Abstract

Sausage is food product made from mix ture of minced meat (contain meat more than 75%), flour or starch with or without additional spices, and other allowed food additive. Sausage made from meat usually has a higher content of fat, which in many cases usually caused serious health problem. To reduce the fat content in sausages, the researchers try to combine cassava starch with soybean flour. Soybean flour was used in combination with cassava starch because it reduced of cholesterol in blood, reduced oil absorption while frying. Soybean flour is a kind of food material that has higher content of protein but low fat, and it has complete essential amino acids. This research was conducted to find out the influence of cassava starch and soybean flour combinations to produce good quality of seabass sausages. In this experiment, cassava starch and soybean flour combination were as follows 90:10; 80:20; and 70:30. The result showed that the combination of cassava starch with soybean flour increase water content, ash content, protein content and fat content but elasticity and carbohydrate content were decrease.

Abstract

Bacteria have an important role in tempe fermentation in Indonesia, aside of Rhizopus oligosporus as the dominant microbe. In this study the molecular aspect of bacterial diversity in tempe were analyzed using a fingerprinting technique, Terminal-Restriction Fragment Length Polymorphism (T-RFLP). This study was aimed to examine the diversity of bacterial community during tempe making. Bacterial diversity analysis was conducted in the first hour and the thirteenth hour after the soybean soaked while the fresh tempe was analysed at one to two hours after the fermentation ended. T-RFLP can be used to describe the diversity of bacterial community during the fermentation of tempe. T-RFLP profiles revealed the presence of 24, 30 and 33 bacterial phylotypes in the first hour and the thirteenth hour after the soybean soaked as well as in fresh tempe samples. The phylotypes were dominated by unculturable bacteria group. Only several bacterial phylotypes were consistenly identified since the beginning to the end of fermentation, while most of them were only identified at certain phases along with the environmental changes (i.e: pH) that occured during the fermentation process. One of the consistently identified groups belongs to Bacillus genera.

Abstract

Java sparrow (Padda oryzativa) is anendemic bird to Java and Bali. It used to be avery common bird, but due to over exploitationthe bird has declined and been classified asVulnerable (BirdLife International, 2001). InIndonesia bird-keeping is a popular pastime, with deep cultural roots (Jepson and Ladle,2005). It is widely assumed that the hobbynegatively affects wild populations of commonas well as threatened birds (Jepson and Ladle,2005; Nash, 1994), such as Java sparrow.

Abstract

The objective of the research was to investigate the effect of sunlight radiation distribution in canopy on soybean plants biomass at different planting distances. This research was done experimentally using the Block Design. The independent variables were the soybean varieties and planting distance. The varieties used were Baluran, Bromo, and Galunggung and the planting distance used was 15x15 cm2 and 25x25 cm2 as blocks with 10 replications. The dependent variables were sunlight intensity and the plants biomass. The result of the research indicated that after 40 planting days, the sunlight intensity in the canopy, at soybean varieties factors was significant (p<0.05), and the planting distance was significant too. The plant biomass indicated that varieties factors had a significant effect (p<0.05), but the planting distance factors were not significant (p>0.05).

Abstract

Abstract

It has been known that isoflavone have biological activities such as antioxidant, antibacteria, antimutagenesis, and anticancer. Isoflavone aglycone uses such as genistein, daidzein and glycitein are limited since they are unstable and uneasily to dissolve in water. Through enzymatic transglycosylation reaction, its stability and solubility could be improved. In this study, genistin (isoflavone glycoside) was synthesized from genistein (isoflavone aglycone) by application of transfer reaction using enzyme cyclodextrin glucanotransferase (CGT-ase) of Bacillus macerans. Identification of the product was determined by TLC with methanol: chloroform (1:3, v:v) as eluent. Rf value 0.75 of the synthesized product was close to the Rf value standard of authentic genistin glycoside. The synthesized genistin was furthermore assayed to determine its antimutagenesis activity according to the Ames methode on E. minimal glucose media had been precultured with a mutant strain of Salmonella thypimurium TA98. The tested bacterial strain was induced with aflatoksin B1 as mutagen which had been activated with a lever homogenate. The result showed that the solubility and some biological properties of the synthesized genistin were improved higher than that of genistein, while it was found to be lower than that of the commercial genistin.
