Abstract

AbstractPangasiushypophthalmus is nocturnal fish that grow well in dark condition. In dark condition however, phytoplankton may be none, the water become rich in organic materials and this condition is match for developing parasites and pathogen that negatively affect the fish.  Tounderstand the health status of the fish in general, the histologcal structure gill, kidney and liver was investigated. The results were then compared to those obtained from fish taken from the Siak River. The research was conducted on Agustus-Desember 2019. There were 4 treatments applied, namely control (natural photoperiod), 18G(18 hours dark ) and 24G (24 hours dark), 3 repetitions/ treatment. Parameters  measured were survival  rate and the histological structure (gills, kidneys and liver). Samples were fixed in 5% formalin and histologically processed and stained with Haematoxylin Eosin. Results shown that in general the histological structure (gill, kidney and liver) of the treated fish and the fish from the Siak River are not different. There were abnormalities in the gill, such as hyperplasia, hypertrophy, odema and necrosis.  Inthe all fish there are Dactylogyrus sp parasites that may caused the gill damage. The histological structure of kidney and liver are normal. Data obtained indicate that the damage of the gill may caused by the presence of the parasite and it is not affected by the manipulated photoperiod.           Keywords: Health Status, Siak River, Histological Structure, Dactylogyrus sp.

Abstract

ABSTRACT Tuna fish is showing a high quantity of production and also has valuable nutrient contents. Fish nugget is one of the most popular forms of fishery product diversification. However, it is possible to develop nuggets more to provide consumers with a wide choice of flavors. One way to add the flavor of nugget is by adding smoked flavor to tuna fish nuggets. The adding of liquid smoke into the fish product is a way to produce smoke flavored fish nugget safely for health. This research aimed to observe the effect of fish fillet immersion into the liquid smoke solution at varied combination of concentration and immersion time on the quality of the fish nugget and to determine the best treatment to produce the most preferred tuna nugget by consumers. The research used an experimental method and designed for a Completely Randomized Design to conduct the treatment of fish fillet immersion into the liquid smoke solution at 5 varied concentration and immersion time combinations, based on a preliminary study, namely:  2% for 30 minutes (K2L30), 2% for 60 minutes (K2L60), 4% for 30 minutes (K4L30), 4% for 60 minutes (K4L60), and without immersion as the control. The result showed that the treatment of immersing the fish fillet into the liquid smoke solution at the concentration of 2% for 30 minutes (K2L30) produced the best quality of tuna fish nugget and the highest consumer preference. This fish nugget contained 56.0% moisture, appropriated to the provision in Indonesian National Standard (SNI) for fish nugget. The product is also showing as the safely food, showed by the content of total phenol at 26,2 ppm or equivalent (0.00262-0.00543%), which is still far below the maximum level allowed for total phenol in food (0.02-0.1%), pH 5,90, and no Staphylococcus aureus bacteria contaminated. Keywords: fish nugget, flavor, immersion, liquid smoke

Abstract

AbstractThe Teluk Petai Lake is an oxbow lake that received water from the Kampar River. The lake, however, received domestic pollutant that negatively affects the water and thus affect the life of fishes, including Hampala macrolepidota living in that lake. To understand the growth ring pattern in the otolith of that   fish, a study was conducted on November to December 2020. The fish was sampled using nets with 3/4 and 2,3 inch mesh size, 4 times, once/ week. The fish captured was then measured, weighed and the otolith (sagita) was removed. The otolith was then sticked in slide glasses using Crystalbond Amber 509 and then shaved manually using whetstone to reveal the growth ring patterns. The dark ring was identified using a binocular microscope. Results shown that  among 50 fishes captured (200 – 350 mm TL,  90 – 320 gr BW), 48 fishes have dark growth rings, 1 – 3 rings/ fish. The distance between the otolith’s nucleus and the 1st  growth ring was various, ranged from 0.1 – 0.75 mm, indicating that the formation the growth ring is individual and it is not resulted from mass evidence. Based on data obtained, it can be concluded that  mostH. macrolepidota in the Teluk  Petai Lake faced problems that hampered their growth as indicated by the formation of dark rings in the otolith. Keywords: Oxbow lake, Growth pattern, Sagita, Hampala barb
