. Subjek dari penelitian ini adalah siswa BBRSBG yang tinggal di asrama. Variabel dalam penelitian ini adalah daya terima makanan dan status gizi siswa. Data daya terima makanan dan status gizi siswa diuji menggunakan uji Korelasi Gamma. Hasil : Hasil penelitian ini menunjukkan rata – rata hasil daya terima siswa konsumsi tertinggi jatuh pada hari ke 1 dan 2 (98%) dan terendah jatuh pada hari ke 7 (92%). Status gizi siswa dengan angka tertinggi adalah status gizi normal, sebanyak 42 siswa (57,5%). Sedangkan angka terendah adalah status gizi tidak normal, sebanyak 31 siswa (42,5%). Kesimpulan : Tidak terdapat korelasi yang bermakna antara daya terima makanan dengan status gizi siswa.

Abstract

The aims of this study was to look at the effect of healthy breakfast education with Islamic Comic Media on the level of knowledge of elementary school students. This study was a quasi-experimental type with pre-posttest control group design. The sampling was simple random method as many as 64 students, group A was given islamic comic media (n=32) and group B as control of the group (n=32). Nutrition knowledge level were obtained from filling out questionnaires. The influence of nutritional education media on increasing knowledge in both groups analyzed by Wilcoxon test, and continued with the Mann Whitney test. The results of the analysis showed that there was a significant increase in the level of knowledge in islamic comic group (p = 0,000). There is the influence of giving Islamic comic about healthy breakfast to elementary school-age students' knowledge.

Abstract

This study aimed to determine the effect of honey solution intervention on systolic blood pressure and elderly diastole in the Aisyiyah Nursing Home Surakarta. Method of this research using Quasi-experimental approach with a pre-posttest control group design with 24 respondents selected by purposive sampling and divided into 4 groups there are O1 (70 gr honey), O2 (35 gr honey), K- (control with hypertension) and K+ (control with normotensive). Measurement of blood pressure using an Omron Sphygmomanometer. Paired Sample T-test was used to determine the effect of blood pressure before and after the intervention. The One Way ANOVA test was used to see differences in the average blood pressure data before the intervention. The results showed that there was an effect of honey solution on systolic blood pressure before and after intervention with p = 0,000 (p <0,05), as well as diastolic blood pressure in the statistical test, showed that there was an effect of honey solution on blood pressure diastole before and after intervention with p = 0,001 (p <0,05). So, there was a significant effect on the intervention of honey solution with 35 and 70 gr honey dose on systolic and diastolic blood pressure in the elderly.

Abstract

AbstractBackground: Nutritional status can be affected by physical activity. Physical activity aims to balance the energy intake and energy expenditure in the body. This cross-sectional study was conducted to assess the possible association between nutritional status and physical activities among school-aged children. Methods: School-aged children 10 and 12 years were selected from Islamic Primary School in Ngawi. Anthropometric measurements were taken using digital scales for weight and microtoise for height. The nutritional status was calculated using the standard of Z-Score. Physical activity was measured using questionnaire. Statistical test used Chi-square test. Results: We found that 83.9% participants of the study sample were classified as normal nutritional status and 16.1% were overweight.56.4% of respondents who are classified as normal weight have physical activity above the average (≥2.89), while respondents are classified as overweight having more physical activity above the average of 33.3%. Conclusion: There was no significantly difference between physical activities with nutritional status of school children (p= 0.071). Keywords:nutritional status, physical activities, school children. AbstrakLatar Belakang: Status gizi salah satunya dapat dipengaruhi oleh aktifitas fisik. Aktivitas fisik bertujuan untuk menyeimbangkan asupan energy dan pengeluaran energi dalam tubuh.Penelitian ini bertujuan untuk menganalisis hubungan antara aktifitas fisik dengan status gizi anak sekolah.Metode: Anak Usia Sekolah 10 hingga 12 tahun dipilih dari Sekolah Dasar Islam. Pengukuran antropometri dilakukan dengan menggunakan timbangan digital untuk mengukur berat badan dan microtoise untuk tinggi badan.Status gizi dihitung menggunakan standar Z-Score.Aktivitas fisik diukur menggunakan kuesioner.Uji statistik menggunakan uji Chi-square.Hasil: Sebesar 83.9% responden penelitian memiliki status gizi normal dan 16.1% tergolong gizi lebih. Sebanyak 56.4% responden yang tergolong status gizi normal memiliki aktivitas fisik di atas rata-rata (≥2.89), sedangkan responden tergolong memiliki status gizi lebih memiliki aktivitas fisik di atas rata-rata sebesar 33,3%. Kesimpulan: Tidak ditemukan adanya hubungan yang signifikan antara aktifitas fisik dnegan status gizi anak sekolah (p=0.071). Kata kunci: status gizi, aktifitas fisik, anak sekolah

Abstract

This study aims to determine the relationship between calcium and phosphorus intake with dental caries of school children. This study was an observational study with a cross sectional design. The sampling technique used purposive sampling, with a total sample of 96 subjects. This research was conducted in Madrasah Ibtidaiyah Nurussalam, Ngawi starting from April - May 2019. Data on dental caries status (DMF-T index) was obtained by dental examination by a dentist. Data on calcium and phosphorus intake were obtained by direct interviews regarding the amount and type of intake using the Semi-Quantitative Food frequency Quesionaire (SQFFQ) form and the 24 hour food recall form. Calcium and phosphorus data were processed using Nutrisurvey software and the Indonesian Food Composition Table (TKPI). Chi-square statistical tests were used to analyze the relationship between calcium and phosphorus intake and dental caries. The majority of MI students who experience caries are aged 10 and 11 years. Calcium and phosphorus intake of subjects was classified as inadequate (77,1% and 59,4%). There was a significant relationship between calcium intake with dental caries p = 0,031 ( 0,05) and phosphorus intake with dental caries p = 0,029 ( 0,05). Adequate intake of calcium and phosphorus can reduce the risk of dental caries in children. Penelitian ini bertujuan untuk mengetahui hubungan antara asupan kalsium dan fosfor dengan karies gigi anak sekolah. Penelitian ini adalah penelitian observasional dengan desain cross sectional. Tehnik pengambilan sampel menggunakan purposive sampling, dengan jumlah sample sebanyak 96 subjek. Penelitian ini dilakukan di Madrasah Ibtidaiyah Nurussalam, Ngawi mulai dari bulan April - Mei 2019. Data status karies gigi (indeks DMF-T) diperoleh dengan melakukan pemeriksaan gigi oleh dokter gigi. Data asupan kalsium dan fosfor diperoleh dengan wawancara langsung mengenai jumlah dan jenis asupan menggunakan form Semi-Quantitative Food frequency Quesionaire (SQFFQ) dan form food recall 24 hours. Data kalsium dan fosfor diolah menggunakan software Nutrisurvey dan Tabel Komposisi Pangan Indonesia (TKPI). Uji statistik Chi-square digunakan untuk menganalisis hubungan anatar asupan kalsium dan fosfor dengan karies gigi. Mayoritas Siswa MI yang mengalami karies adalah usia 10 dan 11 tahun. Asupan kalsium dan fosfor subjek masih tergolong kurang (77,1% dan 59,4%). Terdapat hubungan yang signifikan antara asupan kalsium dengan karies gigi p=0,031 ( 0,05) dan asupan fosfor dengan karies gigi p=0,029 ( 0,05). Asupan kalsium dan fosfor yang cukup dapat menurunkan resiko karies gigi pada anak.

Abstract

ABSTRAK Background: As much as 73.4% of children aged ≥ 5 years in Indonesia have breakfast with the low nutritional quality of food consumption, as evidenced by the prevalence of 95.5% of children's less consumption of vegetables and fruits. Breakfast habits affect fiber and micronutrient levels. Communication and nutritional information can increase accuracy in breakfast behavior from childhood. Effective and efficient media are needed. So far, the media for children has prioritized illustrations without paying attention to the cultivation of moral values.Objectives: This study aimed to determine the effect of Islamic comic media on improving healthy breakfast attitudes among students.Materials and Methods: The research design was a quasi-experimental type. Subjects were taken by a simple random sampling method. Ninety-six students were divided into three groups. Group A was given nutrition education using Islamic comic media about health breakfast (n = 32). Group B was given nutrition education using Islamic comic strip media about health (n = 32). Group C was a control group (n = 32). The study used two types of nutrition promotion media: comics and comic strips, which are stories about healthy eating in Islam. The time for nutrition education intervention through comics and comic strips is 2x ± 35 minutes. The pretest was ± 25 minutes with ± 10 minutes explaining the instructions for filling out the questionnaire. The posttest was ± 25 minutes with a discussion for ± 10 minutes—nutritional attitudes related to health breakfast by answering a validated questionnaire. We used the Lickert scale to categorized nutritional attitudes. Statistical test was done by Wilcoxon and Mann Whitney test.Results: The distribution of nutrition attitudes of respondents increased after the provision of Islamic comics, both comics and comic strips about breakfast. The nutritional attitudes increased significantly in the Islamic comic media group (p = 0.000) and the Islamic comic strip media group (p = 0.000), from 78.75 to 92.96 and 78.61 to 92.88, respectively.Conclusions: There was a relationship between counseling and Islamic comic media regarding healthy breakfast towards the nutritional attitude of elementary school-age students.

Abstract

Background: Communication, Information and Education (IEC) of nutrition for school children can shape children's eating habits from an early age in order to achieve a better individual situation in the future. Comics are able to display simple stories and writing in colloquial so that they are easy to understand. Research Methods. This is a quasi experimental study with control group pretest-posttest design. Subjects were taken with a simple random sample of 60 students who were divided into two groups, the first group was given education with comic Isi Piringku and the second group was given education without comic Isi Piringku. The carbohydrate and protein intake data in two groups were analyzed using the paired t-test. Research Result. The analysis showed that the highest protein intake enhancement occurred in the treatment group with a delta of 16.7 g, while the control group was 6.2 points. The carbohydrate intake before treatment was 191,9 g and increased after given comic Isi  Piringku by 193,4 g. The results of different test showed that there were significant differences in the enhancement of protein intake before and after the provision of nutrition education between the control group and the treatment group with  p value <0.05, carbohydrate intake was not significantly different before and after treatment.

Abstract

Background : The status of the Covid-19 pandemic has an impact on daily activities, the existence of social restriction policies has resulted in more people staying at home and has an impact on physical fitness. Adolescents’' physical activity has been related to activities at school, because schools were closed by the government during the Covid-19 pandemic, adolescents did a lot of activities in a sitting position such as studying online, playing online games, reading, watching television / cellphones. Behavior at home alone will be dangerous if it is not accompanied by active physical activity. This study aims to look at the description of physical activity during the Covid-19 pandemic.Methods : The research design used a cross sectional study, with adolescent respondents in the city of Mataram. Respondents were taken by random sampling and were willing to fill out informed consent. Physical activity questionnaire related to activities during the pandemic, frequency of sitting/lying down, frequency of standing/walking, frequency of lifting heavy weights, exercise habits, type of exercise, frequency of exercise, duration of exercise time, behavior of watching TV/mobile, length of time watching TV/mobile, habits cycling. Data were analyzed based on gender differences by univariate test, and using Chi Square test on physical activity.Results : Adolescent girls in this study were 85.14%, aged 19 years were 45.9%, and nutritional status was 5.4% underweight and 8.1% overweight. The results of the research showed that 90.5% of female adolescent girls were active at home, 54% of girls were sitting/lying down, while 63.6% of boys were standing/walking. The activity of lifting heavy weights is rarely carried out by teenage boys at 54.5%. Exercise habits were carried out by 90.9% male adolescents with 18.2% exercising 4-6 times/week, with a duration of 30 -60 minutes as much as 36.4%. Adolescent girls never cycled during the pandemic as much as 50.8%.Latar Belakang : Status pandemi Covid-19 berdampak terhadap aktivitas sehari-hari, adanya kebijakan kebijakan pembatasan sosial mengakibatkan masyarakat lebih banyak berdiam di rumah saja dan berdampak pada kebugaran fisik. Aktivitas fisik remaja selama ini berhubungan dengan aktivitas di sekolah, karena sekolah diliburkan oleh pemerintah selama pandemi Covid-19, remaja banyak melakukan kegiatan dalam posisi duduk seperti belajar online, bermain game online, membaca, menonton televisi / Hp. Perilaku dirumah saja akan berbahaya jika tidak dibarengi dengan aktivitas fisik yang aktif. Penelitian ini bertujuan untuk melihat gambaran aktivitas fisik selama pandemi Covid-19.Metode : Desain penelitian menggunakan cross sectional study, dengan responden remaja di Kota Mataram. Responden diambil secara random sampling dan bersedia mengisi informed consent. Kuesioner aktivitas fisik terkait aktivitas selama pandemi, frekuensi duduk/berbaring, frekuensi berdiri/berjalan, frekuensi mengangkat beban berat, kebiasaan olahraga, jenis olahraga, frekuensi olahraga, durasi waktu olahraga, perilaku nonton TV/Hp, lama waktu nonton TV/Hp, kebiasaan bersepeda. Data dianalisis berdasarkan perbedaan jenis kelamin secara uji univariate, dan menggunakan uji Chi Square terhadap aktifitas fisik. Hasil : Remaja perempuan pada penelitian ini sebanyak 85,14%, yang berumur 19 tahun sebanyak 45,9%, dan status gizi kurus berat 5,4% serta gemuk berat 8,1%. Hasil penelitian aktivitas fisik 90,5% remaja perempuan beraktivitas dirumah saja, aktivitas duduk/berbaring sering dilakukan remaja perempuan sebanyak 54%, sedangkan aktivitas berdiri/berjalan sering dilakukan oleh remaja laki-laki 63,6%. Aktivitas mengangkat beban berat jarang dilakukan remaja laki-laki sebesar 54,5%. Kebiasaan olahraga dilakukan oleh 90,9% remaja laki-laki dengan 18,2% berolahraga sebanyak 4-6 kali/minggu, dengan durasi 30 -60 menit sebanyak 36,4%. Remaja perempuan tidak pernah bersepeda selama pandemi sebanyak 50,8%.
