Abstract

Potato logistics and supply chains in Central Java, Indonesia, in 2025 are experiencing high price fluctuations, with price control usually in the hands of distribution centres. It limits farmers' bargaining power. In addition, the current distribution centre locations are largely inefficient. Therefore, the objective of this study is to determine the most optimal distribution centre location to support price fairness at the farmer level and improve supply chain logistics efficiency. The method used is multi-criteria decision-making (MCDM), namely the Analytic Hierarchy Process (AHP) and the Fuzzy AHP. These two methods are used to compare and evaluate alternative locations. In this study, four decision criteria were considered, namely transportation conditions, raw material availability, market location, and labour wages. The alternatives evaluated were Boyolali, Magelang, Wonosobo, and Semarang. Furthermore, expert assessments were collected from five respondents, including logistics practitioners, academics, entrepreneurs, and distributors. The results of the AHP study show that the market location variable has the highest priority weight (0.4536), followed by transportation conditions (0.2860), raw material availability (0.1602), and labour wages (0.1002). Based on AHP, the composite weights for the Boyolali, Magelang, Wonosobo, and Semarang alternatives are 0.2735, 0.1565, 0.4986, and 0.0714, respectively. Further research is recommended to combine the Analytic Network Process (ANP) to capture the interdependence between decision-making criteria.

Abstract

Soybean (Glycine max L.) is a rich source of bioactive compounds, and germination is an effective process for improving its nutritional and functional properties. However, the combined effects of germination duration on sprout growth, bioactive compounds, and antioxidant activity in germinated soybean flour remain poorly understood. Therefore, this study aimed to evaluate the effect of different germination times on sprout growth, bioactive compounds, antioxidant activity, and proximate composition of germinated soybean flour. Soybeans were germinated for 0–7 days and analyzed for sprout growth, γ-aminobutyric acid (GABA), total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity (DPPH), and proximate composition. Germination significantly affected all evaluated parameters (p 0.05). Sprout length increased continuously throughout germination, whereas GABA content reached its maximum on day 3 (416.43 ± 11.69 mg/100 g). The highest TPC (91.88 ± 1.20 mg GAE/100 g) and antioxidant activity (IC₅₀ = 10.57 ± 0.01 μg/mL) were obtained on day 5, while the highest TFC (17.30 ± 0.14 mg QE/100 g) was observed on day 4. Germination also increased protein, moisture, and ash contents while reducing fat content. These findings demonstrate that optimizing germination time effectively enhances the nutritional and functional quality of soybean flour, with 3–5 days representing the optimal germination period depending on the targeted bioactive compounds.

Abstract

Robusta coffee husk (Coffea canephora Pierre ex A.Froehner), which has long been regarded as a low-value agricultural waste, contains bioactive compounds with promising potential for development into functional products. This study aims to identify the secondary metabolite profile of the methanol extract from robusta coffee husk originating from Jember using GC-MS analysis. Extraction was conducted by maceration with methanol, yielding a concentrated extract containing various bioactive constituents. Sixteen compounds were identified, with three major components: caffeine (55.22%), quinic acid (18.72%), and lactic acid (18.49%). These compounds exhibit diverse biological activities, including central nervous system stimulation, anticancer potential, and metabolic functions. In addition, several other compounds with antioxidant, anti-inflammatory, and antimicrobial properties were also detected. The findings indicate that robusta coffee husk from Jember has significant potential as a source of bioactive compounds for further development in functional food or pharmaceutical applications.

Abstract

Free-range chicken is widely cultivated in Indonesian society traditionally, and usually the demand will be very high on major religious holidays, especially Islam, both on Eid al-Fitr and Eid al-Adha. The purpose of this study was to determine the price fluctuations of native chicken in Southeast Sulawesi in 2022 and 2023 and to determine the price trend of native chicken in Southeast Sulawesi in 2022 and 2023. This research was conducted in Southeast Sulawesi Province. Determination of this location is determined intentionally ( purposive). The data source used in this study is secondary data (time series) for the last 2 years, namely from 2022 to 2023. Data collection procedures/techniques in this study are using literature studies. Data analysis uses change analysis and trend analysis. The results showed that the price of native chicken in Southeast Sulawesi Province during the last two years, namely 2022-2023, experienced increasing fluctuations and the trend of native chicken prices in Southeast Sulawesi Province during the last 2 years, namely 2022-2023, showed an increasing trend, where the average trend was positive.

Abstract

Tiga Hati Mutiara, a producer of pearl sago, has only one supplier of raw material for sago flour for the production of sago pearls. Based on data from the Indonesian Ministry of Agriculture, there are 13 sago-producing provinces. These 13 sago-producing provinces can become alternative sago suppliers for Tiga Hati Mutiara. The purpose of this research is to find the best supplier of sago flour for Tiga Hati Mutiara, in accordance with its needs and goals. To address the problem under concern, this research uses the MCGDM approach with a different set of criteria. This method requires expert data, such as decision makers, supplier alternatives, and supplier criteria. The study found that supplier alternative 2, namely Terong Mas, was chosen as the main supplier of sago flour out of six supplier alternatives and fifteen sub-criteria used. This research is expected to be a suggestion for improvement in supplier selection decision-making for the company, as well as material for further research literacy.

Abstract

Lombok terong is a variety of chili belonging to the Capsicum genus, and one of its processed products is sambal sauce. Due to its limited shelf life, preservatives must be used to extend it. This study utilized a combination of sodium benzoate and potassium sorbate in a 1:1 ratio. The objective was to identify suitable indicators of quality degradation and critical parameters for predicting the shelf life of lombok terong sambal sauce (LTSS), and to develop a predictive model based on the Accelerated Shelf-Life Testing (ASLT) method using the Arrhenius approach. The study tested samples over 30 days, with observations made every six days. The samples were stored at temperatures of 30℃ (S30), 40℃ (S40), and 50℃ (S50), with two replicates per treatment, and each replicate measured in triplicate. Indicators of quality degradation included color analysis and Total Plate Count (TPC), while water content, water activity, and pH analysis were critical parameters. Based on the experimental results, TPC analysis was selected as the indicator of quality degradation, as significant microbial growth was observed in the sample stored at 50℃ by day 18. Meanwhile, pH analysis was identified as the critical parameter due to significant decreases observed across all storage conditions. As a result, the estimated shelf-life equation for lombok terong sambal sauce can be formulated as t = pH0 - 4.4 × e3612T1642.542.

Abstract

Food supply chain problems remain a critical issue that has the potential to disrupt food security and resilience, especially in the horticulture sub-sector. One strategic approach to addressing supply chain issues is through comprehensive role of food hub. Food hub serve as centers that can integrate various production services and distribution facilities, making them the optimum solution for supply chain problems. They require the role and function of professional institutions as the key to strengthening governance, multi-actor coordination, and the provision of policies to achieve the objectives and sustainability of food hubs. Therefore, a review of existing institutional conditions is necessary as a preliminary assessment to develop an appropriate institutional model for food hub, particularly in Bandung Regency as the location under study. A prescriptive approach to the institutional aspects of food hubs was conducted using the Institutional Analysis and Development (IAD) Framework, where research development was tailored to the relevance of local needs. Data and information were collected using qualitative methods with various techniques. Based on the results, revealed that the existing conditions of the food hub showed low participation from relevant actors and weak collaboration between communities and local policy makers. Food hub activities have not been running efficiently. It is necessary to strengthen the roles of relevant stakeholders, collaboration, and integration to strengthen the institutional functions of food hubs. Furthermore, to ensure that these functions are appropriate, it is necessary to increase human resource capacity, monitor and evaluate business planning, and provide synergistic regulations and policies.

Abstract

Red chili is a highly perishable commodity with a short shelf life, making it prone to damage and spoilage. One effective method to extend its shelf life is by applying an edible coating made from chitosan derived from green mussel shells and lemongrass extract, both known for their antibacterial properties and ability to form a protective layer. This study aimed to assess the effectiveness of this edible coating in prolonging the shelf life of red chilies. The parameters measured included weight loss, vitamin C content, water content, total microbial count, and sensory evaluation through a hedonic quality test for texture and color based on panelist assessments. A Completely Randomized Factorial Design (CRFD) was employed, with two factors: variations in chitosan concentration and storage duration at low temperatures. Observations were made over four weeks, with weekly measurements starting from the second week. The results showed that the edible coating significantly reduced weight loss, helped maintain vitamin C content, stabilized water levels, preserved texture and color, and controlled microbial growth compared to untreated chilies. The optimal results were observed with 3% chitosan stored for four weeks, showing the lowest weight loss (2.81%), the highest vitamin C retention (181.9 mg), and minimal microbial growth (1.4 x 10⁴ CFU/g). These findings demonstrate that chitosan-based edible coatings effectively enhance the shelf life and quality of red chilies.
