Abstract

The research on The Application of Effervescent Technology of Aloe vera as Functional Drink has been done. The objectives were to obtain effrvescent tablet prefered by the panelist as well as nutritious as aloe vera-based functional food also to obtain appropriate formula resulting good quality of effervescent tablet. Formulation of effervescent tablet with treatments of maltodextrin concentration were done. The result showed that the best formulas of aloe vera effervescent tablet were aloe vera concentration 33%, maltodextrin 7,5%, acid-karbonat total 43%, sorbitol 5%, sukralose 3 % and Polyethylenglicol 8000 %.

Abstract

Clay from West Kalimantan is still used as a raw material in the ceramic industry and it doesn’t have spesific processes for the manufacture of other products. The objective of this study is to determine the effect of organoclay filler on the physical properties of tensile strength clay nanocomposite food packaging applications. The step for clay nanocomposite were produced by purification, milling, organoclay, clay nanocomposite. Clay nanocomposite were characterized by analysis cation exchange capacities (CEC), X-ray diffraction (XRD), particle size analysis (PSA), scanning electron microscopy (SEM), tensile strength test and elongation at break. The purified with hydrochloric acid can increase the value of CEC and remove of the impurities. High energy milling (HEM) technique are with a time of 2 hours gained 225.3 nm sized nanoparticles as raw material organoclay. The addition of 1% organoclay filler increases the tensile strength of nanocomposite clay, according grade 2 and is suitable for second packaging or  not directly contact to food.

Abstract

Jackfruit is a potential tropical fruit as raw material for food industry. Jackfruit could be processed by co-crystallization technique to extend its shelf life and increase its value. This research was conducted to study and to determine the shelf life of jackfruit powder extract. Shelf life test is conducted using variety of treatments such as: anti-caking types and temperature storage. The results showed that the shelf life of the jackfruit extract powder using anti-caking of magnesium oxide (MO), magnesium carbonate (MC), dan magnesium silicate (MS), which is store in the temperature of 27°C, were: 8.06, 5.42, and 5.5 months respectively. The variation of anti-caking type was significantly affect the product shelf life.  The effect of storage temperature on the product shelf life is more significant for the product using anti-caking MO compared with product using anti-caking MC and MS.

Abstract

Aloe vera dodol is a traditional food of West Kalimantan that has short shelf life because of its microbial activity. Antimicrobial edible packaging could be used to maintain the quality of packaged food product actively.The purpose of this study is to prolong the shelf life of food products using antimicrobial edible packaging from durian peel and basil (Ocimum sanctum L.) essential oil. The research was conducted through 4 phases,i.e. the extraction of pectin from durian peel, basil essential oil distillation, Aspergillus flavus inhibition assay, and antimicrobial edible coating production incorporated with Ocimum sanctum L. essential oil. The results showed that pectin extracted from durian peel at pH 4.5 could give yield of 5.9% with a clear coat (Colourless).The concentration of Ocimum sanctum L. essential oil by 0.6% could inhibit the growth of Aspergillus flavus and prolong the shelf life when applied as an antimicrobial ingredient in edible coating.

Abstract

Halophilic bacteria are microorganisms whose habitat is at high salt content. Halophilic bacteria in the presence of salt crystallization can increase the purity of NaCl. Nutrients that contain carbon and oxygen must be available for the survival of bacteria, where Artemia salina contains 52% protein and 15.49% carbohydrate. The purpose of this study was to determine the development of the growth of halophilic bacteria using nutrient Artemia salina for salt production. Three variables were used in this reserach: the first variables includes aeration and stirrer, the second variable was stirring time (½, 1, 2, 3, 4, 5 and 6 hours) and the third variable was mixing period, there were consisted of 1st, 2nd, 3rd, 4th, 5th, 6th and 7th day. The best treatment for transmitance and microbial analysis were 6 hours and seven days of aeration, each point was 33% transmitance and 2,25 x 103 colony forming unit per mililiter for microbilogy analysis.

Abstract

Research of energy efficiency for biodiesel production process by combining two orifices on  hydrodynamic cavitation reactor had been carried out. The aim of this reseach was to studied effect of the number of orifices toward increasing temperature without using external energy source to produce biodiesel that generated by cavitation effects on orifices. The results of preliminary research showed by combining two orifices arranged in series can produce the highest thermal energy reached 48oC. Result of biodiesel production showed that yield of the highest biodiesel was 96.34% using molar ratio a methanol:oil with comparison 6:1, KOH as catalyst (1%) for 50 minutes processing time. For biodiesel quality testing showed all selected parameter met the requirements of the Indonesian National Standard (SNI) 04-7182:2006. Identification of biodiesel compound using GCMS showed the biodiesel compounds consisted of methyl oleate, methyl palmitate, acid linoleid, methyl stearate, palmitic acid and oleic acid with the total contents 98.39%.

Abstract

Gluten is a specific protein found in wheat and functionally needed to improve its elasticity and texture of carbohydrate-based dough. Gluten, isolated from wheat, can be used in the free-form or encapsulation. The aim of this research was to investigate the effects of encapsulated gluten addition on properties of tapioca for wet noodle production. The parameters studied were texture, sensory, and pasting properties of the noodles. The ratios of encapsulated gluten to tapioca were 97%:3%, 96%:4% and 95%:5%. The results showed that the use of encapsulated gluten as much as 3% w/w gave the best noodle with the characteristics of setback viscosity, low cooking loss and organoleptically preferred by panelists.

Abstract

The Utilization of fiber empty bunches of palm oil as a medium for the growth of Pleurotus ostreatus is an effort to reduce waste in the palm oil industry. This research aims to determine the best formulation of fiber empty bunches from palm oil and sawdust as a growth medium for P. ostreatus. The results showed that the fiber combined with sawdust can be used as a medium for the growth of P. ostreatus in Pontianak. The Growth of mycelium, fruiting bodies, hoods diameter and number of fruiting bodies produced were different in each treatment group. The use of a mixture of 50% fiber without pretreatment and 50% sawdust (B2D0) gave the best results indicated from the weight of P. ostreatus was 149.39 g/baglog and biological efficiency was 49.8%.

Abstract

Pineapple is one of the most potential agricultural commodities from West Kalimantan. Pineapple is the promising source of protease enzyme which is called bromelaine enzyme. The aim of this research was to obtain the best technology of bromelain enzyme isolation. The variable in this research were the concentration of ammonium sulphate and ethanol which their degrees were 20, 40, 60 and 80%. Enzyme isolate was tested the activity of protease enzyme with the modification of lowry method. The technology of enzyme isolation with ammonium sulfat 80% is can produced the best of enzyme isolate with 0,61% rendement and the enzyme activity is 12.500 U/ml.

Abstract

Ketepeng cina (Cassia alata Linn.) was known as vegetal fungicides because it contains toxic materials to fungi. This study aimed to determined the concentration of ketepeng cina (Cassia alata Linn.) leaves extract that effective in inhibiting the growth of Cercospora personatum and to know the fungicide activity of ketepeng cina (Cassia alata Linn.) leaves extract on the growth of Cercospora personatum. This research was conducted through stage that were manufactured PDA media, isolation of Cercospora sp. and extracting ketepeng cina leaves. Fungicidal activity test was done using poisoning food method with 6 concentration level: 0%, 1%, 2%, 3%, 4%, and 5%. Experiment using Completely Randomized Design with 6 treatments and 3 replications, effect of variance between treatment were analyzed and followed by Duncans test. The results showed that the concentration of 3% effective in inhibiting the growth of Cercospora personatum. Fungicidal activity of leaves extract ketepeng cina against fungi Cercospora personatum categorized as strong in concentrations ≥ 3% and nature fungistatic.
