Abstract

ABSTRACTThis study aims to determine the concentration of dissolved protein contained in the crude extract of the collagenase enzyme from the internal organs of malong fish (Congresox talabon) based on different pH. The research was carried out through the process of sample preparation, collagenase enzyme extraction, and measurement of dissolved protein concentrations in crude extracts of collagenase enzymes based on different pH. The results showed that the malong fish had a proportion of 55% meat, 25% bones, 8% offal-gonads, and 12% skin. The concentration of dissolved protein in crude extract of collagenase enzyme at pH 6.5; 7.5; 8.5 respectively of 5.53 ± 0.02 mg / ml, 6.08 ± 0.04 mg / ml, and 6.94 ± 0.05 mg / ml. Increasing the pH value can increase the concentration of dissolved protein in the crude extract of the collagenase enzyme from the internal organs of malong fish.Keywords: Congresox talabon, collagenase enzymes, malong fish, protein

Abstract

ABSTRACT Periphyton is microorganism that live attached to submerged substrate. In the vicinity of Koto Panjang Dam Site there are fish farming activities in floating net cages, which produce feed residu and metabolic waste. This research aims to determine periphyton community around the Dam Site of the Koto Panjang Reservoir. This research was conducted in December 2020. There were 3 stations, namely station 1 (less KJA), station 2 (moderate KJA), and station 3 (full KJA). The subtrate used is ceramic substrate with a size (8x3 cm2). Substrate was planted 1 week before sampling. Sampling were conducted 3 times at once a week. The periphyton samples were obtained by spraying the surface of ceramic substrate with aquadest using a plastic sprayer. Periphyton were preserved with lugol 1%, then identified and abundance counted. Water quality parameters measured were temperature, transparency, pH, dissolved oxygen, free carbondioxide, nitrate, and phosphate. Results shown that there were 36 types of periphyton, belongs to 7 classes, namely Bacillariophyceae (6 types), Chlorophyceae (17 types), Cyanophyceae (3 types), Trebouxiphyceae (4 types), Zygnematophyceae (4 types), Euglenophyceae (1 type), dan Dinophyceae (1 type). Periphyton abundance during the study ranged from 2.479-10.357 cells/cm2. Two way anova test on the number of species and periphyton abundance around the Dam Site of PLTA Koto Panjang Reservoir showed that the number and abundance of periphyton were not significantly diffrerent between stations and between times. Keywords:Periphyton, PLTA Koto Panjang Reservoir, Ceramic Substrate, Net       Floating Cage, Water Quality

Abstract

Abstract               The study aimed to compare the using of DPPH and FRAP methods to assess the antioxidant activity of the golden snail egg extract(Pomaceae cannaliculata)and to determine the chemical composition contained in the golden snail eggs. The parameters tested were proximate analysis (the content of moisture, ash, protein, fat, and carbohydrate) (AOAC, 2005), extract yield (Karnila et al., 2011), secondary metabolite test and antioxidant activity test on golden snail egg extractby using DPPH method compared to FRAP method. There were significant differences between the values of the antioxidant activity of the golden snail egg extract assessed by using the DPPH and FRAP methods. The best value of antioxidant activity was obtained by using the DPPH method with the value of IC50at 220.02 ppm, lower than it by using the FRAP method. The snail egg extract contained water 10.14%, ash 44.02%, protein 33, 38%, fat 0.11% and carbohydrates 12.34% (by difference). Keywoards: Antioxidant, DPPH, FRAP, golden snail egg

Abstract

ABSTRACT Protein hydrolysate of rebon shrimp (Acetes erythraeus) is a product produced from the breakdown of protein into simple peptides and amino acids through hydrolysis by enzymes, acids or bases. This product contains antioxidants and antibacterial compounds that can be used as preservatives. Saline tilapia (Oreochromis niloticus) is a very popular consumption fish, but this fish is easy to spoil, so it needs effective handling to maintain its quality. This study aims to determine the interaction between immersion time and the best concentration of rebon shrimp protein hydrolysate to maintain the shelf life of fresh saline tilapia. The research method consisted of two stages, namely: 1) Making rebon shrimp protein hydrolyzate 2) Soaking fresh saline tilapia with treatments, namely K1P1 (15% concentration+ 0 minutes), K2P2 (20% concentration + 30 minutes), and K3P3 (25% concentration + 60 minutes), 3 replicates with 27 experimental units. The results of the study of the best organoleptic values were the K3P3 treatment (concentration 25% + 60 minutes). Eye appearance value 9.00 (convex eyeball, clear cornea and pupil), gill value 8.97 (dark red and a little mucus), mucus value 8.73 (clear mucus layer), odor value 8.22 (fresh smell), meat incision value 8.93 (brilliant cut), texture 8.60 (solid and elastic). The pH value is 6.43, the lactic acid value is 11.1, and the TPC value is 1.3x105cfu/g. The best treatment can inhibit the growth of bacteria and maintain the quality of saline tilapia. Keywords: Protein hydrolysate, rebon shrimp, saline tilapia, Organoleptic

Abstract

                                                   ABSTRACT This study aims to determine the yield of freshwater mussel shell collagen from river and water pool waters. The parameter measured is the yield value of collagen. The research method used was experimental, namely making collagen from mussel shells obtained from river and pond waters in Kampar Regency. Then a comparison of the collagen content contained in the shells of river and pond mussels was carried out. The data obtained were analyzed using the T-test, namely the comparison with two treatments. The results of this study indicate that the highest yield of collagen produced from river mussel shells is 18.76% with0.50 Macetic acid and 18.73% deep mussel shells with 0.75M acetic acid.Keywords: Collagen, Pilsbryoconcha sp., Acetic Acid, Yield

Abstract

AbstractThis study aimed to determine consumer acceptance on pempek freshwater mussels with the addition of durian seed flour. The research method was experimental with a non-factorial completely randomized design (CRD) with 4 treatment levels, namely E0 (without the addition of durian seeds flour), E1 = 40g (20% durian seed fluor), E2 = 80g ( 40% durian seed flour), E3 = 120 g (60% durian seed flour). The parameters tested were organoleptic values (appearance, taste, texture and aroma) and proximate analysis (moisture content, protein content, ash content and fat content). Based on the parameters tested, the best treatment for pempek freshwater mussels with the addition of durian seed flour was E1 (40 g durian seed flour) with an appearance value of 6.92 (light brownish appearance), aroma 6.70 (durian seed aroma), flavor 7,20 (light felt durian seed) and 7.20 texture (chewy texture) while the proximate analysis was 54.23%, moisture 11.4%, protein 1.20%, fat, and 3.25% ash. Keywords: freshwater mussels, pempek, consumer acceptance, durian seed flour

Abstract

ABSTRACTOne type of brown seaweed Sargassumilicifolium can be used as a source of food, pharmaceuticals, and cosmetics. This study aims to determine the composition of the proximate Sargassumilicifolium. The research method used is an experiment with experiments on S. ilicifolium by analyzing the proximate composition consisting of moisture, ash, fat, and carbohydrate content by difference. The results of the analysis showed that S.ilicifolium had moisture content of 14.73% (dw), ash 20.03% (dw), fat 1.12% (dw), protein 7.35% (dw) and carbohydrates (by difference) 72.11% (dw). Sargassumilicifolium is a relatively high source of minerals and carbohydrates and protein for this type of seaweed.Keywors: analysis, carbohydrate, mineral, seaweed

Abstract

AbstrakThis study aims to determine the effect of fortification of tilapia (Oreochromis niloticus) meal on the characteristics of crackers. The method used was an experimental method with a non-factorial completely randomized design study consisting of 4 levels, namely without the addition of fish meal (T0), fortification of 5% tilapia fish meal (T1), 10% fish meal (T2), and fortification of fish meal 15% (T3).The results showed the effect of fortification of tilapia fish meal on the organoleptic characteristics of crackers. Fortification of 15% (57 grams) of tilapia fish meal is the best treatment which results in the characteristics of tilapia crackers having a bright, golden yellow and attractive appearance, delicious and savory taste, crunchy texture, and distinctive aroma of fish crackers. Crackers have a moisture content of 4.43%, 2.32% ash, 28.74% fat, 16.41% protein, and 48.09% carbohydrates.Keyword: crackers, fish meal, Oreocrhomis niloticus

Abstract

AbstractThis research was conducted in August-September 2020 at the Fish Hatchery and Breeding Laboratory, Faculty of Fisheries and Marine, Universitas Riau, Pekanbaru. This research aims to determine the effect of different washing solutions (milk, urea, formalin) on eggs adhesive, fertilization rate, hatching, and the survival of Patin catfish (P. hypophthalmus) larvae. This experimental research used a completely randomized design with a factorial pattern (CRD) with 1 factor, 4 levels of treatment, and 3 replications. The treatment levels covered PA: No washing (Control), PS: 14 grams of powdered milk + 1 gram of NaCl/L of water (20 minutes), PU: 4 grams of urea + 4 grams of NaCl/L of water (5 minutes), PF: 0.4 mg formalin/L of water (10 minutes). The washing was performed on 1 gram of eggs or with a density of ± 1153 eggs in each treatment which was then incubated in a container in an egg hatching funnel. The best washing solution for washing eggs contained 14 grams of powdered milk + 1 gram of NaCl resulting in 100% of eggs that do not stick together (non-adhesive) and the fertilization rate reached 76.52% with the hatching rate of 76.98% and larval survival (SR 5 days) of 87.11%.Keywords: Milk solution, urea, formalin, adhesiveness, fertilization, hatching, survival

Abstract

Abstract            This research aims to determine the effect of basil leaf extract (Ocimum sanctum) on the quality of fresh nile tilapia (Oreochromis niloticus) during storage at room temperature in terms of microbiological, organoleptic, and chemical parameters. The treatments are given consisted of K0 (control), K1 (10% basil leaf extract), K2 (15% basil leaf extract). The analysis parameters observed were the calculation of the total plate count, the organoleptic quality test, and the Total Volatile Base test. The result shown that K1 treatment (10% basil leaf extract) was the best treatment with the yellowish red flesh appearance criteria, rather bright, clean, neat, attractive and the lines formed from the spine and lateral linea are red, dim and not split, fresh odor criteria, fairly elastic texture criteria, rather soft, compact and good taste, specific taste of fresh fish, little leaf taste (bitter) and total plate count value of 5.9 x 103 colonies/gram and Total Volatile Base value of 22 mg/N for 9 hours of storage.Keywords: Ocimum sanctum, Oreochromis niloticus, Quality of fish.
