Abstract

Sambal asam adalah kuliner musiman khas Pulau Bangka yang hanya muncul pada perayaan besar seperti Lebaran, Idul Adha, dan Maulid Nabi. Makanan ini bukan hanya sekedar hidangan, melainkan juga simbol budaya yang mencerminkan nilai sosial dan tradisi masyarakat Bangka. Penelitian ini bertujuan untuk mengkaji sambal asam melalui perspektif gastronomi dengan fokus pada empat elemen utama: sejarah, budaya, lanskap geografis, dan metode memasak. Sambal asam dipengaruhi oleh kearifan lokal masyarakat Bangka, yang memanfaatkan bahan-bahan seperti ebi, santan, dan gula merah, yang dipengaruhi oleh kondisi geografis dan etnis setempat. Proses memasak sambal asam yang berbasis pada intuisi dan pengalaman keluarga menggambarkan metode empiris yang diteruskan secara turun-temurun. Dalam budaya konsumsi, sambal asam sangat erat kaitannya dengan tradisi nganggung, yaitu makan bersama dalam perayaan adat, yang memperkuat hubungan sosial dan kebersamaan antarwarga. Penelitian ini menegaskan bahwa sambal asam lebih dari sekedar makanan musiman, tetapi juga sebagai sarana untuk melestarikan dan mewariskan tradisi budaya kuliner Bangka kepada generasi mendatang.

Abstract

This study explores the impacts of tourism development from the perspective of indigenous people in Canggu, Bali (a village undergoing rapid transition from agriculture to tourism). As tourism reshapes the physical, socio-cultural, and economic landscape of Canggu, concerns arise over the sustainability of this transformation. Using a qualitative approach, data were gathered through participant observation and in-depth interviews with 17 informants, followed by thematic analysis. Findings indicate that tourism has brought economic benefits such as increased income, new job opportunities, and improved infrastructure. Ownership of accommodation units by many households reflects a relatively equitable distribution of economic gains. However, the shift away from agriculture raises concerns about food security and the erosion of traditional livelihoods. Culturally, tourism has helped revive arts and rituals, yet also risks commodification and altered communal values. Traditions like Ngayah have adapted into more pragmatic forms. Environmentally, residents are worried about land conversion, congestion, pollution, water scarcity, and the existence of irrigation systems like Subak. Weak regulation and declining trust in governance worsen these issues. Despite this, tourism remains widely supported, highlighting a tension between economic benefit and ecological stability. The study calls for community-driven tourism strategy that balances growth with cultural and environmental sustainability.

Abstract

Extensive research on Bali's tourism has explored its development and various impacts, yet there is limited understanding of how tourism specifically affects the life satisfaction of local communities, particularly the Balinese. This study aims to investigate the changes in life satisfaction within the Balinese community of Canggu traditional village, driven by the rapid development of tourism. Adopting a qualitative approach, the research utilized participant observation and semi-structured interviews for data collection. A total of 17 informants were purposively selected to ensure diverse perspectives, enhancing the methodological rigor. Thematic analysis was conducted to identify patterns in how life satisfaction has evolved in response to tourism growth. The findings reveal that tourism has notably influenced various aspects of life satisfaction in Canggu, with significant improvements observed in financial stability. Before tourism, life satisfaction in the community was primarily derived from simple living, a sense of gratitude, strong social bonds, and adherence to traditional values, although financial limitations often led to dissatisfaction. With the expansion of tourism, improved economic conditions have enabled the community to enhance religious rituals, gain better access to education and healthcare, enjoy more leisure activities, and improve the condition of basic needs such as food, clothing, and housing. Moreover, the growth of cultural activities has fostered stronger social interactions, further enriched social relations, and boosted overall community satisfaction. However, to sustain these benefits, balancing tourism development with community welfare is crucial through strategies that promote both economic and cultural sustainability.

Abstract

Abstract: This study examines the potential of nasi tutug oncom (NTO), a traditional Sundanese dish from Tasikmalaya, as a culturally rich, digitally marketable gastronomic tourism product. Although Indonesian culinary heritage has gained attention in tourism development, regional dishes like NTO are understudied in both research and policy. The study aims to (1) analyze the attractiveness of NTO as a tourism product, (2) evaluate existing promotional efforts and challenges, and (3) propose technopreneurial strategies to enhance its digital sustainability and marketability. A qualitative approach was employed through semi-structured interviews and participant observation with ten key stakeholders, including tourism officials, gastronomy experts, NTO producers, entrepreneurs, and travel agent. Using the "3S" framework: Something to See, Something to Do, and Something to Buy". Findings reveal that NTO offers a holistic gastronomic experience encompassing cultural observation, active participation, and economic contribution. However, current promotions are fragmented, with a limited digital presence and coordination. Technopreneurship emerges as a viable approach to repositioning NTO through digital storytelling, visual branding, and e-commerce. This study contributes to the discourse on gastronomic tourism by emphasizing regional culinary heritage and the importance of stakeholder collaboration and digital innovation in sustaining local gastronomy. Keyword: culinary heritage; digital promotion; gastronomic tourism; nasi tutug oncom (NTO); technopreneurship Abstrak: Penelitian ini mengkaji potensi Nasi Tutug Oncom (NTO), sebuah makanan tradisional khas Sunda yang berasal dari Tasikmalaya, sebagai produk pariwisata gastronomi yang kaya budaya dan dapat dipasarkan secara digital. Meskipun warisan kuliner Indonesia telah mendapat perhatian dalam pengembangan pariwisata, namun makanan tradisional seperti NTO belum banyak dikaji baik dalam penelitian maupun kebijakan. Penelitian ini bertujuan untuk (1) menganalisis daya tarik NTO sebagai produk pariwisata, (2) mengevaluasi upaya promosi yang dilakukan sejauh ini beserta tantangannya, dan (3) menawarkan strategi technopreneurial untuk meningkatkan keberlanjutan digital dan daya pasarnya. Pendekatan kualitatif dipilih dengan memanfaatkan observasi partisipatif dan wawancara semi-terstruktur terhadap sepuluh pemangku kepentingan, di antaranya adalah dinas pariwisata, ahli gastronomi, produsen dan wirausahawan NTO, serta agen perjalanan. Penelitian ini menggunakan kerangka teori “3S”: Something to See, Something to Do, and Something to Buy. Hasil penelitian menunjukkan bahwa NTO menawarkan pengalaman gastronomi secara menyeluruh yang mencakup pembelajaran budaya, partisipasi aktif, dan kontribusi ekonomi. Meskipun demikian, saat ini promosinya masih terfragmentasi, minim koordinasi, dan belum digital. Technopreneurship muncul sebagai strategi untuk memposisikan kembali NTO melalui storytelling digital, branding visual, dan e-commerce. Penelitian ini berkontribusi pada diskursus tentang pariwisata gastronomi dengan menekankan warisan kuliner lokal, pentingnya kolaborasi pemangku kepentingan, dan inovasi digital untuk mempertahankan gastronomi lokal. Kata kunci: warisan kuliner; promosi digital; pariwisata gastronomi; nasi tutug oncom (NTO); technopreneurship.

Abstract

This study investigates the dynamics of multi-stakeholder collaboration in the revitalisation of the Peneleh heritage tourism area in Surabaya, Indonesia, addressing a notable research gap concerning the empirical application of collaborative governance models—particularly the pentahelix framework—within the context of urban heritage tourism. Adopting a qualitative case study design suited for exploring complex stakeholder interactions, the research draws upon in-depth interviews, document analysis, and field observations to construct a comprehensive understanding of the collaborative process. Thematic analysis reveals six interrelated dimensions of collaboration: idea co-creation, participatory decision-making, capacity building, joint implementation, sustainability efforts, and tangible revitalisation outcomes. The findings suggest that collaborative engagement not only facilitated the physical restoration of heritage assets but also reinforced socio-cultural identity and stimulated local economic vitality through community-driven microenterprises. Theoretically, this study contributes to refining the pentahelix model by elucidating the evolving and strategic roles of the business sector, media, and community actors in fostering public engagement, mobilising resources, and enhancing market access—dimensions often underemphasised in existing frameworks. Practically, it underscores the necessity of inclusive governance structures, continuous multi-channel communication, and shared resource mechanisms to ensure the sustainability of urban heritage regeneration. The insights generated offer actionable guidance to policymakers and practitioners developing participatory models to revitalise culturally significant urban areas.
