Abstract

Dietary action is a dietary practice of cancer survivor by carefully chosing food types that consumed. It have an important role for cancer survivor in prevent breast cancer recurence. Efforts to prevent cancer also carried out byRumah Singgah Yayasan Kanker Indonesia Jawa Timur (YKI JATIM) which is one of the organizations or communities that have cancer awareness, accommodate and facilitate patients or cancer survivor who are battling cancer. Thepurpose of the study was to describe dietary action of breast cancer survivor in outside and inside Rumah Singgah YKI JATIM using theory of Health Belief Model framework. The study was an observational study with cross sectionaldesign and a qualitative approach. The sample was 4 participants inside and outside Rumah Singgah taken by snowball sampling and accidental sampling. Methods of data collection used was in-depth interviews, recorder and observation. The result showed that breast cancer survivor dietary practice among inside and outside Rumah Singgah YKI JATIM have the same tendency to practice a healthy dietary. Dietary participant among outside YKI JATIM are infl uenced by knowledge, level of education, and strong perception factor. Effort of healthy promotion about healthy diet for breast cancer survivor, families, and promotion at the community level need to be improved, which are expected to encourage breast cancer survivor to maintain their dietary action.Keywords: action of dietary, breast cancer survivor, Health Belief Model

Abstract

Stunting is a nutritional problems in Indonesia. District with the highest prevalence of  stunting in East Java in 2015 was Bangkalan. Madurese peoples is known to have socio cultural practices which related to nutrition. This study was aimed to describe s ocio-cultural aspects of nutrition that related to s tunting. This study was a descriptive study with cross sectional design. The study was done in Ujung Piring Village, Bangkalan and the sample size was 62 children who were selected by using simple random sampling technique. Stunting status was assessed through anthropometric indicators according to height for age (H/A) and compared to WHO-MGRS standard. Data on practices of socio culture in nutrition during pregnancy and childbirth, breastfeeding and children under-fi ve, were collected through interviews. Data were analyzed descriptively. The results showed that the prevalence of s tunting in children under fi ve in Ujung Piring Village was 29%. Practices of socio culture in nutrition on Madurese Ethnic including socio culture in nutrition of mother and socio culture in nutrition of toddler. Socio cultural aspect of nutrition which probably related to s tunting were food taboo for pregnant women, prelacteal food for newborn, infants did not receive immunization and early giving of complementary feeding. It is suggested to have an effort to decrease food taboo for pregnant women, reduce prelacteal food for newborns, and reduce giving complementary feeding early through counseling involving parent’s mothers as the key person in health communication.

Abstract

Vegetarian is one of dietary pattern that is believed to prevent degenerative diseases, but vegetarian apparently can  lower calcium absorption due to the high intake of oxalic and phytate acid that can reduce bone density. Physical activity can also affect the bone density. Intense physical activity will make bone density stronger. The purpose ofthis study was to analyze the correlation between consumption of calcium food sources and physical activity with bone density of lacto ovo vegetarian at Buddha Tzu Chi Surabaya Foundation. This research was an observational analytic, using cross sectional study design. The sample were 31 adult, taken through the inclusion criteria of alacto ovo vegetarian, a vegetarian diet ≥ 1 year, age ≥ 20 years old. Data collection through measurement of Bone Mineral Density (BMD) using bone densitometry Quantitative Ultrasound (QUS) method, interview of respondent characteristics, consumption of calcium food sources by Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), and physical activity by International Physical Activity Questionnaire (IPAQ). The data was analyzed using Pearson Test. The results showed that there was a correlation between consumption of calcium food sources (p = 0.000) and physical activity (p = 0.022) with bone density of lacto ovo vegetarian. The higher consumption of calcium food sources and physical activity can increase bone density. Respondents should increase physical activity and doing routine exercise to make bone density stronger, and consume high calcium of foods such as broccoli, pokcoy, orange, and cow’s milk.

Abstract

Breakfast habits, nutritional and fl uid adequacy is very important for students learning concentration. The purpose of this research was to analyze the relationship between breakfast habits, nutritional and fl uid adequacy with thelearning concentration in students. This was an observational research with cross sectional design, conducted in SDN Sukomanunggal IV Surabaya with 60 respondents. Characteristics of respondents, breakfast habit, food intake, fl uidintake and learning concentration test were collected. The breakfast habit was measured by questionnaire. The nutrition and fluid intake were measured using recall 3×24 hours and the concentration was measured by using bender gestalttest. The data was analyzed by chi square test and logistic regression. Respondents have an adequate of carbohydrate (63.3%), protein (60.0%), fat (61.7%) and vitamin C (58.3%). Meanwhile inadequate of energy (51.7%), iron (53.3%) and fluid (56.7%). There are signifi cant correlation between breakfast habit, energy, carbohydrate, protein, Fe, vitamin C and fl uid adequacy level with learning concentration. There was no signifi cant correlation between fat adequacy level with learning concentration. Therefore parents need to provide the breakfast regularly.

Abstract

Stroke is a condition of the local neurological disorder that occurs suddenly, causing blood supply into the brain  tissue stop and also causing impaired brain function. There are many causal factors that lead to stroke such as age, stress, natrium consumption, and food history. This study aims to analyze the relation between stress level, natrium consumption, and food history with the incidence of stroke in among stroke outpatients aged ≥ 45 years. This is an analytic observational study using case control design in Neural Poly of Airlangga University Hospital. The population of case group was stroke outpatients aged ≥ 45 years while control group was outpatients aged ≥ 45 years who didn’t have stroke. The sample was 11 patients for each group and were taken using simple random sampling technique. Relation among variables were analyzed using Chi-Square test. The result of this study showed that there is signifi cant relation between natrium consumption level (p = 0,032; OR = 0,083) and food history (p = 0,003; OR = 45,000) with the incidence of stroke. There is no signifi cant relation between stress level (p = 1,000) with the incidence of stroke. It is necessary to give the information about natrium food source and healthy diet in order to prevent the occurrence of stroke.Keywords: natrium, food history, stress, stroke

Abstract

Rapid urbanization in urban areas causes dissimilarity of food access in each household. It is become one of urban food security problem. Urban farming is a strategy to improve food access in urban areas. The purpose of this study was to analyze the difference in food security and coping strategy of agriculture and fisheries urban farming households. This observational study used a cross-sectional design. A sample of 62 households were divided into 2 groups: agriculture and fisheries urban farming households. Food security was assessed by United States Household Food Security Survey Module (US-HFSSM) questionnaire while coping strategy was assessed by Reduced Coping Strategy Index (RCSI) questionnaire. The difference of household food security and coping strategy in both groups was analyzed by Chi square test. A total of 64,7% household in agriculture group were in food secured, while 75% households in fishery group were in food insecure with severe hunger degrees. There was no difference of household food security between agriculture and fisheries urban farming group (p = 0,255), although two groups had different in food security status. Most of agriculture urban farming household has RCSI score <14 (65,6%), while the majority of fishery urban farming household has RCSI score ≥ 14 (66,7%). There was a difference of coping strategy between agriculture and fishery urban farming household (p = 0,021). Agriculture urban farming households were secured and rarely do coping strategy compared to fishery urban farming households. Government programs to improve food security should be more focused on groups of fishery urban farming households.Keywords: coping strategy, food security, household, urban farming

Abstract

Catfi sh and red beans are high in protein and essential amino acid than can be processed into nuggets and used as high-protein snack alternative. This research aimed to determine the effect of catfi sh and red beans toward the acceptance and protein content, as well as determine the best composition to produce a good quality nuggets. Type of research in the development formula using true experimental with a completely randomized design. There were four (4) types of treatment (combination of catfi sh, catfi sh bones, and red beans) with three (3) times replication. Panelist used was 35 untrained panelists. Product acceptance was tested using statistical analysis Kruskal Wallis and Mann Whitney (ƒ¿ . 0.05). The result of organoleptic tests showed the most preferred nugget is F1 (combination of catfi sh and red beans). Highest increased protein per 100g nugget is F1 (combination of catfi sh and red beans) with 14.5 gcompare to F0 (catfi sh) with 11,5 g, there was signifi cant difference between F0 and F1, F2, F3, F4 to the characteristic of odour (p = 0.000), texture (p = 0.008), fl avor (p = 0.000), and form (p = 0.000). The best composition formula is F1 (combination of catfi sh and red beans).The best formula in terms of its composition, acceptability, and nutritionalvalue was F1 (combination of catfi sh and red beans).Keywords: acceptance, catfi sh, red beans, protein

Abstract

Chronic Energy Deficiency (CED) cases are still occur in Indonesia, mainly due the imbalance of nutrients intake and it can lead to the growth retardation, either physical or mental. The most important period of the gestational age is atthe first trimester because the formation of various vital organs of the fetus occurs. The purpose of this research was to analyze the relationship between energy and protein adequacy level with the occurance of CED in the first trimester of pregnant women. This research was an observational analytic study with cross sectional design. The number of sample taken was 22 people which randomly selected. The data was analyzed using chi square and fisher exact test (α = 0,05). The results showed that there were 50% of pregnant women having Chronic Energy Deficiency and 50% did not have Chronic Energy Deficiency. Based on cross-tabulation, pregnant women who have low protein adequacy level have a similar CED prevalence with good protein adequacy level. There was no relationship between carbohydrate (p = 1,000), protein (p = 1,000), and fat (p = 0,635) adequacy level with CED in pregnant women (p > 0,05).

Abstract

Pencak silat is a sport that requires agility, speed, balance and body slenderness. Vitamin C and iron are part of the micronutrients that can support the athlete’s physical fitness. The aims of this study was to determine the relationship between the adequacy of vitamin C and iron with physical fitness of pencak silat athletes IPSI Lamongan. This study used observational analytics with case-control design with 20 samples of athletes, divided into 10 cases and 10 controls. The result of analysis from 2×24 hour food recall method in each case group was 9 (90%) athletes did not meet the requirement of vitamin C (<77%) and 8 (80%) athletes did not meet the requirement of iron and control group there were 7 (70 %) Athletes are not sufficient for vitamin C (<77%) and 6 (60%) of athletes are inadequate for iron (<77%). From the statistical test using chi-square, it was found that there was no significant relationship between vitamin C and iron adequacy with physical fitness (TKJI) with p=0.580 and p=0.620. Conclusion: adequacy level of vitamin C and iron of pencak silat athletes IPSI Lamongan is not meet their requirement yet.

Abstract

Stunting is an accumulative process of inadequacy number of nutrients in a long period of time. The purpose of this research was to analyse the difference of nutrients adequacy and the history of exclusive breastfeeding between stunting and non stunting toddler. This cross sectional research was done in 113 toddler who is categorized to 27 stunting toddler and 86 non stunting toddler at Kejawan Putih Tambak village, Surabaya. The number of sample was calculated with proportional sampling. To compare the nutrients adequacy and the history of exclusive breastfeeding,Chi-square test and Exact Fisher were used, to compare amount of intake, Independent T-test and Odds Ratio were calculated. As a result, there was a difference in energy, protein, zinc and iron consumption, and there was also a difference in history of exclusive breastfeeding between stunting and non-stunting toddler (p = 0.000), Non stunting toddler have a higher intake of energy, protein, zinc, and iron than stunting toddler. Toddler with non exclusive breastfeeding have a higher risk to be stunting than toddler with exclusive breastfeeding, and toddler who have inadequate energy, protein, zinc, and iron intake have a higher risk to be stunting than toddler with adequate energy, protein, zinc and iron intake (non-exclusive breastfeeding = 16.5 times, inadequate energy = 4.84 times, inadequateprotein = 3.4 times, inadequate zinc = 3.72 times, inadequate iron = 2.36 times). Advice that can be given is that mother should increase food intake of toddler, especially food that contain protein, zinc, and iron and mother should give also more attention to the exclusive breastfeeding and complementary feeding which is suitable with the toddler’s age.Keywords: exclusive breastfeeding, toddler, stunting, nutrient adequacy
