Abstract

Good physical fi tness in athletes is essential in order to reach maximum performance during the game. Factors which affect the physical fi tness are nutrition intake, nutritional status dan age. The role of carbohydrates in sports is very important to spare muscle glycogen during exercise. This study purpose was to analyze the correlation between carbohydrate intake, nutritional status and physical fi tness in adolescent athletes of junior high school. This study used a cross-sectional study design. Total subjects in this study using a total population of about 37 people who are members of basketball team in junior high school 2 Ngamprah West Bandung District. Data of Carbohydrate intake was obtained through semi quantitative food frequency questionnaire method. Nutritional status was obtained by measuring body weight using digital bathroom scales and measuring height using microtoise tools. The average intake of carbohydrates was 375.4 grams which was 29.7% have a less carbohydrate intake and 70.3% have a adequate carbohydrate intake, average  BMI for age z-score was -0.166 SD as much as 2.7% have a very thin nutritional status, 5.4% have a thin nutritional status, 70.3% have a normal nutritional status, 13.5% overweight and 8.1% obese. The average fi tness score was 14.9 (range 5-20) that means average they have a good physical fi tness which was as much as 13.5% have a lack physical fi tness and 86.5% have a good physical fi tness. Results revealed that there is correlation between carbohydrate intake and physical fi tness (p=0.025 and r= -0.367), nutritional status and physical fi tness (p =0.038 and r = 0.342). The conclusion of this study is carbohydrate intake and nutritional status related to the physical fi tness of adolescence basketballs athletes. Adolescent basketball athletes are advised to provide carbohydrate intake and maintain their nutritional status in the normal category in order to have good physical fi tness.

Abstract

Coronary Heart Disease (CHD) is a condition where plaque build up inside the coronary artery which could lead to heart attack. One of the factors that affects CHD is food consumption pattern that can increase lipid level so the heart could not get any nutrition optimally. The research was aimed to analyze the relationship between food consumption pattern, and lipid profi le with CHD in elderly patients of Jemursari Islamic General Hospital, Surabaya. The study was a case control design with 20 of case patients who had CHD history and 20 of control patients with dyslipidemia. The analysis used chi-square test for the variables such as carbohydrates and fat intake, meal frequency, total cholesterol level, Low Density Lipoprotein (LDL), and triglycerides level. The result showed that there is relationship between fat intake and CHD (p=0.002; OR=13.500; 95%CI), but there were no relationship between carbohydrates intake (p= 0.105), meal frequency (p=0.451), total cholesterol level (p = 0.237), Low-Density Lipoprotein (LDL) (p = 0.054), and triglycerides level (p=0.341), with CHD in dyslipidemia elderly patient. Elderly patients is expected to maintain their nutrient intake, especially fat intake in order to reduce the chance of CHD.

Abstract

Nutrition issues in adolescents arise because of inappropriate dietary habit, causing an imbalance between nutritional  intakes and the recommended dietary allowances. The prevalence of obesity in adolescents increased within the last 30 years. The percentage of adolescents aged 12-19 years who were obese increased from 18,4% in 2009-2010 to 20,5% in 2012. Obesity occurred because of behavior and habit of adolescent who consume high calorie food excessively. The aim of this research was to analyze the difference of intake and nutritional adequacy between obese and nonobeseadolescents. This study was an analytical observational research with cross sectional design. The sample was 46 Senior High School students that divided into 23 obese and 23 non obese adolescent groups chosen by simple random sampling. The obesity data was obtained from the results of anthropometric measurements, while intake and nutritional adequacy were obtained from 2x24 hours food recall form. Mann Whitney test was used to analyze the difference between variable. The research revealed that there was a difference of energy intake, carbohydrates, protein, and fat with p-value 0,01, 0,00, 0,038 and 0,018 respectively, and nutritional adequacy of energy, carbohydrates, protein, and fat with 0,02, 0,00, 0,017 and 0,018 respectively between obese and non-obese adolescents. It can be concluded that there is a difference of intake and nutritional adequacy between obese and non-obese adolescents. Providing information and education about obesity, it risks, and healthy diet are recommended to prevent obesity.Keywords: intake, nutritional adequacy, obesity, adolescents

Abstract

Anti Retroviral Therapy (ART) adherence infl uenced HIV/AIDS patient’s quality of life and otherwise quality of life influenced ART adherence positively, where the better quality of life of People Living With HIV/AIDS (PLWHA), the more ability of patient to adhere on their ART regiment. The purpose of this study was to analyze association between ART adherence and outpatient HIV/AIDS patient’s quality of life in four domains at RSUD Dr. Soetomo Surabaya. This study was an observational study with cross sectional design. Sample was 94 HIVAIDS patients’s outpatient and selected by using accidental sampling technique. The data was analyzed using Spearman correlation test. The result of study showed that most of HIVAIDS patients were 36–55 years old (53.2%), male (59.6%), normal nutritional status (42.6%), having high ART adherence in the last one month (79.8%), and having quality of life’s mean score in all domains ranged at 50–60 (30–40%). This study showed that there was an association between ART adherence in the last one month and quality of life in physical health (r =0.212, P = 0.040) and environment’s domain (r = 0.258, P = 0.012). It is suggested a comprehensive AIDS care program primarily with considering physical health and environment factors that could increase HIV/AIDS patient’s quality of life. It is suggested a longitudinal study with greater numbers of respondent and combine the use of measurement instrument to understand factors related to ARTadherence and quality of life.Keywords: sex, ART adherence, quality of life, nutritional status, age

Abstract

Tuberculosis is an infectious disease caused by mycobacterium t uberculosis germs. Germs in form of droplets spread through saliva splashes out when coughing, sneezing and talking then inhaled during breathing. The degree of sputum smear positivity of patients describe the increasing number of  tuberculosis bacteria in the lungs that could potentially transmit the infection. In general, patients with  tuberculosis have decreased appetite which impact on weight loss. This research was comparative observational analytic research using cross sectional approach with simple random sampling conducted at the Hospital Asy-Syaafi  Pamekasan with a sample size of 50 people. The results of Mann Whitney test showed a signifi cant difference in  adequacy level of energy (p= 0.026), carbohydrates (p = 0.000),  protein (p = 0.001), fat (p = 0.029) and nutritional status (p = 0.022) between the groups of  tuberculosis with sputum smear (+) and sputum smear (-). It was concluded that adequacy level (energy, p rotein, fat and carbohydrates) and nutrition status among respondents t uberculosis sputum smear (+) have signifi cant differences with the respondent t uberculosis sputum smear (-).

Abstract

Lablab bean has potential as alternative food subtituteof soybean Lablab Bean has nutrients content which is not much  different, but fatcontent is much lower than soybean. Yogurt is milk fermented by the lactic acid bacteria Streptococcus thermophilusand Lactobacillus bulgaricusthat tranformmilk sugar (lactose) into lactic acid to obtain acidity, smell,  and specifi c fl avor. The aim of this research was to study the effect of substitution of lablab bean milk and skim milk to organoleptic properties, pH value, and the total of lactic acid bacteria (LAB). The Experimental design was appliedusing completely randomized design with 30 untrained panelists. The research conducted in three treatments with two repetitions. The data collected are total LAB and pH value. The organoleptic properties test used was hedonic quality test with one repitition. The pH value was measured using an electronic pH meter. The total of LAB was measuredusing Man Rogosa and Sharpe (MRS) media. The level of lactic acid was measured using acidity test. The treatment applied was the effect of substitution of lablab bean milk 92%, 95%, and 96,5%, and skim milk 8%, 5%, and 3,5%. Data were analyzed with Anova, Kruskal Wallis, Duncan Multi Range with signifi cance level p < 0,05. The result showedthat organoleptic properties ofsubstituion 92:8 is closer to the expected quality ofyoghurt with the lowest pH value, and the highest pH value is substitution96,5 :3,5. The measurement results of the total LAB and lactic acid levels showed the substitution 92:8 has the highest value and the substitution of 96,5:3,5 has the lowest value. The result of Microscopic on Gram staining showed that Streptococcus thermopillus and Lactobacillus bulgaricus bacteria were found in lablab beans yoghurt. This result indicates that the lablab bean can be potentially used as the main material to make yoghurt.

Abstract

Food poisoning is one of health problems which caused by consumption of contaminated food. Application of hygiene  and sanitation in the school canteen is a form of food contamination prevention. This study was aimed to describe hygiene of food handlers and sanitation of elementary school canteens in Mulyorejo subdistrict. This was a quantitative descriptive research. Population in this research was 13 elementary school canteens in Mulyorejo subdistrict. Purposive sampling was used in this study based on the food sold which were not packaged food as much as 9 canteens. The study showed that six food handlers (66,67%) had at least one infectious disease in the last three months. The majority of food handlers had good handwashing habit before touching foods (66,67%) and after contact with other substance (55,56%). The majority of food handlers (77,78%) had short and clean nail, also 88,89% wore clean and tidy cloths. The sanitation facilities that did not meet requirements of KEPMENKES No. 1098/MENKES/SK/VII/2003 were the availability of bins (88.89%) and handwashing place (100%). The Sanitary of food serving such as table serving (55.56%) and maximum limit of washed equipment (55.56%) are not eligible. The conclusion from this study is the hygiene of food handlers in the school canteens are generally good, while the overall condition of school canteens sanitation is less appropriate compare to the standards. This study recommends the urgency of sanitation facilities improvement in school canteens by school authorities of Mulyorejo subdistrict.Keywords: hygiene, canteen, food handlers, sanitation

Abstract

Adolescents prefer to consume high fat and high sugar food compare to healthy food such as fruit and vegetable. High fat and high sugar food are risk factor of diabetes mellitus development, especially in adolescents whose parents had diabetes mellitus. The aim of this study was to analyze the difference of eating habit and nutritional status between adolescents with DM parents and non DM parents. This was a cross-sectional research included 42 adolescents as sample that divided into 21 adolescents with DM parents and 21 adolescents with non DM parents. The sample was chosen randomly using simple random sampling technique. The difference of each variable was analyzed using Independent T-test and Mann Whitney (α = 0,05). The result showed that there was no difference of high glycemic index food consumption (p = 0,229) and fruit – vegetable consumption (p = 0,14) between adolescents with DM parents and non DM parents. However, adolescents with DM parents were eat high GI food more often compared to adolescents with non DM parents. There was a difference of BMI (Body Mass Index) between adolescents with DM parents and non DM parents (p = 0,036). The research concludes that most of adolescents with DM parents were obese. The adolescents need to reduce the frequency of high glycemic index (GI) food consumption, increase fruits and vegetable consumption, and also increase physical activities, particularly for adolescent with DM parents.Keywords: Diabetes Mellitus, genetic factor, consumption patterns, nutritional status

Abstract

Moringa oleifera is local plant rich in nutrients, unfortunately its utilization as a foodstuff is limited. In order to maximize the absorbtion of nutrients inside moringa, it should be made as favor food enjoyed by the people such as jelly candy. This research was conducted to evaluate organoleptic properties and nutritional value (energy and â-caroten) of jelly candy formulated with Moringa leaves powder. Using Comlpetely Randomized Design with 6 times repetition in 4 formulas which are 1 controlled formula and 3 modifi ed formulas (F1, F2, and F3), jelly candy then tested to 32untrained panels. Treatment given in this study was by adding 2%, 4%, and 6% moringa leaves powder into jelly candy formula. Data was analyzed descriptively and statistically using Kruskal Wallis and Mann Whitney test to fi nd out the difference pair. Recommended formula was chosen by counting the highest mean score of the sensory evaluationtest. The result of sensory evaluation showed that Moringa Jelly Candy was generally accepted with category “like”. However, jelly candy with lowest level of Moringa leaves powder (F1) was most acceptable in terms of color, odor, texture, and fl avor. Statistical analysis showed that the scores of color, odor, and texture were not signifi cantly different (p > 0.05) and fl avor was (p < 0.005) which means that by adding moringa leaves powder into jelly candy formula only infl uence the fl avor of jelly candy. Recommended jelly candy formula is F1 with nutritional analysis showed that per 100 g of jelly candy contains 205,8 kcal and 0.178 mcg of B -caroten.Keywords: moringa leaves powder, sensory evaluation, Moringa oleifera, jelly candy

Abstract

Athletes require greater energy and protein than people with normal activity to balance the body’s metabolic rate. The body mass index is a factor which directly related to the physical performance of martial-art athletes. The objective of this study was to analyze the relationship between energy, protein suffi ciency and body mass index with power of martial-art athletes. This research was observational analytic with cross sectional study design. Samples were consisted of 46 athletes who has won at least one martial art games. Data were collected through interview. Energy and protein adequacy level were measured by 2 × 24 hours food recall questionnaires; body weight and height measured by digital scale and microtoice; and power was measured with vertical jump test. There was a positive relationship between adequacy level of protein (p = 0.011) and athletes’s power, but negative correlation between BMI and athlethes’s power (p = 0.019). There was no relationship between the adequacy level of energy with power of martial-art athletes. It was concluded that increament of protein adequacy level could increase athlete’s power. Otherwise, escalation of body mass index could decrease the power of athletes. Therefore, it is needed to monitor nutrient intake and BMI to increase the power of martial-art athletes.
