Abstract

Reducing Sugar Levels and Water Content Of Honey Circulating In Makassar CityHoney has many benefits that people can use to improve their health, but the presence of fake honey can have an unwanted impact. This study aims to determine how much-reduced sugar and water content are contained in honey samples circulating in Makassar City. Sample testing was carried out with a qualitative test and a quantitative test. Qualitative testing used the Mollish reagent, Seliwanof reagent, and Fehling reagent and showed positive results for containing reducing sugars. Quantitative testing was carried out using the Luff School method. While testing the water content of honey is done by drying method using an oven. The results showed that the reducing sugar content of the three samples, namely the Honey A sample was 77.11%, the Honey B sample was 69.52%, and the Honey C sample was 85.17%. Meanwhile, the water content obtained by honey sample A was 25.39%, honey sample B was 21.21%, and honey sample C was 19.83%. Thus, it can be concluded that honey samples A, B, and C met the requirements for honey-reducing sugar content in SNI-01-3545-2004, namely at least 65% w/w. While the water content in Honey A does not meet SNI-01-3545-2004 honey quality standards: a maximum of 22% w/w and those that meet the requirements are Honey B and C samples with a water content of less than 22% w/w.Keywords: Honey, Reducing Sugar, Moisture Content, Luff Schrool Method, Gravimetric MethodMadu memiliki banyak manfaat yang dapat digunakan oleh masyarakat untuk meningkatkan Kesehatan, namun adanya madu yang palsu malahan dapat memberikan dampak yang tidak diinginkan. Penelitian ini bertujuan untuk mengetahui berapa besar kadar gula reduksi dan kadar air yang terdapat pada sampel madu yang beredar di Kota Makassar. Pengujian sampel dilakukan dengan Uji Kualitatif dan Uji Kuantitatif. Pengujian secara kualitatif menggunakan Pereaksi Mollish, Pereaksi Seliwanof, dan Pereaksi Fehling dan menunjukkan hasil positif mengandung gula pereduksi. Pengujian secara kuantitatif dilakukan dengan metode Luff Schrool. Sedangkan pada pengujian kadar air madu dilakukan dengan metode pengeringan dengan menggunakan oven. Hasil penelitian diperoleh kadar gula reduksi dari tiga sampel yaitu sampel Madu A sebesar 77,11 %, sampel Madu B sebesar 69,52 %, dan sampel Madu C sebesar 85,17 %. Sedangkan kadar air yang diperoleh sampel madu A sebesar 25,39 %, sampel madu B sebesar 21,21 %, dan sampel madu C sebesar 19,83 %. Dengan demikian dapat disimpulkan bahwa sampel madu A, B, dan C memenuhi syarat kadar gula reduksi madu pada SNI-01-3545-2004 yaitu minimal 65% b/b. Sedangkan kadar air pada Madu A tidak memenuhi SNI-01-3545-2004 standar kualitas madu : maksimal 22 % b/b dan yang memenuhi syarat yaitu sampel Madu B dan C dengan kadar air kurang dari 22 % b/b.Kata Kunci : Madu, Gula Pereduksi, Kadar Air, Metode Luff Schrool, Metode Gravimetri

Abstract

The Utilization and Development of Family Medicinal Plants In An Effort To Improve Public Health Based On Local Wisdom In Kapasa District, Tamalanrea District, Makassar CityBackground: Community empowerment in the Kapasa village, Tamalanrea sub-district, Makassar city in the utilization and development of family medicinal plants to empower and improve the degree of public health based on local wisdom can be used to support the existence of the Kapasa village in the region. The aim of this activity: (1). Increase community knowledge, especially housewives, about the scientific uses of family medicinal plants, (2). Increase community knowledge, especially housewives, about the types and methods of planting medicinal plants, (3). Empowering and improving skills to utilize medicinal plants to the community, especially in Kapasa village, Tamalanrea sub-district, Makassar city. Methods: The implementation of community service is carried out by counselling, training and practice. Counseling and training to introduce the types and uses of family medicinal plants scientifically, cultivation, and utilization of family medicinal plants and practice processing family medicinal plants as raw herbal medicines. Outputs are scientific articles, community service modules Conclusion: After carrying out community service activities, it can be concluded as follows: Community service activities are one of the tri darma of higher education which is beneficial to the community, especially to residents of the Kapasa sub-district, Tamalanrea sub-district, Makassar city. The level of knowledge and understanding of medicinal plants before community service activities were carried out was still relatively low, namely around 10 people (28%), after the education was carried out there was an increase of 35 people (100%) in the level of knowledge and understanding of herbal plants.Keywords: Empowerment, Community, Toga, local wisdom.Latar Belakang: Pemberdayaan masyarakat di kelurahan Kapasa, kecamatan Tamalanrea, kota Makassar dalam pemanfaatan dan pengembangan tanaman obat keluarga dalam usaha Pemberdayaan serta meningkatkan derajat kesehatan masyarakat yang berbasis kearifan lokal dapat digunakan untuk mendukung keberadaan kelurahan Kapasa dalam wilayah tersebut. Untuk itu dilakukan pengabdian masyarakat dengan Tujuan Kegiatan: (1). Menambah ilmu masyarakat khususnya ibu rumah tangga mengenai kegunaan tanaman obat keluarga secara ilmiah, (2). Menambah pengetahuan Masyarakat Khususnya ibu rumah tangga tentang jenis-jenis serta cara menanam tanaman obat, (3). Memberdayakan dan Meningkatkan keterampilan untuk memanfaatkan Tanaman obat kepada masyarakat khususnya di kelurahan Kapasa, Kec. Tamalanrea, Kota Makassar. Metode Kegiatan: Pelaksanaan pengabdian masyarakat dilakukan penyuluhan, Pelatihan dan praktik. Penyuluhan dan pelatihan untuk memperkenalkan jenis – jenis dan kegunaan tanaman obat keluarga secara ilmiah, pembudidayaan, dan pemanfaatan tanaman obat keluarga serta praktik mengolah tanaman obat keluarga sebagai baku obat herbal. Capaian Luaran adalah artikel ilmiah, modul pengabdian masyarakat Kesimpulan: Setelah dilakukan kegiatan pengabdian kepada masyarakat maka dapat disimpulkan sebagai berikut: Kegiatan pengabdian masyarakat merupakan salah satu tri darma perguruan tinggi yang bermanfaat untuk masyarakat khususnya kepada warga kelurahan Kapasa kecamatan Tamalanrea kota Makassar. Tingkat pengetahuan dan pemahaman tentang tanaman obat sebelum dilakukan kegiatan pengabdian kepada masyarakat masih tergolong rendah yaitu sekitar 10 orang (28%), setelah dilakukan edukasi ternyata terjadi peningkatan sebesar 35 orang (100%) tingkat pengetahuan dan pemahaman tentang tanaman herbal.Kata Kunci : Pemberdayaan, Masyarakat, Toga, kearifan lokal.

Abstract

Latar Belakang: Sodium-glucose cotransporter 2 (SGLT-2) merupakan target potensial dalam pengobatan diabetes tipe 2, dengan inhibitor SGLT-2 yang bekerja menghambat reabsorpsi glukosa di ginjal. Penelitian ini bertujuan untuk mengevaluasi potensi ircinianin, senyawa alami yang diisolasi dari spons Ircinia sp., sebagai inhibitor SGLT-2 menggunakan pendekatan molecular docking. Tujuan: Penelitian ini bertujuan untuk menganalisis interaksi antara ircinianin dan protein SGLT-2 serta mengevaluasi potensi penghambatan ircinianin terhadap reseptor SGLT-2. Metode: Metode yang digunakan adalah molecular docking dengan perangkat lunak AutoDock4. Prosedur dilakukan dengan docking ligan pada situs aktif SGLT-2. Ligan didocking dengan 100 iterasi untuk memperoleh konformasi ikatan yang optimal. Interaksi dianalisis berdasarkan energi ikatan dan visualisasi dilakukan menggunakan Discovery Studio. Hasil: Ircinianin menunjukkan energi ikatan sebesar -10,76 kcal/mol, sedikit lebih tinggi dibandingkan native ligand (-11,46 kcal/mol). Ircinianin membentuk dua ikatan hidrogen dengan residu PHE:98 dan TRP:291. Kesimpulan dan Saran: Ircinianin memiliki potensi sebagai inhibitor SGLT-2, meskipun ikatan hidrogennya lebih sedikit dibandingkan ligan asli. Penelitian lebih lanjut diperlukan untuk mengeksplorasi potensi terapeutik ircinianin dalam pengobatan diabetes tipe 2.

Abstract

Diversification of Instant Powder Herbal Products to Prevent Community Anticancer in Maccini Sombala VillageIntroduction, Cancer is the number two killer in America and in Indonesia its prevalence is increasing from time to time although it is not the main cause of death cancer is a disease that is very feared because it is known to be difficult to treat with a low success rate of treatment especially if it is known to be in an advanced stage. In 2024, cancer became one of the diseases with a significant health burden in the country, with several types of cancer such as breast, cervical, lung, and colorectal cancer as the most frequent cases.Back to Nature society motivates many researchers in the search for cancer drugs from natural compounds because the reality is that there is no cancer drug that is truly selective as an anticancer.Herbal drink is one of the mixed beverage products of herbal plants that have properties in helping the treatment of a disease or body refresher. Nggorang leaves, red ginger, white turmeric, temulawak, turmeric, lemongrass and cinnamon have been scientifically proven to have anticancer preventive potential. The flavonoid and antioxidant compounds of the above medicinal plants help inhibit the growth of cancer cells, increase endurance, and have anti-inflammatory properties. The purpose of this PKM activity is to formulate herbal medicines into beverage products that not only meet the aspects of preparation evaluation but also have antioxidant properties scientifically so that it is expected to be an alternative product as a preventive step in the anti-cancer preventive efforts of the community in Maccini Sombala Village, Makassar City. The method used in this activity is training and counselling and education aimed at the community of Maccini Sombala Village, Makassar City. The results of community service activities to prevent NCDs in this case cancer are quite effective in improving the skills and knowledge of respondents. Conclusion herbal drink products become alternative products in the preventive prevention of the community in Maccini Sombala Village, Makassar City. Latar Belakang, Kanker merupakan penyakit yang menjadi pembunuh nomor dua di Amerika dan di Indonesia prevalensinya semakin meningkat dari waktu ke waktu meskipun bukan penyebab kematian yang utama kanker menjadi penyakit yang sangat ditakuti karena diketahui sulit ditangani dengan tingkat keberhasilan pengobatan yang rendah apalagi jika diketahui sudah dalam stadium lanjut. Tahun 2024, kanker menjadi salah satu penyakit dengan beban kesehatan yang signifikan di negara ini, dengan beberapa jenis kanker seperti kanker payudara, serviks, paru-paru, dan kolorektal sebagai kasus yang paling sering terjadi.Masyarakat untuk Back to Nature banyak memotivasi para peneliti dalam usaha pencarian obat kanker dari senyawa-senyawa alam karena kenyataannya memang belum ada obat kanker yang benar-benar selektif sebagai antikanker.Minuman herbal merupakan salah satu produk minuman campuran tanaman herbal yang memiliki khasiat dalam membantu pengobatan suatu penyakit atau penyegar tubuh.. Daun nggorang, jahe merah, kunyit putih, temulawak, kunyit, serai dan kayu manis telah  terbukti secara ilmiah berpotensi preventif antikanker. Senyawa flavonoid dan antioksidan tanaman obat di atas membantu menghambat pertumbuhan sel kanker, meningkatkan daya tahan tubuh, dan memiliki sifat antiinflamasi. Tujuan kegiatan PKM ini  adalah memformulasikan obat herbal menjadi produk minuman yang bukan hanya memenuhi aspek evaluasi sediaan tetapi juga memiliki khasiat antioksidan secara ilmiah sehingga diharapkan bisa menjadi produk alternatif sebagai langkah preventif dalam dalam upaya preventif antikanker masyarakat di Kelurahan Maccini Sombala Kota Makassar.  Metode yang digunakan dalam kegiatan ini adalah pelatihan dan penyuluhan serta edukasi yang ditujukan untuk masyarakat Kelurahan Maccini Sombala Kota Makassar.. Hasil kegiatan pengabdian masyarakat pencegahan PTM dalam hal ini penyakit kanker cukup efektif dalam meningkatkan ketrampilan dan pengetahuan responden.  Kesimpulan produk minuman herbal menjadi produk alternatif dalam pencegahan preventif masyarakat di Kelurahan Maccini Sombala Kota Makassar

Abstract

The purpose of this research plan is to make a mapping of the Halal Critical Point of Beef Products and a number of Processed Beef Products and also to create a Supply Chain Process Flow System for Meat products. Data and analysis of data explored in this research plan are stakeholders in the halal supply chain, namely authority institutions such as slaughtering houses (RPH), producers, logistics providers, operators, consumers, and the government by making questionnaires to identify criteria and sub-criteria important. The survey discusses consumer perceptions of the halal supply chain of products of beef and processed beef using the score method. The results of data processing can then be analyzed using the Analytical Hierarchy Process (AHP) model. This study is expected to contribute to the selection of important criteria for halal supply chains of Meat products and their processed products, then contribute to the priority index using AHP (Analytic Hierarchy Process)

Abstract

Caesalpinia sappan L., commonly known as sappanwood, has been used in traditional medicine across Southeast Asia for centuries. The objective was to clarify the sappanwood extract's phytochemical profile, antioxidant activity, specific and non-specific parameters. The extraction was performed via maceration using 96% ethanol as the solvent. Phytochemical screening to identify the presence Phytochemical content. Antioxidant activity was assessed using the DPPH assay, yielding an impressive activity of 80%, comparable to the positive control, vitamin C. Phytochemical screening identifed the presence of bioactive compounds such as alkaloids, flavonoids, triterpenoids, and phenolics, while saponins and tannins were notably absent. Specific parameters, including total phenolic content, were quantified using the Folin-Ciocalteu method, while non-specific parameters encompassed moisture content (11%), extract yield (20%), neutral pH (6), and density (0.7 g/cm³). The physical characteristics of sappanwood were described as cylindrical, measuring approximately 10 cm in diameter and 1 m in length, with a reddish-brown to dark red hue and a rough, porous texture. Importantly, the extract was found to be free from hazardous heavy metals, including lead, arsenic, mercury, cadmium, and chromium. In conclusion, these findings underscore the potential of sappanwood as a safe and beneficial natural resource for health and industrial applications
