Abstract

This community service activity aims to improve the quality and competitiveness of honey soy milk products at "UD Sehat Sejahtera" Jember through packaging innovation. This activity is in line with the Jember State Polytechnic P3M program which focuses on strengthening agro-industry using local raw materials. In this activity, the service team identified that the plastic packaging currently used has many shortcomings, both in terms of durability and environmental impact. Therefore, innovation was carried out by changing the packaging to PET bottles which are more environmentally friendly and able to maintain product quality for longer. This activity includes design and development of new packaging, training for workers regarding the production process, as well as digital marketing strategies. The results of this activity are expected to increase the attractiveness of the product in the market, extend shelf life, and increase consumer satisfaction, thereby supporting the sustainability of the "UD Sehat Sejahtera" business in Jember.

Abstract

Minuman susu kuma merupakann variasi dalam bidang pangan yang berbahan dasar susu sapi segar, kurma, air serta madu. Minuman susu kurma memiliki rasa manis yang dihasilkan dari madu, oleh karenanya minuman ini cocok dan aman dikonsumsi oleh para penderita diabetes. Selain itu, minuman susu kurma ini juga dapat dijadikan peluang usaha karena dapat mendatangkan keuntungan serta potensi besar dalam lingkup pasar. Tujuan penelitian ini adalah untuk menganalisis apakah usaha minuman susu kurma layak untuk dijalankan. Pada analisis biaya dengan realisasi didapatkan biaya tetap sebesar Rp. 43.181, boaya tidak tetap selama 10x prooduksi sebesar Rp.821.000, dengan total biaya produksi Rp.864.181, total pendapatan yang diperoleh sebesar Rp. 1.160.000, dengan keuntungan sebesar Rp.295.819, serta laju keuntungan sebesar 34,2%,  R/C Ratio sebesar 1,34 yang menunjukkan bahwa usaha minuman susu kirma layak dilanjutkan

Abstract

Stabilitas mesin pengemas otomatis menjadi faktor penting dalam menjaga kontinuitas produksi dan mutu kemasan produk pangan cair. Penelitian ini bertujuan menganalisis efektivitas mesin RTY-10S Rotary Doy Pouch pada proses pengemasan kecap pouch 550 mL melalui integrasi Overall Equipment Effectiveness, Six Big Losses, Pareto, Failure Mode and Effect Analysis, dan diagram Ishikawa. Penelitian menggunakan pendekatan kuantitatif deskriptif dengan observasi pada 13 kali proses produksi dan total output 26.574 pouch. Hasil penelitian menunjukkan nilai rata-rata OEE sebesar 30%, terdiri atas availability 56%, performance 66%, dan quality 83%. Analisis Six Big Losses menunjukkan kerugian dominan berasal dari breakdown loss 25%, reduced speed loss 20%, small stop loss 20%, serta setup and adjustment loss 19%. Dari sisi mutu kemasan, ditemukan 4.564 produk gagal atau 17,17% dari total produksi, dengan cacat dominan berupa pouch tidak terisi sebanyak 4.218 kasus atau 15,87%. Hasil FMEA menunjukkan bahwa kurangnya preventive maintenance, ketiadaan SOP setup mesin, keausan vacuum pad, gangguan gripper, error sensor, dan ketidakstabilan parameter operasi merupakan penyebab kritis yang memengaruhi efektivitas mesin dan reliabilitas mutu kemasan. Kebaruan penelitian ini terletak pada integrasi kehilangan efektivitas mesin dan mekanisme cacat produk ke dalam satu kerangka prioritas perbaikan. Rekomendasi perbaikan diarahkan pada preventive maintenance terjadwal, penyusunan SOP setup, inspeksi vacuum pad dan gripper, pembersihan sensor, standardisasi parameter, kalibrasi filling, serta peningkatan kompetensi operator.

Abstract

Background: Postharvest deterioration of tropical fruits is strongly influenced by respiration activity, which is highly sensitive to storage temperature. However, respiration kinetics data for underutilized fruits, such as namnam (Cynometra cauliflora), remain limited, restricting the development of effective storage strategies. Objective: This study aimed to analyze the effects of storage temperature on respiration kinetics and estimate the preliminary shelf life of namnam fruit using kinetic modeling approaches. Method: Namnam fruits were stored at 10°C, 20°C, and 30°C and evaluated using a closed-system CO₂ absorption method with triplicate measurements. Respiration rates were analyzed using linear regression, the Arrhenius model, Q10 temperature coefficients, and a zero-order degradation model for shelf-life estimation. Result: Respiration rates increased with increasing temperature, showing a strong linear relationship (R² = 0.9984). Arrhenius analysis yielded an apparent activation energy of 27.3 kJ mol⁻¹ with a moderate model fit (R² = 0.6682). Q10 values ranged from 1.45 to 1.68, indicating moderate temperature sensitivity. The estimated shelf life decreased from 13.46 days at 10°C to 9.06 days at 20°C and 6.26 days at 30°C. Conclusion: Lower storage temperatures effectively reduced respiratory activity and extended shelf life; however, respiration-based estimates should be validated using direct quality parameters before commercial application.
