Abstract

The purpose of this study was to obtain best combination composite flour (wheat flour, sago starch, corn flour) on the quality of white bread produced. This research was carried out experimentally using completely randomized design (CRD) with five treatments and four replications in order obtain twenty experiment units. The treatments in this study were TSJ0 (100% wheat flour), TSJ1 (70%wheat flour :30% sago starch), TSJ2 (70% flour : 20% sago starch : 10% corn flour), TSJ3 (70% wheat flour : 10% sago starch : 20% corn flour) and TSJ4 (70% wheat flour : 30% corn flour). Data obtained were treated by the analysis of variance folowed by Duncan New Multiple Range Test (DMRT) the level of 5%. The results showed that the addition of sago starch and corn flour at different concentration levels significantlyaffectedon the moisture, ash, protein, fat and carbohydrate contents as well as, hedonic test, descriptive test the colour, aroma, flavor and texture of white bread. The best treatment was TSJ3, with a moisture content of 24.33%, ash content of 1.03%, fat content5.67%, protein content of 8.05%,carbohydrate levels60.92%, as well as sensory acceptable by panelist.Keywords: white bread, sago starch, corn flour.

Abstract

Limbah kulit nenas pada umumnya tidak termanfaatkan dengan baik dan dianggap sebagai sampah yang seharusnya dibuang. Padahal dari hasil uji fitokimia, kulit nanas mengandung senyawa Flavonoid, tannin dan saponin serta mengandung senyawa yang berpotensi sebagai anti bakteri. Salah satu pemanfaatan limbah kulit nanas adalah sebagai bahan utama dalam pembuatan sabun cuci piring. Sabun cuci piring yang dihasilkan dari olahan limbah kulit nanas dan irisan jeruk nipis memiliki aroma yang segar dan daya cuci yang baik serta lembut ditangan. Tujuan dari pengabdian ini yaitu dapat meningkatkan pengetahuan masyarakat SMK Negeri 1 Tapung dalam memanfaatkan limbah kulit nanas yang banyak berserakan di Kampar, dimana nenas menjadi salah satu andalan produk pertanian yang di hasilkan dari Riau khususnya Desa Kualu Nenas. Dengan adanya pelatihan ini diharapkan dapat meningkatkan pengetahuan siswa/i SMK Negeri 1 Tapung dalam memanfaatkan limbah nenas menjadi produk yang lebih bermanfaat dimana nanas menjadi salah satu andalan produk iconic pertanian provinsi Riau. Dengan adanya pelatihan ini diharapkan siswa siswi dapat memanfaatkan kulit nanas menjadi produk inovatif yang bernilai ekonomi tinggi.

Abstract

Sago is a typical Southeast Asian plant that is often found in water areas such as Meranti Regency. Even though Meranti Islands Regency in Sumatra is the largest center for sago growth, public consumption of sago is not yet in line with the high potential of this plant as a source of carbohydrates. In facing population growth and increasing food needs, sago has become a strategic commodity to maintain food security. This research uses dynamic modeling with Powersim Studio 7 to simulate planning scenarios to ensure the availability of sago in the future. Simulations show that Meranti Islands Regency can achieve the target of sago plantation area in 2032 with an accelerated growth policy, producing 3,915,168.71 tons of sago rice in 2040 and 499,182.72 tons in 2022.

Abstract

Bananas is a tropical fruit that is quite popular because of their freshness and can be consumed directly or processed as a snack. Banana cultivation is increasing along with the increasing demand for bananas in the market. As a climacteric fruit, bananas ripen quickly so they spoil quickly and have a low shelf life. To extend shelf life, ethylene gas in the surrounding environment must be controlled, for example, using active packaging made from ethylene gas absorbent. Several studies used activated carbon from coconut shells, chitosan, and teak leaves as ethylene absorbent material to extend the shelf life of climacteric fruit (e.g., guava, avocado, and tomato) with various types of packaging and doses of absorbent materials. This study examines the shelf life of bananas packaged in active packaging that absorbs ethylene using activated charcoal from coconut shells. As a result, activated charcoal with the addition of KMnO4 to absorb ethylene could extend the shelf life of bananas for 6 days longer than without activated charcoal.

Abstract

The increasing area of oil palm plantations will increase the production of crude palm oil and empty fruit bunches. This will require chemical and non-chemical fertilisers. By reducing the use of excessive chemicals, sustainable and environmentally friendly oil palm plantations can be achieved. One way to achieve this is by utilising empty oil palm bunch waste into compost. This service aims to provide knowledge, understanding, and how to process empty oil palm bunches into compost. This activity was carried out in Riau Province, Siak Regency, Kampung Buatan Baru, Kerinci Kanan District. The goal achieved through this service is to increase community understanding and knowledge about the importance and benefits obtained from empty palm bunch waste into compost.

Abstract

Pineapple peel waste is generally not utilized properly and is considered waste that should be thrown away. In fact, from the results of phytochemical tests, pineapple skin contains flavonoid compounds, tannins and saponins and contains compounds that have the potential to be anti-bacterial. One use of pineapple peel waste is as the main ingredient in making dishwashing soap. Dish washing soap produced from processing waste from pineapple peels and lime slices has a fresh aroma and good washing power and is gentle on hands. The aim of this service is to increase the knowledge of the Hidayatul Mubtadiin Rumbai Islamic Boarding School community in utilizing pineapple peel waste which is widely scattered in Pekanbaru City, where pineapples are one of the mainstays of agricultural products produced from Pekanbaru, especially Kualu Nenas Village. With this training, it is hoped that the community can utilize pineapple waste into more useful products and furthermore, the students of the Hidayatul Mubtadiin Islamic Boarding School, Muara Fajar Timur Rumbai Village, can make their own dishwashing soap for the Islamic boarding school's daily needs and for sale
