Abstract

Nutrition plays vital role in the improvement of academic achievement and growth for adolescent. Adolescent have many activity, therefore needs balance nutritional intake. The aimed of this research was analyzed the relation between breakfast habit, macronutrient adequacy level, with nutritional status of adolescent at Al-Fattah Boarding School, Buduran, Sidoarjo. This research was an analytic observational with cross sectional design. The sample of this research was 72 active students of Al- Fattah Boarding School. Breakfast habit and food consumption were collected through food recall 24 hours. Nutritional status determine by Body Mass Index for Age (BAZ). The logistic regression was used to analyze the data. The results showed that majority of respondent has age 13-15 years (75.6%), male (52.8%) and normal nutritional status (52.8%). There was a relation between breakfast habit, carbohydrate and protein adequacy with nutritional status. There was no relation between energy and fat adequacy with nutritional status.

Abstract

Food availability is one of the subsystem that should be fullfi led in order to achieve good household food security.  Regularity of subsidized rice receipt was expected to help the poor to fulfi ll the need of their staple foods stockperiodically. The purpose of this study was to analyze association between food availability and regularity of subsidized rice receipt to household food security among subsidized rice for the poor recipient households. This study was an observational analytic research using cross sectional design. Forty-two households who received subsidized rice for the poor in Tompokersan village, Lumajang regency were selected using simple random sampling technique. Data analyzed by Spearman Correlation test. The result showed that the household was insecure without hunger (47.6%) and there was association between regularity of subsidized rice receipt to household food security status (p = 0.002 and r = 0.458). Conversely, there was no association between food availability and household food security status (p= 0.071). The conclusion of this study was regularity of subsidized rice receipt could increase household food security status. Recommendations that can be given are monitor the schedule of subsidized rice and striving for the subsidized rice to be able to regularly accepted.Keywords: food availability, household food security, subsidized rice

Abstract

People with diabetes mellitus need low glycemic index snack to support their nutritional requirement and to control blood glucose levels. The research objective was to analyze the acceptability (color, flavor, texture, and taste) and the glycemic index of brownies enriched with red rice flour (Oryza nivara) and dates (Phoenix dactylivera). Completely randomized factorial design with 5 repetitions was used on 5 formulas, one control formula (F0) and 4 modification formulas; F1 (25% red rice flour and 24% dates), F2 (75% red rice flour and 24% dates), F3 (25% red rice flour and 40% dates), and F4 (75% red rice flour and 40% dates). Four professional panelist and 30 non skilled panelists were recruited. Friedman test and Wilcoxon Sign Rank Test at α=0.05 was used to test the difference between group. Formula F2 has the highest acceptability (color, flavor, texture, and taste) with an average value of 2.83, while the lowest acceptability was found in F3 (25% brown rice flour and 40% of dates) with an average value of 2.40. The glycemic index of brownies formula F2 is 41.97. Brownies F2 which substitute wheat flour with red rice flour (25%:75%) and enriched with dates (24%) was the best modification brownies formula for its color, flavor, and texture with glycemic index of 41.97. Adding other ingredients to brownies can be done to improve the taste and lower glycemic index at the best formula (F2),Keywords: brownies, dates, glycemic index, red rice flour

Abstract

Postpartum constipation with symptoms such as pain or discomfort, straining and hard stools is a common condition that affects the incidence of hemoroids and pain in the area of episiotomy. Constipation is associated with inadequate intake of fi ber and fl uid. This study aimed to analyze the relationship between intake of fiber, fluids and constipationin postpartum mother. The study design was observational with cross sectional approach on thirty three (33) post partum mothers using systemic random sampling method in April to May 2016. Data was analyzed by chi-square test. The result showed that 97% of postpartum mother had inadequate fi ber intake and only 3% were adequate. There was 9.1% postpartum mother with inadequate fluid intake and 90.9% were categorized as adequate. There was 54.5% of postpartum mother had constipation, while 45.5% not constipated. Based on chi-square test, there was no signifi cant relationship between fiber intake, fluid intake and constipation (p > 0.05). The conclusion that there was no relationshipin fiber intake, fluid intake with the incidence of constipation in postpartum mother. This requires provision of health education to prevent the occurance of constipation in postpartum mother.Keywords: fluid intake, fiber intake, constipation, postpartum

Abstract

Many school-aged children skip breakfast whereas breakfast is useful for improving learning concentration which leads to the improvement of their learning achievement. This study was aimed to analyze correlation between the types of breakfast with the concentration level during the learning process among students at SDN Sukoharjo I Malang. The study was conducted using cross sectional design with an analytic observational approach. The interview was conducted to 43 students of grade 5 who were randomly selected by using simple random sampling technique. Interview using 2x24 hours food recall questionaire was done to obtain the type of breakfast habit. Data on concentration level was obtained by using Clerical Speed and Accuracy Test instrument. Spearman Correlation was performed to test correlation between type of breakfast habit and concentration level. The result showed that one third respondents are having regular breakfast (37.2%). These children were also discovered to have inadequate levels of energy, carbohydrate, protein and fat. As much as 23,3% students have good concentration levels and excellent concentration levels (46.5%), although there are still some students have low levels of concentration. There was signifi cant correlation between breakfast and the level of concentration (p = 0.001). Proportion of students who have good concentration level was higher among students who have healthy breakfast compared to among those who do not have regular breakfast and no breakfast. The students’ awareness about the importance of breakfast needs to be improved through physical education by the teacher.

Abstract

The average consumption of vegetables and fruits in Indonesia is still low. This condition can cause the emergence of nutritional problems in children. The purpose of this study was to determine the effect of nutritional education using pocketbook to increasing knowledge and practice of vegetables and fruits consumption among elementary students. This research was quasy experiment using pre-test post-test control group design. The sample size was 60 students consisting of 20 students of SDN Kandang Tepus I as control group treated with media leaflet and 40 students of SDN Kandang Tepus II as treatment group given the pocketbook. The result of independent t-test in pre-test of booth groups shows that there was no difference in knowledge (p=0.220) and practice (p=0.091) between the two groups. Independent t-test result on post-test also shows was no difference in knowledge (p=0.421) and practice (p=0.810) between the two groups. The result of paired sample t-test of the treatment group showed the average of pre-test and post-test of knowledge score were 31.50 and 66.25 and the practice were 2.58 and 3.08. There were significant difference of knowledge (p=0.000) and practice (p=0.000) before and after being given pocketbook. Wilcoxon sign rank test in the control group showed that leaflet did not affect knowledge (p=0.052) but affect the practice (p=0.001). It can be concluded that use of pocketbook media influence the knowledge and the respondent practice.

Abstract

There are many malnutrition problems in children under fi ve, especially in developing countries including Indonesia. One of factor affecting nutritional status is maternal nutrition knowledge that will imply in caring and feeding practice. Underweight is also affected by social economy factors such as family income, food expenditure, mother’s education and occupation. Therefore, the aim of this research was to analyze differences of social economy characteristic and maternal nutrition knowledge between under-fi ve children with underweight and normal nutritional status. Thisresearch was analytical-observational study with cross sectional design. Sample of this research was children aged 24–60 months that living in the working area of Sidotopo Public Health Centre. The number of sample was 19 children in each sub-population based on nutritional status. Data was collected through primary data collecting with direct interview and questionnaire. The result showed signifi cant difference of maternal nutrition knowledge between children with underweight and normal nutritional status (p = 0.004). There is no difference in social economy characteristic such as mother’s education (p = 0.189), mother’s occupation (p = 0.387), and family income (p = 0.189), and food expenditure (p = 0.515). Therefore, improving maternal nutrition knowledge and skills in local community or public health centre is necessary.Keywords: under-fi ve children, nutrition knowledge, nutritional status

Abstract

Practicing healthy food pattern can prevent from degenerative disease. Nutrition label, including nutrition facts on food label can help people choosing healthier food. Attitude toward nutrition label can infl uence nutrition label reading behavior and food choices, and reading food or nutrition label may infl uence healthier food consumption. This study was aimed to fi nd association between a  ttitude, nutrition label reading behavior and food choices among college students. This cross sectional study involved 98 undergraduate students class of 2013 Universitas Airlangga as the sample of the study. Respondents were made to answer 5 a  ttitude points and asked about their nutrition label reading behavior and food choices. Chi square and Pearson Chi square were used to analyze association between attitudes, nutrition facts reading behavior, and food choices. Students who had good   attitude about health and nutrition and nutrition label were not always became a label user or had healthy reason for food choices. Label users were not always had healthy reason for food choices. The study showed there was no association between attitudes and nutrition facts reading behavior, as well as between   attitude and food choices (p > 0,05). Further study to identify barriers of reading food and nutrition label behavior need to be conducted.

Abstract

Exclusive breastfeeding could decrease infant mortality. Exclusive breastfeeding coverage in Indonesia is still low. Many factors affect exclusive breastfeeding including husband support. Husband support contribute to maternal emotion that affect the smooth refl exes of breast milk production. This study aimed to determine the relationship of husband support and exclusive breastfeeding in the Kademangan district, Blitar. This is cross sectional study. Interview was done to 66 breastfeed mothers with infants aged 6–12 months. The sample was taken by simple random sampling. Location of this study was six villages in Kademangan district, Blitar and conducted in October 2016. Bivariate analysis was performed by Spearman correlation test. The prevalence of exclusive breastfeeding was 21.2%. Most of husband support exclusive breastfeeding. Based on cross tabulation, mother who gave breastfeeding to their children was higher when they are supported by their husband. Eventhough Spearman correlation test showed no signifi cant relationship between husband support and exclusive breastfeeding. Mothers who had support from their husband had a higher proportion of giving exclusive breastfeeding than had not supported by their husband, eventhough not statistically signifi cant correlated.

Abstract

Snack bar is a product made from cereal and nuts that usually consumed between meals. Commercial snack bar contains energy, protein, and fiber. The fiber content in it is usually 1 gram per 25 grams serving. The fiber content is relatively low because food categorized as high fi ber if it has 5 grams per 100 gram products. Therefore, a new innovation to improve its fi ber content is required. Green bean and rice bran are type of food with high fiber content that possible to be added in snack bar. The purpose of this research was to determine the acceptability and fi ber content in snack bar. This was true experimental research with complete random design (CRD) with 5 treatments. Organoleptic test to assess acceptability of the snack bar was done by 5 trained panelists and 30 non trained panelists. Fiber contentwas calculated using Indonesia Food Composition Database and also analyzed by proximate test in laboratory. The result showed that formula 3 had the highest score than other formulas. Laboratory result showed fi ber content in formula 3 was 1.98 grams per 25 grams snack bar. The conclusion of this research is the snack bar with proportion of green beans and rice bran has a good acceptability and higher fi ber content compared to commercial snack bar.Keywords: fi ber, green beans, rice bran, snack bar
