Abstract

Latar Belakang: Penelitian ini merupakan lanjutan dari penelitian Pengembangan Panduan Gizi Seimbang berbasis Pangan Lokal (PGS-PL) bagi anak balita di Kecamatan Simpang Teritip, Bangka Barat. Hasil analisis LP Optifood menunjukkan bahwa asupan zat gizi bermasalah pada balita adalah asupan lemak dan asam folat. Pembuatan nugget hati ayam merupakan suatu inovasi yang memiliki keunggulan gizi bagi pertumbuhan, dan harga yang terjangkau. Untuk meningkatkan nilai zat gizi, nugget hati ayam ditambahkan jamur sawit yang merupakan salah satu pangan lokal di Kecamatan Simpang Teritip.Tujuan: Menganalisis perbedaan daya terima, kadar lemak dan asam folat nugget hati ayam dengan kombinasi jamur sawit sebagai pangan olahan untuk balita.Metode: Jenis penelitian adalah eksperimental dengan rancangan percobaan Rancangan Acak Lengkap (RAL) tiga perlakuan dan tiga kali pengulangan. Sampel penelitian nugget daging ayam dengan penambahan hati ayam dan jamur sawit. Rasio daging ayam ras, hati ayam, dan jamur sawit P1(10:7,5:3); P2(10:5:2); P3(10:2.5:1). Daya terima diperoleh dari uji organoleptik. Analisis statistik menggunakan uji statistik non parametrik Kruskal-Wallis. Kadar lemak dan asam folat diuji secara laboratorium.Hasil: Tidak ada perbedaan yang signifikan daya terima nugget hati ayam dengan kombinasi jamur sawit.Namun secara keseluruhan daya terima formula 3 lebih tinggi dibandingkan formula 1 dan formula 2. Kadar lemak dan kadar asam folat nugget hati ayam dengan kombinasi jamur sawit sebagai pangan olahan untuk balita lebih tinggi pada formula 3 dibandingkan formula 1 dan 2.Kesimpulan: Tidak ada perbedaan yang signifikan daya terima, kadar lemak, dan kadar asam folat nugget hati ayam dengan kombinasi jamur sawit sebagai pangan olahan untuk balita

Abstract

The progress in Asia, AWGS (2019) re-establishes that the incidence of sarcopenia can be seen based on decrease in muscle strength. The new diagnosis was "possible sarcopenia" with the aim of early detection for the elderly. Objective: To analyze the muscle strength of elderly with T2DM based on AWGS indicators (age, muscle mass, intake of energy, fat and carbohydrate, physical activity and sedentary activity) in the Air Itam Community Health Center. Method: cross-sectional study involving 90 of elderly people, aged ≥ 55 years. Data was obtained from interviews, measurements of muscle mass and HGS, IPAQ questionnaires, and 1x24 hour food recall. Results: The average muscle strength of elderly with T2DM in the low category was 58.9% (53 people). It means that the elderly had been diagnosed with "possible sarcopenia". The results of statistical test analysis also stated that there was relationship between variables age, muscle mass, intake of energy, fat and carbohydrates, as well as physical activity and sedentary activity with muscle strength in the elderly (p value < 0.05). Conclusion: Elderly with T2DM are diagnosed with "possible sarcopenia" of 58.9%. Recommendation: research nutritional interventions through physical activity and food intake to maintain muscle strength.

Abstract

Anemia remains a major public health issue among adolescent girls in Indonesia. This study aimed to analyze the relationship between knowledge, attitudes, and practices (KAP) regarding anti-nutritional substances and anemia status among female students aged 15–18 years at SMAN 1 Kelapa, West Bangka. A cross-sectional design was used with 48 randomly selected participants. Data were collected through structured questionnaires and secondary hemoglobin data from the Aksi Bergizi screening. Results showed an anemia prevalence of 41.7%, with median knowledge, attitude, and practice scores of 9, 10, and 7, respectively. Spearman correlation analysis revealed no significant relationship between KAP and anemia status (p > 0.05). These findings suggest that knowledge, attitude, and practice concerning anti-nutrients are not the main determinants of anemia. Interventions should also address other contributing factors such as iron intake, menstrual patterns, and overall nutritional status
