Abstract

Virgin Coconut Oil (VCO) can be produced by different methods  related to health function. The objective was to study the efficacy of VCO processing method in reducing blood glucose level, cholesterol profile and pancreatic tissue profile of diabetic mellitus (DM) Sprague dawley rats. Four rat groups from five rat groups were injected using alloxan to induce the diabetic condition, while the rest was negative control. VCO-A produced without heat and VCO-B produced with controlled-heat treatment and Coconut Cooking Oil (RBD-CNO) produced with the application of severe heating and chemical (MG) were fed respectively to three rat groups, while the other two rat groups were fed by water and used as negative control (healthy rats) and positive control (DM rats). During 28 days observation, all of the rats blood glucose level were assessed, and at the end of the observation day the rats were terminated to assess the cholesterol and pancreatic tissues profile. VCO-A significantly positive reduced blood glucose level than the others.  VCO did not influence DM rats cholesterol profile and all VCO inhibits the rate of pancreatic β cells damage. On 28 days observation all VCO treatments suppressed blood glucose level of DM rats.

Abstract

Skopoletin adalah senyawa fenolik kumarin golongan phytoalexins yang terdapat pada banyak tanaman dan termasuk derivative kumarin yang menjadi unggulan pada beberapa jenis tanaman. Skopoletin pada berbagai jenis umbi-umbian telah diteliti, namun hasilnya masih bervariasi, terutama terkait bagian ubi kayu yang lebih banyak mengandung skopoletin. Tujuan dari penelitian ini yaitu mengidentifikasi kandungan skopoletin pada beberapa bagian ubi kayu, yaitu ubi kayu utuh, bagian daging, daging dan kulit ari, serta  onggok dan air limbah industri tapioka yang berasal dari Lampung. Analisa kandungan skopoletin dilakukan menggunakan kromatografi cair kinerja tinggi dengan detektor fluoroscence. Berdasarkan hasil penelitian, kandungan skopoletin tertinggi ada pada gabungan daging dan kulit ari ubi kayu, baik varietas Kasesart maupun Thailand, masing-masing sebesar 7,129 dan 7,768 mg/kg. Sedangkan nilai kandungan skopoletin pada onggok dan air limbah dari industri tapioka, berada di bawah limit deteksi alat, yaitu 0,1 mg/kg

Abstract

Secang merupakan jenis tanaman kayu yang berpotensi untuk digunakan sebagai pewarna alami pada makanan. Salah satu komponen warna dalam secang adalah pigmen brazilin. Suhu pemanasan, cahaya ultraviolet, dan adanya metal dapat mempengaruhi stabilitas dan laju degradasi pigmen brazilin. Salah satu cara untuk menurunkan laju degradasi pigmen brazilin adalah melalui proses kopigmentasi. Penelitian ini bertujuan untuk melihat pengaruh kopigmentasi dengan asam tanat dan asam sinapat terhadap stabilitas warna pigmen brazilin. Pada penelitian ini dilakukan kopigmentasi dengan senyawa kopigmen yaitu asam tanat dan asam sinapat dengan perbandingan 1:0; 1:1; 2:1; dan 5:1. Uji stabilitas dilakukan dengan menguji hasil kopigmentasi mana yang mengasilkan efek bathokromik dan hiperkromik terbaik saat dipanaskan pada suhu 40 °C, 50 °C, 60 °C, 70 °C, dan 80 °C. Pengukuran stabilitas warna diuji dengan laju retensi warna, konstanta laju degradasi (nilai k) dan pengukuran kualitas warna dilakukan menggunakan Chromameter dengan cara menguji nilai derajat merah dan biru (a value) dan °hue. Hasil menunjukkan bahwa kopigmentasi menggunakan asam tanat lebih efektif dalam menstabilkan pigmen brazilin dibandingkan dengan kopigmentasi dengan asam sinapat melalui hasil uji bathokromik, hiperkromik, retensi warna, konstanta laju degradasi, nilai a, dan nilai °hue.
