Abstract

Potential coconut  illustrated from of crop productivity in Central Java as the primary commodity reached 1.2864 million tons in 2015. Cashflow from research object coconut distributor reached Rp. 1.536.678.000/ years. The analyse of activity series composed by organisation structure, distribution plot, product handling. Product diversification, layout, and employe. Value of financial analyse  carried out NPV (Net Present Value)  2.056.306.704, value of BC Ratio (Benefit Cost Ratio) 6,23,  value of IRR (Internal Rate of Return) 40,16%. This research, if NPV have positif, so haved affect to positif BC Ratio and IRR haved greater value from interest rate so that Musriah coconut bussines keeping worth. Value of payback periode is 0,88, so to recoup only takes 10 month 21 days. Marketing mix contain of 4P with  Product 3,69 and Price 3,87. Grade of product and price have a good criteria, cause consumer can fulfilled the expectation. Grade of place is 3,54 and grade of promotion is 3,15. Grade of place and promotion have a good criteria, but needed a repair to be better.

Abstract

Rosella flower contains vitamin C that is 260-280 mg in 100 grams. Rosella can be processed into syrup, extracts of roselle can be done by heating or without heating. The purpose of this study was to determine the effect of extraction of the vitamin C content, physical quality, pH and organoleptic quality of roselle syrup. This research using completely randomized design with 2 treatment by extraction and 13 replicates. Analysis of vitamin C oksidimetri method, measurement of total dissolved solids using handrefraktometer, measurement of viscosity using viskosimeter, measurement of pH using a pH indicator. Results showed that vitamin C in fresh rosella flowers as much as 144 mg/100 grams, moisture content and pH of 73.415% fresh roselle 2. Extraction effect on vitamin C content rosella syrup because, but did not affect the physical quality of rosella syrup. Panelists favored from the extraction of roselle syrup by heating. Abstract

Utilization of black soybean (Glycinesoja) received less attention  are not as popular of the color yellow soybeans because it less attractive. Black soybeans contain phenolic compounds that function as antioxidants compounds for the body. In the germination of different ages, different metabolic phases occur. The purpose of this study was to determine the effect of black soybean germination time on antioxidant activity, total phenols, vitamin C, protein content, and organoleptic properties of milk black soybean sprouts. The study design used a mono factor completely randomized design with 5 treatments (32, 40, 48, 56, and 64 hours) and 4 replications. The results showed age germination of the antioxidant activity, total phenols and vitamin C levels to be high : 28.24%, ppm 112.392, 139.103 mg% ​​respectively for germination at 64 hours, while the protein content is low ie 1, 82%. There are differences in the effect of germination time of black soybean for antioxidant activity, total phenols, vitamin C, protein content, color, and aroma of black soybean sprouts milk. Black soybean sprouts milk acceptable to the panelists in terms of color, aroma, and flavor with an average score of 3 (love).

Abstract

ABSTRACT This study aims to determine the content of phosphorus and calcium meat due to the addition of turmeric, ginger, greetings on duck rations. Subjects used in the study were 100 DOD unsex until 8 weeks of data collection. This study used a Completely Randomized Complete Randomized Design (RAL) design, with four treatments and four replications. The treatments in this study were P1 = organic feed (control), P2 = organic feed + turmeric 0.2%, P3 = organic feed + ginger 2%, P4 = organic feed + bay leaf 3%. Research variables measured were phosphorus content and calcium content in duck meat. The data obtained are then analyzed using the variance (ANOVA). The results of this study showed no effect of additional provision of turmeric, ginger, greetings to the content of phosphorus and duck meat calcium (P>0,05). Keywords: turmeric, ginger, greetings, phosphorus, calcium, duck meat

Abstract

Lemon is a fruit that is rich in vitamin C. The processing of lemon as an infused water is one way to get optimal benefits from lemon. Lemon infused water is treated by soaking it in water for several hours. The temperature and soaking time are thought to influence the physical and chemical characteristics of lemon infused water. This study aims to determine the level of turbidity, vitamin C and antioxidant activity of lemon infused water. This study used a completely randomized design of two factors, with two differences in temperature (refrigerator temperature and room temperature) and five differences in soaking time (1, 2, 3, 4, 5 hours) and then analyzed turbidity levels, vitamin C levels and antioxidant activity. Observation data were analyzed using Two Way Anova. The results showed turbidity, vitamin C, and antioxidant activity at room temperature were higher than the refrigerator temperature and the longer soaking the turbidity level, vitamin C, and antioxidant activity were also as high as possible. The results of the analysis of variance showed that there were effects of temperature and soaking time on the level of turbidity and vitamin C of lemon infused water but there was no effect of soaking time on antioxidant activity. Soaking time at room temperature for 1 hour or at refrigerator temperature for 4 hours is the best time to get optimum vitamin C and antioxidant activity.

Abstract

The purpose of this study was to determine the number of bacteria, pH, and water content in broiler carcass with soaking senduduk leaf extract at 12 hours of storage at room temperature. The experimental design used was a completely randomized design (CRD) factorial with factor A as the concentration of senduduk leaf extract (a1 = 0%, a2 = 10%, a3 = 15%, and a4 = 20%) and factor B as shelf life (b1 = 6 hours and b2 = 12 hours). The results showed that broiler carcass soaked with senduduk leaf extract that gives real total bacteria effects. However, were not significantly affect the pH and water content. In broiler carsass is 3,21 x 103 total bacterial cfu / g after storage for 12 hours at room temperature. However, this number is still below the limit of microbial contamination (No. SNI. 01-6366-2000).

Abstract

The main ingredient to make a noodle is wheat flour, it affects the wheat flour import number in indonesia, making it significantly increased. To overcome that issue, the wheat flour has to be substitued by local flour, the mocaf flour. The general objective of this research is to determine protein content, tensile strength, and the organoleptic characteristics of noodles with mocaf substitution. The research method is experiments  type using completely randomized design (CRD) monofaktorial with mocaf substitution variation factor of 0%, 10%, 20%, 30%, 40%, 50% and 60%. The protein content, tensile strength,  and organoleptic characteristic of products were analyzed. The statistical analysis result showed the mocaf substitution quantity had effect on protein content, tensile strength value and organoleptic characteristic in each treatment. The best result of this research is noodle with  20% mocaf substitution,3,766% protein content, 0,4875 N/mm2 tensile strength number, and 2,72 average value of organoleptic characteristic. The  conclusion results of the research conducted on the mocaf substitution noodle showed the are real difference for each test performed, the correlation test showed the result of the protein content is directly proportionate to the tensile strength  number. Abstract

The aim of the study was to determine the nutritional quality and organoleptic properties of fermented tempe milk with addition of thickening agents. The design study of the mono factors and completely randomized design with 7 treatments and 3 replications, the addition of thickening agents such as flour, tapioca flour, cornstarch, carrageenan, gelatin, agar, and control without the addition of thickening agents. Result: The addition of thickening agents had not significant on pH, ash, protein, and fat, but the significant on the water of fermented tempe milk. Results of statistical analysis of organoleptic test showed addition of thickening agents do not significant the color and aroma but significant on the taste and texture. In terms of nutritional quality, the highest protein total in the tempe milk fermented with the addition of 0.6% gelatin thickening agent (3.635%). The highest fat in the addition of thickening starch 6% (2.214%).

Abstract

Black rice has a better bioactive component than white rice. The quality of black rice can be increased, among others, through the process of  the broken skin grinding. Black broken rice has a better nutritional and bioactive component than polished rice. But black broken rice skin is easily damaged. One that can be done is processing into parboiled rice. The purpose of this study in general was to determine antioxidant activity, fiber content and the characteristics of black rice broken pre pared skin. The experimental design used was a monofactor Completely Randomized Design (RAL) with variations in the length of immersion time (0, 30, 60, 90, 120, 150 and 180 minutes). Analysis was carried out on antioxidants, fiber content and physical characteristics (cage density, air absorbency, development ratio, bulk angle and broken grain) black broken rice skin with parboiled. The results of the study stated that the treatment of soaking black rice caused a decrease in antioxidant activity and crude fiber. The highest decreased in the 180 minutes immersion treatment with a decrease in presentation was 35% and 10,2% respectively, the results of testing on physical characteristics showed immersion treatment had an effect on decreasing in the kamba density test, development ratio, bulk angle and broken grain. However, the water absorption test experienced an increase. The best treatment is in a variation of 30 minutes soaking time.

Abstract

Chiffon cake cassava peel is a semi-wet processed foods, consisting of wheat flour, sugar, butter, flour and baking soda are experiencing dough with flour substitution of cassava peel. The purpose of this study to determine the effect of substitution of cassava flour in chiffon cake skin against flower power, HCN content, fiber content, and organoleptic properties. This type of research is carried out research using randomized complete block design experiment with a perfect 5 treatments, the variation of 0%, 5%, 10%, 15% and 20%. Anova statistical test, while analysis of the organoleptic properties use Friedman test. The highest fiber content is 14.64% on 20% substitution. The highestbreed power at 5% (102.5%). Not significant of substitution of cassava flour skin of the fiber content and breed power. The best of result (nature taste) are the substitution of 5%, with the criteria of a bright brown color, sweet taste, very fragrant aroma and soft texture.Keyword: peel cassava flour, cassava peel chiffon cake, the fiber content.
